3. Sift the flour either into a separate bowl or directly into the dough being prepared. Whichever is convenient for you. Place it into the liquid mixture so that there are no lumps left in it. You can also use a whisk or mixer at low speed.


4. Boil water in advance. Pour it into a glass and add soda to boiling water.


Stir until completely dissolved and pour into the dough in a thin stream. At the same time, continue to stir the entire mass. The dough should be homogeneous and without lumps.


5. Leave it to steep for 15 – 20 minutes. During this time, all components will connect, and the mass will become elastic and elastic. After the allotted time, add oil and stir. IN finished test There should be no oil circles left on the surface.

Since kefir-based pancakes are very sticky, the pan needs to be greased with oil before each pancake. Let's use the convenient old "old-fashioned" method - half a potato, skewered on a fork.


Heat the frying pan and grease it with oil. And pour out a ladle of dough, rotating the pan, spreading the dough over the entire surface.


Turn over very carefully when the entire surface is covered with holes. Grease each pancake with butter.

Kefir pancakes are one of my favorites. These pancakes go perfectly with any filling, both sweet and savory. You can simply grease the pancakes with butter and sprinkle with sugar, like in childhood. Can be served with honey, sour cream or jam. You can also cook pancake roll or cake. Try these delicious and thin pancakes!

Compound:
Kefir – 500 ml
Eggs - 3 pcs.
Wheat flour - 120-150 g
Soda - 0.5 tsp.
Salt - 0.5 tsp.
Sugar - 1 tbsp. l.
Sunflower oil - 2 tbsp. l.

Preparation:


In a bowl, beat the eggs with a whisk, add sugar, salt and soda and stir well again.



Pour in sunflower oil and add sifted flour. You may need more or less flour, you need to look at the consistency of the dough.



Stir the flour so that there are no lumps and then pour in the kefir. Mix the dough well and let it stand for about 20 minutes. Then you can start frying.



Before the first pancake, grease the pan with oil and remove excess oil. You can prick a piece with a fork raw potatoes, dip it in oil and thus grease the pan. Pour a portion of the dough into the center of the pan and tilt it to distribute the dough evenly.



Fry all the pancakes this way.

Thin pancakes on kefir with boiling water

Thin pancakes with holes on kefir - tasty, satisfying and beautiful. Perfect breakfast or dinner for every day. If you want your pancakes to be really thin, use kefir with a low fat content. And you need to add boiling water to the dough - the dough turns out choux, and the pancakes made from it are very tasty, thin and delicate, with a holey structure.


Compound:
Flour - 1 cup
Kefir - 1 glass
Boiling water - 1 cup
Eggs - 2 pcs.
Salt - a pinch
Sugar - 2 tbsp. l.
Vegetable oil - 3 tbsp. l.
Soda - 1 tsp.

How to cook custard pancakes with kefir



In a large bowl, whisk the eggs with salt and then pour in the boiling water, constantly whisking the contents of the bowl. Whisk vigorously to obtain a smooth mixture.



Now let's add kefir.



Add soda and sugar. Mix the dough. Bubbles will appear on the surface of the dough - this is kefir reacting with soda.



Add any vegetable oil, it is better if the oil is odorless.



Gradually add flour and mix the dough thoroughly with a whisk so that no lumps form.



In the end, we should end up with pancake dough like this. Let's let it sit for ten to twenty minutes.



Place the frying pan on strong fire, grease the surface of the frying pan with vegetable oil, pour a small portion of dough into the frying pan. Turn the pan in a circular motion so that the dough is evenly distributed over the surface of the pan.



As soon as bubbles appear on the surface of the pancake, and we see a brown border along the edges of the pancake, turn the pancake over to the other side.



Bake pancakes on both sides until golden brown. We bake the next pancake without greasing the pan with oil.

How to cook thick yeast pancakes with kefir

Whisk the eggs with a pinch of salt and sugar. In a mug with 50 ml. Dissolve yeast in warm water. Kefir or yogurt in warm pour into the egg mixture.



Bring to a homogeneous consistency and sift the flour into a bowl. Add flour little by little, stirring constantly. Knead the dough until it becomes thick sour cream.

It is better to knead the dough in a large bowl, because during the rising process it will double in size. Cover the pan with pancake batter with a light napkin or cover with a lid. Leave in a warm place for about one hour.



Then, when the dough is ripe, bubbles like this should appear on the surface. Add vegetable oil and mix. Now you can start frying the pancakes. To make the frying process faster, use two pans.

Add kefir. Let me remind you that the fat content of kefir should be no more than 1.5 percent. Mix.


Now it will go secret ingredient, which will help us make thin, very thin pancakes with kefir. This ingredient is boiling water. Put a kettle of water on. Most are electric and boil water in two minutes. Next, pour the boiling water into a measuring cup. To prevent the glass from cracking, pour slowly. Brewing rule pancake dough very simple - take a broom in your right hand, start stirring the dough and, without stopping, take a container of boiling water in your left hand (be careful, don’t get burned, use an oven mitt!) and pour it into the dough in a medium stream. I didn’t film the process because I only have two hands. But you see the result. The dough has already foamed.


Next up is flour. I especially like this recipe because there are no discouraging phrases “approximately”, “all flour is different”, “look at the consistency”. Exactly a glass of flour. And you don’t have to peer into the thickness of the dough in the hope that it will suddenly dawn on you - this is finally the consistency you were looking for... I took a photo so you can see what “a glass of flour” means. Do you see the hill from above? Make the same one.


Pour the flour into the bowl with the dough and mix with a broom. It disperses well in hot liquid - no lumps remain.

All that remains is to add soda and vegetable oil. So I showed how much soda I put in. This is a coffee spoon - its volume is about half a teaspoon. You can, in principle, put in a third of a teaspoon. But then the holes can be smaller.


The kneaded dough has already started to bubble - soda quickly reacts with sour kefir.


The dough turns out very liquid. So much so that in poor lighting it was not even possible to clearly capture the process of the dough dripping from the spoon. It drains very quickly. Liquid.


That's it, you can fry it. Place the frying pan on high heat. I know that many people grease the pan with oil only for the first time, but I literally pour two or three drops of oil before each pancake. To make sure the pancake doesn’t stick, and it looks prettier than those fried in a dry frying pan.

When the frying pan is hot, scoop up 2/3 of a ladle of dough and pour it strictly into the middle of the frying pan, and then begin to turn and tilt it in different directions so that the dough spreads. As you can see, holes appear on the pancakes immediately.


Fry for 2 minutes, turn over to the other side, another two minutes. The kefir pancake is ready. I took it out to light. And you saw this photo at the beginning of the recipe. Holes - the sea. Pancakes rolled into triangles and placed in a row on a plate also look impressive.
