Recipe for jelly made from ice cream and milk. Milk jelly: delicious recipes

Milk jelly is a common delicacy in Russia. It is a more budget-friendly, but no less tasty version of the well-known Italian panna cotta. In addition, milk jelly (a recipe with gelatin and various additives will be discussed below) is an excellent low-calorie dessert! Especially if instead of sugar you add honey or natural substitutes to it.

Objectively, milk jelly is a great way to diversify your menu with a light and healthy treat. Depending on your preferences, you can not limit yourself to milk, but replace it with kefir, sour cream and even paste-like cottage cheese.

This jelly is a real salvation for those mothers who cannot “openly” feed their children dairy products. Due to the neutral taste of the classic recipe, you can enhance it with various additives, for example:

  • chocolate and bananas;
  • stewed apples and cinnamon;
  • caramel;
  • mixed berries;
  • peaches and raspberries;
  • pieces of ready-made jelly;
  • jams and fruit purees.

We will discuss several ways to prepare milk jelly below.

Classic milk jelly: recipe with gelatin

Dairy-based jelly is prepared using gelatin, since the plant-based alternative (agar) “works” only when boiled, which can cause the product to curdle. We recommend using it as it is easy to use. As a last resort, choose a fast-acting one that does not need to be soaked for 40 minutes before use. The final result depends on the quality, so do not neglect this characteristic. To prepare basic milk jelly, take:

  • milk (the fattier, the tastier) - 1 glass;
  • gelatin - 1 tbsp. l.;
  • sugar - 2.5 tbsp. l.;
  • vanilla sugar - 1 sachet.

Are we ready?

1. Soak gelatin in 1/3 cup of milk.

2. Mix the remaining milk in a saucepan with regular and vanilla sugar, place on low heat and bring to a boil. The sugar should completely dissolve. Remove the saucepan from the heat and let the contents cool slightly.

3. Combine warm milk with swollen gelatin, stir thoroughly - all grains should completely dissolve. If necessary, the mixture can be strained.

4. Pour the resulting mass into molds and refrigerate for 2-3 hours until completely set.

You can also pour this milk jelly (the recipe with gelatin, as you can see, is quite simple) into silicone molds - thanks to them you can quickly and easily remove the dessert and serve it, serving it with various toppings to taste.

Milk jelly with sour cream

Often, treats are prepared not with milk, but with fatty fermented milk products - sour cream, for example. The finished dessert has a more delicate creamy taste with a light, pleasant sourness. Now we will tell you how to prepare a wonderful fruit treat in two versions: mint-strawberry and lemon-blueberry. The tastes are completely different, but at the same time fresh and summery. So, let's prepare fruit and milk jelly. The recipe (with gelatin and sour cream, of course) involves using the following set of products:

1. For the mint and strawberry treat:

  • gelatin - 20 g;
  • powdered sugar - 55 g;
  • gelatin - 75 g;
  • fresh strawberries - 100 g;
  • mint or lemon balm - 10 leaves.

2. For the Lemon Blueberry Treat:

  • sour cream with a fat content of 12-15% - 250 g;
  • powdered sugar - 55 g;
  • gelatin - 20 g;
  • milk - 75 g;
  • blueberries - 100 g;
  • finely grated zest of 1 lemon.

Preparation

So, cooking with gelatin and sour cream differs in less liquid. This must be taken into account when determining the proportion of products, because with an excess of gelling substances, you risk getting creamy rubber instead of a delicate dessert.

1. Soak the gelatin for both types of jelly in different containers in milk (75 grams per container).

2. Rinse mint leaves, strawberries and blueberries separately and dry.

3. Finely chop the mint, cut the strawberries into small pieces.

4. Beat sour cream for each type of jelly with the prescribed amount of sugar.

5. Heat the swollen gelatin separately over low heat until completely dissolved. Do not let it boil! Otherwise, all gelling properties will disappear.

6. Add each portion of gelatin to sour cream and stir until smooth.

7. Add lemon zest to the first gelatin-sour cream mixture and carefully stir in the blueberries. Pour into 3 molds and refrigerate.

8. Stir mint and strawberries into the second gelatin-sour cream mixture. Pour into the other 3 molds and also refrigerate.

9. Wait until the jelly has completely hardened and you can treat yourself. Add toppings to taste if desired.

Chocolate mint milk jelly: recipe with gelatin

For those who find classic milk jelly too boring, we offer the following delicacy option. The combination of chocolate and mint will delight you with a balanced and deep taste, which is so lacking in a regular dessert without additives. Take:

During the cooking process, it is important to use high-quality products, otherwise you risk spoiling the milk jelly.

The recipe with gelatin and cocoa will be a godsend for those who are trying to limit their chocolate consumption - you will get a rich taste with less fat and calories.

