Recipe for donuts with cottage cheese in a frying pan. Round cottage cheese donuts

As children, our grandmothers spoiled us all with sweet pastries for tea. Our samovar was often hot, since many grandchildren came to visit. This simple but incredibly tasty dessert was simply called donuts by our grandmothers. I remember the fragrant smells wafting from the kitchen when they were preparing this wonderful delicacy for tea. When the whole family gathered, and on the table there was a large plate with a pile of ruddy and fluffy donuts.
Curd donuts are balls or rings made from curd dough that are fried in oil. This delicacy is a universal dish. So you can take them with you on a picnic, offer them to your child as a snack at school, and simply prepare them for tea. Donuts are prepared very quickly and are also very nutritious, tasty and healthy.

How to make cottage cheese donuts

They are prepared from regular dough or yeast. The donut is traditionally shaped like a ball or ring. A classic product can be filled, sprinkled with sugar, covered with icing or chocolate.

Three basic rules will tell you how to make cottage cheese donuts so that they turn out perfect.

Donut dough

Dough for donuts with cottage cheese according to recipes of any complexity should be made from high-quality flour. It must be cleared of debris and sifted through a fine sieve. The sifting procedure allows you to further enrich the flour with oxygen, which improves the quality of the finished product.

Cottage cheese for donuts

It is best to use homemade cottage cheese for donuts. This product must be fresh and sufficiently dry. Cottage cheese with excess moisture will “clog” the dough and the donut will not turn out fluffy. To ensure a homogeneous composition of the dough, it is highly advisable to grind the cottage cheese, which will remove all lumps.

Frying

The total amount of oil should exceed the product being fried by 3-4 times.
The optimal temperature for deep frying is 190 C. It should be constant throughout cooking. The main thing is not to overheat it initially, but to warm it up well and evenly. If you fry donuts in fat that is not hot enough, they will absorb a lot of fat, making them tasteless.
The optimal frying time on each side is 3 minutes. Turning the donuts regularly will ensure they are evenly fried and golden.
The fryer used must be of high quality. It is unacceptable to use old oil.

The dessert combines a lush and “airy” crumb, a thin golden crust, a light creamy aroma and a pleasant taste. It will be very difficult to resist such a mouth-watering delicacy! So, let’s prepare delicious cottage cheese donuts using the following recipes with photos step by step.

How to cook donuts in a frying pan, in a slow cooker, in a saucepan?

cook donuts in a slow cooker, in a frying pan, in a saucepan
  • The process of making donuts is very similar and the only difference is in the ingredients and the frying method. They are mainly cooked in very thick-bottomed saucepans or heavy cast-iron frying pans.
  • The thick bottom of such a pan allows the oil to heat up evenly and, accordingly, have the right temperature for completely frying the donuts.
  • But there is a very convenient way to prepare donuts in a slow cooker. Which greatly simplifies the process of monitoring the temperature, since it itself monitors the desired temperature and allows you to get tender and crispy donuts
  • To do this, select the “Frying” mode and pour in 700 g. vegetable oil in a bowl and wait for it to heat up
  • Next, from the text prepared according to one of the recipes above, you can form balls and gradually fry them in boiling oil.
  • It is very convenient that the oil does not burn or smoke in the multicooker, which allows you to cook in more comfortable conditions.

Video: How to make donuts? Three types of glaze

Curd donuts, fried in oil, a step-by-step recipe with photos which I want to offer you today became a real discovery for me. A discovery because previously I used cottage cheese mainly to make pies, cheesecakes, dumplings, and cookies. But I recently learned this recipe and immediately wanted to try making them myself at home, while already anticipating how tasty, juicy and aromatic they would turn out. Indeed, that is what they were. A large portion of delicious cottage cheese donuts, just like the ones I had baked before, disappeared from the bowl in a matter of minutes.

I can say with confidence that cottage cheese donuts, step-by-step recipe with photos which are presented below taste tastier than cheesecakes. Therefore, if you like cheesecakes, or any other baked goods made from cottage cheese, I recommend preparing them at home. You can use any cottage cheese for donuts, but as my experience has shown, and I have made them more than once, it is best to use fatty homemade cottage cheese from the market, so to speak, bought from grandmothers, and not low-fat or low-fat store-bought cottage cheese.

So, let’s prepare cottage cheese donuts fried in oil according to a step-by-step recipe. It will take you no more than 10 minutes to knead the dough and make balls (donuts) from it. They also fry quickly.

