Products:

  • chicken meat – 180-200 grams
  • beans (canned or boiled) – 100-120 grams
  • - 100g
  • onion – 1

How to do

  1. Fry the meat in vegetable oil.
  2. After 5 minutes, add the grated carrots, and after another 5 minutes, add the chopped onion and fry until tender.
  3. Add beans to this mixture. (If you don’t have it canned, then boil it in advance)
  4. Salt and add a little vegetable oil.

Dietary

  • apple and carrot - 1 each
  • raisins – 1 handful
  • liquid honey, olive oil, Apple vinegar– 1 teaspoon

Let's do

  1. Cut the apple into cubes.
  2. Three carrots on a coarse grater.
  3. Soak the raisins in water for 20 minutes.
  4. Mix honey, oil and vinegar.
  5. Add to the rest of the ingredients.

With crackers

Necessary:

  • carrots – 1-2
  • Adyghe and any hard cheese – 80-100 grams each
  • crackers – 1 small pack (40 grams)
  • sour cream or natural yogurt – 6-7 tablespoons
  • a little salt, turmeric, ginger, ground black pepper

Preparation

  1. Grate the peeled and washed carrots.
  2. Cut the Adyghe cheese into small cubes and fry with spices in vegetable oil for about 5 minutes. Let cool.
  3. Three hard cheeses on a grater.
  4. Mix everything, season and season the salad.

Today I am sharing a recipe for Carrot Salad with Pistachio Yogurt.

This salad belongs to the so-called warm salads. This means that, firstly, it can be eaten warm, and secondly, due to the set of components and their nutritional value(for example, chickpeas - vegetable protein, carrots - carotene and fiber, yogurt and feta - protein and calcium, etc.) such a salad is a complete meal for lunch or, especially, dinner, which will please vegetarians and, perhaps, interest lovers of healthy eating.

This recipe belongs to the cuisine of fusion style, which means fusion or unification.

Fusion style is a mixture of different styles and cuisines, for example, as in this recipe, a mixture of European and asian cuisine. This style is widely used both in home and restaurant kitchen in various Western European countries and the USA.

With pistachio yogurt

Ingredients:

  • 500 gr. medium sized carrots
  • regular olive oil
  • ½ tsp. curry powder
  • 1 tbsp. honey
  • 1 tbsp. white wine vinegar
  • 250 gr. cherry tomatoes
  • 2 small cobs romaine lettuce
  • 1 can canned chickpeas
  • 200 gr. feta
  • 4 pieces of black bread
  • ½ bunch of coriander

For pistachio yogurt:

  • 25 gr. pistachios
  • 60 ml. thick yogurt (like Greek)

Let's start cooking

  1. Peel and cut the carrots into thin slices.
  2. Heat a little (2-3 tbsp) olive oil in a frying pan and fry the carrots with curry powder for about 2 minutes, stirring constantly.

Carrots go very well with curry powder to taste.

  1. Pour in honey and vinegar, mix everything well and simmer over high heat for about 3 minutes until the vinegar evaporates. The carrots should remain crispy; there is no need to simmer them until all the vitamins have evaporated.
  2. Transfer carrots to a bowl and set aside.
  3. In a dry frying pan, fry the pistachios for about 3 minutes, chop them with a knife and mix with yogurt.
  4. Heat 1 tbsp. olive oil in a frying pan. Cut the bread into large cubes and fry them for 6 minutes. until crispy.
  5. Divide the salad among plates, add bread croutons and top with yogurt.
