  1. First, let's prepare the necessary ingredients.
  2. We start preparing the cake, of course, with the dough. The dough should be airy, tender and sweet. Take 6 eggs and separate the yolks from the whites. We also need a blender or mixer and 2 cups of sugar.
  3. Beat the yolks separately with one glass of sugar and the whites in the same way. You should get a foamy, homogeneous mass. Then you need to mix the resulting creamy masses with each other. For a better effect, the mixture can be whisked again. The more bubbles you get when beating, the more airy the dough will be.
  4. The next and final step in preparing the dough is flour. It is necessary to carefully sift 2 cups of flour into the resulting mass. We will fight lumps using slaked soda and vinegar. Take a level teaspoon of soda and a couple of drops of 9% table vinegar and mix. Add the resulting sizzling liquid to the dough. We also add a packet of vanillin. It also prevents the formation of lumps, and also gives a fantastic vanilla aroma. Mix thoroughly. The dough should be a little thicker than for pancakes.
  5. To ensure that the dough does not stick to the baking sheet, grease it with butter, carefully going to the edges. Butter is also good because it gives a milky flavor to future cakes. Good for baking, non-stick baking tray. This simplifies the task for the housewife.

  11. It's time to prepare the cream. Mix sour cream with half a glass of sugar. You don't need a lot of sugar in the cream, it should be slightly sour. Otherwise, the cake will turn out very sugary, because the sponge cake is quite sweet.
  12. There is no need to whip the cream; stir with a spoon until the sugar is almost completely dissolved. You can add chopped walnuts to the cream.

  13. Now comes the fun part. We need to assemble the cake. This is where the biscuit scraps come in handy. We place them in the first layer on a cake plate. Externally, a small mound of biscuit should form, press it down in places so that it is smoother and the excess does not stick out.
  14. Pour cream generously over the slide. There is no point in saving cream here, otherwise the middle of the cake will be dry. Then we decorate the cake with flat cakes. Lay out the turtle's shell. It is very important to soak the cakes in cream after each layer.
  15. Decorate the cake to your liking. You can cut out the head and legs of a turtle from a kiwi. Decorate the shell with banana slices. Sprinkle with coconut, nuts or chocolate chips. Fantasy, in this matter, is limitless.

  1. First of all, let's take care of the sour cream. To make the cream thick and not liquid, about three hours before preparing the cream for the cake, put all the sour cream (750 g) in a thick linen bag and hang it so that excess moisture is removed from the sour cream. By the way, making sour cream from very rich village sour cream is not an option. When whipped, such sour cream turns into oil and liquid is released from it. Country sour cream will not make cream, don’t even try.
    To separate excess liquid from sour cream, I proceed as follows. I line the bottom of the bowl with a cloth and pour in the sour cream.
  2. Then I tie the fabric in a knot and hang this knot over the sink, tying it to the tap for three hours.

  3. While the sour cream is being prepared, we have plenty of time to bake the cakes. The cake will require a lot of small sponge cakes. To make a light biscuit dough, beat the whites and yolks separately. Moreover, it is better to add the bulk of the sugar to the yolks rather than to the whites. Separate the yolks (6 pcs.) from the whites.

  4. First of all, it is better to beat the whites, not the yolks. The fact is that whites are very demanding on the dryness of the container in which they are whipped. The container should not only be dry, it should not have a drop of fat on the walls. With yolks everything is simpler; they can be beaten after the whites in the same container. So, collect all six whites in a mixer container.

  5. Beat the whites into a strong foam with six tablespoons of sugar, adding them gradually one at a time.

  6. Transfer the whipped whites to another large bowl in which you will knead the biscuit dough, and place the yolks in the mixer container where you just beat the whites.

  7. Now beat the yolks with the remaining sugar, adding it gradually.

  8. Begin to carefully knead the dough, gradually adding flour to the beaten yolks...

  9. Those are whipped whites.

  10. The dough will be fluffy and quite liquid.

  11. Place the dough on a baking sheet using a tablespoon, the dough will immediately spread, this is not scary, but the cakes will turn out thin and soft.

  12. Bake them at 200 degrees for 10 minutes.

  13. You will get quite a lot of small cakes; you will have to bake them on two baking sheets. Cool the cakes to room temperature.

  14. Beat the thickened sour cream, filtered through a linen bag or simply through a cloth, with a mixer and a glass of sugar. The result was a rather thick sour cream.
