Step 1. I take a saucepan and pour milk into it. I turn on the heat under the pan and gradually add sugar to the milk. Stir the mixture and cook for about seven minutes until the sugar is completely dissolved. I turn off the fire. Then add pieces of butter into the milk. I stir everything well. The butter should completely melt in the milk.

Step 2. Now I grind the cookies to homogeneous crumbs. I mix the crumbs with cocoa.

Step 3. Next I combine the crushed cookies with a mixture of milk, sugar and butter. I knead the dough. I form the dough into cakes (shown in the photo). I put the cakes on a large plate and put them in the refrigerator for three hours.

Step 4. So, the potatoes are ready! I decorate the cakes with chocolate or coconut shavings on top and serve them for tea.

Bon appetit!

Potato cake is a fun dessert dish, in shape and color reminiscent of a popular and beloved vegetable - potatoes.

The traditional potato cake recipe is very simple., even the smallest sweet tooth can be involved in its preparation, because dessert does not require baking. In addition, decorating “Potatoes” in the form of balls and rolling them in cocoa will bring real pleasure to your baby.

There are many variations of this dish. Most of them have a biscuit base, nuts, butter and cocoa powder in their recipe. Many nationalities serve “potatoes” during the Christmas holidays - for them it has become a kind of ritual, an unbreakable tradition.

The basic recipe for potato cake is very simple.. To make chocolate hedgehogs, I traditionally use crumbs, most often biscuit crumbs, but you can replace them with your favorite cookies, vanilla crackers or gingerbread cookies.

The simplest scheme for home production of potato cake includes three elementary stages:

1. One kilogram of flour raw material is thoroughly ground into fine crumbs. If desired, you can add cocoa, nuts, coconut flakes, etc. to the crumbs.

2. Knead the scattering with soft butter (about 50-60 g), sugar and cream (200-250 ml) until a homogeneous plastic mass is obtained.

3. Use your hands to form oval or round cakes. Roll in cocoa powder and ground nuts, cool and drink with hot tea or milk.

Potato cake - food preparation

The raw material for confectionery products can be biscuits, cookies, gingerbread or vanilla crackers. You can safely use the unutilized remains of sweet homemade baked goods. So, we have decided on the raw materials. Now it needs to be thoroughly crushed into fine crumbs. This is usually done manually or using modern automated tools.

In order to “glue” the crumbs together, we need a cream based on butter that has melted at room temperature. For taste, it is flavored with condensed milk, meringue, cream, powdered sugar, vanillin, cinnamon, and sour cream. And the very last step in making cakes is generously rolling the finished products in cocoa powder. As a rule, it is pre-mixed with granulated sugar or powder.

— It’s impossible to imagine real “potatoes” without a drop of good cognac, liqueur or rum. We advise you to refrain from adding alcohol if the dessert is being prepared for children;

— Purchased “potatoes” according to GOST must be light inside. A dark color (chocolate or cocoa powder has been added to the mixture) may indicate poor quality of the sponge cake on which the cakes are made. Manufacturers thus “paint over” the defect.

Potato cake is a simple and delicious dessert that is very easy to prepare. Outwardly, it resembles small potato tubers, and the traditional recipe requires almost no effort, you don’t even need an oven. So you can also involve the youngest family members in the cooking process, who will enjoy forming dough balls and rolling them in cocoa.

There are a huge variety of potato cake recipes. Most of them use biscuit crumbs, nuts, butter and cocoa powder as a base. In some cuisines around the world, potatoes are served during the Christmas and New Year holidays. This has already become a kind of tradition.

The basic recipe for this cake is very simple. Biscuit crumbs are used as the base, but any of your favorite cookies, as well as gingerbread and vanilla crackers, will do. The cooking process itself includes three mandatory steps:

  1. flour raw materials are ground into fine crumbs. About a kilogram of biscuit or cookies is required. You can also add nuts or coconut flakes, cocoa or other ingredients to your taste.
  2. a small piece of soft butter (about 50-60 g), sugar and cream (200-250 ml) are added to this mixture. Everything is thoroughly kneaded until a homogeneous plastic mass is obtained.
  3. The resulting dough is manually formed into balls or oval-shaped cakes, which need to be rolled in cocoa powder, chopped nuts or coconut flakes. Before serving, cool the preparations in the refrigerator and then serve with hot tea.

The raw material for making cakes is usually a sponge cake, which is crushed into fine crumbs using a food processor or by hand. Regular cookies that you like best, gingerbread cookies without filling, and even vanilla crackers will also work. The leftover homemade baked goods left over after preparing desserts will also come in handy.

