Ingredients

  • Premium wheat flour – 0.6 kg;
  • Egg (C1 or C0) – 1 pc.;
  • Baking powder (baking powder) – 1 tsp;
  • Sugar – 1-2 tsp;
  • Salt - on the tip of the knife;
  • Sunflower oil – 1 tbsp. l.;
  • Boiled water – 1 tbsp.

How to make pie dough without yeast using water

To prepare a quick yeast-free dough for pies, first sift all the flour into a bowl.

Add salt, sugar and baking powder to the flour. Stir the mixture with a spatula or spoon. If desired, baking powder can be replaced with regular baking soda, but be prepared for the finished dough to take on a slightly grayish tint.

Pour cool boiled water and sunflower oil into a bowl. You can pour it all at once or in portions, starting to knead the dough with a spatula.

Crack one egg and start kneading the dough by hand directly in the bowl.

And then sprinkle the table or cutting board with flour and dump the dough there. Knead until you get a homogeneous lump of elastic dough that will absorb almost all the flour from the table.

Now leave the dough on the table, covering it with cling film, for a quarter of an hour. During this time, the stickiness of the flour will appear - the lump will become more elastic and viscous. This quality will help you create even and identical pieces for the pies.

Next, arm yourself with a rolling pin and start shaping the dough. It is best suited for frying savory pies in a pan. But such a soft lump makes excellent large open or closed pies in the oven or slow cooker (in baking mode). If you plan to use the dough for sweet products, add a little more sugar, honey or fructose to the recipe.

Cooking tips

It’s easy to form pie blanks from a lump. There are several ways:

  • roll out the ball into a layer of the required thickness, sprinkle with a little flour and cut out round pieces with a special mold or glass;
  • pull the “sausage” out of the lump and cut it into pieces of small weight, lightly bread each one in flour and roll it out with a rolling pin into a round piece.

In fact, yeast-free dough is as familiar to us as dough prepared with yeast. Every day we eat bread, buns, pizzas and pies made from dough without yeast and don’t even think about it. Of course, they are so delicious!

Types of yeast-free dough

There are several standard types:

Simple unleavened dough

Kefir dough

Yeast-free dough for kefir pies turns out to be very soft and melts in your mouth, crumbly and pleasant. In addition to pies, impressive-sized pies and delicious cheesecakes are usually prepared from it.

Butter dough

Thanks to butter, this type of yeast-free dough develops a delicious crispy crust during baking. It is on dough with the addition of butter that a variety of baked goods are prepared - muffins, buns, cookies.

Sometimes, instead of butter, recipes call for adding margarine to the pie dough.

Dough with added cottage cheese

Thanks to its structure, cottage cheese gives the yeast-free dough lightness and airiness - it turns out especially soft. This dough is often used for baked goods that require filling.

Milk dough

Milk contains some fermenting substances that help the dough become porous and airy. Yeast-free dough for pies made with milk is light and tender.

Rye dough on water

Very healthy, highly valued by health food lovers, used for diabetic baking.

Choux pastry

Excellent soft and flexible dough for chebureks and dumplings. You can also use it to bake pies and flatbreads with or without fillings.

A simple recipe for yeast-free pie dough

In order to prepare regular yeast-free pie dough, you will need the following:

Ingredients

Advice: This recipe is designed for preparing pies using the oven method. However, some housewives fry the preparations in a frying pan and get wonderful pies. So, to make the dough:

  1. Mix kefir, salt and sugar, yolk, butter.
  2. Add half the sifted flour there, then add soda, mix well.
  3. Add the remaining flour and knead the dough, then roll it into a ball and let it stand for 15 minutes at room temperature.
  4. Take out the dough and start rolling it out into a thin layer, no more than half a centimeter thick.
  5. Using a special mold or glass, cut out circles of the required diameter, lay out the filling, make tucks and brush with a raw egg.

Advice: Never throw away dough scraps! It’s better to mold them together and roll out a new layer of dough - this way you’ll get more pies while saving food.

The pieces are baked in the oven for 15 minutes at a temperature of 180 degrees. From the quantity of ingredients described above, you get on average up to 20 pies or cheesecakes to choose from.

To make the pies appetizing in appearance and tasty inside, you need to use a few simple but very effective tips:

  • Before putting the pan with the pies in the oven, brush the backs of them with a raw egg - this way you will achieve a golden crust on the surface.
  • Place the pies on a baking sheet so that there is a distance of about 1 centimeter between them. The pies will not stick together and ruin their shape.
  • Don’t forget to prepare what you want in advance, since you can make the pies immediately after the dough is kneaded and ready.
  • To prepare the dough, use ingredients at or slightly above room temperature. Especially kefir - it’s better to heat it a little before using it.

When using kefir for yeast-free dough, the baking becomes universal: pies can be prepared with both sweet and savory fillings. The dough itself turns out soft with a crispy crust.

Good afternoon. Today we will touch on one of the most popular topics for young housewives. Let's talk about pie dough. After all, pies are what real housewives are famous for. Each of them has its own special signature recipe and its own little tricks, thanks to which the dough turns out soft and airy as fluff.

You want to try these pies again and again and take a couple with you to work or school, because colleagues or classmates who have already visited you and managed to taste and appreciate them are waiting for you there.

This note is about a quick dough without yeast, the preparation of which does not require a lot of time associated with preparing the dough, waiting for rising and other difficulties of yeast dough.

