The history of the discovery of vinegar takes us to the pre-biblical past of mankind. It was known as an antiseptic and thirst quencher more than 7,000 years ago. In ancient times, people noticed sour grape wine in a pot with a peculiar smell. The use of grape vinegar was found experimentally. It was based on the practical use of the liquid as adding a few drops of sour wine to water for its purification and pleasant taste. Later, healers investigated the healing properties of the newly obtained product.

Types of vinegars and methods for their preparation

Natural grape vinegar is obtained by fermenting dry grape wines. As a result, the general category of grape vinegars is divided into:


  • white wine vinegar;
  • red wine vinegar:
  • balsamic vinegar;
  • aromatic vinegar from white wine vinegar.

Depending on the countries of origin, these products have their own national method of production, their own wines, which means different aromas and tastes. White vinegar is the mildest of these categories. Fermentation occurs in a stainless steel container for a long time. Vinegar preserves the subtle aroma of wine and is intended for dressing salads or for further flavoring.

You can make white wine vinegar at home from varieties grown at your dacha. In this case, the process is carried out by heating the wine without boiling. When half of it remains in the container, it will become homemade vinegar. Vinegar is prepared from grape pulp. In this case, the process takes 90 days.

Flavoring occurs by heating white wine vinegar to 40 degrees and adding aromatic seasonings to the vessel. The composition, aged for up to six months, absorbs not only the aroma, but is saturated with the beneficial components of the herb. Here, the imagination of the product's authors is limited by its addiction to a particular scent.

Red vinegar is obtained from Cabernet-type wines by aging in oak barrels. Naturally, the grape vinegars obtained in this way are expensive products, used drop by drop, and collected. But balsamic vinegar has a special place. The method of obtaining it involves fermentation in a barrel for up to 12 years (see).

As a result, from 100 liters of wine, 15 liters of a product of dark color and very thick consistency are obtained. The taste of the resulting product is sweet and sour. Add it to ready-made meat and fish dishes, and season salads. Balsamic vinegar is named because it was originally used to treat wounds and speed up their healing.

Vinegar is considered natural if the label does not indicate dyes, sugar or preservatives. There should be a slight sediment at the bottom of the glass bottle. The acid content is within 5-9%. The cost of the product is high.

The benefits and harms of grape vinegar

The resulting vinegar is characterized not only by its antibacterial properties and ability to heal wounds. The concentrated content of beneficial components collected from grapes makes vinegar healing. It contains:

  • polyphenols;
  • organic acids;
  • microelements;
  • vitamins.

These substances collected in a medicinal product affect the human body. Thus, the substance phytoalexin interferes with the development of tumors, heart and blood diseases. Flavonoids help the body cope with diseases by strengthening the immune system. Balsamic vinegar will relieve gout attacks and delay the aging of the body.


Many beneficial substances present in balsamic vinegar are unstable to heat treatment. Therefore, vinegar is used in cold dishes and added before serving.

Traditionally, in Mediterranean countries, grape vinegar is used for marinating kebabs and preparing meat and fish dishes. Low-calorie dressing is useful for those who are watching their weight. In addition to cooking, grape vinegar is used:

  • for medical purposes;
  • in cosmetology.

The antibacterial properties of the product extend not only to the disinfection of skin and water disinfection. In case of internal poisoning or bacteriosis of the body, water with vinegar suppresses pathogenic microbes inside the body. Lotions using wine vinegar remove varicose veins on the legs. It is used as a fat burner for weight loss.

One of the indicators of a lack of potassium in the body is roughening of the skin, especially on the feet, the appearance of calluses and cracks. Precisely, the high potassium content will help cope with the problem if compresses with grape vinegar are applied to the affected areas.

Not only benefits, but also harm can be obtained from grape vinegar if you use it without taking into account the characteristics of the body. Contraindications for using the product include:

  • allergy since childhood to red grape varieties;
  • diseases of the digestive system in the acute stage;
  • inflammatory processes in the genitourinary system.

Grape vinegar does not combine with fermented milk products, vegetable proteins and potatoes.

Varieties of grape vinegar are white and red wine vinegar, as well as the most expensive - balsamic. Basically, grape vinegar is prepared from waste of white or red wine, grape juice or from grape pulp - pulp.

White and red grape vinegar are used for marinating fish, meat, as a salad dressing, preparing various sauces, etc.

Grape vinegar is available in almost any store. But if the industrial product does not suit the consumer in some way - price, reliability or quality, then red or white grape vinegar can be prepared at home.

Ingredients:

  • grape pomace - pulp;
  • sugar;
  • boiled water.

Preparation

  1. Grape cake or grape fruits are placed in a glass container with a wide neck. It is advisable to fill it halfway. Add water in the proportion of one liter per 700-900 grams of cake.
  2. Then sugar is added. The amount of sugar directly affects the quality of the product; with more sugar, the vinegar becomes more sour and concentrated. The proportion of sugar is from 50 to 110 grams per liter of water. The container is covered with gauze and sent to a dark place for 14-20 days. The fermentation temperature is preferably not lower than 25 degrees.
  3. All this time, the contents of the jar must be stirred every day, preferably with a wooden spoon, so that the mash is saturated with oxygen and the fermentation process is accelerated. If you stir with a metal or plastic spoon, an undesirable reaction with the mash may occur, which will affect the taste of the vinegar and further fermentation.
  4. After this time, the contents of the jar are poured into a rag or gauze bag and squeezed out. Pass the strained juice through cheesecloth again and pour into a glass vessel.
  5. Sugar is added to the mash again, in the same proportion of 50–110 grams per liter. Everything is thoroughly mixed until the sugar is completely dissolved. The container is covered with gauze and left to ferment. This stage of fermentation is longer, on average it takes from 30 to 70 days. It all depends on the quality of the primary material. During this time, the liquid will stop fermenting and will become much lighter and more transparent.

