Today for lunch we are preparing delicious dumplings, made from a very simple dough, stuffed with minced meat and potatoes. The dish is hearty and economical due to the fact that mashed potatoes are added to the minced meat. It's quick and easy to prepare.

Ingredients for the dish dumplings with minced meat and potatoes:

  • raw potatoes – 250 g;
  • minced meat – 150 g;
  • white wheat flour – 350 g;
  • purified water – 150 g.

Step-by-step preparation of dumplings

Peel the potatoes with a knife, cut into four parts, and cook until tender. Drain all the hot water, make a puree, add a little salt.

You can buy minced meat ready-made, but if you don’t trust its quality, then it’s better to take a small piece of meat and grind it yourself. Any meat will do - pork, beef or poultry, depending on your tastes.


Combine raw minced meat with mashed potatoes, add spices to taste. If it turns out thick, add a little purified water.

Sift the flour, combine with water, add salt, pour in a teaspoon of sunflower oil. Make a soft, not very stiff dough. Place in a bag and leave for fifteen minutes.


Roll out with a rolling pin into a thin layer. Using a round glass, cut out circles.


Fill each with filling and seal the edges.


Cook for ten minutes. When cooking, it is advisable to put a bay leaf in the water and add a little salt. Serve ready-made dumplings with minced meat and potatoes with sour cream, butter or fried onions.

We will form these meat and potato dumplings in a metal dumpling maker - it’s much faster this way. But if you have not yet had time to acquire this useful device, then you can make these dumplings in the classic way - by cutting out circles from the rolled out dough, putting the filling and molding them as in the first photo (see above). Ingredients for meat and potato dumplings:

Minced meat – 500 grams;
onion – 5 medium sized heads;
egg - 1 piece;
water – 300 ml;
salt;
potatoes - 1 large tuber;
flour – 800 grams;
vegetable oil.

The process of preparing homemade dumplings stuffed with minced meat and potatoes:

1) Scroll the onions and potatoes into the minced meat. You can use any meat for minced meat; in this case, we used the classic version - beef and pork in a 1:1 ratio.

2) Salt the minced meat to taste (just don’t try it - it’s not safe for your health).

3) Mix everything well. Our meat and potato filling is ready.

Making the dough for dumplings:

In order to prepare the dough for dumplings, you will need a deep bowl or saucepan. In it, combine the egg, butter (2 tablespoons) and water, whisk everything.

Then knead the dough, gradually adding flour in small portions.

Cover with a layer of dough and place the filling in the formed dimples.

Next, roll out another layer, slightly larger than the previous one, and cover the dumpling maker with it. Sprinkle the top with flour and roll out with a rolling pin until the outline of each dumpling becomes visible.

Place the finished dumplings on a baking sheet or cutting board, and freeze any excess.

You need to cook the dumplings in a large amount of boiling water with salt. In time - only about 15 minutes, after ascent - 5 minutes. For flavor, you can add bay leaves and black or allspice peas to the broth.

  • Sour cream – 2 tbsp.
  • Chicken eggs – 2 pcs.
  • Wheat flour – 3 cups

Filling ingredients:

  • Mashed potatoes
  • Minced meat – 450 gr.
  • Onions – 1 pc.
  • Salt, ground black pepper - to taste

Preparation of the dough:

Beat eggs into a mixer bowl and add sour cream, salt,

Stir until smooth, pour in milk and gradually add sifted flour. Knead into a tight dough.

Cover with cling film and leave to rest for 30 minutes, then the dough will be more elastic and good for making dumplings. While the dough is lying, there is time to make the filling.

Preparing the filling:

Boil the potatoes in advance. Everything is simple here, peel, wash, cut into cubes, place in a pan, add water, add salt and cook for 20 minutes. Drain and crush with a masher. That's it, the mashed potatoes are ready.

You can buy minced meat ready-made or buy meat and grind it through a meat grinder.

Peel the onion and finely chop. Leave part of the onion for frying, which will be used for ready-made, boiled dumplings.

Heat a frying pan with vegetable oil and fry the minced meat,

add onion, add salt and ground black pepper.

Pass the finished minced meat with onions through a meat grinder onto a fine mesh.

Mix the minced meat well with mashed potatoes,

taste, add spices if necessary.

Transfer to a bowl to let the filling cool.

Let's start making dumplings:

Mash it with your hands and add a small amount of flour, divide it into parts, roll each part into a thin layer with a rolling pin, squeeze out circles.

Place a teaspoon of cooled filling in the middle of each circle, carefully pinch the edges, make sure that all the edges are really well stuck together, otherwise during cooking all the filling will float in the water, and you will have to eat one dough or completely throw away all your work.

And of course, the beloved family will remain hungry. So try to make dumplings with minced meat and potatoes well and efficiently.

Well, all the dumplings are stuck together, you can freeze them for use or cook them right away.

Take a deep pan, 2.5 - 3 liters, pour water into more than half the pan, add salt, put on fire, wait for the water to boil and carefully lower one dumpling into the water. Just don’t cook all the dumplings at once, cook them in small portions. As soon as the dumplings float to the surface, reduce the heat and cook for 7 minutes. Personally, I don’t need to look at the clock, I can determine their readiness by their appearance, they become snow-white, and this indicates that the dough has already been cooked and can be placed on a large plate with a slotted spoon. When all the dumplings are boiled, then you can sprinkle them with fried onions. Or any other sauce you like. And quickly serve before they cool down.

Preparation:

Making the dough: Mix flour, butter, eggs, salt and water and knead the dough. Let's rest.

Before preparing the filling for dumplings, you need to soak the beans, boil them and grind them in a meat grinder. Finely chop the mushrooms and fry in a frying pan. Separate the mushrooms and add to the beans. Mix everything.

All that's left to do is make some dumplings and sit down at the table.

First, we’ll tell you how to prepare the filling for dumplings from potatoes and meat. First you need to prepare the filling, and then the dough. Boil the chicken fillet for 30 minutes in boiling water, salt and pepper the water. We still need broth, the fillet needs to be pulled out and cooled.

Boil the potatoes until tender, mash. To make mashed potatoes, add chicken broth, but the mashed potatoes should not be liquid.


Add your chicken spices to taste.
Cut the chicken fillet into pieces and mix with potatoes. You should have a homogeneous filling without lumps and thoroughly kneaded.


Now let's prepare the dough. Beat the eggs well until foam appears. Salt and pour out kefir, at room temperature. Stir and add vinegar. Now pour in the flour in portions, gradually kneading the dough with your hands. It should be fluffy and not stick to your hands. Let the finished dough stand for 10 minutes and rest.


Let's start making dumplings with potatoes and meat.
Pinch off a piece of dough and make a sausage with your hands.


Cut the sausage into pieces 1 centimeter wide and dip them in flour. We form circles of dough with our hands. And add the filling and seal it. You can make circles using a rolling pin rather than your hands.


This is how many dumplings we got and the same number in the freezer for tomorrow.


Place a large pan of water on the stove and add salt to the water. The water has boiled, throw in our dumplings, after they float to the surface, cook for 3 minutes.


I put the finished dumplings in another pan, add a piece of butter and immediately cover with a lid so that they do not cool. The onion needs to be cut and fried in vegetable oil until it has a beautiful golden color. Now put this onion in a pan with the prepared dumplings and thoroughly shake the pan so that everything is mixed.
Place dumplings with potatoes on a plate and top with sour cream, preferably homemade.
You can prepare sour cream sauce, add garlic, dill or any fresh herbs to it.
