You can prepare a simple and delicious dessert at home. And it won’t take as much time as some housewives think. A cookie house with curd filling will be a great start to the day or a complete afternoon snack for your baby and you. So, let's try to understand the ingredients and method of preparing the sweet dish.

Description of dessert

A house of cookies and cottage cheese (see main photo) is prepared in the form of a kind of roll. Baking is not used in this case, like any other heat treatment of components or the whole dish. Imagine a square or triangular roll of cookies, inside of which there is a filling of cottage cheese and fruit. The dessert is topped with powdered sugar and white or brown chocolate glaze. Serve slightly chilled and cut into portions in the form of small squares or triangles. It turns out a fragment with cottage cheese and fruit, framed by cookies.

Which cookies should I take?

Absolutely any cookies are suitable for dessert:

  • store or homemade;
  • shortbread or biscuit;
  • with or without additives;
  • chocolate or oatmeal.

Even if your cookies are pretty dry and you think are no good, use them to make a cookie house. Together with cottage cheese and glaze, it will become softer and saturated with sweetness - you will get an amazing dessert.

Since our recipe does not require baking, take cookies of the shape you need for the house. That is, square or rectangular will do.

Curd filling

This is the basis of this dessert. It holds its shape because the cookie house is made without baking. Therefore, it is better to take cottage cheese of medium thickness.

If you get a liquid product, mix a little cookie crumbs into it (pieces ground in a blender) - 100 g of crumbs will be enough for 500 g of cottage cheese. Or hang it in clean gauze for a couple of hours to let the excess liquid drain away.

And if, on the contrary, the cottage cheese is too dry and grainy, use full-fat sour cream or whipped cream. With the last component, the filling for the dish will turn out airy and fluffy. Mix whipped cream with powdered sugar into a thick foam with cottage cheese rubbed through a fine iron sieve. Select the ratio of ingredients according to the consistency of the mass - arbitrarily.

Another option for dry cottage cheese is soft butter with a high fat content - 82%.

Flavoring inclusions can also be added to the curd filling (see “Additional Products” below).

Fruit "core"

The most common filling option is fresh banana. It does not need to be prepared for a long time - this saves time. Depending on your taste and availability, add the following fillings to the dessert:

  • grated apple with citrus juice (a few drops so that the fruit does not darken);
  • sliced ​​fruits with boiled, washed rice and honey - original option;
  • canned peaches - without syrup they are soft and will cut well in the finished cookie house.

The filling can be without fruit at all - just cottage cheese with sugar.

Recipe

What products will we take:

  • soft cottage cheese - 400 g;
  • fat sour cream - 2 tbsp. l.;
  • powdered sugar - 4-5 tbsp. l.;
  • vanillin - a pinch;
  • shortbread cookies - 9 or 12 pcs.

The finished house can be triangular, then you will need 9 cookies, or square - take 12 cookies for it. In our recipe, the house will be a triangle.

The cookie house recipe involves the following procedure:

  1. First, beat the sour cream with powdered sugar and vanilla. Use a hand whisk or electric mixer.
  2. Mix the mixture with cottage cheese.
  3. Place cling film or foil on the table. Place the cookies on it next to each other to form a square grid of nine 3x3 cookies.
  4. Carefully place the cottage cheese on them so as not to break the structure.
  5. Take the edge of the foil and lift it up. It turns out that two side rows of cookies rise up and are connected, forming a triangular structure. There is a loose curd layer inside.
  6. Cover with foil so that the entire dessert is covered.

After covering the dessert with glaze, put it back in the refrigerator to let it harden. Then cut into house-like pieces. You can draw small patterns on the sides of the curd with chocolate or insert a slice of milk chocolate as a window.

This is an easy preparation option. Well, experienced craftsmen are able to create a real magic house from cookies (the photo below demonstrates it). Why not strive for such perfection?

For such a work of art, specially shaped cookies are baked. And the house is already assembled from ready-made ones. The parts are glued together with thick icing or sugar caramel (cooked with a small piece of butter).

