The dough and filling are ready. The final step is to place all the ingredients in the mold. We can use either metal, glass or silicone. We lubricate it. We put the dough into it, and stick the apple slices evenly in a circle, while deepening them a little.

This cake will have an amazing taste thanks to the thick caramel, which is obtained from a mixture of sugar, apple juice and cinnamon and perfectly saturates the base.

To prepare a yeast pie with apples, we will need:

  • salt - ½-1 tsp;

  • flour - about 600 g.

First, we put the dough by analogy with ordinary yeast dough. But you need to melt the butter in advance. When the dough is ready, the oil temperature should be 30-40 degrees.

We add baked goods into the prepared dough, namely eggs with butter. And add the remaining ingredients: salt, sugar, part of the flour. It is important that the consistency of the dough is correct. Well, let's take a look at the ingredients we need. We will prepare the dough from:

  • rye flour - about 180 g;
  • olive oil (flavorless) - 50 g (5 tbsp.);
  • cold water - 3-5 tbsp. l.;
  • eggs - 55 g or 1 pc.;
  • poppy seed - 18 g (2 tbsp);
  • salt - pinches;
  • butter - 3-5 g.

For the filling you will need 200 g of apples (one large or 2 medium ones), and the filling is prepared from:

  • eggs - 110 g or 2 pcs.;
  • natural yogurt (fat content 2.5-4%) - 200 ml;
  • brown sugar (honey) and cinnamon - ½ tsp each.

So, we have collected the ingredients, now we are preparing an apple pie in a slow cooker.

Beat the egg with a whisk. Mix flour with poppy seeds, salt, egg and butter. Mix the dough. Gradually add cold water, one tablespoon at a time, until the dough forms a ball. Wrap the dough in cling film and place it in the refrigerator for at least 30 minutes.

Grease the multicooker bowl with butter.

Cut two strips of parchment paper about 12 cm wide and about 15 cm long. Place them crosswise in the multicooker bowl. They are necessary for conveniently pulling out the cake, so as not to turn it upside down.

We will need:

  • one egg;
  • jam;
  • 500 g puff pastry;
  • sugar;
  • 3 apples;
  • lemon juice.

Prepare layer pie with apples in two simple steps. To begin, lay out the frozen puff pastry on paper, let it thaw, cut off small ribbons along its entire perimeter, which we cut on both sides with a knife. Brush the edges of the dough with beaten egg. We put ribbons on these edges. Lubricate the middle of the dough with jam, then lay out the peeled and sliced ​​apples.

In the second step, sprinkle the apples with lemon juice, sprinkle them with sugar, and brush the ribbons with egg. The mysterious recipe has been haunting me for a long time. I baked a wide variety of apple pastries: yeast and bulk pies, charlottes and manna cakes, but the pie from childhood remained elusive. It was not a sponge cake or a yeast cake, but what kind? And then I found a recipe that looks and tastes very similar to that same pie!

Ingredients:


  • 6-8 large apples, the more, the more apple pie! It is better to take firm, sour apples;
  • Lemon juice – 2 tablespoons;
  • 225 g butter;
  • 280 g of sugar (1 cup and a little more than 1/3 cup);
  • 4 large eggs (because if you take small eggs from young chickens, the dough will turn out too thick. Although you can take 6 of them :)
  • Wheat flour - according to the recipe, 350 g, that is, 2 and 2/3 cups. But, in my opinion, there is a lot of this - the dough is not poured into a mold, but laid out. Next time I would use a little less, like 2 ¼ - 2 ½ cups of flour.
  • Baking powder – 2 teaspoons;
  • Cinnamon – 1 teaspoon;
  • Optional: a packet of vanilla sugar.

How to bake a delicious apple pie:

First, prepare the apples: wash them, cut them into quarters, core them and cut them into thin slices. To prevent oxidation, sprinkle with lemon juice.


The dough for the pie is prepared approximately the same way as for the “Cherry Wave”, the crust is similar to both a sponge cake and a cupcake: very fluffy, but denser than a sponge cake. You might even think that this is a rich yeast dough, although there is no yeast there.

Beat the softened butter with a mixer with sugar until fluffy (1 minute at low speed). It’s better to use powdered sugar instead of sugar, then the dough will turn out even softer.

Add eggs to the beaten butter one at a time, beating until smooth each time.



Sift the flour and baking powder into the dough, not all at once, but in 3-4 additions, and mix each time.


Look at the consistency of the dough: it should not be too stiff, but not liquid, thicker than for pancakes.


A round or rectangular pan is suitable for baking the pie. I have a round one with a diameter of 25 cm, but the layer of dough in it turned out to be high, so the pie took a long time to bake, more than an hour. So I advise you to take a larger form, the original was 20x27 cm.

Cover the pan with oiled parchment and grease the sides with vegetable oil.

Spread half of the dough over the bottom of the pan.


Spread the apples evenly onto the dough and sprinkle with cinnamon.


Place the rest of the dough on top of the apples and level with a spoon.


Place the apple pie in the oven and bake at 180-200C until a dry wooden stick, and how many minutes depends on your pan and oven. Approximately 50-60. To make the crust on the pie even more golden brown, shortly before it’s ready, brush its surface with beaten egg yolk.


