We continue to prepare holiday snacks from thin “Armenian” lavash. Rolls made from lavash are very tasty. There are several variations for preparing lavash rolls. Fish ingredients are often used. I want to offer a filling of canned saury, chicken eggs and pickled cucumbers. I tried this snack at work. An employee brought this appetizer for the holiday, and I really liked it. It is prepared from available ingredients and tastes like the Mimosa salad you loved from childhood.

To prepare pita rolls with canned saury you will need the ingredients from the list. I took canned food in oil. We use lavash for two days, but it should be stored under film or in packaging. Lavash that is too fresh can quickly get wet, and dry lavash will not wrap. Boil the eggs in advance. I cut the green onions into rings. I used homemade salting for the cucumbers.

Mash the canned saury in oil with a fork. Some of the liquid and oil must be drained from the canned food. Three small chicken eggs. Mix with canned food.

Three pickled cucumbers on a coarse grater. You only need a little bit of mayonnaise.

Mix the ingredients. Salt to taste. Cool the salad.

Cut the pita bread into pieces, shaping it into rectangular layers. My pita bread is too thin, so I made two layers. If you find it more or less dense, then use one layer of pita bread. Spread the filling over the entire surface of the lavash.

Roll the lavash with filling into a large roll. Wrap the roll in film. Place in the refrigerator for 3 hours. It should soak and cool.

Cut the large roll into small rolls just before serving. The knife must be sharp. Decorate with lettuce, herbs, berries or vegetables if desired.

thin Armenian lavash - 150 grams; saury canned in its own juice - 250 grams; tomatoes - 200 grams; lettuce - 20 grams; Russian cheese - 50 grams; sour cream 15% fat - 30 grams; spices.

Preparation:

Open the jar of canned saury, drain the liquid, and mash the fish with a fork.

Add sour cream and spices, mix until smooth.

Cut the tomatoes into cubes.

Grate the Russian cheese on a coarse grater, add it to the saury along with the tomatoes, and mix. There is no need to add salt to the filling, since saury and cheese contain sufficient salt. You can use any cheese for this recipe, including low-fat cheese.

Unroll a sheet of pita bread and place lettuce leaves on it (pre-washed and dried on a towel).

Place the previously prepared saury filling on top of the lettuce leaves; the filling does not have to cover the entire surface of the pita bread.

Roll the pita bread tightly into a roll, then cut into rolls.

2. Not only parsley, but also dill is perfect for greens. This recipe uses healthy spinach. Place the herbs in a colander and rinse thoroughly under cool running water. Shake off excess water and dry with a paper towel. Remove thick stems and cut the leaf blade into arbitrary pieces.

3. Hard-boil the eggs in salted water, peel and grate on a coarse grater.

4. Grind the cheese on a large or medium grater.

5. Now you need sauce - you can use mayonnaise. It is better to take thicker sour cream. Add mustard, salt, ground black pepper to it. Stir and taste. Adjust to your liking.

6. The best option is to use two rectangular sheets of pita bread measuring 40 × 30. Spread one layer on top of the other. Grease the top with sour cream sauce. Spread the chopped parsley and spinach, just short of the edges.

Mayonnaise - 250-300 g
Dill or parsley - a small bunch

Cooking method:

  • First of all, open the canned food, drain the gravy and transfer the fish to a plate. Mash the canned fish with a fork.
  • Boil the eggs until tender (about 7 minutes).
  • Rinse the dill with running water and chop finely.
  • Mix mayonnaise and dill in a bowl.
  • Grate hard cheese on a coarse grater.
  • We also grate boiled eggs.
  • Place the first pita bread on a free surface. Lubricate the pita bread with a third of the mayonnaise and herbs.
  • Next, spread the canned food on the pita bread evenly over the entire surface.
  • Cover the first pita bread with the second one. Lubricate it again with some mayonnaise and herbs.
    Our next layer will be grated eggs. Sprinkle them evenly over the pita bread.
  • Cover with the third pita bread, grease it with the remaining mayonnaise.
  • We only have cheese left - sprinkle it on the surface of the pita bread.
  • Now let's start rolling the roll. Do this carefully along the length of the pita bread.
  • If the roll cracks a little, it doesn’t matter, everything will harden in the cold. Moreover, home-cooked recipes are not always ideal food in appearance.
  • Place the rolled roll on a plate and place it in the refrigerator for several hours, or overnight.
  • After refrigeration, cut the roll with a sharp knife into round slices 1.5-2 cm thick.
