  • young garlic - 2–3 cloves;
  • tarragon and parsley greens - 2–3 sprigs each.

Preparation

  1. Boil the rice in 100 ml of water in advance.
  2. Preheat the oven to 180 degrees.
  3. Chop the greens.
  4. Peel the garlic and heat it in a mixture of oils taken for the filling. The garlic should become soft and transparent, not golden. After flavoring, remove the vegetable from the oil.
  5. Add herbs, rice and cottage cheese to the aromatic oil mixture. Mix well.
  6. Beat the chicken breasts, salt and pepper.
  7. Cut the ham into thin slices the size of a chicken breast. We put it on each chopped piece of meat, and on top - minced curd and rice.
  8. We roll the rolls, fasten them with toothpicks or tie them with thread.
  9. Fry in vegetable oil over high heat until golden brown.
  10. Place the rolls on a greased baking sheet, pour wine and the remaining juice in the pan over them.
  11. Place in the oven for 20–30 minutes.

Advice
Before beating, the meat can be placed between two pieces of cling film. Then it will maintain its integrity, and small pieces will not fly apart during beating.
If you place the ham under the chicken breast before stuffing, then the rolls will get a crispy crust while frying.

If you want to create a simpler menu, you can stuff the chicken meat differently: put a thin piece of ham or sausage (boiled, smoked) as a filling, and a piece of cheese on top. Form rolls, roll them in breadcrumbs, then in beaten eggs, and again in breadcrumbs. Fry for 10 minutes over medium heat on each side. This dish is known as cordon bleu.

Tender, juicy beef with mushroom and vegetable dressing will look truly festive in a puff pastry shell.

You will need:

  • puff pastry - 0.5 kg;
  • beef tenderloin in one piece - 1 kg;
  • champignons - 350 g;
  • egg - 1 pc. for minced meat and 1 pc. for lubrication;
  • onion - 1 pc.;
  • dry white wine - 50 ml;
  • vegetable oil - 60 ml;
  • breadcrumbs - 25 g;
  • mustard - 20 g;
  • salt, pepper, parsley - to taste.

Preparation

  1. Pour half the required amount of oil into the frying pan and heat it up.
  2. Finely chop the onion and sauté.
  3. Mix the frying with peeled and finely chopped mushrooms. Fry for about a quarter of an hour.
  4. Add the egg and mix everything well.
  5. Pour the wine here and wait for it to evaporate.
  6. After this, pour crackers and chopped parsley into the mushroom dressing, mix and remove from heat.
  7. We wash the meat, dry it with paper towels, and rub it with salt and pepper.
  8. Fry in a second portion of oil until golden brown.
  9. Let it cool a little.
  10. As soon as the tenderloin is warm, brush it with mustard.
  11. Roll out the dough to a thickness of 3–5 mm.
  12. Place half of the fried mushrooms and onions across the middle of the resulting layer.
  13. Place the beef on top and cover it with the remaining mushroom-onion mixture.
  14. Cover with dough and seal the ends.
  15. Brush the top with egg and place in an oven preheated to 190 degrees for 1 hour.

  • rabbit carcass - 1 pc.;
  • garlic, lemon - 1 pc.;

  4. Preheat the oven to 160 degrees.
  5. Place the rabbit on a greased baking sheet and sprinkle with quartered tomatoes.
  6. Bake for 1.5 hours.

  1. Soak the saffron in 100 ml of boiling water.
  2. Wash the rice thoroughly and drain off excess water.
  3. Cut the pepper into 4 parts and remove the seeds.
  4. Pour oil into the pan, throw in the unpeeled clove of garlic, pepper and thyme. Warm up for 1 minute.
  5. Take out the spices and place the rice in the aromatic oil. Heat, stirring thoroughly and quickly.
  6. Add water with saffron and let it simmer for 1-2 minutes.
  7. Add the remaining water, cover with a lid and bring to a boil. Add salt and pepper.
  8. Reduce heat and cook until tender, without stirring.
  9. 5 minutes before the end of cooking, carefully stir the rice with a spatula.

