I often cook it with various berries, nuts, or just use one poppy seed to prepare the filling for pancakes, rolls, pies, or cakes. I even make Easter cakes and Easter cakes with it. For work we will need:

  • 200 grams of edible poppy seeds;
  • 25 grams of sugar;
  • 50 grams of natural honey;
  • 150 ml water;
  • 1 chicken egg (C-1);
  • 50 grams of a mixture of dried apricots and raisins;
  • 150 ml hot water.

How to make poppy seed filling at home

We wash the dried apricots and raisins and fill them with hot water. We leave them in such a state so that they steam well and become soft. This usually takes no more than 18-20 minutes. After this, drain the water and place the berries on a dry towel to wait in the wings.

Mix poppy seeds with sugar and puree with a blender. At this point, the sugar-poppy seed mixture will lighten slightly. Fill it with hot water and boil for about three minutes. Place in a colander with gauze and squeeze.

While the poppy seeds are still hot, add honey to it and stir.

We foam the egg with a fork, and cut the dried apricots and raisins into small pieces, add all this to the poppy seed mixture and mix.

Our poppy seed filling for pies is ready to use. When baking, this filling holds its shape and does not crumble, and the baked goods turn out not only tasty, but also beautiful.

All lovers of buns and pies associate poppy seed filling with the taste of childhood. The sweet taste of poppy seeds, despite its grainy texture, melts in your mouth. Poppy is quite widely used in the confectionery industry, although many people fear and limit the use of poppy seeds. In fact, poppy seeds need to be cooked correctly and then the filling will be healthy and tasty.

Poppy seeds are sold ready-made. It can be used in baking without pre-treatment. However, this rule should not always be followed. The fact is that not every manufacturer carefully processes grains and stores them in the right place without pests and insects. To avoid damaged poppy seeds getting into the filling for pancakes or pies, the poppy seeds must be thoroughly washed. This way you can be sure that only selected grains will come into your food.

Poppy seeds are very fine in structure and special technology is needed to wash them. In addition, in order to fully use poppy seeds for filling, you need to steam them and do a little preparation. Only an hour after opening a pack of poppy seeds and fully preparing it, you can start preparing culinary masterpieces. Even after going through such a difficult cooking process, the poppy seed filling remains one of the most delicious. As you know, tasty things don’t always happen quickly, but poppy seeds are also very healthy.

How to wash poppy seeds

Usually we are used to washing cereals, nuts, and raisins in a colander, but with poppy seeds we need to be much more delicate. It is very small and fairly wide metal mesh cells will not fit here. Poppy seeds need to be washed through a cotton cloth. The gauze we are used to is also not suitable here; it has rather wide longitudinal and transverse threads. It is better to use a cotton bag for these purposes.

You can sew a cotton bag yourself in just five minutes. It will also be useful in the future for washing small grains. For sewing, fabric from an old pillowcase or sheet is suitable. 20 by 20 cm will be enough. Pour the poppy seeds into it and rinse it under warm running water. This way you won’t lose a single grain. You can also use a regular piece of cotton fabric, but you need to be careful with it. There is a chance that the poppy will “float away”.

There is another way, for the lazy, to wash poppy seeds. Just fill a glass or bowl with water, add poppy seeds and shake them for a minute. As a rule, damaged grains immediately float to the surface, while intact ones remain at the bottom. To ensure reliable results, wait 10 minutes and then drain the remaining water. Now your poppy seed is clean and can definitely be used to make a delicious filling!

How to prepare poppy seeds for filling

In addition to the fact that poppy seeds need to be washed before cooking, they also need to be steamed. The poppy seeds that are sold in packs or by weight in confectionery shops are considered raw, or rather, not ready for consumption. To make the filling, the poppy seed needs to be steamed so that it at least doubles in size, and dry, unprocessed poppy seed is used only for sprinkling the confectionery product as a decoration.

A portion of washed poppy seeds is poured with boiled hot water. Leave it for 10 minutes to swell, then drain the water and leave it to swell again under new boiling water. Two hot pours will be enough; the poppy will swell and become moist. Just what you need to prepare the filling. If you don’t want to bother with a kettle and changing the liquid, you can brew poppy seeds. Place the washed poppy seeds in a saucepan, fill it with a small amount of water, put on fire and cook until the poppy seeds enlarge. The finished poppy seed should seem to smear or fall apart in a spoon.