Additional Products

Inclusions in the curd mass or fruit “core” can be used as additional components. It could be:

  • ground nuts (any: peanuts, walnuts, almonds, pecans, cashews), you will have to remove the bitter skin from walnuts and almonds in advance;
  • chopped or crushed dried fruits;
  • pieces of fresh or canned fruit;
  • fresh berries or from jam;
  • jam;
  • grated chocolate - milk, white or dark bitter;
  • pre-prepared soufflé;
  • confectionery topping;
  • coconut flakes - fresh or dried.

For flavoring, add some of the following:

  • fresh citrus zest or juice;
  • a drop of alcohol - cognac, rum, liqueur, white table wine;
  • vanillin - powder, extract or seeds from a natural pod.

With literally two or three additional ingredients from the list, you can make the “Cookie House” dessert with your own hands not only tasty, but also a signature sweet dish.

Some of these ingredients can also be added to the dessert glaze.

Glaze options

1) With cocoa.

You will need:

  • butter - 100 g;
  • cocoa powder (unsweetened) - 3-4 tbsp. l.;
  • powdered sugar (or granulated sugar) - 10 tbsp. l.;
  • cream (or milk) - 10 tbsp. l.

How to cook:

  1. Mix soft butter with the remaining ingredients according to the recipe. Heat slightly until the consistency becomes homogeneous. At the same time, stir the mixture with a whisk or spoon.
  2. Cool the glaze at room temperature and use it as intended.

2) Made from white chocolate.

You will need:

  • white chocolate bar - 100 g;
  • powdered sugar - 3 tbsp. l.;
  • cream - 3 tbsp. l.

How to cook:

  1. Break up a white chocolate bar and place in a small saucepan. Build a water bath and melt the pieces.
  2. Add powder and cream, stir until smooth. You can use a stand mixer or immersion blender for more efficient mixing.
  3. Since the glaze was not heated over an open fire, you can almost immediately pour it over the prepared dessert.

The same principle is used to prepare icing from dark or milk chocolate. Instead of cream, use butter or milk if desired.

Using the same glaze, draw square windows on the pieces of already cut dessert.

A house made of cookies and cottage cheese, a step-by-step recipe, is a real culinary miracle. A dessert that does not need to be baked, which even children can prepare for any holiday. And they will take up this task with special enthusiasm, because how exciting it is to create your own, albeit simple, but your own creation. And the “assembly” of our cake will be a special mesmerizing moment, because in a matter of seconds the faceless layers of cookies will turn into a wonderful three-dimensional pyramid or house. A classic version of cottage cheese cake

At the same time, it is also the simplest. Starting from this base, various modified cooking options were created. The cooking itself takes a minimum of time, but you will be able to enjoy the “House of Cookies and Cottage Cheese” cake only after a few hours. It is most convenient to prepare it in the evening, so that all the ingredients are ready overnight, and in the morning you can pamper your loved ones with an appetizing, satisfying and healthy dessert.

Ingredients:

  • Square or rectangular cookies - 21 pieces;
  • Sugar - ¾ cup;
  • Cottage cheese - 450 grams;
  • Sour cream - 5 tablespoons (maximum fat);
  • Vanilla sugar - 1 package;
  • Milk - 100 ml;
  • Raisins - to taste;
  • Chocolate - for decoration.

Cooking method:

  1. It is worth starting the preparation with the cream, since this process takes the most time. Mix sour cream, cottage cheese and both types of sugar previously ground into powder. Of course, it is not necessary to make powder, but grains of sugar may not dissolve and crunch on your teeth, which, you see, is not very pleasant.
  2. Beat the resulting mass with a mixer or blender into a homogeneous puree. If you think that the mass is not liquid enough, you can correct this by adding a couple of tablespoons of milk. This manipulation will add uniformity and airiness to the structure.
  3. Now we begin to form the cake house from cookies and cottage cheese. To do this, we need to prepare the surface by lining it with thick polyethylene. We do not recommend using cling film for this purpose, since it is not strong enough and it will not be very convenient to “build” our house with its help.
  4. Heat the milk to about 40 degrees. We soak each of the cookies in it. This should be done by briefly dipping them one at a time, rather than pouring milk over everything. Then we lay out the cookies in three rows. We get 3 rows of 7 pieces.
  5. Mix the curd mass with raisins and spread it in an even layer on our base, not forgetting to leave it for the external decor.
  6. Holding the edges of the polyethylene, we lift the outer rows of cookies, thus making “walls” for our house, and press them tightly. Carefully remove the polyethylene and coat the outside with the remaining curd mass, sprinkle with grated chocolate and, again packing it in plastic, put it in the refrigerator.

