Cooking process:

  1. Rinse the pork heart thoroughly under running water and clean it, removing all veins and vessels. Cut into small pieces and cook in salted water.
  2. Boil the eggs hard.

  4. Cut the onion into half rings and marinate.

Cooking process:

  1. Sift the flour and add it to it warm milk, add yeast, sugar, salt, eggs, melted butter. Knead the dough and leave it for an hour in a warm place.
  2. When the time is up, divide the dough into 15 small pieces, round them and leave for 15 minutes.
  3. Cut the sausages diagonally.
  4. Roll each ball into an oval cake, make a small cut on top, place a piece of sausage on the bottom and roll the dough so that the top cut is on the sausage. Make cuts on the sides and move them slightly apart - these will be the “ears”.
  5. Use raisins as eyes and spouts. Lubricate yeast buns egg. Place the baking sheet in an oven preheated to 180 degrees for 20-25 minutes.

Cooking process:

  6. Fry the resulting legs until golden brown crust.
  7. Transfer the drumsticks to a baking dish and place in the oven for 15 minutes at 180-190 degrees.

Pork medallions in oranges

- pork 500 gr.,

- vegetable oil,

– large orange 1 pc.,

- shallot,

- purified water,

- turmeric,

- salt, pepper, tsp.,

Cooking process:

  1. Cut the pork into medallions 0.5 cm thick, season with salt and pepper and place in a preheated frying pan greased with vegetable oil.
  2. Fry the pork on both sides until golden brown.
  3. Add the juice squeezed from one orange and a little chopped zest. Also add shallots cut into half rings, a couple of spoons of honey, a little water and sprinkle everything with turmeric.
  4. Cover the pan with a lid and leave the meat to simmer over low heat for 20 minutes. Look under the lid from time to time and stir the medallions.

“Dog” salad with smoked chicken breast and champignons

- 1 chicken smoked breast,

— marinated champignons 150 gr.,

- potatoes 5-6 pcs.,

Cooking process:

First of all, soak the raisins in rum. If you don’t have it, then cognac or brandy will do just fine. Also no? Well then, let there be water. Place the salad mix on a large flat plate. Today I had regular lettuce leaves and arugula on hand (I love it). Chop the onion into thin half rings (I have half a rather small head) and place it on the salad mix. Next come the grapes. It should be of the sweet variety. If the grapes are large and contain seeds, cut each berry into 2 halves and remove the seeds.

I always make this salad if I previously had oven-baked chicken on the menu. Our family is not the most ardent fan of breast, so it always remains partially and its direct path is in salads. Cut the breast into small pieces and distribute over the salad.

On top - raisins. Dressing - just mix vinegar, oil, a pinch of salt and sugar with a fork. If you don’t have fresh tarragon, use dry tarragon like I did this time (you need a couple of pinches). Is there none? Well, we’ll get by, although he’s very much on topic there! About the Provence spice mixture. I have tried a lot in my time and have definitely settled on one company. For a light aroma you literally need 3 turns of the mill.

Feta cheese appetizer “Snowballs”


How to make a feta cheese appetizer

Peel and press the garlic. Place the cheese in a bowl, add a tablespoon of fresh oregano leaves (chop if large), a tablespoon of thyme leaves, garlic and mix well with a fork. This time I didn’t have fresh thyme, I used dry thyme and not a tablespoon, but a teaspoon. Of course, you can mix it in a blender, but then the consistency of the cheese will slightly liquefy and the “snowballs” will blur a little. But, if you put everything in the refrigerator, after a while the cheese mixture will thicken again. Next is basil. I suggest taking a mortar and grinding it thoroughly. If you don’t have a mortar, then use a blender again: pour oil into it, add basil and mix until smooth.

Place the basil along with the resulting juice in a bowl, add olive oil and mix. Of course, if you don’t like or don’t have olive oil, you can totally use vegetable oil. In a plate, mix crackers (they should be white) and grated cheese. With wet hands, form small balls from the cheese mixture and roll them. We take a plate in which we will serve the appetizer and pour our aromatic oil into it through a strainer. I don't always remove the basil. I'm quite comfortable with him too. Serve with sliced ​​baguette, for example. You can dry it a little in a frying pan or oven, or you can just fresh it, with a delicious crispy crust.

Hot:

Fish baked with sauce

Preparation:

Place the fish in a baking dish. Spray the fish from all sides lemon juice(this is done not only to add flavor, but also to make the fish less boiled). Salt and pepper. Next, let's make the sauce. In a separate bowl, melt the butter and fry the flour in it until golden color. Stirring continuously, pour in a glass of cream or milk. Add mustard, nutmeg, pepper, salt and finely chopped parsley. Stir everything continuously and bring to a boil (but do not boil).

The sauce should thicken. Pour the sauce over the fish, add pieces of butter on top of each and place in the oven at 200 degrees for 15 minutes. It is very important not to overcook the fish, otherwise it will turn out boiled and fall apart. 5. We take out the fish baked in the sauce, everything is ready. Before serving, you can garnish with lemon and tomato slices.

