I can’t say that my family greeted this unusual dish with interest! Not everyone is enthusiastic and completely accepting of dishes of this consistency. Lentil and spinach stew is somewhat reminiscent of porridge, but thinner. Or you can say that it is a very thick puree soup. A very tender, interesting-tasting stew that attracts visitors with its nutritional value of lentils and the healthiness of spinach.

The most important thing in such a dish is to wash the spinach, since most often there is a lot of sand on it, and you can wash it only by completely immersing it in a large container of water, and then rinsing it under running water.

Take the spices to your taste, whatever you like.

It is not advisable to cook a large portion. Stew tastes better when freshly prepared.

Heat vegetable oil and spices at the bottom of the pan.

Add washed red lentils.

Pour boiling water, add salt and from the moment of boiling, cook for about 15 minutes until the lentils are completely cooked.

Add thoroughly washed and chopped spinach to the prepared lentils, stir and remove from heat after boiling. Let stand for 5-7 minutes.

Potatoes 100 gr
Pumpkin 70 gr
Greens (any available, dill, parsley, cilantro)

Cumin seeds 1 teaspoon
Salt 5 g (1 teaspoon)
Ground black pepper 3 g (1/2 teaspoon)

Step 1 Preparing the Vegetables

Rinse and peel the potatoes well. Cut into pieces about 1 cm thick.


Peel the pumpkin and cut it as you would the potatoes.


Step 2 Cooking the stew

Heat the oil in a heavy-bottomed saucepan or frying pan. Add bay leaf and cumin seeds. Fry for 5-7 seconds. Add potatoes and simmer for 5 minutes. Add the washed lentils and cold water until all the lentils are covered and there is 1cm left on top. Add salt and cook with the lid closed for 15 minutes.



After 15 minutes, the water will be absorbed into the lentils. Add pumpkin, tomato and ground black pepper. Cook for another 5-7 minutes. During this time, the pumpkin will cook, and the whole dish will be saturated with the aromas of spices and tomatoes.


Step 3 Finish cooking

Rinse and dry the greens well. Finely chop the rough parts and larger leaves.

Summer is the time for vegetables. Ingredients for the stew:

  • young potatoes - 3-4 pcs.;
  • carrots - 1-2 pcs.;
  • tomatoes - 2 pcs.;
  • red lentils - 0.5 cups;
  • sweet pepper - 1 pc.;
  • sunflower oil - 40 ml;
  • fresh herbs - a small bunch;
  • bay leaf, salt, curry, pepper.

Preparation

Wash all vegetables thoroughly in running water, then dry.
We will use young potatoes with the peel, since it contains the lion's share of vitamins, and it is also very tender and does not spoil the taste of the dish at all. Cut the potatoes into small slices. Cut the carrots into slices.


Heat the frying pan with sunflower oil thoroughly, and then put the potatoes and carrots on it. Add bay leaf. Fry the vegetables over high heat until half cooked.
Next, let's move on to the remaining ingredients. Cut the pepper into large strips, cut the tomatoes into cubes.


Add vegetables to the pan and continue frying for another 5 minutes.


Then add 2/3 cup of clean water and 1/2 cup of red lentils to the stew.


Salt and pepper the stew, add the rest of the spices, cover the pan with a lid and simmer the dish for 7 minutes over medium heat.


Finely chop the garlic clove and herbs. Add them to the finished dish.


Vegetable and lentil stew is ready. Serve the dish both hot and cold.

French green lentils - 200 gr;

Vegetable broth - 2 cups;

Red curry powder - 2 teaspoons;

Cumin leaves - 2 teaspoons;

Salt (coarse) - 2 teaspoons;

Freshly ground black pepper - 1/4 teaspoons;

Red wine vinegar - 1 tablespoon.