After brewing for several hours, the no-bake cottage cheese house cake will be completely ready to serve. You can also involve the youngest members of the family in its preparation, because it is both exciting and completely safe, since neither hot ingredients nor sharp objects are used.

Chocolate version

Well, are there people who don't love chocolate? Of course, many people don’t eat it due to diets or allergies, but if this is not your case, then we suggest making a chocolate house from cottage cheese and cookies, because it’s so simple and incredibly tasty that you simply can’t tear yourself away from this dessert! Hurry up and write down the recipe!

Ingredients:

  • Square cookies - 2 packs (chocolate);
  • Sugar - 1 glass;
  • Cottage cheese - 0.5 kg;
  • Butter - 200 grams;
  • Cocoa - 2 tablespoons;

Cooking method:

  1. We start preparing this option with chocolate glaze, which will cover our house. We make the following mixture: cocoa + half the amount of sugar + 150 grams of softened butter. Grind everything until it becomes a homogeneous paste. In this situation, it is better to use powdered sugar instead of granulated sugar, since it melts instantly and guarantees a uniform structure.
  2. Now it’s the turn of cottage cheese, which we mix with the remaining butter and sugar. It is best to puree this mass with a blender.
  3. We line the work surface with polyethylene, onto which we spread the chocolate mass in an even layer. We lay out three rows of cookies of any desired length on it. It is better to choose shortbread cookies, since biscuits have a bland taste and will get soggy very quickly, so it will not be possible to achieve a beautiful shape for a cottage cheese house from cookies.
  4. Spread the curd mass in a fairly high, dense layer and level it with a knife.
  5. Raise the edges and form a triangular structure, pressing the cookies tightly on the sides. We wrap it in plastic and put it in the refrigerator to harden.

You can decorate this chocolate dessert with nuts, and add pieces of chocolate or a spoonful of cocoa to the curd mass.

Cake with banana filling

The combination of banana and cottage cheese can be safely called classic, because it is simply impossible to come up with anything more tender and delicate. It is not surprising that, having changed, the recipe for cottage cheese cake acquired a banana filling. Having prepared a cottage cheese house from cookies with banana, you will see from your own experience how delicious it is!

Ingredients:

  • Milk - 3-4 tablespoons;
  • Cookies - 12 pieces;
  • Cottage cheese - 250 grams;
  • Sugar - 3 tablespoons;
  • Coffee, cocoa milk - 150 ml;
  • Milk chocolate - 1 bar;
  • Banana - 1 piece.

Cooking method:

  1. We start according to tradition with the curd filling. Grind the cottage cheese with sugar until smooth. If you took dry curd, then to get a light texture, add a spoonful of milk and beat again.
  2. We prepare your choice of coffee, cocoa or heat milk. There is no need to add sugar to the drink, since it will be a “impregnation” for the cookies, which we will dip into it one by one.
  3. Place softened cookies on the prepared surface. You will get a 3 by 4 rectangle.
  4. Lubricate it with curd mass. Place a banana in the center. It can be cut into slices or simply cut in half. You can coat it with cottage cheese again.

