How to make pancake snack cake:

So, today (if you remember) we are preparing a pancake snack cake with chicken. Or it would be more correct to say, with chicken pate. I would like to apologize right away for not taking pictures of the entire process of making this original and very tasty snack cake. Yes, you can do it easily without a photo, because everything is very simple.

First of all, let's put the chicken fillet to boil. You can salt the water in which you will cook the chicken and add your favorite spices. Peel and wash onions, carrots. Chop the onion and grate the carrots on a coarse grater. Heat a frying pan with vegetable oil, fry the onions and carrots until tender over low heat. Then cool.

While the onions and carrots are cooling and the chicken is cooking, we will start baking pancakes. The recipe is for one pancake, but for a snack cake we need 5 pancakes. You can make the so-called “dough” for 5 pancakes at once, or you can knead it for each pancake separately. Do whatever is more convenient for you.

I kneaded one pancake, and while it was frying, I immediately kneaded the second one, and so on. Take a bowl, break an egg into it, pour in milk, add flour, salt, stir with a whisk or a simple fork. Heat a frying pan with vegetable oil, pour in the egg mixture, fry on both sides until cooked.

We've sorted out the pancakes, that is, baked them, give them time to cool. Meanwhile, the chicken is also cooked, let it cool down a little. Meanwhile, we will prepare a blender to make chicken filling or pate, no matter what it is called.

We cut the chicken into small pieces (you can tear it), put it in a blender. There we put fried onions and carrots, mayonnaise, cut pickles, garlic, salt and pepper to taste, beat everything until smooth. The chicken filling should look like thick sour cream.

Yes, do not overdo it with salt, pickles, mayonnaise, and chicken meat were salted while it was cooking. That’s why I don’t add salt when I’m whipping the filling, I taste the finished stuffing, and then add more salt if necessary.

So everything is ready, all we have to do is assemble the pancake snack cake into one whole. Take a flat plate, put a pancake, spread the filling, put a lettuce leaf on top, first of course washed and dried on a paper towel.

  • raw egg 1 pc.
  • milk 100 ml
  • water as needed for dough

  • vegetable oil 30 ml
  • boiled chicken fillet or leg 170 g
  • pickled cucumbers 2 pcs.
  • processed cheese 1 pack
  • mayonnaise to taste
  • garlic 1 clove
  • dill and green onions to taste.

Pancake snack cake recipe.

1. To prepare this snack cake, you must first boil or (better) bake several medium-sized beets. Baked beets are much more fragrant than boiled ones; their color is rich and bright. Peel the beets.

2.You will also need to boil the chicken fillet or leg first. Alternatively, you can wrap the fillet in foil and bake it at the same time as the beets (but watch the time here) for 15-10 minutes.

2.Use a fine grater to chop the beets into a deep container.

3.Pour milk into the beets, beat in the egg, add a pinch of salt and sugar.

4.Now add wheat flour (2 tbsp) to the container where you will make the dough.

5.Use a blender to grind all the ingredients into a homogeneous dough. Pay attention to the thickness of the dough; you may need to add a little water. This beet dough has a slightly thicker consistency than regular pancake dough. Before you start baking pancakes, give the dough 15 minutes to rest, let it stand aside.

6.To avoid wasting time, start filling the cake. Disassemble the chicken into fibers or cut it with a knife, and chop the pickled cucumbers on a coarse grater.

7. Transfer the chicken and cucumbers to a deep bowl, add grated processed cheese there. To ensure that the cheese is grated well and does not stick to the grater, first keep it in the freezer for 10 minutes.

8. Season the filling with mayonnaise, add garlic, dill, and spices to taste.