Therefore, cottage cheese donuts can be confidently classified as quick homemade baked goods. Sometimes on the Internet they are called that - 10-minute curd donuts, so don’t be surprised if you find such a name.

Ingredients:

  • Egg - 1 pc.,
  • Sugar - 5-6 tbsp. spoons,
  • Vanillin - 1 sachet,
  • Baking powder for dough - 1 teaspoon,
  • Cottage cheese - 300 gr.,
  • Flour - 1.5 cups,
  • Refined sunflower oil - 400 gr.,

Curd donuts - recipe

After all the ingredients have been prepared, you can start making the cottage cheese donuts. Beat the egg into a deep bowl.

Add sugar to it.

Whisk the egg and sugar until fluffy.

Add a packet of vanilla to make the curd donuts fragrant.

At the same time, to obtain a loose and porous structure of curd donuts fried in oil, you need to add soda or baking powder. By reacting with sour curd, these products will fill the dough with air bubbles, resulting in them having holes.

After adding baking powder and vanillin to the dough, stir the mixture again.

Add cottage cheese.

Whisk it into the egg-sugar mixture.

All that remains is to add flour to the dough of curd donuts. Do not forget to first sift the flour through a sieve or a special mug.

Now that all the ingredients have been added, knead the dough with your hands. The dough should not be very tight, but at the same time not liquid, otherwise it will not only be difficult to roll them into a ball (the dough will stretch with your hands), but also they will turn out raw inside. The dough I got for the donuts was the same consistency as the dough for. That's it, the dough is ready.

Using hands moistened with water or vegetable oil, pinch off a small amount of dough and roll it into a walnut-sized ball.

Pour vegetable oil into a saucepan or small saucepan. I draw your attention to the fact that the oil must be refined. If you fry donuts in unrefined oil, its bright aroma will be transferred to them, and they will lose their natural creamy-curd flavor. In addition, unrefined oil will produce soot and black residue on the bottom of the pan around the time of frying the second batch of cheesecake donuts.

Place the curd donuts on a cutting board as they are molded. You don’t need to sprinkle the board with additional flour. Any baked goods rolled in flour also quickly turns the butter dark.

Once the oil is hot, carefully lower the cheese donuts one at a time. Try to fry no more than 5-7 pieces at a time. The heat during frying should be low. Otherwise, they will be covered with a golden brown crust on the outside in a matter of seconds (minutes), and at the same time they will remain raw inside. Therefore, in order for deep-fried cottage cheese donuts in oil to be thoroughly fried, they must be fried over low heat.

Carefully remove the finished donuts, which have already become golden brown, from the oil (deep frying) using a slotted spoon. Place them on a plate lined with napkins to absorb excess fat.

Airy curd donuts - what could be better for tea? Prepare a treat at home using the best recipes.

When you have little time to prepare food, quick recipes will always help out. Cottage cheese donuts in 10 minutes is one of those incredibly quick recipes. Everyone has known them since childhood; our mothers and grandmothers prepared them for us. Let's make donuts with cottage cheese according to this wonderful recipe. The simplest products will be used for this. The only difference between this recipe and the classic one is the replacement of soda with baking powder.

  • 1 glass of any cottage cheese;
  • 1 glass of premium wheat flour;
  • half a glass of sugar;
  • 1 egg;
  • a teaspoon of baking powder or half a teaspoon of soda (quench the soda with vinegar);
  • sunflower oil for frying.

The process of kneading the dough lasts no more than 5 minutes and frying the donuts also takes 5 minutes.

Place our cottage cheese and egg in a container for kneading dough (saucepan or salad bowl). Mix the first two ingredients thoroughly, the egg should be evenly distributed throughout the entire volume of cottage cheese. You should not try to completely grind the cottage cheese. Let small grains of it remain in the dough, so they will turn out even more interesting.

Then add sugar to the cottage cheese. Mix everything thoroughly again.

Add a teaspoon of baking powder and a glass of flour (without a slide) to the mixture. Knead the dough first with a fork and then with your hands.

Lightly sprinkle the surface on which we will form the donuts with flour. Place the dough on the table.

Using your hands, separate small pieces from the main piece of dough, lightly roll them in flour and form them into balls the size of a walnut.

Pour sunflower oil into a small container with high walls (small saucepan or stewpan) to a height of 2 cm from the bottom. Bring the oil to a boil and add the donuts. It's best to fry a small number of donuts at a time, as they will expand during frying and may become crowded. It takes no more than 40-60 seconds to fry one batch of donuts.