I made my first cottage cheese house from no-bake cookies three years ago. And I immediately realized that I liked this dessert! I liked everything about it - the top glaze, the creamy filling, and the overall delicate taste. So I started experimenting further. Today I'm going to talk about one of my favorite options! 😉

To prepare the house you need to prepare a little in advance. Namely, make sure you have baking paper (parchment paper) and remove the butter from the refrigerator in advance so that it is completely softened by the right time. Well, then it’s a matter of technology! 😉

So, glaze. It is very simple to make - you need to combine soft butter with cocoa and sugar. What should you pay attention to here? Firstly, it is better to take butter rather than spread. Secondly, cocoa powder is the best, in my opinion, classic - without any additives. Well, and the sweet component. Here I recommend taking powder! I reported something and added sugar. It disperses a little harder in this mass, but overall this does not affect the taste much. Adjust the quantity based on your preferences.

The next layer in the cottage cheese house will be cookies. I like to use it as a basis and prepare various delicious treats -...

It is better to choose regular cookies, without various flavorings. And rectangular/square shape. That is, the best option would be cookies like “Baked milk”, “Cow”, “Sugar”, “For tea”, “For coffee”. This time I have an “Anniversary Celebration”. Very fresh and crumbly. Too much! 😀 So I was a little worried that it might break while assembling the cake. With this in mind, I acted as carefully as possible, and as a result, all the cookies were intact.

Well, now the actual curd filling. Oh, how many different options you can come up with here! I most often use the tandem of cottage cheese and butter as a basis. And then I start experimenting.

I put raisins in the filling of the previous house. It was tasty, but it violated a certain unity - everything was very tender, melting in the mouth, and there were raisins, although quite soft. Therefore, now I have abandoned such an idea. I added powdered sugar and... a little instant coffee - for flavor and so that the filling was not purely white - it seems less appetizing to me. Here you can get creative and try a variety of spices. But more about that some other time 😉 And now let’s make a delicate cottage cheese house from cookies with a barely noticeable aroma of coffee...

For the glaze:

  • butter - 230 g
  • cocoa - 4 tbsp.
  • sugar or powder - 1 tbsp.
For the base:
  • rectangular cookies - 15 pieces
For filling:
  • pasty cottage cheese - 500 g
  • butter - 120 g
  • sugar or powder - 5 tbsp.
  • instant coffee - 2 tsp.

The progress of my construction activities;)

I started with the frosting. I combined softened butter, traditional cocoa powder and sugar (the amount can be increased if you like sweeter desserts).

I beat it, although you can simply grind it with a spoon until a homogeneous mass is formed.
The glaze is ready.

It's time for parchment paper. Before you apply glaze for the house on it, you need to figure out how much area of ​​paper you need to cover.
Cookies can be laid out in different ways. Firstly, you can take not 3x5 pieces, like I did, but 3x4 or 3x6. That is, the width should be three cookies, and adjust the length as you wish.
In addition, cookies can be laid out horizontally or vertically. This time I preferred the first option. When I took 12 pieces (I made a 3x4 rectangle), I laid them out vertically.

So, I figured out what the length and width of the base for the house would be. The length of the glaze can be applied directly flush with the cookies. The width of the glaze should extend beyond the edges of the cookies by 1.5-2 centimeters.

Spread icing onto parchment paper and spread evenly. Just in case, I left 1-2 spoons so that later I could “plaster” something if necessary. I placed the cookies on top as planned - 3x5.

Now for the filling. Its quantity may vary depending on the size of the cookies (mine are 7x5.5 cm) and the method of laying (vertical/horizontal arrangement).

So, for the filling I combined butter, cottage cheese, coffee and powder.
The butter here, too, as for preparing the glaze, must be softened.
I took pack cottage cheese, 9 percent, MolKomovsky. Fat content is not of fundamental importance, but consistency and moisture content are the opposite. Coarse cottage cheese is usually drier. Therefore, it would require more oil or the addition of a small amount of sour cream.
I simply ground the instant coffee into “flour” with two spoons.
You can use sugar instead of powder, but the powder is gentler. To determine the quantity, try the finished filling. Perhaps 5 spoons will not be enough for you, and you will add a little more.