  • liquid honey - 0.5 tsp;
  • vegetable oil - 1 table. l.

Preparation

We will lay out the salad in layers. You can chop the ingredients in any order, taking into account that tangerines, persimmons and tomatoes cannot be chopped too much, otherwise they will release juice.

  1. Slice the persimmon. Place on a plate.
  2. Place chopped cucumbers on top.
  3. Next is the tomato.
  4. A layer of pepper.
  5. Then lay out the meat.
  6. Sprinkle with salt and pepper.
  7. Cut the onion into 4 parts and cut each slice into slices. Fry in oil over high heat, stirring constantly until golden brown (about a minute). There is no need to fry it, it should remain half raw. Cool the finished onion and place it on top of the meat.

Preparation

First we prepare the light cake. For this:

  1. Beat the whites with salt.
  2. Separately, beat the yolks with sugar and vanilla.
  3. Very carefully mix the whites with the yolks, sifted flour and starch.
  4. Line a baking sheet (approximately 19x29 cm) with low sides with parchment and grease with vegetable oil.
  5. Preheat the oven to 220 degrees.
  6. Pour the dough onto a baking sheet and bake for 10–15 minutes.

Let's start preparing the dark crust

  1. Beat the eggs in the same sequence as when preparing the white cake. But add 50 g of chocolate melted in a water bath to the beaten yolks (before mixing with all the ingredients).
  2. Then mix everything and bake in the same way as baking the first cake layer.

  1. In a thick-bottomed saucepan, heat the cream and liqueur until bubbles appear.

  7. We connect both halves of the cake by smearing the side with cream and “gluing” them to each other. The cut should form a large triangle from two small ones.
  8. Cover the top of the cake with the remaining cream. Flatten with a knife and decorate to your liking. You can sprinkle grated cocoa, powdered sugar, nuts on top, or create a decor with butter cream.

  1. You can beat 200 g of butter with 1 can of condensed milk.
  2. Or, instead of condensed milk, boil 0.5 cups of milk, add 1 cup of sugar to it and cook until the granulated sugar is completely dissolved. Cool the resulting syrup and beat with 200 g of butter, gradually adding sweet milk.

If desired, you can add fruit essence, bananas, citruses, and lemon zest to the cream.

  3. Take another pita bread and brush it with a thin layer of oil - this will help the salmon “stick” to the pita bread. Cover the salmon layer with oil side down. Spread the spread on top, place the salmon and another pita bread spread with butter (butter inside).
  4. Wrap everything in film, press it down with a flat heavy object, put it in the refrigerator for 4 hours, or overnight.
  5. Use a serrated knife to trim off any excess pita bread and shape the resulting piece into a square shape.
  6. Cut the resulting square into 6-7 strips, make them into squares. Before serving, pierce each mini-sandwich with a toothpick and garnish with dill.

  3. Dry the goose with paper towels. It is advisable to place it in the refrigerator to dry overnight. But it’s not necessary - you can fry it right away.
  4. Season the bird with salt and pepper, inside and out.
  5. Push dried fruits and small sour apples into the belly (leave the remaining apples and dried fruits for the end of frying).
  6. Place in an oven preheated to 200 degrees.
  7. Pour half a bottle of red wine and fry the goose, basting with juice from time to time.
  8. After about an hour, add the rest of the fruit to the tray and add more wine.
  9. 15 minutes before the end of frying, brush the goose with the apricot-honey glaze.

Jamie Oliver's Fried Chicken

Jamie Oliver is one of the most famous chefs and television personalities in the world. He offered his recipe for oven-baked chicken.