Readiness can be determined by its characteristic brown color. If desired, our sweetness can be decorated with powdered sugar.

Recipe 2, step by step: fried cottage cheese donuts

Fluffy curd donuts can be an excellent option for breakfast or afternoon tea. Their preparation does not require much effort and will only take half an hour. And, despite the fact that the curd donuts are deep-fried in a large amount of oil, they turn out not at all greasy.

  • cottage cheese – 500-600 g
  • chicken egg – 2-3 pcs.
  • sugar – 2-3 tbsp. spoons
  • baking powder – 1 teaspoon
  • vanilla sugar – 1-2 teaspoons
  • wheat flour – 5-6 tbsp. spoons
  • powdered sugar
  • vegetable oil for frying.

Grind the cottage cheese through a sieve. If there is excessive humidity, it is advisable to first drain the excess liquid by placing it in a colander for a couple of hours.

Combine eggs with cottage cheese. Tip: fattier cottage cheese requires fewer eggs.

Add sugar, baking powder and vanilla sugar to the curd mass. Mix the mixture thoroughly.

Pour the sifted flour into the curd mixture and stir.

If necessary, you can add a little more flour, because the donut mixture should be quite dense and hold its shape.

From the resulting curd dough for donuts, roll into balls the size of a chicken egg. Roll each one in flour on all sides. Deep fry the curd donuts. To do this, pour the required amount of vegetable oil into a cauldron or other container and heat it up. It is very important that the donuts are completely covered in oil. Tip: To save money, you can use less vegetable oil by covering the donuts halfway. In this case, they need to be turned over so that they evenly acquire a golden color. Fry the curd donuts over medium heat so that they do not remain raw inside. Do not put too many curd balls into boiling oil; they expand in volume during frying and may stick together.

Place the finished curd dough donuts on a paper towel to remove excess fat.

Using a small strainer, sprinkle the curd donuts with powdered sugar. Serve warm, but even cooled donuts do not lose their taste.

Recipe 3: airy cottage cheese donuts in oil

Donuts are ruddy, airy dough products that are deep-fried with a large amount of vegetable oil. Donuts are prepared according to different recipes: with kefir, with sour cream, with milk, with cottage cheese, with various fillings.

And the most important thing is that the donuts always turn out airy, tasty and cook quickly.

  • cottage cheese - 350 gr.,
  • a pinch of salt,
  • sugar - 3 tbsp. spoons,
  • eggs - 2 pcs.,
  • sour cream - 3 full tablespoons,
  • vanilla essence - half a teaspoon,
  • flour - 2 cups,
  • baking soda - ½ teaspoon,
  • sunflower oil (refined) for deep frying - 1.5 cups.

Cottage cheese donuts can be prepared in a regular round shape. But I wanted donuts with holes. They looked so much like bagels, which my kids especially liked. The portion of the products presented above turns out to be normal, but my donuts in a new design were quickly eaten. Next time I'll make a little more dough and make the holes deeper.

Cottage cheese, preferably wet (in flakes). Combine with 2 raw eggs and mix well.

If you are preparing sweets for the holiday table, then this dish will come in handy. You only need to do the following: put only the yolks into the dough, and beat the whites with powdered sugar (1 half glass) until a thick white mass. This will be the protein glaze that you will use to cover your ready-made and cooled donuts. You can sprinkle more chocolate chips or colored sprinkles on top that you use to decorate Easter cakes. I hope you find this small but beautiful hack useful for your holiday treats.

So, did you mix cottage cheese with eggs? Then let's move on. Add salt, sugar and mix again.

In a separate cup, mix sour cream with baking soda. Stir with a spoon and leave for a couple of minutes so that the soda is well absorbed in the sour cream. In the absence of sour cream, feel free to add kefir (1 cup). Only in this case, a little more flour will be needed.

Pour slaked sour cream into the curd mass and stir. If you like, you can add cinnamon or nutmeg. I used vanilla essence.

Now, add flour, in portions, and mix first with a spoon, then with your hands. The curd dough for donuts should not be too tight and not too liquid. So, slightly stick to your hands. Cover it with a napkin and let it rest for 10 minutes.

Meanwhile, pour the vegetable into a deep-frying dish. odorless oil and let it heat well over low heat.

Divide the rested curd dough into two parts and roll each into a layer no more than 1 cm thick. Then, using a glass, squeeze out circles from it. Then we cut out the middle of these mugs to the desired size.