So, I mixed all the ingredients well. My mixture turned out to be quite thick, so it was more convenient for me not to beat it, but to mix it thoroughly with a spoon.
I placed the filling on the middle (second of three) row of cookies. I tried to lay it out right away so that the cross-section of the filling was close to the shape of a triangle - it covered the base of the cookies in the middle row, and tapered towards the top.

And now the most exciting moment - I lifted both edges of the paper so that the first and third row of cookies formed a house (triangle).

The top of the house should be covered with glaze. This is where chocolate indents come in handy. Covered the top of the structure so that there were no bare cookies left.

Looking from the side, I was convinced that everything was in order - the top of my house would be covered with glaze. Place the resulting structure in parchment paper in this position on a tray and put it in the refrigerator.
The house must stay there for at least 6 hours. For me it took longer to cool - I cooked it in the evening, and we ate it in the afternoon.

After a few hours, I took it out of the refrigerator and carefully removed the parchment paper.

I really like the sides of the house - so chocolatey-chocolatey!

I cut the dessert with a sharp knife into portioned pieces approximately 2.5 cm wide.

Design: Classic

Building materials:


  • Square cookies – 6 pieces;
  • Cottage cheese - 1 pack (about 180g is needed for construction, and there are 200 in a pack - you can eat it like that);
  • Powdered sugar – 1-2 tablespoons;
  • Cocoa powder – 0.5 tablespoons;
  • Chocolate covered cheese – 1 piece;
  • Butter – 1 tablespoon;
  • Milk – 3 tablespoons.

For the glaze, the original recipe suggested using sour cream, butter and cocoa. But this glaze was not thick enough for me. Therefore, I recommend making glaze from melted chocolate, a quarter of a bar is enough. Or you don’t have to cover the roof with chocolate. But with glaze it’s tastier and more beautiful.

It is better to take the cottage cheese soft, pasty, and moderately moist. And the freshest, because the dessert does not undergo heat treatment!

Knead the cottage cheese with a fork with powder and soft butter.


We separate a small part of the curd mass - something between a third and a quarter - and mix it with cocoa.


Quickly dip the cookies in milk; The softer the cookies, the less time you need to hold them so as not to get soggy. A couple of seconds is enough. If the cookies are hard, you can bake a little longer.


Place three cookies in a row, and spread half of the white cottage cheese on them in an even layer. Place glazed cheese in the center; its edges can be cut off and eaten, and the house has windows! We put a little more light curd mass on top, and then move the two outer cookies to a vertical position - these are the “walls”.


Having filled the places where needed with curd “putty”, we place a “covering” of the 4th cookie on top.


Place chocolate curd on it, giving it a triangular shape. And we build a “roof” from 2 more pieces of cookies. You can top it with chocolate glaze.

What a cute cottage cheese house! By the way, the three of us ate it, despite its compact size.

House No. 2
Design: Gable hut with banana inside

This is the simplest construction - a triangular “hut” with sides made of cookies, curd filling and a surprise in the form of a whole banana in the middle! However, the banana can be replaced with pieces of fruit or dried fruit, berries, chocolate chips... You can come up with a sea of ​​options with the same basic design.

In some recipes, cookies are laid out in two layers, interspersed with a small amount of cottage cheese. I laid it out in one layer, so it took not 400g of curd mass, as in the original recipe, but less, about 300-320g. During the formation of the house, the excess “mortar”, that is, cottage cheese, came out of the joints and was eaten.


  • Cookies – 15 pieces (if in 2 layers, then 30 pieces);
  • Cottage cheese – 300 g (if 2 layers, then 400);
  • Thick sour cream, 20-25%, or cream - 3 tablespoons;
  • Powdered sugar or sugar - 3 tablespoons;
  • Banana – 2 pcs.;
  • Chocolate – 50 g;
  • Vegetable oil – 0.5 tablespoon;
  • If the cookies are hard, then milk - 30 ml.

Cookies are suitable for the Baked Milk type. If it is soft, then you don’t need to soak it. Harder cookies will also work, but before placing them you need to dip them in milk for a couple of seconds.

