Recipe 2: Rice porridge with pumpkin

This porridge is a favorite among many gourmets. It's delicious, sweet and sunny. It is especially useful to eat it in the winter months to get not only a portion of vitamins and beneficial microelements, but also a boost of good mood. After all, the orange color of the pumpkin is very colorful and reminiscent of summer. For porridge, it is better to choose nutmeg pumpkin varieties with brightly colored flesh. The recipe will indicate several types of dried fruits. Based on your preferences, some can be excluded from the composition or replaced with others, for example, dates or figs. Dried fruits are sweet in themselves, so the porridge is cooked without adding sugar. Choose nuts at your discretion, for example, you can take walnuts or hazel. They must be removed from the shell and chopped with a knife or chopped with a blender.

Ingredients: a glass of rice, a handful of raisins, prunes and dried apricots (about 50g each), 100g of butter, a third of a glass of nuts, a tablespoon of honey, salt.

Cooking method

Ingredients for 2 servings

  • 250 ml milk;

Technology: step by step

Short-grain rice is best suited for this porridge. The porridge turns out creamy, tender, similar to dessert.

Ideal proportion for rice porridge: 1:10. To make it easier to understand, I will give an example: Measure out 1 liter of liquid (50/50 milk and water), and then pour rice into a measuring cup to the 100 ml mark. I was preparing a small portion, so I divided this proportion in half.

It is very important to maintain proportions. To obtain rice porridge with a pleasant consistency, it is necessary to maintain a grain-to-liquid ratio of 1:10. The liquid in our case is water and milk. We take them in equal proportions.

Pour milk and water into a suitable size stainless steel pan with a thick bottom. Add the required amount of rice and mix.

How and for how long to cook

Place the pan on low heat and cook, stirring occasionally. Only after 15 minutes the liquid in the pan will boil, by this time the rice will have swollen a little and been saturated with liquid.

Cook over low heat until the rice porridge is ready (another 25 minutes from the moment it boils). Cooking time may vary slightly, depending on the quality of the rice.

Add butter, salt, sugar (optional) to the finished porridge. Stir and cover with a lid. Wrap the pan with porridge in a towel and set aside for 20-30 minutes.

Our rice porridge with milk for the baby is ready and can be served.

If you did not add sugar to the porridge, you can serve it with your favorite jam, honey or condensed milk.

Using a multicooker, which greatly simplifies the entire cooking process, you can cook incredibly tasty and aromatic milk rice porridge.

Ingredients:

  • Rice - 1.5 multi-cups
  • milk - 1 liter
  • sugar - 1-2 tbsp. l
  • salt - 1/2 tsp
  • butter - to taste.

Cooking method:

Wash the rice in cold water, then transfer it to the multicooker bowl. Add sugar, salt and one liter of milk.



After the time has elapsed, after the sound signal, we open the lid and see that our dish turned out to be quite liquid. But if you prefer a thicker porridge, in this case, you still need to turn on the multicooker to the “Simmering” mode for 30 minutes.


Then place on plates, add butter and serve.

Healthy rice porridge with pumpkin


Pumpkin is a very healthy vegetable. Many professionals in their field recommend using it for those who adhere to a diet. If you or your loved ones have stomach problems and have to limit your diet, then this dish will greatly alleviate your condition, because the vegetable contains fiber, which will cleanse the intestines without much difficulty.

Ingredients:

  • Milk – 400 ml
  • pumpkin – 160 gr
  • rice - 70 gr
  • sugar - 1-2 tbsp. l
  • salt - to taste.

Cooking method:

Peel the pumpkin from the skin and seeds, wash and cut into small cubes, about 1 by 1 cm.

Now pour milk into the pan, add sugar and salt. Place on high heat and just before boiling, add pumpkin pieces and thoroughly washed rice.


Stir and let the whole mass boil, then reduce the heat to low and continue cooking the porridge for another 20 minutes. Then turn it off, cover with a tight lid and leave to infuse for 10 minutes until fully cooked.

Rice porridge with raisins


Not everyone will like this porridge with the addition of raisins. Although lovers of healthy and proper nutrition are obliged to pay close attention to it. After all, 100 grams of the dish contains complex carbohydrates, which will easily charge you with energy until lunch without any unnecessary snacks. As for raisins, they will give our body additional microelements, vitamins and minerals.

Ingredients:

  • Short grain rice - 1 cup
  • milk - 1 glass
  • water - 2 cups
  • raisins – 80 gr
  • sugar - 1-2 tbsp. l
  • butter - 2 tbsp. l
  • salt - to taste.

Cooking method:

Pour water into a saucepan, put it on the fire and bring to a boil. Place the rice, thoroughly washed several times, into boiling water and add sugar and salt to taste.

Reduce heat to medium, stirring constantly so that the rice does not burn. And as soon as it starts to swell, add milk and add pre-soaked raisins, washed for 10 minutes.

Now reduce the heat to low and continue cooking until tender, stirring constantly.

There is no need to wait until all the liquid from the pan has evaporated, otherwise the porridge will turn out dry.

The finished porridge should be creamy in color. We put it on plates and add butter, but the main thing is not to overdo it so that it doesn’t turn out greasy!
