What is the main thing in this soup? Of course meatballs. They differ from meatballs not only in size (meatballs are smaller), but also in the fact that there is no rice in the minced meat. The minced meat itself can be made from any meat, but it is best when the meatballs are made from different types of meat. You can, for example, add chicken to minced pork. If you like fish, you can make balls from minced fish.

To make the soup lighter, you can add the pulp of a soaked loaf to the minced meatballs, but this is not necessary. By the way, you don’t need to put a lot of eggs in the minced meat to hold it together; just knead it well.

The soup itself is hearty, light with pieces of meat melting in your mouth. Therefore, not only adults, but also children love such soups.

Only fresh minced meat is used. A real hostess will never take frozen meat. If you buy minced meat in a store, you need to take it chilled. Add to minced meat breadcrumbs, or bread crumbs, pre-soaked and squeezed.

Rusks can be replaced with semolina; it swells well and holds the minced meat together. Do not overdo it with cereal, there should be no more than 1-2 tablespoons per 0.5 kg of minced meat. After you add semolina to the minced meat, let it brew for 15-20 minutes.

I called this recipe the main one, since we prepare it often, but we prepare other recipes based on it. And so let's get started.

We will need:

  1. minced meat - 200-300 g;
  2. potatoes - 3 pcs. average;
  3. carrots - 1 piece;
  4. onion- 1 PC. average;
  5. greens - 20-30 g;
  6. butter - 20 g;
  7. vegetable oil- 2-3 tablespoons;
  8. water - 2 liters;
  9. salt to taste;
  10. bay leaf - 1 piece;
  11. black ground pepper taste.

Step 1.

We used ground beef in this recipe, but you can use any kind. Peel and chop the onion using a grater or blender. 1/2 of a medium onion goes for 200 grams of minced meat. The butter must be melted or used softened.

Step 2.

Add chopped onion, butter, salt and ground black pepper to the minced meat, as well as a small amount of water, so the minced meat will be more juicy.

In addition to these ingredients, you can add a small amount of fried onions and carrots to the minced meat, grated cheese parmesan, chopped herbs, finely chopped bell pepper.

After you have kneaded the minced meat, throw it as hard as you can onto the board, then lift it up and throw it again. Do this 10-15 times until it becomes smooth and uniform. This is necessary so that the meatballs do not fall apart during cooking.

Now take a teaspoon of meat, put it on your hand and roll into balls. In this case, it is better to moisten your hands with water, so the meat will stick to your hands less. Now we do the roasting. Grate the carrots and cut the onion into cubes. You can fry everything at the same time as in the first recipe. But I often first fry the onion in a frying pan until half cooked, then add the carrots.

Now add the fried vegetables to the soup, add salt and pepper. Mix everything thoroughly.