Place cling film or a sandwich bag on the paper and place the cookies in three rows according to a 3x5 pattern.


Knead the cottage cheese with powdered sugar and sour cream. You can use sugar instead of powder, but it is always gentler. You can vary the amount of sweets to your taste: take not 3, but 2 spoons, or, if the cottage cheese is sour, then 4.


Place a little more than half of the curd mass on the cookies and distribute evenly. It is more convenient to spread not with a spoon, but with a wide knife.


In the middle, on the “central path” of cookies, place a banana. If it is curved, press it slightly to give it an even shape.


We spread the rest of the cottage cheese on top of the banana; there is no need to spread it over the entire surface - on the contrary, we give the mass a triangular shape.


Now we pull the film by the edges and lift the sides of the hut, forming a house. Press firmly and remove excess curd mass. We wrap the house in film and put it in the refrigerator for half an hour to set.


Meanwhile, prepare the glaze for decoration. Melt the chocolate pieces in a water bath, adjust the thickness of the glaze by adding vegetable oil.

Having taken out the dessert, we pour chocolate over the house.


Cut into portions with a sharp knife. This is an interesting cut. It will be easier to carefully cut the curd dessert if you soak the knife in hot water.


House No. 3
Construction: four-story with a gable roof.

This house looks like a real log house. You can make it any length and number of floors. This design uses 24 cookies; the house consists of 4 sections, each with 4 “floors” + 2 cookies for the roof. In the same way, you can make 3 or 5 “floors”, and sections - from one (then you will get a small house, like No. 1), or 2, 3... depending on what company is going to eat!

The cookies need to be square in shape, preferably not hard ones, but something like “Baked Milk”, because hard ones are not soaked enough and the dessert is difficult to cut.


  • For 24 cookies:
  • 400 g cottage cheese;
  • 50 ml milk;
  • 3-4 tablespoons of heavy cream or sour cream;
  • 3-4 tablespoons of sugar or powdered sugar.

Cream is preferable, as it makes the cream thicker and more pleasant to the taste. And powdered sugar is preferable to sugar - it is softer.

For the glaze:

  • 50 g dark chocolate;
  • 30 g white chocolate;
  • 1.5 teaspoons of unscented sunflower oil.

White chocolate can be replaced with coconut flakes, and milk chocolate can be used instead of black chocolate.

Knead the cottage cheese with powdered sugar and cream to obtain a homogeneous creamy mass. If the cottage cheese has lumps, it is advisable to rub it with your hands or beat everything in a blender.

I poured berries and pieces of fruit into the curd mass: blueberries, raspberries, apricots, bananas. It will turn out more colorful and tastier!


Dip both sides of the cookies into milk - quickly so as not to get soggy - and place them in one row on parchment or foil.


Spread the cookies with a layer of curd mixture.


Place a second layer of cookies dipped in milk on top, and so on, all 4 layers.


Then we spread the rest of the cottage cheese, and cookies on it, forming a “roof”.


We wrap the “house” tightly in foil or parchment and cling film (bag), and put it in the refrigerator for 1 hour.

Once the dessert has cooled and “hardened”, you can begin decorating. Melt the chocolate in a water bath, adjusting the thickness of the glaze by adding sunflower oil. First, melt the white and put it in a cornet (or in the corner of a thick food bag). Then melt the dark chocolate and pour it on the roof of the “house”. When the glaze hardens, after about 10 minutes, cut off a corner from the bag and draw white patterns. If you draw right away, on top of warm glaze, the drawing will not stick, so you need to wait until the glaze sets.

It was a culinary-geometric attraction, and every time, such a simple and instant magic of changing the shape of the cake delighted me!

The Cottage Cheese Cake is very easy to prepare; even children 8-12 years old can assemble it, if they are supervised by adults, and give mom a delicious hand-made gift for March 8th or a birthday!

Now I will tell you how to make a Cottage Cheese Cake according to our old family recipe.