Algorithm of actions

1. Soak gelatin in 2/3 cup of milk.

2. Divide the remaining milk in half - bring the first part to a boil, dissolve 3 heaped tablespoons of sugar in it and pour the mint with this mixture. Let it brew for an hour.

3. Also bring the second part of the milk to a boil with 3 tbsp. l. sugar, add cocoa powder and mix thoroughly (you can strain if necessary). Remove from heat, cool slightly and add half of the soaked gelatin. Mix thoroughly again.

4. Pour half of the chocolate mixture into molds and place them in the freezer so that the contents harden faster. Keep the container with the mixture at room temperature so that the milk jelly with cocoa does not thicken. The recipe with gelatin is irreversible - if you reheat the mass, it will not harden later.

5. Strain the milk with mint, reheat until warm and add the remaining gelatin. Without bringing to a boil, stir thoroughly until smooth and remove from heat.

6. Cool the mint mixture until warm and pour half of it over the frozen chocolate layers. Place back in the freezer until set. Keep the remaining mint milk warm.

7. Repeat the procedure with the remaining chocolate milk, placing the molds back in the freezer until hardened.

8. Finally, pour the remaining mint milk over the last chocolate layer and put it in the refrigerator for a couple of hours. That's all! You can help yourself.

Milk jelly is one of the simplest and most delicious desserts. In addition, we must not forget about the benefits of this dish. After all, the milk it contains consists of useful substances and vitamins. However, even this simple dessert has some features and tricks. To prepare a truly light and airy dish that will delight your family and friends, you should familiarize yourself in detail with all the subtleties and follow the technology step by step.

Basic principles of making jelly from milk

First of all, you need to decide on the ingredients for the jelly. Of course, it must be very high quality milk. It is better to take a pasteurized version with high fat content. It is ideal for preparing this dish.

An important element of this dessert is the gelatin base. It is better to choose gelatin, which quickly dissolves in liquid. This will not only make cooking as simple as possible, but will also save a lot of time. In addition, you should give preference to high-quality gelatin, which will definitely set and not let you down, otherwise the rest of the ingredients will be spoiled.

By adding sugar or fruit base to milk jelly, you can dilute the sweetness with vanilla extract or flavoring. In this case, the finished dessert will taste like ice cream. And its aroma will awaken the taste buds of everyone around. Of course, other flavorings can be used.

When pouring the jelly, you should carefully watch the sides of the mold. If droplets of liquid get on the walls, they should be wiped off immediately, as they will end up looking like sloppy stains.

Milk jelly goes well with sour fruits or berries. In addition, it is very harmonious in chocolate desserts. Therefore, you should experiment in this direction.

Milk jelly with cottage cheese

It is difficult to imagine this dish in an even more delicate format. However, it is cottage cheese that can turn this dessert into a real extravaganza for gourmets. It becomes delicious and light, like a snow cloud.

· 0.5 cups of milk;

· 1 tbsp. gelatin;

· 1 tbsp. Sahara;

· 2 tbsp. water;

· 100 g of cottage cheese.

Cooking method:

· It is important to use slightly damp cottage cheese. It will make the dessert more juicy and palatable. Knead it with slightly warm milk and add sugar. Mix everything thoroughly.

· Mix gelatin with water and heat, dissolving it completely.

· Combine both liquids and pour them into molds or bowls. Let the dessert harden a little in the refrigerator.

· Shortly before serving, take out the dish and decorate it with berries or grated chocolate.

The main ingredient of this dessert is milk. It must be natural, because only in this case the dish will turn out tasty. In addition, it is better to use milk with the highest fat content. This way you can achieve a nice soft texture.

For those who love experiments, using baked milk would be an excellent option. The jelly turns out tender and incredibly tasty. However, it is not justified for all recipes, so you should be careful.

There are several flavors that are ideal for milk jelly. Among them are classic vanillin and its various interpretations, cocoa, coffee or even cinnamon. The jelly will become incredibly tasty if you add a vanilla stick to gelatin milk when heating it. Of course, it should be removed when it cools. The main thing is not to be afraid to experiment.

Do not use boiled milk. It can give your dessert a strange taste. The optimal choice would be pasteurized milk. A sterilized version is also suitable.

To make the jelly harden faster, you do not need to dissolve gelatin in water. It can be placed directly into milk. In addition to the fact that this process will significantly save cooking time, it will give the dish additional body in texture.

If jelly with milk is prepared in layers, it is worth pouring individual parts of the dessert directly in the refrigerator. The fact is that during transportation of the molds, drops of liquid may fall on the walls. This will create unsightly streaks that can detract from the overall appearance of the dish.

Milk jelly is an easy dessert; its preparation requires a minimum of time, effort and products. All you need for the basic recipe is high-fat pasteurized milk, sugar and gelatin. You can diversify it with berries, syrups, fruits or chocolate.

