    The classic pizza dough, pizzaiolo, takes quite a long time to make. It is kneaded in a cool room, and then kept in the refrigerator for about 18 hours. Of course, if you have free time, it’s worth tinkering. However, in this case we are still talking about the express option.

    Yeast-free

    The simplest recipe for mini pizza dough is yeast-free. For it you need to melt about 50 g of butter, mix it with 1 egg and 2 tablespoons of sour cream (mayonnaise is also suitable), add baking powder, 250 g of sifted flour and knead. Roll out the resulting dough into a thin layer (about 3 mm) and cut into circles of the desired diameter. The base for the mini pizza is ready.

    Quick yeast

    This option for preparing the dough takes a little longer, but not so much that guests get bored and leave the house. First you need to slightly warm a glass of milk (200 ml), dilute a packet of dry yeast (12-15 g) in it, add sugar (150 g), a little flour, a little salt and leave until a “cap” of foam appears. Then you need to melt 50 g of butter and pour it into a bowl with the dough, break 2 eggs there, add 2 cups of flour and knead the dough. If necessary, you can add more flour so that the finished product does not stick to your hands. After this, the dough needs to be rolled out into a thin layer (no more than 5 mm), cut into circles and transferred to a baking sheet covered with parchment and greased with vegetable oil. Preheat the oven to 40°C and place the pieces there until they rise a little.

    While the dough is rising, you can start preparing the filling. The finally finished dough needs to be removed from the oven and “stretched” a little with your hands, giving it the shape of a flat cake.

    Yeast

    If you have a little time, it is better to prepare normal yeast dough. For example, dilute the yeast in a glass of warm water, pour it into a bowl, add 2 cups of sifted flour, a little salt and knead the dough. At the very end, add 2 tablespoons of vegetable oil and knead the dough again, then leave it in a warm place for two hours.

    If you don’t want to mess around, then it’s not forbidden to buy ready-made dough. You can not bother at all, but take cut slices of white bread as a base, but this will no longer be a mini pizza, but just a hot sandwich.

    Mini pizza filling

    As for the filling for mini pizzas, there is literally no limit to your imagination. Although, to make it truly PIZZA, the number of ingredients should range from 4 to 6. In principle, you can put everything that is currently in the refrigerator on the base of a mini pizza and bake it, sprinkling grated cheese on top.     Mushrooms and chicken

    • alcoholic yeast – 40 g;
    • water – 300-350 ml;
    • vegetable oil – 3 tbsp;
    • salt – 0.5 tsp;
    • granulated sugar – 1-2 tbsp.

    • fresh champignons – 200 g;
    • onion – 1 piece;
    • butter – 35 g;
    • tomato sauce – 150 ml;
    • bell pepper – 1-2 pcs;
    • eggs – 2 pcs;
    • hard cheese – 150 g;
    • set of Provencal spices – 1-2 tsp;
    • vegetable oil for greasing molds – 1-2 tbsp;

    Cooking method:

    1. Dissolve the yeast in half a glass of warm water, add sugar, stir and leave for 10 minutes for the yeast to begin fermentation.

    This is one of the simplest pizza recipes in which you do not need to knead the dough and cook it for a long time. Instead of loaf slices, try stuffing unleavened buns, cut lengthwise into two pieces.

    • loaf – 1 piece or 750 g;
    • garlic – 3-5 cloves;
    • fresh basil – 2-3 sprigs;

    First of all, I make dough for a small pizza, but not for one, but for 17 pieces at once, at least that’s how I got it. I didn’t measure their diameter, but I can say that they are very small. So, first I heat the kefir to room temperature, it doesn’t need to be warmer. Then I add egg, salt, mayonnaise and baking powder to it.

    I stir to get a more or less homogeneous mixture and add half the required amount of flour. Next, I start mixing everything with a spatula, and when it becomes difficult to mix, I knead it with my hands. During the kneading process, I add the remaining flour in parts. As a result, the dough will be soft and will not stick to your hands.

    Next, turn on the oven at 40 degrees and put a bowl of dough in it for 5 minutes, and at this time I will prepare everything for the filling. I cut the sausage and boiled eggs into small pieces. I cut tomatoes and bell peppers in the same way. If you have chosen other ingredients as the filling, then start preparing them.     Pizza in the oven preparation:

    1. Pour 100 ml. warm water in a small cup and add yeast to the water, add a spoonful of sugar. Mix everything.

    2. Pour pre-sifted flour into a deep cup. Make a depression in the center of the mound of flour. Pour the diluted yeast into this well.

    3. Little by little add flour to this yeast and stir; add very little flour, just so that it mixes with the yeast in the well where we poured the yeast. Set the flour aside for a moment.

    4. Pour salt and 4 tablespoons of olive oil, or any odorless vegetable oil, into the remaining water.

    5. Pour water and oil into the dough and now begin to knead the dough. First, mix with a spoon, and when the water is absorbed, begin to knead with your hands.

From this point on, the dough must be kneaded for at least 7-10 minutes.

    7. Our dough is kneaded. It turned out to be dense, elastic and does not stick to your hands. Place the dough in a cup, cover with film and place in a warm place for 1-1.5 hours.

    8. Time has passed, open the dough. Look how it rose. It probably doubled in size.

    Preparing the pizza filling

    9. Prepare the filling. The filling is an individual matter, as you understand. You can take whatever you want. But still, there are moments in making pizza that should not be neglected.

    10. Turn on the oven to maximum heat. In electric ovens this is usually 250°-300°.

    11. Divide the dough into 3-4 parts, it depends on what shape you have, roll out the flatbread according to the diameter of the shape. Grease the mold with vegetable oil and sprinkle with a little flour.

    12. Place our flatbread on the mold and pour a little vegetable oil on top and spread it over the entire surface with a brush.

    13. Pour some tomato juice and also distribute it over the entire surface. Sprinkle with oregano seasoning and salt.

    14. Place salami sausage, pre-cut into thin slices, on top.

    15. Then lay out thinly sliced ​​champignons. Don’t try to put in as much filling as possible; the dough should show through somewhere.

    16. Place our cheese on top, maybe cut into fairly large pieces. Well, that’s all, the pizza assembly is finished, now all that’s left is to bake.

    Baking pizza in the oven

    17. Our oven has warmed up to 250°. We will place pizza on the top level. If we had a gas oven, then we should place it in the middle. Of course, if possible, it is best to bake pizza at a temperature of 300°-320°-350°.

    Add a couple of bay leaves and be sure to add basil, fresh if you have it. Be sure to add a tablespoon of sugar, or a little more, to taste. The sauce should not be sour.

    Add salt and freshly ground pepper, add all this to taste. Everything should boil, stirring occasionally, for about 20 minutes so that all the flavors mix.

    12. Cut the dough into 2 parts. We will make thin pizza.

    13. Of course, it is best to stretch the dough with your hands rather than roll it out with a rolling pin, because the rolling pin squeezes a lot of air out of the cake. But these are subtleties; you can roll them out with a rolling pin. Consider the size of your baking pan.