If poppy seeds are being prepared for a sweet filling, and not just for adding to the dough, then during the cooking process you can add honey or sugar to the water at your discretion. You can sweeten poppy seeds after boiling. Drain the water, pour the poppy seeds and sugar into a blender and grind the grains. If you don’t have a blender, then this can be done in a simple meat grinder, mortar or sieve.

Poppy seed filling for buns

Poppy and honey filling is perfect for open buns. It holds its shape and does not spread throughout the entire product. In addition, with this filling you can prepare the most bizarre shapes of buns, bows, curls, open triangles. Absolutely no sugar is used to prepare the sweet filling. This is a big plus for those who are on a diet or abstain from consuming sugar.

To prepare honey-poppy seed buns we will need:

  • steamed poppy seeds - 8 tablespoons;
  • liquid honey - 4 tablespoons.

The ratio of honey to poppy seeds in the recipe is 1 to 2 (1:2). The volume can be reduced or increased depending on the amount of dough that is being prepared for brushing. This volume of filling is enough for buns baked from 0.5 liters of milk.

So, the already steamed poppy seeds need to be placed in a metal pan and poured with liquid honey. The container is placed on low heat and gradually stirred. The preparation time for the honey and poppy seed filling is approximately 10 minutes. As a result, the filling is almost ready; to use it, you need to wait until it cools down. Then it will become viscous and sticky, capable of connecting the dough.

Poppy seed filling for pies

You can prepare a delicious filling for pies with a whole list of ingredients, one of which will be tempting poppy seeds. It is ideal in almost any combination: with apples, dried apricots, raisins, various nuts, candied fruits.

Our list is much tastier:

  • a glass of milk;
  • a glass of steamed poppy seeds;
  • 50 g red raisins;
  • 1 PC. yellow or red apple;
  • 100 g walnuts;
  • a glass of flour;
  • 1 lemon - you only need the zest (yellow grated skin)
  • 3 tbsp. l. butter;
  • 3 tbsp. l. melted honey;
  • cinnamon to taste;
  • 50 g sugar.

Place the nuts in a blender and grind until almost crumbly. Set the apple aside, take a saucepan and add the nuts and other ingredients. Place it on the fire and bring to a boil. As soon as the mixture begins to boil, turn off the pan and cool the mixture. Add the grated apple to the cooled mixture. The filling is ready!

Poppy seed filling for roll

The poppy seed filling will be much tastier if it is initially steamed in milk. Prepare your ingredients.

  1. Dry poppy seed - 1 tbsp;
  2. Granulated sugar - 1 tbsp;
  3. Milk - 0.5 l.

In this recipe you can use any milk, homemade or state-made, goat or cow, it doesn’t matter. The whole point is milk steaming. The fact is that initially manufacturers dry the poppy seeds, so they get poppy seeds suitable for cooking. Raw grains should never be used, as this is an opium drug and even in small quantities it can be addictive and cause enormous harm to health. This is what many lovers of buns with poppy seed filling are so afraid of.

You need to steam poppy seeds in milk in a metal pan. Boil it for 5 minutes after boiling and you will see an oily film form on the surface of the milk. It needs to be removed, because... We won’t need it; the taste of this oil is bitter due to long-term storage and previous drying. Place the remaining poppy seeds in a blender and blend. Try to fill the poppy seeds without milk, this will remove excess liquid from the filling. Once you have beaten the poppy seeds, add sugar to it. Do not mix all the ingredients at once, do it as in the recipe, otherwise the filling will leak due to the early added sugar. Now the resulting filling can be spread over the roll dough.

When preparing poppy seeds, always take into account what kind of filling there will be; if it is a filling for pancakes, then the poppy seeds need to be cooked until fully cooked. If you use poppy seed filling for pies or baking rolls, it can be cooked until half cooked. It will reach full readiness in the oven while baking the dough.

Poppy seed roll recipe step by step with photos

For home and holiday tea drinking, there is nothing tastier than homemade rolls. The poppy seed filling goes perfectly with any drink, be it coffee, cocoa or milk. A neatly formed roll is a fairly classic representation of baked goods. In our recipe we will form an Easter poppy seed roll decorated with curd fudge.

