Imagine my surprise when I first bought and cleaned them. It turns out that everything is very simple. But you still need to know some subtleties.

How to properly cook squid for salad so that it is soft

Squids are healthy because they consist of 20% protein. But it is precisely this quality that presupposes certain features of their preparation. The fact is that during prolonged cooking, the protein coagulates, which makes the squid as hard as rubber and unsuitable for consumption. Therefore, in order to cook soft squid for a salad, you need to adhere to the following rules:

  1. When buying a carcass, choose a white carcass, pay attention to the freshness of the smell. Carcasses should not stick to each other.
  2. Before cooking, you need to clean the squid as thoroughly as possible so that no films remain. Otherwise, hard lumps may form on the surface of the carcasses.

  • Thaw the squid and peel the skin;
  • To boil seafood, boil water with bay leaves, pepper and a pinch of citric acid, immerse the squids one at a time in boiling water for 1-2 minutes;
  • Cool them well and cut them into rings;
  • Peel and core the apples, cut into cubes;
  • Wash the radish and cut into quarters;
  • Wash the cucumbers and cut into slices;
  • Boil and chop the eggs;
  • Rinse the arugula thoroughly in water and soda and dry;
  • Squeeze the juice out of half a lemon, making sure there are no seeds or pieces of pulp;

  • Cut raw clams into slices;
  • Heat the olive oil and quickly fry the squid rings in it, each for just a few seconds;
  • Boil quail eggs, cool and peel them, cut into halves or quarters;
  • Rinse the arugula salad thoroughly in a soda solution and dry;
  • Wash and dry the cherry tomatoes;
  • Wash the cucumbers and cut into bars;
  • The salad is laid out on a flat dish or in portions on wide flat plates;
  • Place arugula on the bottom of the dish, then fried squid rings, then cherry tomatoes, cucumbers and Mozzarella cheese balls, top with half a quail egg;
  • Before serving, the salad should be salted, peppered, sprinkled with olive oil and garnished with basil;