Place the finished curd donuts on a paper napkin so that excess fat is absorbed. After that, sprinkle the slightly cooled cottage cheese donuts with powdered sugar or pour liquid honey and serve with tea or coffee.

Recipe 5: delicious cottage cheese donuts (with photo)

Almost all children love donuts, and round cottage cheese donuts are loved by both children and all adults. Today we will learn how to cook cottage cheese donuts sprinkled with coconut flakes. I’ll be honest, since I’m not a fan of deep frying, I made half of the donuts in oil and baked the other half in the oven. Personally, the donuts out of the oven seemed tastier and healthier to me, but that’s a matter of taste.

  • Cottage cheese 300 grams (9% fat)
  • Egg 1 piece
  • Flour 130 grams + 20 grams for sprinkling
  • Sugar 4-5 tablespoons
  • Baking powder 1 teaspoon
  • Soda pinch
  • Coconut flakes 20 grams
  • Vegetable oil for frying
  • A pinch of salt

First of all, combine cottage cheese, egg, salt and sugar. Grind everything to a homogeneous consistency. I used cottage cheese with grains, I love it when you can feel the cottage cheese in baked goods.

Then sift the flour along with baking soda and baking powder.

Mix the curd mass with flour and mix everything well.

Pour coconut and flour into flat plates.

We form balls from the dough, no larger than a walnut, and roll them in coconut flakes on all sides.

Then roll in flour, also on all sides.

Heat odorless vegetable oil to 180 degrees over medium heat and bake in small portions, 2-3 balls each. It is necessary to bake over medium heat so that they do not have time to burn on the outside, but are baked from the inside.

Remove the finished donuts with a slotted spoon and place them on a paper towel to remove excess oil. Sprinkle the donuts with powdered sugar and serve.

If you are a fan of the oven like me, then we form balls of dough, roll them in coconut and flour, then bake in an oven preheated to 180 degrees on a baking sheet for 10-12 minutes until golden brown. Bon appetit.

Recipe 6: cottage cheese donuts at home

Donuts with cottage cheese are soft, airy with a crispy crust - a childhood dream. These are thick curd balls, loved by everyone, especially children. You can prepare them at home quickly, without much hassle, and the donuts “fly away” from the plate in the blink of an eye - of course, they are very tasty!

  • cottage cheese - 200 gr
  • flour - 130 gr
  • sugar - 3 tbsp.
  • eggs - 3 pcs
  • soda - 0.5 tsp.
  • vegetable oil - 1 l

To make delicious donuts with cottage cheese you will need flour, sugar, cottage cheese, soda, vegetable oil for frying, eggs. First of all, you should grind the cottage cheese with eggs. The cottage cheese for donuts should not be completely dry, it is better to take a curd mass, or a sweet one. Place the cottage cheese in a deep bowl to make it easier to mix the products, and beat two eggs into it.

The cottage cheese and eggs need to be thoroughly ground until a homogeneous mass is obtained. There should be no lumps. You can use a blender to speed up the process.

Then add sugar there and mix everything well again.

After this, add the sifted flour to the bowl.

Mix everything thoroughly so that there are no lumps.

Then add slaked soda. To do this, take half a teaspoon of baking soda and half a teaspoon of vinegar and mix everything. When the vinegar hits the baking soda, it will sizzle and foam - this is normal.

Add slaked soda to the dough and mix with a spoon until the mass is completely homogeneous. The dough should be viscous and elastic.

It is best to fry cottage cheese donuts in a deep fryer or in a saucepan with a thick bottom. There should be a lot of vegetable oil, the donuts should float in it. Be sure to place the pan with oil on high heat so that the oil heats up thoroughly. If the oil is not hot enough, the donuts will absorb too much oil and be greasy. Next, reduce the heat to medium. It is important that the donuts are cooked over medium heat, otherwise they may not bake inside and burn on the outside. Then take a tablespoon, dip it in the oil and scoop out a little dough, it should be a little less than half a spoon. Carefully lower the dough into the hot oil. Donuts should be fried in several batches, because they should float freely in the pan so as not to stick together.

The donuts may not initially turn out to be of a completely even shape, but then they will increase in size, become fluffy and round. During frying, they must be constantly turned over so that they are evenly fried on all sides until golden brown. Remove the finished donuts with a slotted spoon or tongs and place them on a sieve to drain excess oil. You can simply place them on a paper napkin, and then, already dried, transfer them to a plate.

Before serving, sprinkle the donuts with powdered sugar to make them look even more appetizing. The cottage cheese donuts are ready and can be served with tea! Bon appetit!