List of ingredients:

All products for our roll must be warm. Heat the milk, but do not boil; in boiling water, the yeast will not behave as actively as in liquid at room temperature. Combine milk with dry yeast. Take an empty bowl and colander, pour in the prepared flour. Next, add yeast milk, soft butter and all other ingredients. The dough is kneaded until it can easily come off your hands.

Leave the dough under a towel in a warm place. It should become fluffy and increase in volume. If the temperature in the room is about 20 degrees, then the dough will rise in 1.5 hours, if the temperature is above 1 hour it should be enough. It all depends on the quality of the yeast.

Now that the dough is prepared, you need to make the sweet poppy seed filling. Pour milk into a saucepan, add dry poppy seeds and sugar. Cook the mixture for 7 minutes after boiling (low heat). Those grains that have not had time to swell will reach readiness when baking the roll. Now the poppy seed needs to cool. We need to pass the cooled poppy seeds through an electric meat grinder (a manual one is no worse). The meat grinder attachment should be the smallest. You need to skip the poppy seed filling 2-3 times.

While the dough is still rising and the filling is ready, you can start making the glaze. She will be the decoration on our pie. Mix cottage cheese with softened butter, add powdered sugar. Knead until creamy.

The dough has risen and it’s time to roll it out on the table. You should end up with a layer measuring 30*40 cm. Place and spread the poppy seed filling on top of it. Start rolling the roll from the edge and place it in a ring. Place the roll on a baking sheet and cut it as shown in the photo.

Place the roll in the oven. There is no need to lubricate it. We already have the curd glaze ready. Baking is prepared in a preheated oven for about half an hour at a temperature of 180 degrees. We wait until it is ready, take out the roll and grease the now cooled surface with white glaze.

You can additionally decorate the roll with confectionery beads, confetti, cocoa, grated chocolate or fruit.

Poppy pie, recipe with photo

Poppy seed pie is another treat your guests will appreciate. It takes only 40 minutes to prepare, but its taste will be remembered for a long time.

List of ingredients:

This cake is kneaded as simply as possible and bakes very quickly. First, all the dry ingredients are mixed, then the liquid ones are added to them. Everything is mixed and left near the burner on for 20 minutes under a dry towel.

While the dough is filling with fluffiness, you need to prepare the filling. A glass of poppy seeds is poured into boiling water, boiled for 7-8 minutes, then cooled. Sugar is poured into the softened grains and simply mixed.

Next, the dough is rolled out on the table and the filling is laid out on top. The layer must be rolled up like a roll. You can also bake a roll from it, but we will have a beautiful openwork pie. The edges of the roll are trimmed and the dough is rolled into a circle.

The dough must be transferred to a baking sheet. We fasten the roll like a bagel, cut it with scissors in 1.5 cm increments.

Form the pie by turning 1 piece of pie into the center of the circle and leaving 2 pieces outside the circle.

Once all the elements of the pie are prepared, add 2 cut pieces of dough on top. Turn them out like a rose and place them on top of the base. For shine, brush the dough with egg yolk.

Bake the poppy seed cake in the oven for 20-25 minutes at 180-200 degrees. Wait until it cools down a little and eat with pleasure. Enjoy your tea!

  • butter or margarine - approximately 120 g;
  • sand-sugar - a full cup;
  • fresh large egg - 2 pcs.;

Cooking method

The poppy seed should have a moist and even slightly runny consistency. To do this, dry grains must be placed in a coffee grinder and ground to a powder. Next, they should be put aside and begin preparing the second part of the filling. To do this, you need to place a piece of cooking fat in the milk and add granulated sugar. Next, the products must be placed in a water bath and heated until the sweet product is completely dissolved. After this, you need to add beaten eggs and stir continuously. These steps should be carried out until the entire mass is partially boiled.

Final stage

After the creamy milk mass thickens slightly, you need to add the previously prepared poppy powder to it and mix thoroughly. The resulting slurry should be heated for about 3-4 minutes. The final stage in creating the filling

After all the described steps, you need to add sand and sugar to the poppy seeds, and then grind them thoroughly using a masher. Having received a homogeneous sweet mass, it should be mixed with raisins and used for its intended purpose, that is, to prepare various rolls, pies, etc. By the way, dried fruits can be further chopped using a sharp knife or in a blender. In the Czech Republic, farmers grow poppy legally and exclusively for adding to confectionery and national dishes. A mixture is made from poppy seeds and sugar, which is sprinkled on homemade noodles - a dish that is very popular here in Transcarpathia.