Ingredients

  • milk 3.2% fat 500 ml,
  • gelatin 30 g,
  • sugar 4 tbsp. l.,
  • cinnamon stick,
  • water 100 ml,
  • strawberries (fresh or frozen) 300 g,
  • boiled water 50 ml.

Preparation

    Pour the gelatin from the bag into a glass, add 100 ml of boiled warm water and leave it alone so that the gelatin swells.

    Pour 2 tbsp into a ladle. l. granulated sugar and add a cinnamon stick. Cinnamon can be replaced with a vanilla stick or vanilla essence. But you don’t have to add anything except sugar.

    Pour milk in there too. I recommend using pasteurized milk with a high percentage of fat content. It is brought to a boil, but does not boil. If milk is boiled, the taste of gelatin will be clearly present in the finished dessert. Skim milk is also not suitable; the finished jelly from it will turn out to be an unappetizing bluish tint.

    Bring pasteurized milk to a boil and remove from heat. Let the milk cool slightly and leave the cinnamon stick for 15 minutes.

    Remove the cinnamon stick from the warm milk and dissolve the swollen gelatin. Mix very thoroughly so that there are no lumps of gelatin left.
    That's all, the milk jelly is ready, pour it into portion forms and put it in the refrigerator until it hardens completely.

    This is what the finished milk jelly will look like. Before serving, you can garnish it with mint leaves, grated chocolate or orange zest. You can serve the jelly in molds or dip the mold in hot water for a few seconds and turn it upside down on a plate. The milk jelly will easily separate from the walls and slide onto the plate.

    How else can you make milk jelly? For example, make it two-layer by combining it with strawberry jelly.

    So, we prepare milk jelly as described above, but we are not in a hurry to put it in the refrigerator. Leave a tablespoon of swollen gelatin for the strawberries. Place the berries in a bowl, add 2 tbsp. l. granulated sugar, pour in 2 tbsp. l. water and simmer for five minutes.

    Remove the strawberries from the heat and grind through a fine sieve. We discard the pulp, and dilute a tablespoon of swollen gelatin in the resulting sauce.

    Silicone molds and fill them halfway with strawberry sauce. To make the jam harden faster and make strawberry jelly, place the molds in the freezer for 5 minutes.

    When the strawberry jelly has hardened, pour the milk jelly into the molds. Now the molds with the finished jelly can be placed in the refrigerator until completely hardened. As a rule, it hardens in 20 to 30 minutes.

    We take the milk jelly with strawberries out of the refrigerator, place the molds in hot water and turn them upside down onto plates. This way you will get the bottom layer - milk jelly, and the top layer - strawberry. Decorate and serve.

Milk jelly is a light and very delicate dessert that is loved not only by all children, but even by many adults. Its preparation takes very little time. The result is a dish that can not only diversify the daily menu, but also decorate even the most luxurious holiday table. Jelly with milk can be prepared in different ways. Several of the most interesting options are worth considering in more detail.

It is traditional to prepare milk jelly with gelatin. This option is considered the simplest and belongs to the category of classic recipes.

To work in this case, you need only four components:

  • 13-15 g gelatin;
  • 750 ml milk (fat content 3.6-4%);
  • a little vanillin (literally on the tip of a knife);
  • 75-125 g sugar.

Method for preparing milk jelly:

  1. Pour the milk into a saucepan (or saucepan).
  2. Add gelatin there and leave it for about half an hour. Time is needed for the gelatin to swell. Only after this will it be able to exhibit its gelling properties.
  3. Place the saucepan on the fire and heat its contents with constant stirring until completely dissolved. Strain the resulting mass through a sieve.
  4. Add vanillin and sugar to the still hot mixture. Mix it all thoroughly.
  5. Pour the aromatic mixture into molds and refrigerate for 4 hours.

Before serving, all you have to do is pour the jelly out of the molds onto plates and decorate to your liking. You can use anything for this (fresh berries, pieces of fruit, whipped cream or grated chocolate). This amazing delicacy tastes somewhat like ice cream, which almost all children love so much.

With agar-agar

As you know, gelatin is a product of animal origin. It is obtained by processing animal connective tissue and is used in cooking as an additional ingredient with gelling properties. But you can get a gel-like mass from a liquid not only with the help of gelatin. Its plant substitute is agar-agar. This substance is extracted from seaweed and is also used to prepare various desserts and jellies. Therefore, you can also make equally tasty milk jelly with agar-agar.

To do this you will need:

  • 0.5 liters of whole milk;
  • 2-2.5 g of agar-agar powder;
  • ½ vanilla pod;
  • sugar.