Ingredients (for 8 servings):

  • 2 chickens
  • sea ​​salt and ground black pepper
  • 4 kg potatoes
  • 2 lemons or 3 limes
  • 2 heads of garlic
  • thyme, rosemary
  • olive oil
  1. Season the chicken with salt and black pepper, wrap in cling film and place in the refrigerator.
  2. Cut the potatoes into 4 parts. Separate the garlic into cloves.
  3. Preheat the oven to 190 degrees.
  4. Place the potatoes, lemon and garlic in a pan with plenty of boiling salted water and cook for 12 minutes.
  5. Drain the water and let the potatoes dry for 1 minute over the heat, shaking the pan. Remove lemon and garlic. Cover the pan to keep the potatoes hot.
  6. While the lemon is hot, pierce it about 10 times. Remove the chicken from the refrigerator, pat dry with paper towel and rub with olive oil.
  7. Add lemon, garlic and thyme to the chicken, then place it in a deep baking tray and cook in the preheated oven for 45 minutes.
  8. Transfer chicken to a plate. Place the potatoes and rosemary leaves on a baking sheet and toss to combine. Make a well in the center and place the chicken in it. Cook for another 45 minutes or until the chicken is cooked through and the potatoes are lightly browned.
  9. When the chicken is done, remove the lemon and garlic. Peel the garlic, mash and rub the chicken with it, remove the rosemary leaves.

Ham with honey and mustard

Pork prepared in this way is a real homemade ham, which can be served either cold as a snack or hot, adding a side dish of vegetables and mustard sauce.

Ingredients (for 8 servings):

  • 5–5.5 kg pork ham
  • 2–2.5 onions
  • 2 carrots
  • 2.5 egg yolks
  • 2.5 tbsp. l. honey
  • 1.5 tbsp. l. espresso
  • 6.5 tbsp. l. Dijon mustard
  • cloves and salt to taste
  1. Place the ham overnight in a large saucepan with salted water (150 g per 4 liters of water).
  2. Preheat the oven to 120–150 degrees. Peel the bulbs and stick a few cloves into each. Place the ham in the pan, place the onion and whole peeled carrots next to it.
  3. Pour water so that it covers the vegetables. Bake at 120 degrees for about 2 hours. Or, if you have a food thermometer, until the internal temperature of the meat reaches 75 degrees. Remove from oven and cool.
  4. Separate the whites from the yolks. Whisk the yolks with honey, chilled espresso and mustard. Increase the oven temperature to 230 degrees. Transfer the ham from the broth to a baking sheet with a wire rack and coat the ham with the glaze.

  7. 3 tbsp. l. honey
  8. dried cranberries
    1. Remove eggs, butter and milk from the refrigerator in advance to warm them up.
    2. Mix flour, baking powder, spices and salt. In another bowl, beat sugar and butter, add eggs, honey, milk and soda, mix.
    3. Mix both mixtures until smooth. Add dried cranberries to taste.
    4. Grease a cake pan with butter and sprinkle with flour. Pour the dough and place in an oven preheated to 180 degrees for 40–45 minutes.
    5. The finished cake can be topped with glaze: add 3-4 tbsp. l. powdered sugar, add a few drops of lemon juice and mix. The mass should be thick and opaque.

The final stages of preparation: tear the iceberg lettuce with your hands and cut the tomatoes in half. If the tomatoes are large, it is better to cut them into cubes. Season the fried cheese and vegetables with the prepared sauce and mix thoroughly. Add crackers just before serving. It is also advisable to sprinkle the finished salad with Parmesan cheese.

  • four pieces of chicken fillet;

  • half a glass of water;
  • half a glass of cream;
  • two tablespoons of olive oil and butter;
  • one teaspoon of Italian herbs;

Cooking:
First, salt and pepper the chicken fillet to taste. Next, the chicken is fried until it turns golden. Fry in a mixture of butter and olive oil.   • about two hundred grams of salmon;
  • about two hundred grams of paste;
  • about one hundred and fifty grams of heavy cream;
  • one tablespoon of olive oil;
  • about forty grams of butter;
  • three cloves of garlic;

Cooking:
First, boil the pasta according to the manufacturer's recommendations. Don't forget to add a little olive oil to the pasta. The salmon is cut into fairly large pieces, after which it is fried in butter for about ten minutes.