Dessert:

Chocolate truffles

Preparation:

In a small saucepan, combine cream, cinnamon and chili powder. Bring to a boil while heating over low heat and stirring. Add chocolate, broken into small pieces, and butter. Remove from heat and stir until all ingredients are combined into a homogeneous mass. If the mixture cools too quickly and the butter and chocolate do not have time to melt (for example, if you forgot to take the butter out of the refrigerator first to soften it), gently heat the entire mixture over water bath. Then add cognac and stir until smooth. Cover with cling film and refrigerate for at least 4 hours until the mixture is completely cool and firm.

Place cocoa powder in a small bowl. Using a ball scoop or a simple small spoon, “scoop” the frozen chocolate mixture and roll it into a ball. Truffles don't have to be perfectly round. The less perfect their shape, the more they justify their name, because truffle mushrooms are precisely irregular in shape. Dip the truffles in cocoa powder and place on a plate or in a special paper mold. Serve immediately or refrigerate in a tightly sealed container. You may need to recoat truffles that have been stored in the refrigerator in cocoa.

Chocolate truffles can be made a week before the holiday, or a month before. IN finished form they will wait their time in the freezer. So, in the pre-New Year bustle, we simply choose a day when it would be nice to cheer up by working with sweet chocolate mass and start making sweets.

Bake the chicken breast for the salad and quickly mix the sauce. We remove the finished product chicken fillet into the refrigerator, where the sauce is sent in a small jar with a tightly screwed lid. Soak raisins in cognac, rum or other strong alcohol. We will need it for the salad. In the evening we bake the fish; on a holiday we will only need to heat it up, and transfer the truffles from the freezer to the refrigerator. We also prepare the cheese appetizer sauce in advance, which we store in the refrigerator for up to an hour.

Preparation:

Wash the potatoes and carrots thoroughly and boil them in their skins until tender. Cool, peel and cut into small cubes. Peel the hard-boiled eggs and cut them in the same way.

Salad with crab sticks and oranges

The salad is prepared in the standard way: boil the eggs, finely chop all the ingredients, crush the garlic, mix everything.

Hot:

WITH vine, baked piece with prunes

Cut a piece of pork so that you get a “book” - leaves on the cover. The thickness of the “sheets” should be at least 1 cm. Make a mixture for coating: mix mustard, mayonnaise, salt. Coat a piece of pork with the mixture on all sides, pouring a little between the “pages”.. Wrap in several layers of foil and put in the refrigerator to marinate (from 6 hours to 3 days).

Bake in the oven without removing from the foil at t=200°C for about 1 hour. Shortly before the end of baking, open the foil to create a golden brown crust.
In my oven, it took me 50 minutes of baking in foil, and then another 20 minutes with open foil. I checked the degree of readiness with a long sharp knife: I pierced the pork in the thickest place. When the juice flowing from the puncture site turned from red-pink to transparent, the pork, baked in a piece, was cooked.

Dessert:

Sponge roll with cherries and chocolate icing


Preparation:

Mix cherries with 2 tbsp. sugar, cognac or rum. Leave it to brew for a couple of hours.

For the sponge cake, beat the eggs with 100 grams of sugar and vanilla sugar until the sugar is completely dissolved. Gently fold in the flour using a spatula.

Place the dough on a baking tray lined with baking paper in a layer of 0.5 cm. Bake for 10-15 minutes at 180, until dry. Cool and soak in cherry juice.

Prepare the cream. Beat the sour cream and powdered sugar into a fluffy mass and apply to the cake in an even layer. Place the cherries on top. and roll it up.

Prepare the glaze. To do this, melt in a water bath or in the microwave. chocolate, butter and honey, mix thoroughly and pour over the roll. Place in the refrigerator for 1 hour.

Second day .

1. Cook potatoes, half of what you bought. Fill with water, salt and cook until tender. Then drain the water. Place the cooled potatoes in the refrigerator overnight. We'll clean it tomorrow.

2. Cook carrots. Almost all of it. We leave one carrot for the pate. Cook it the same way as potatoes.

3. Cook the beets. Just like potatoes and carrots. We cook all the vegetables separately and be sure to add salt during cooking.

4. Bake boiled pork. Wrap the marinated piece of meat in several layers of foil and bake for 1 hour 20 minutes at 150 degrees in the oven. Cool the cooked boiled pork without unwrapping it and put it in the refrigerator.

5. Salted fish transfer from refrigerator to freezer.

6. Prepare roulade for cold cuts. We cut the chicken along the back, you can cut out the spine. Unfold skin side down. Remove the bones. We trim the wings and cut off the bone from the leg. We also cut the legs. There should be a layer chicken meat on the skin. If you damage the skin somewhere when removing bones, it’s not at all scary. Beat the meat a little and add salt. Separately, stir 5-6 eggs with a fork and fry a thin omelette in a wide frying pan. Transfer the omelette to a layer of chicken meat and roll it up. Wrap the roll in two layers of cloth or gauze. Sew or tie. Place the wrapped roll in a saucepan. Fill with water so that the water covers the roll by 2-3 centimeters. Bring to a boil, then reduce heat to very low. Cook for an hour and a half. Remove the pan from the stove and leave to cool along with the roll. When it cools down, take out the roll and place it in a bowl, pressing something heavy on top. The remaining broth can be strained and cooked into soup - the New Year is still far away, don’t let your family die of hunger. Don’t throw away the bones from cutting up the chicken; put them in the refrigerator until tomorrow.