To give the crumbs plasticity and glue them together, add softened butter. And so that the mass does not turn out to be too fatty, condensed milk, powdered sugar, coconut flakes, meringue, cream, vanillin, cinnamon, sour cream and other ingredients that will suit your taste are added to the butter.

And the final stage of preparing the dessert is forming balls and rolling them in cocoa powder. You can take children's Nesquik, it will also turn out very tasty. Cocoa can also be pre-mixed with granulated sugar or powder.

Recipe 1: Potato biscuit cake

The dessert prepared according to this recipe turns out to be as close as possible to potatoes according to GOST. And if it is expected that only adults will feast on it, then you can add a little cognac or rum to enhance the taste.

Biscuit ingredients:

  • eggs - 6 pcs.;
  • flour - 1 glass;
  • potato starch - ½ cup;
  • sugar - 6 tbsp. l.;
  • flour - 4 tbsp. l.;
  • chopped walnuts - 30 g.

Ingredients for the cake:

  • butter - 150 g;
  • sugar - 5 tbsp. l.;
  • eggs - 2 pcs.;
  • cognac or rum - 3 tbsp. l.;
  • cocoa powder or chocolate fudge - to taste.

Cooking method:

  1. First, let's prepare the biscuit. To do this, separate the whites from the yolks. Beat the egg whites with a mixer, gradually adding sugar. When you get a stiff foam, add the yolks one by one.
  2. Add nuts to the eggs beaten with sugar, mix gently, and then add the pre-sifted flour in two stages. Mix with a silicone or wooden spatula so that no lumps form.
  3. We transfer the finished dough into a mold and send it to a preheated oven at 180 degrees. The dough needs to prepare there for about 25-30 minutes. When the sponge cake is baked, you need to remove it from the oven and let it cool right in the mold. Remember that sponge cake is very sensitive to temperature changes, so you should not open the oven door ahead of time, otherwise the dough will settle and will not be as airy.
  4. Now you need to prepare the buttercream. To do this, mix the eggs and granulated sugar, place the container in a water bath and beat until the temperature of the liquid reaches 50 degrees. Then remove from the water bath and let cool to room temperature.
  5. Meanwhile, while the eggs beaten with sugar are cooling, beat the softened butter with a mixer. It should lighten a little. Mix both masses with a spoon or spatula until smooth. The cream is ready.
  6. Now is the time to make the cakes. To do this, take the cooled biscuit out of the mold, grind it into fine crumbs using a blender or by hand, add the prepared butter cream and cognac or rum to it. Knead the elastic dough, which is then divided into 10-12 equal parts.
  7. We form each portion of the dough with our hands into an oval or into a ball and roll it in pre-prepared powder (cocoa with powdered sugar).

This is a “lighter” version of cakes when you don’t need to prepare a sponge cake. Any cookie will do, the one you like best, both homemade and store-bought.

Ingredients:

  • cookies - 300 g;
  • butter - 150 g;
  • thick condensed milk - 200 g;
  • walnuts - 100 g;
  • vanillin - 1 tsp;
  • cocoa powder - 4-5 tbsp. l.

Cooking method:

  1. Grind the cookies into fine crumbs by hand or using a blender.
  2. Add condensed milk to the softened butter and mix with a fork or whisk; no need to whisk.
  3. Add cocoa powder, vanillin and chopped walnuts to the liquid ingredients. Stir until smooth.
  4. Add the liquid ingredients to the cookie crumbs and mix into an elastic dough with a spoon. We manually form potato-shaped cakes.
  5. Combine powdered sugar or sugar with cocoa powder, sprinkle the cakes with this mixture and put them in the refrigerator for several hours. Serve with hot tea.

The dessert prepared according to this recipe turns out incredibly delicious! And it’s ready in just a few minutes. Little sweet tooths will also be delighted. To improve the taste, you can add a small handful of raisins to the cakes, which should first be poured with boiling water (to swell).

Ingredients:

  • any gingerbread without filling - 200 g;
  • any roasted nuts - 200 g;
  • boiled condensed milk - 1 can;
  • dark chocolate - 50-70 g;
  • dry raisins - a handful (pre-soak in hot water for about 10 minutes).

Cooking method:

  1. Grind the gingerbread into fine crumbs using a blender, food processor or by hand.
  2. Grind the nuts into dust and mix with gingerbread crumbs. Add grated chocolate to this.
  3. Add raisins to the resulting mass, mix until smooth and pour out the entire can of condensed milk. Using a spoon or spatula, knead the elastic dough.
  4. From the resulting mass we prepare small balls or oval cakes and put them in the refrigerator. After a few hours, serve with hot tea.

