Sometimes I cook lentil dishes as a main course and get a really nutritious, filling and delicious lunch or dinner.

Lentil dishes are also beneficial for the human body: they are rich in fiber and valued for their minerals and vitamins. Scientists have proven that regular consumption of lentils has a beneficial effect on the blood, namely improves its quality. It is prepared both for weight loss and simply for improving your health. Today I’ll prepare stewed cabbage with lentils, a dish that can also be called, if not dietary, then definitely lean or vegan. It will be an excellent side dish or a main dish, as in my case. In addition to vegetables and lentils, spices are important here; they determine the taste of the dish as a whole. Use them to taste and don't skimp on fresh herbs. The specified amount of ingredients will yield approximately 2 servings of stewed vegetables with lentils. Well, let's start cooking!

Ingredients

  • Head of cabbage – 1/2 pcs.
  • Lentils – 0.5 cups
  • Onion – 1 pc.
  • Carrots – 1 pc.
  • Tomato – 1 pc.
  • Vegetable oil – 3 tbsp.
  • Salt, pepper - to taste
  • Bay leaf – 1 pc.
  • Thyme - to taste
  • Dried garlic - to taste
  • Water – 2-3 glasses
  • Fresh herbs - to taste

How to cook stewed cabbage with lentils

  1. Cut the onion into small cubes.
  2. Cut the carrots into quarters.
  3. Place the vegetables in a frying pan with vegetable oil and simmer over medium heat for 7-10 minutes.
  4. We clean the cabbage from dirty leaves and remove the stalk. Cut into large pieces. Transfer to a convenient bowl, add salt, and mash the cabbage with your hands for a couple of minutes.
  5. Add cabbage and washed lentils to the vegetables in the pan.
  6. Stir, add 2 glasses of hot water and simmer over low heat for 15-20 minutes.
  7. Cut the tomato into small cubes. If desired, you can peel it.
  8. Add tomato to the ingredients, add spices (dried thyme, garlic and pepper), add salt to taste, add bay leaf.
  9. Stir and continue simmering, adding more water if necessary. Simmer until cooked and all the liquid has evaporated. Add fresh herbs to the finished dish, mix and leave covered for 15 minutes.

Stewed cabbage with lentils is ready!

  1. You can serve it with lentils as a side dish or as a separate dish.
  2. Lentils, unlike many other legumes, do not need to be soaked in advance, which greatly simplifies the cooking process.
  3. The amount of water required for stewing may vary, but the main thing is to simmer, adding liquid, until the ingredients are soft.

Today I offer you a fairly simple Ayurvedic recipe for preparing a healthy dish of health, youth, slimness and longevity from cabbage stewed with vegetables, lentils and flax seeds.

I always cook vegetables this way, adding something new to the recipe each time. Fantasy has no limits here. Due to this, a new, unique taste is always obtained. Try it!

Cooking stewed cabbage with vegetables and lentils

Ingredients:

  • Cabbage fresh – ½ large head of cabbage
  • Carrots – 2 pcs.
  • Onion – turnip – ½ pc.
  • Frozen garlic spears (if available)
  • Cherry tomatoes (I used frozen) – a few pieces
  • Medium zucchini – ½ piece.
  • Flax seed– 2 tbsp.
  • Lentils– ½ cup
  • Green beans (I used frozen)
  • Salt - to taste
  • Drinking water – ½ glass
  • Favorite spices (today I have turmeric, suneli hops, sweet paprika, dry adjika, nutmeg, mustard seed) - according to taste and desire
  • Olive oil or – 2 tbsp.
  • Fresh or frozen greens (as in my version) - for serving

My cooking method:

1. Soak flax seed and lentils together for 3 hours (overnight is possible)

2. We will prepare all the vegetables and cut them into any desired cuts that your heart desires.

3. The first to cook are onions and carrots, which we simmer in preheated oil with the lid closed for 3 minutes.

5. Place cherry tomatoes and spices on top, close the lid and simmer for 5 minutes

6. Stir, add zucchini and cabbage, mix again and simmer under a closed lid until half cooked (the time depends on the type of cabbage, if it is winter, then the simmer is longer - up to 30 minutes)

7. Pour in water and bring to a boil. We wash the lentils and flax seeds and add them to the vegetables, add salt, mix and simmer for another 10 - 15 minutes, again with the lid closed. I choose a shorter time because I don’t like overcooked vegetables or overcooked legumes. They are of no use or appearance...

Our stewed cabbage with vegetables and lentils is ready! Serve immediately, sprinkled with chopped herbs. As an option, you can serve steamed fish with this dish.