What to cook from

Cookies - 36 pieces (regular, flat, like in Soviet times, better - square);
Full-fat cottage cheese (except grained!) - 300 g;
Butter (good quality) - 150 g;
Sugar - 1 glass;
Cocoa - 1 tablespoon;
Salt - a small pinch
A little milk, kefir or liquid cream for moistening the cookies

Butter - 50 g;
Milk (sour cream or cream) - 2 tablespoons.;
Sugar - 4 tablespoons;
Cocoa - 2 tablespoons;
A pinch of salt

How to make a cake from Curd House cookies

Curd cream

Softened butter (just take it out in advance and let it stand at room temperature), add a little salt and beat with sugar. As soon as the sugar dissolves, add cottage cheese to this buttercream. Don’t beat the cream with the cottage cheese, just mix it! Otherwise, it will become saturated with air and become liquid!
Divide the cream into 2 parts, add cocoa to one (I advise you to mix the dry cocoa with 1 tablespoon of sugar well so that the cocoa does not form lumps in the cream).

Line a flat surface of the table or large cutting board with cling film or foil (a large piece so that all the cookies fit in: 6 pieces long, 3 pieces wide, and you can wrap the finished cake).

Assembling the cottage cheese house

Moistening each cookie in milk, lay out half of the cookies (18 pieces) into a rectangle: 6x3 (cookies).


I moistened it not with milk, but with kefir; we don’t drink milk at home.

Grease the resulting cake with white or chocolate curd cream.


Place a second layer of cookies

Place a second layer of cookies dipped in milk and coat them with the second remaining cream.

And then there’s this trick, you need to fold the house: take the edges of the film (or foil) on both long sides of the cake, lift it, bringing the outer rows of cookies, left and right, towards each other and connect them (just along the line of the center of the cake). That is, the middle row of cookies remains like the bottom of the house, and the side rows form a sort of gable roof over it.

Cook the glaze- combine dry cocoa powder with sugar and salt. Add milk to them, mix until the sugar begins to get wet a little, dissolving. Add butter and heat, stirring frequently until thickened and sugar dissolved. Cool slightly (while the glaze cooks and cools, the cookies become more saturated with cream and soften).

Pour glaze over the cake and wait until it starts to dry. Then wrap the cottage cheese house (with the free edges of film or foil) and put it in the refrigerator to set for 12 hours.

Is it possible to replace cottage cheese with curd mass?

Of course, it is possible if it is a high-quality curd mass. Then there is no need to add sugar to the cream, but I would add a piece of butter - about 50-80 g. Oil is required to maintain the triangular shape of the Cottage Cheese House cake. In the refrigerator it hardens, holds together and holds the entire sweet structure of the cake.

You cannot use grained cottage cheese for cream! It's for other dishes. But children's curd cheeses are quite suitable.

Too liquid cottage cheese will harden in the cream worse than regular, dense one. It's better not to take risks. In general, try to choose high-quality natural products for the cream so that it turns out thick and strong.

Which cookies are suitable for Cottage Cheese House?

For our cake, it is best to use simple sweet shortbread (or as it is also called, sugar) square-shaped cookies. Suitable: Jubilee, Strawberry, Sugar, Baked milk and various other cookies, ordinary and inexpensive.


3x6 square cookie layout

If there are no square cookies, then you can take a rectangular one, but then they need to be placed in a row vertically, lengthwise, that is, the long side will form the length of the cake, and the short side of the first three cookies in the row will form the width of the cake.


Four rectangular cookies are approximately equal to 6 square cookies when laid out this way.

It is clear that in the case of long cookies, you need to lay out not 6 cookies in length, for example, 4.

How to soak cookies instead of milk

If you or your loved ones cannot tolerate milk, you can sprinkle the cookies with wine or cognac (or even grape, pomegranate or apple juice without pulp, fruit syrup - mulberry, pomegranate, rosehip syrup, etc.), diluted with boiled water.

If there is no syrup or juice, and alcohol is not acceptable, because you are preparing a curd cake for children, you can dip the cookies in liquid sour cream.