During further fermentation, sediment will form at the bottom of the jar. The finished homemade grape vinegar is carefully filtered so as not to raise sediment and bottled in glass bottles. It is better to store it in a cool place, protected from sunlight.


  • Instead of sugar, you can use natural bee honey. It gives the vinegar softness and a good flavor bouquet. This vinegar goes very well with meat, as a marinade, and in salads, as a dressing.
  • After the vinegar has been poured into a glass container, it is better to seal it with a lid that allows air to pass through. When the remaining oxygen leaves the vinegar, it is better to seal the container with wax or a very tight stopper.
  • It is recommended to store homemade grape vinegar, just like in glass containers. Wooden and, especially, metal containers are susceptible to oxidation. Also, it is not advisable to store vinegar in plastic bottles. The plastic may react with the vinegar and ruin the taste and quality of the liquid.
  • It is better to select small containers for storage. Preferably up to 250 grams. In large bottles, vinegar may dry out faster and lose its taste.

Hot water (200 ml.) is mixed with 3 tsp. vinegar. The resulting product is drunk three times a day.

High-quality vinegar is prepared from natural raw materials. To give it a special smell and color, the fermented product matures for a long time in oak containers. Then it is filtered and poured into glass containers.

The first mentions date back to the fifth millennium BC. In those distant times, the Babylonians, like intoxicating drinks, made vinegar from dates. It was used not only for seasoning, but also as a hygiene product, a reliable antiseptic, and also as a cure for many ailments.
There is a mention of wine vinegar in the Bible. This seasoning has long been valued in China and Japan.

France is considered to be the birthplace of grape wine seasoning. In 1864, the famous French microbiologist and chemist Louis Pasteur revealed the secret of the acidic liquid, proving that it is a product of alcohol processing by microorganisms (acetic acid bacteria).

Cooks are familiar with white and red vinegar. But there are other types of this dietary supplement.

Recipes for home cooking

You can make good grape vinegar at home. In this case, you can prepare any of the above types, with the exception of balsamic.

At home, it is made from fresh berries, grape juice, wine, and wine pulp. To do this, just choose a recipe and strictly follow all the steps and adhere to the recipe.

More often they produce universal, from a culinary point of view, red vinegar.

Red grape wine vinegar

This is a popular red vinegar recipe made at home by the Portuguese. The color intensity and shade determine the choice of wine. For red, the best choice is cabernet. But you can use any red wine. A good wine vinegar is considered to be a product containing about 8% acidity.

Ingredients:

  • dry red wine - 0.75 l.;
  • grape vinegar - 50–100 ml;
  • oak chip.
  1. To make great vinegar, you need a good starter. The best option is a little ready-made wine vinegar. If this is not possible, then you need to prepare the starter yourself.
  2. For this you will need ripe berries of wine grapes. The juice is squeezed out of them into a glass or enamel container, covered with several layers of cloth or gauze to ensure the outflow of fermentation gas. The container with grape juice should be kept in a warm room until vinegar forms (the juice sours).
  3. The first stage of fermentation will produce wine. If the fermentation conditions are not in a container in a cooler place, then the result will be vinegar, which will act as a starter.
  4. Ideally, to produce such vinegar, you need to have an oak barrel, but you can limit yourself to glassware in which you put a small piece of oak wood.
  5. Pour red wine into an oak barrel or bottle. You can take homemade wine from your supplies or buy cheap, but not fake (!), in a store. Add starter to activate the fermentation process. This recipe involves choosing its quantity: the more acidic the wine, the less leaven. If the drink does not have a strong aroma, you can add a cut cinnamon stick.
  6. Leave the fermenting liquid for 30 days. The container should be at a temperature of 20–24 0.
  7. In a month the vinegar will be ready. It is filtered and bottled.

There is a little secret: if you regularly add grape wine to an open bottle, the bottle will always be filled with wine vinegar.

Culinary seasoning from grape waste

At home, you can combine wine production and vinegar preparation. This recipe will be suitable for winemakers, as it makes it possible to obtain a high-quality natural product from grape pulp.

Ingredients:

  • pulp (squeeze);
  • granulated sugar;
  • water (boiled).

This recipe for grape vinegar is often used by winemakers, because when making wine at home, you always have the necessary raw materials. The recipe is suitable for red and white vinegar.

Vinegar made from natural juice with honey

This recipe is interesting because the vinegar is prepared with honey water. This gives the product a honey taste and smell, and also enriches it with useful substances.

Ingredients:

  • 3 kg of grapes;
  • 3 tablespoons dark honey;
  • 1 glass (200 g) boiled water;
  • 1 piece (30 g) rye bread.

If preparing wine according to a recipe ends in failure, you can always try making wine vinegar from it.