Recipe 4: Potato cake made from crackers

This recipe is not about ordinary bread crumbs. To make the dessert delicious, you need to use dessert vanilla croutons made from a loaf.

Ingredients:

  • butter - 100 g;
  • thick cream or sour cream - 100 g;
  • vanilla crackers - 500 g;
  • any fruit syrup - 3-4 tbsp. l.;
  • sugar - to taste;
  • cocoa powder - 6 tbsp. l.;
  • milk - 1 glass;
  • nuts - optional.

Cooking method:

  1. Beat sour cream or heavy cream with sugar, and add soft butter to the resulting foam, stir until smooth. Pour in the fruit syrup and add 2 tablespoons of cocoa powder. Mix everything thoroughly.
  2. Grind the crackers by hand, using a food processor or meat grinder. If you use nuts, you will also need to chop them into crumbs at this stage. Pour the resulting mixture with milk and leave for a few minutes until the crackers soften. Add cocoa and mix.
  3. Mix the resulting mass with cream and form oval-shaped cakes from elastic dough. Sprinkle cocoa powder mixed with sugar on top. They need to be put in the refrigerator for at least an hour, after which they should be taken out and served with hot tea.

A drop of cognac or rum in the composition can make any potato “real”. But you should not add alcohol to the cake if children will eat it.

Remember, purchased “potatoes” according to GOST must be light inside. If this is not the case, for example, cocoa powder or chocolate is added inside, then most likely the manufacturer used a low-quality biscuit, and thus hides the errors of his work. This will not happen with homemade cakes, because you yourself control the process and the quality of the products used.

  • Two hundred and eighty grams of biscuits.
  • Four tablespoons of cocoa powder.
  • One hundred grams of margarine.
  • Three tablespoons of apple jam.

Additionally, you will need a glass of any nuts. Thanks to this additive, the sweet “potatoes” you prepare from cookies and cocoa, a step-by-step recipe with photos of which can be seen in today’s article, will acquire a richer taste and aroma.

Sequencing

First of all, you need to tackle the cookies. It is crushed using a meat grinder or simply broken by hand. Cocoa powder is added to the resulting crumbs. Pre-chopped and roasted nuts are also sent there.

Softened margarine, previously combined with apple jam, is placed into the resulting loose mixture. Mix everything thoroughly until smooth. Potato-shaped products are formed from the resulting dough. Place butter in a shallow bowl and melt it over medium heat. After this, it is combined with cocoa powder and condensed milk. Mix everything well.

Chopped walnuts and biscuit cookies, previously ground through a meat grinder, are added to the resulting sweet butter mass. A little vanillin is poured there (literally on the tip of a knife) and red wine is poured. From the resulting dough, approximately equal medium-sized potatoes are formed by hand. Almost finished cakes are placed on a flat plate and placed in the refrigerator.

To facilitate the process of forming cakes, your palms can be periodically dipped in a container of warm water. To decorate the finished dessert, it is recommended to use icing, chocolate chips or almond flakes.

Option with milk

This recipe is interesting because it involves the absence of condensed milk. In this case, it is replaced with regular milk. The only downside is that these sweet “potatoes” made from cookies and cocoa will last longer in the refrigerator. This feature is explained by the fact that natural cow's milk has a lower viscosity than condensed milk. To prepare a delicious homemade cake you will need:

  • Half a stick of butter.
  • Four hundred grams of shortbread or biscuit cookies.
  • One hundred milliliters of whole milk.
  • Ten tablespoons (not heaped) of cocoa powder.
  • One hundred grams of sugar.

Step-by-step technology

Milk is poured into a small saucepan, heated without bringing to a boil, and sugar is gradually added to it. After waiting for the smallest grains to dissolve, remove the dishes from the stove and add pieces of butter into it. Mix everything vigorously and set aside.

Pour the ground cookies and cocoa into a separate bowl. The resulting crumb is combined with a liquid milk-oil mixture. Cakes are made from the resulting homogeneous dough, giving them the desired shape, and send them to the refrigerator. Sweet "potatoes" made from cookies and cocoa will be ready to eat no earlier than in five hours. Ideally, it should remain in the refrigerator overnight. Thanks to this, it will harden better. If desired, the finished cakes can be topped with chocolate glaze or sprinkled with almond flakes.
