Dryers are associated with biscuit cookies - they are not as high-calorie as, for example, shortbread cookies. They are prepared on the basis of a simple set of foods and are considered a dietary dessert that does not cause allergies. But many people love drying just like that and even feel a gentle thrill and awe at the mere mention of this delicacy familiar from childhood.

Yes, you can always buy ready-made dryers in the store. But homemade ones turn out to be much more aromatic, and the most charming thing is that they can be eaten right after cooking - hot, fragrant, with a glass of milk ... It's tempting, isn't it?

Fresh homemade dryers have a completely unique texture: they are still a little soft on the inside, but already have a crispy, though not too hard crust. If you leave the dryers open for several hours, they will become completely similar to the store ones - completely and uncompromisingly crunchy.

Drying is prepared in two steps, which makes it so shiny and appetizing. The famous American bagel buns are prepared according to a similar principle: first, the dough pieces are boiled a little in sweet water, and then baked until tender and golden brown.

Cooking time: 70-80 minutes

Finished product yield: 18-20 dryers

Ingredients for the recipe

  • wheat flour 1 cup
  • serum 70 ml
  • sugar 40 grams
  • 1 egg yolk
  • soda ¼ tsp
  • a pinch of salt
  • vanillin

How to cook drying at home

    Add the yolk to the flour and stir lightly.

Then add 10 grams of sugar, salt and baking soda.

After that, pour in the serum.

Knead a fairly dense dough and, wrapping it in plastic wrap or a bag, let it rest for 30-40 minutes.

Divide the dough in half. Roll a sausage from each part.

Cut each sausage into 9-10 pieces and roll them into balls.

Use your finger to poke a hole in the center of each ball, thus forming a ring.

Heat about 1-1.5 liters of water in a saucepan and add the remaining sugar to it.

Toss the dryers in boiling water and cook for 15 seconds after they float.

Then remove the blanks with a slotted spoon and place them on a baking sheet lined with baking paper.

Bake drying at 220 degrees for 10-15 minutes, until very golden brown.

You can store drying in a closed container for 2 weeks. But, believe me, they will be eaten much earlier. Bon Appetit!

You know, there are 2 types of dryers in the store: some, when you bite, they are very fragile and pour out straight, they are darker and smoother, they obviously contain fats, and the second, lighter, crisp, harder and fresher. So, my drying is the second. This is the simplest drying, they are done quite simply and quickly. For me, the most problematic is the rolling of sausages 0_o
There seems to be nothing difficult and scary, but patience was barely enough for this. My dryers are small, about 2 cm in diameter. It turned out 1 whole baking sheet and another 1/4 baking sheet.

Ingredients

Flour - 300 gr.
Water - 110 gr.
Egg - 1 pc.
Salt - 1 tsp
Sugar - 1 tsp for 1 liter of water

Preparation

Pour flour into a bowl, hammer in an egg, add water, salt.

Knead a tough dough. Dust the table with flour. Lay out the dough, cover with a towel and rest for 15-20 minutes.

Divide into 4 parts. Cover the part No. with a towel so that it doesn’t get windy.

Roll out the dough into a thin rope with a diameter of 0.5 cm.
Divide into stripes, form rings.

Boil water with sugar. Throw a few rings into boiling water and cook until they float up (15-25 seconds)

Lay out on a towel. Allow to dry.

Cover the baking sheet with parchment (in the original, grease with vegetable oil, but since the recipe was written down long before my birth, I think there were simply no other options. I put it on parchment out of habit)

Bake at 200C for 15-18 minutes. (I was reinsured and baked for 22 minutes, in vain, I dried out the smallest)

To be honest, I do not really like bakery products, especially of such a plan. However, it is always very interesting to see how all this is done. So, in the city of Kirov, we were able to admire the process of birth of traditional dryers and crackers - the very ones whose garlands, along with accordion and samovar, are considered a symbol of Russian tea drinking.

We were to visit the Bakery and Confectionery Plant, which also has a second name - Novovyatskiy Khlebozavod. The production employs about 350 people, and in the drying and rusks shop there are about 60. Up to 15 tons of products are made here per day. The enterprise is modern, clean, only information about it is for some reason wildly classified - there is almost zero information on the Internet, and in the workshops it is strictly it is forbidden to take pictures...