The dessert preparation technology will be slightly different:

  1. First of all, you need to pour the milk into a small saucepan.
  2. Add the remaining ingredients to it and mix. The amount of sugar is usually adjusted to taste (as you like).
  3. Place the pan on the fire. As soon as the contents boil, the flame should be kept to a minimum. After this, cook for no more than two minutes.
  4. Pour the hot mixture into the mold and cool.

The preparation of such jelly takes a minimum amount of time. Besides, already at 40 degrees the mass turns into a strong gel. Due to the peculiarities of the molecular structure of agar-agar, the jelly prepared from it does not spread on the plate and retains its shape for a long time.

Diet recipe according to Dukan

Proponents of proper nutrition will be interested in learning how to make milk jelly according to the recipe of the famous French nutritionist Pierre Dukan.

You only need two main ingredients here:

  • 750 ml milk (skim or low fat);
  • 15 g edible gelatin.

The preparation of a milk delicacy in this case is very similar to the classic version.

The following operations must be performed:

  1. Pour gelatin into a bowl. Add 250 ml of cold milk to it and leave to swell for 50-60 minutes.
  2. Then this mass must be heated, without bringing to a boil, until the gelatin particles are completely dissolved.
  3. Strain the resulting liquid through a fine sieve.
  4. Pour the dissolved gelatin over the remaining milk, which should first be heated.
  5. Mix everything thoroughly.
  6. Pour the mixture into the mold and refrigerate for literally 1 hour.

The dessert turns out very tender and light. It can even be eaten by those who are on a diet and trying to lose weight. It is better to prepare such a delicacy for future use, so that you can always have it on hand at the right time. After a couple of days in the refrigerator, nothing will happen to it.

Milk chocolate jelly with cocoa

For a change, you can try making milk chocolate jelly. The color of the dessert can be easily changed using regular cocoa powder. In addition, the dish itself will acquire an original chocolate aroma.

To prepare this delicacy yourself, you will need:

  • 250 g of milk (fat content no more than 1%);
  • 100 ml of drinking water;
  • 10 g edible gelatin;
  • 14 g cocoa;
  • 100 g granulated sugar.

Step-by-step instruction:

  1. Soak powdered gelatin in water.
  2. Dissolve part of the sugar (about half) in cold milk.
  3. Add a little sweet milk to the gelatin and dissolve it completely, slightly heating the mixture (on the stove or in the microwave). Under no circumstances should the mixture be boiled.
  4. Add the remaining milk and stir.
  5. Lightly heat part of the gelatin milk (about half a glass) separately. Dissolve cocoa powder and all the remaining sugar in it.
  6. First pour the chocolate mixture into the molds. Place them in the refrigerator until they harden.
  7. Pour the milk mixture on top. Place the molds back in the refrigerator until the mixture has completely hardened.

Before serving, all you have to do is turn the molds over, and a beautiful two-color jelly will appear on the plate. This dessert does not need additional decoration.

With fruits

To make milk jelly not only tasty, but also healthy, it can be supplemented with fruit. The result is an original and very beautiful vitamin dessert. This can be done in different ways.

For the simplest option you need to take:

  • 0.6 l milk;
  • 5 g powdered gelatin;
  • 75 g sugar;
  • 500 g of fresh strawberries (you can use any other fruit).

Method for preparing juicy aromatic jelly:

  1. Sort the strawberries, tear off their sepals, and thoroughly rinse and dry the berries.
  2. Leave some of the strawberries whole and puree the rest using a blender.
  3. Pour gelatin with water (60-80 ml is enough) and set aside. As soon as the crystals swell a little, put the mass on the fire and heat until they are completely dissolved.
  4. Separately, heat the milk in a saucepan and mix it with sugar.
  5. Add gelatin solution to this and mix. The mass should cool down a little.
  6. Add strawberry puree to the warm gelatin mixture. Pour this mixture into the prepared form.
  7. Keep the container in the refrigerator until completely cool.
  8. Turn the mold over and transfer the finished jelly to a dessert plate.
  9. Garnish the dish with the remaining strawberries.

The taste of such a dessert will be simply amazing. Instead of strawberries, you can use almost any fruit and berries with the exception of kiwi, melon and grapes. Their taste is so delicate that after mixing with other ingredients it is lost. As a result, the dessert turns out bland and not at all flavorful.

With creme brulee flavor

Milk jelly can be given an original “crème brûlée” taste. This is usually done using baked milk or boiled condensed milk. There are several options here. The easiest way to prepare a flavorful dessert is to use classic milk jelly as a basis.

To work you will need:

  2. Cover the jelly with a layer of condensed milk and lightly sprinkle with grated nuts.
  3. Place the mold in the refrigerator to harden.
  4. Repeat alternating layers until all ingredients are gone.

After final cooling, the dessert can be transferred to a dish or small portion plates. This aromatic jelly will pleasantly surprise little sweet tooths.

  • 100 ml milk;