Let the cake cool slightly in the pan, then carefully remove it and transfer it to a plate.

Melt the butter, add flour, stir so that there are no lumps left, add water and both types of sugar, cook until it dissolves. Peel and core the apples, cut into thin slices and mix with the filling.
Take out the dough, divide into 2 parts. From one part, roll out a layer so that it covers your baking dish with sides. Place the layer in the mold and place the filling on it. Roll out the second part of the dough and cut into strips or roll into ropes and arrange in a grid over the filling.
Bake the pie for 40-45 minutes at 200 ºС.

In modern Russian cuisine there is a similar pie, where sour cream is used in the filling instead of butter. For some reason it is called Tsvetaevsky. It is generally accepted that sisters Marina and Anastasia Tsvetaeva prepared such a pie when they received guests in their house in Tarusa. Direct indications of this were not found anywhere, and contemporaries did not notice Marina Tsvetaeva’s craving for cooking. However, the beautiful surname suited the beautiful dessert so well that historical accuracy is no longer important.

Mix the remaining filling ingredients and pour over the apples. Bake the pie at 180-190ºС for an hour. It is better to serve Tsvetaevsky pie chilled.

Another signature apple pie is Tarte Tatin. Its name is also associated with two sisters - Stephanie and Caroline Tatin, who ran an inn in the French town of Lamotte-Beuvron and themselves prepared food for guests. The delicious apple tarte Tatin was created thanks to Stephanie's mistake. Either she forgot to put a layer of dough under the apples when she was preparing a regular apple pie; either she forgot about the apples languishing in caramel, they got burnt, and Stephanie saved the situation by covering them with a layer of dough; or maybe she completely dropped the apple pie and decided to serve it without a top. Pour 200 g of sugar into a thick-bottomed saucepan, add 2-3 tablespoons of water and place over high heat. When the mixture bubbles, pour in the oil, add the cinnamon and vanilla and stir the caramel until it turns golden. Do not leave the caramel unattended - it may burn. Turn off the heat, place the apples tightly in the caramel and place in the oven for 15-20 minutes at a temperature of about 160ºC.

To prepare the dough, mix sugar and butter, add mashed bananas to the porridge. Mix 1 cup of flour with baking powder and salt, add to the banana mixture and mix thoroughly, gradually adding flour to obtain a dense consistency. Form the dough into a ball and flatten it into a flat cake, slightly larger in size than the pan in which the apples are baked. Remove the pan with apples, cover with a layer of dough, tuck the edges in and place in the oven for another 15-20 minutes. After removing the pie from the oven, leave it for a few minutes, after which you can turn it over onto a plate and bring it to the table.

If you want an apple pie without excess sugar, sour cream, butter and other extra calories, prepare a simple tart:

Ingredients:
1 cup flour,
70 g butter,
2-3 apples,
3-4 tbsp. apricot jam,
salt, sugar, cinnamon - to taste.

Preparation:
Place flour and butter in a food processor, add salt and sugar, 2-3 tablespoons of ice water, knead the dough. Grease the mold with oil, spread the dough over it, gently pressing it in, and put it in the refrigerator for several hours. Cut the apples into thin slices without peeling them, fan them out onto the dough, sprinkle with cinnamon, and pour warmed apricot jam over them. Bake the tart for 30-40 minutes at 200ºC.

We completely forgot about apple pies with yeast dough. And they are no less tasty. For example, like this:

2.5 cups flour,
25 g yeast,
1.5 glasses of milk,
1 tsp salt,
150 g butter,
150 g sugar,
5 cardamom seeds,
1 kg of apples (Antonovka).

Preparation:
Knead the dough from flour, yeast and milk and let it rise. Grind the butter with sugar, add crushed cardamom, mix with the dough, let it rise again and roll into a finger-thick layer.

Grease the flatbreads with softened butter, stack two on top of each other, pinch the edges and place in the refrigerator for several hours, covered with a plate.
Peel and core the apples, chop finely, mix with steamed raisins (you can pre-soak the raisins in rum or liqueur), breadcrumbs and sugar.
Remove 2 dough balls from the refrigerator, place them on top of each other (you will get 4 layers of dough) and roll them out very thin. Brush the entire surface with melted butter, sprinkle with breadcrumbs and spread the filling in a thin layer over the entire surface of the flatbread. Carefully roll the cake into a roll, place it on a baking sheet greased with oil, grease the surface with oil and place in the oven preheated to 180ºC for 40 minutes. First of all, let's do the filling. Wash the apples, dry them, remove the peel and seeds. By the way, the apples should be sour, there should be no rot or holes on them. Then we cut them in half and cut them into thin slices.


Now let's decide on the sizes. The amount of ingredients is calculated on a 40 x 60 baking sheet, but if you are going to make a 40 x 30 pie, then take half as many ingredients. No, you don’t need to immediately rush for a centimeter and scrupulously measure everything. Errors are acceptable :)

Let's put the apples aside for now and make the dough. It must be divided in half and rolled out into a thin layer 5 mm thick, after sprinkling the table with flour. Again, all measurements are done by eye.

This may seem incomprehensible to a beginner, so I’ll explain: carefully wrap the dough on a rolling pin and unwind it on a baking sheet.
