  • Rub the homemade cottage cheese with a sieve, or pass the product through a meat grinder so that its texture becomes more uniform, then the cottage cheese will be easier to mold. If you use store-bought, already homogeneous cottage cheese, then do not subject it to such preparation.
  • Mash the homogeneous cottage cheese with granulated sugar using a grinder (add sugar here to taste). Then beat one egg into the curd mass and mash it again.
  • Add wheat flour to the total mass and knead thoroughly. The specific amount of flour used will depend on the cottage cheese chosen and your personal gastronomic preferences. To make the dumplings more tender, limit yourself to three large spoons (then they will be a little more difficult to cook). For a denser texture of dumplings, add more flour. Before cooking, you can cook one dumpling first, if it falls apart, add more flour.

  • For convenience, divide the prepared curd dough into several (three to four) parts.
  • Lightly flour the cutting board. Roll one separated part into a thin sausage (about two centimeters in diameter), cut it into one and a half centimeter pieces. You can make larger dumplings, but small ones cook easier and look better.
  • Form the cut dough pieces into round “coins”, six to seven millimeters thick. Make a small dent in the center of each piece (with your finger). Due to this dent, sour cream or butter will be better retained in the finished dumpling.

    Mushrooms - 150 g
    Milk - 150 ml
    Flour - 350 g
    Egg - 1 pc.

    Cook the dumplings in small portions in boiling water - in a wide saucepan filled 2/3 with water. Cooking time is 2-3 minutes from the moment the dumplings rise and start boiling. After cooking, dry the dumplings in a wide frying pan or dry pan.

    Serve the finished dish with cracklings and sour cream.

    Chocolate dumplings with cherries

    INGREDIENTS

    • Flour - 3-3.5 tbsp.
    • Cocoa - 2-3 tbsp. l.
    • Kefir (2.5% fat) - 250 g
    • Soda - 0.5 tsp.
    • Salt - a pinch
    • Sugar - 1 tsp. for each dumpling
    • Vegetable oil - 1 tbsp. l.
    • Boiled water - 70 ml
    • Pitted cherries (can be used either frozen or fresh) - 300 g

    COOKING METHOD

    1. Prepare the dough. Dissolve cocoa in hot water. Add quicklime soda to kefir (it quenches well in kefir). Mix well, add cocoa and vegetable oil dissolved in water. Gradually add sifted flour to this mass and knead the soft dough.
    2. Let's prepare the filling. Place the cherries on a sieve to drain all the liquid.
    3. Roll out the dough a little thicker than for classic dumplings. The thickness of the dough should be 2.5 - 3 mm.
    4. Using a glass, cut out circles. First put sugar on each circle and then the cherry filling.
    5. We fasten the edges of the dumpling with a crescent.
    6. Making a home steamer. To do this, take a large saucepan and fill it 2/3 with water. Cover the pan with a double layer of gauze and tie it with string. When the water in the pan begins to boil, place the dumplings on cheesecloth in one layer. Cover with a deep bowl and cook for 5-7 minutes.