7. Cook pears for dessert in advance. Peel the pears, cutting them thinly with a potato peeler. We leave the cuttings. Place the pears in a saucepan. Mix 300 grams of sugar, 300 ml of water and the same amount of wine. Pour this mixture over the pears, bring to a boil and cook for 20 minutes. Remove the pan from the heat and leave the pears in the syrup to cool. When it cools down, take it out, put it in a plate, wrap it in film and put it in the refrigerator.

8. Wash the remaining potatoes well with a dishwashing sponge. And put it in the refrigerator.

9. Boil eggs. 10 pieces hard-boiled.

Day three. The most haymaking!

Poultry meat

The easiest and least expensive option is to cook chicken with salt. For this you will need:

  • Chicken.
  • 1 kg coarse salt.
  • Small apple (3 pcs.).
  • Lemon.
  • Spices (to taste).
  1. Pour enough salt onto a baking sheet so that the layer is 2-3 cm thick.
  2. Rinse the chicken and put apples inside (as many as will fit). Sew the edges with thread to prevent the apples from falling out.
  3. Place the chicken back on the salt layer. Pour lemon juice, sprinkle with spices and salt.
  4. Place in a preheated oven at 250-300 ℃.

On average, cooking time is 1.5-2 hours.

Transfer the finished chicken to beautiful dish(if the edges of the carcass were sewn, remove the threads). You can decorate the chicken with finely chopped dill or parsley, lettuce leaves, and lemon slices. Cherry tomatoes and cucumber slices are placed around the carcass.

Baked fish

You will need:

  • Fish.
  • Spices for fish (sold already packaged).
  • Lemon.
  • Sour cream 200 g.
  • Aluminium foil.
  1. Cut the fish (preferably not bony) into slices.
  2. Salt each piece, sprinkle with spices, squeeze out lemon juice.
  3. Pour oil into a baking tray and place the fish in it. Pour in sour cream and cover with foil.

The finished fish is placed on lettuce leaf. Decorate with: green leaves (parsley, dill), lemon slices, and chopped green onions.

Holiday side dish

For New Year 2019, the main hot dish will be a side dish. Most housewives cook potatoes, but you can cook rice. You will need:

  • Round white rice 0.5 kg.
  • Medium size bulbs 3-4 pcs.
  • Spices (cinnamon, pilaf spice mixture).
  • Walnut kernels.
  • Vegetable oil.
  1. Rinse and soak the rice in water (30 minutes).

  6. Separately, fry the walnut kernels in a frying pan. Fry in vegetable oil over low heat.

It is advisable to decorate the finished rice with nuts before serving. “Dark rice” with nuts goes perfectly with fish.

Unusual salad

Ingredients:

  • Parsley 1 bunch.
  • Tomato 2-3 pcs.
  • Lettuce leaf.
  • Sweet pepper 1 pc.
  • Onion 1 pc.
  • Boiled beets 2 pcs.
  • Raw carrots 1 pc.
  • Lemon.
  • Vinegar.
  • Olive oil.

Grate the carrots. Chop and mix everything else. Add vinegar, lemon juice, salt and pepper to taste. Drizzle with olive oil.

To prepare it you need:

  • Processed cheese (2 pcs.).
  • Boiled eggs (4 pcs.).

  • 4 eggs.
  • 3 tbsp. flour.
  • 2 tbsp. Sahara.
  • Lemon.
  • 1 tsp. vanilla sugar.
  • 2 tsp. baking powder.
  • 1 tbsp. milk.
  • Breadcrumbs.
  • Vegetable oil 50 ml.
  1. Break the eggs into a large container. Add sugar (regular and vanilla) and baking powder. Beat everything well with a mixer.
  2. Grate the lemon zest (peel) into the resulting mixture. To add more lemon flavor, add juice squeezed from the fruit.
  3. Add flour, milk and vegetable oil. Beat everything well again with a mixer.
  4. Pour some vegetable oil into the baking dish. Please note that the form must be high, because the sponge cake will rise. Add flour and breadcrumbs to the butter. The mixture should be non-liquid and not dry. Coat the entire surface of the baking dish with this mixture.
  5. Preheat the oven to 220-250 ℃. Pour the dough into the mold and bake. It is not advisable to open the oven until the dough has risen.

The biscuit will bake for 30-40 minutes. To check readiness, you need to pierce it with a knife. If the knife is dry (without sticky dough), then the dessert is ready.

If everything is done correctly, then removing the biscuit from the mold is easy. Run a knife along the sides of the sponge cake and pan. Turn the mold over and the sponge cake will fall out of it.