By and large, yeast-free dough for pies is prepared according to the same principles as for pies, the main difference is in the amount of initial ingredients. So, if you know how to cook pizza, then you won’t encounter any difficulties here either.

Quick kefir dough for frying in a pan

This recipe is one of the fastest and most delicious. The molded pies are fried in a frying pan with plenty of oil for literally 2 minutes on each side. This results in a wonderful golden crispy crust.

Since the frying does not take long, the filling for the pies should be already prepared.

Ingredients:

  • Flour - 300 g
  • Kefir - 1 glass (250 ml)
  • Salt - 0.5 tsp.
  • Egg - 1 piece
  • Soda - 0.5 tsp.
  • Vegetable oil - 2 tbsp.

In this and subsequent recipes, it is better to take kefir with a fat content of 1.5-2%

Preparation:

1. First of all, sift the flour. Only sifted flour guarantees the absence of lumps.

2. Pour salt and soda into the flour, break the egg and, while stirring the flour, pour in the kefir.

3. Stir the flour with a whisk, and when it comes together, add vegetable oil and continue kneading with your hands until you get a smooth, non-sticky dough.

Ready. All that remains is to prepare the desired filling.

Recipe for cooking with kefir without eggs

If you or your children are allergic to eggs, or there simply weren’t any in the refrigerator, then you can do without them

Ingredients:

  • Flour - 2 cups (360 g)
  • Kefir - 1 glass (250 ml)
  • Salt - 0.5 tsp.
  • Sugar - 1 tsp.
  • Soda - 0.5 tsp.
  • Vegetable oil - 3-4 tbsp.

The indicated quantity is enough to prepare 8-10 pies

Preparation:

1. Pour salt, sugar and soda into a bowl, mix and pour in kefir. Stir the kefir with a whisk for a couple of minutes or two until the soda quenching reaction begins (bubbles begin to form).

2. After this, we begin to add sifted flour to the bowl in portions without ceasing to stir. When the flour comes together and becomes thicker (this will take about half of the prepared flour), add 3 tablespoons of sunflower oil to it.

3. Mix everything again. Pour the remaining flour onto the table, place the dough from the bowl on it and continue kneading it on the table.

The main thing at this stage is not to exceed the amount of dough specified in the recipe. It should be soft and a little sticky

4. When all the dough is mixed in, wash your hands, grease them with vegetable oil and add a spoonful of oil to the dough. Knead it again so that the butter mixes in and makes the dough smooth and divide into 7-10 pieces.

That's all. You can add filling and fry the pies.

How to prepare dough for pies in the oven

And another recipe for kefir dough for baking pies in the oven. The main difference from the previous ones is the use of butter.

As you know, butter is a saturated animal fat and it is what gives the right rich aroma to baked goods. You cannot replace it with vegetable oil when cooking in the oven - it will turn out completely different

Ingredients:

  • Flour - 3.5 cups (cup-250ml)
  • Kefir – 1 glass (250ml)
  • Butter - 80 g
  • Salt - 1 tsp. no slide
  • Sugar - 1 tsp.
  • Soda - 1/2 tsp.

Preparation:

1. Add salt, sugar and soda to the sifted flour. Stir and then pour in kefir. When the flour acquires the consistency of dough, add softened butter and mix it until an elastic, smooth mass is obtained.

The butter should be 82% and it should soften after standing at room temperature. It is not recommended to melt it over a fire or in the microwave, otherwise you won’t get an elastic dough.

2. Actually, this is where the preparation of the dough ends, but I want to mention one more nuance regarding baking in the oven: before sending the pies to bake, they need to be brushed with beaten egg to create a golden crust.

Baking in 5 minutes with milk without soda

If you want to prepare the dough without soda, then it is not necessary to use kefir in the recipe, since in this case the reaction of releasing carbon dioxide bubbles from the soda will not occur. But to make the dough airy, you will need to use baking powder.

Ingredients:

  • Flour - 2 cups (glass-250ml)
  • Milk - 2/3 cup - 80 ml
  • Baking powder - 2 tsp.
  • Vegetable oil - 3 tbsp.
  • Salt - 0.5 tsp.
  • Sugar - 1 tsp.

Preparation:

1. Combine all ingredients in one deep bowl and mix thoroughly.

2. When the flour turns into dough, continue kneading it with your hands until you get a smooth, slightly sticky mass.

And that’s it, you can make pies. It really takes no more than 5 minutes to prepare the dough.

Video on how to prepare lean dough using water from rye flour

Here’s a recipe for making not just dough, but filled pies. As usual, I chose this video to make it both quick and understandable.

Recipe for cooking with water (boiling water) with sunflower oil

Dough cooked in boiling water is called choux and has its own special pleasant taste. Its peculiarity is that such dough can be rolled out into very thin layers. Ideal for baking lovers watching calories.

Ingredients:

  • 1/2 cup vegetable oil
  • 1/2 cup hot water
  • 2.5 cups flour
  • 1 tsp baking powder
  • A pinch of salt

This recipe uses a 250 ml glass

Preparation:

1. Pour sunflower oil and boiling water into a deep bowl. The water should be very hot from a just boiled kettle. Add salt and mix.

2. Without waiting for it to cool, add the sifted flour and baking powder. We begin to knead the dough with a fork (so as not to burn ourselves).

3. When the flour is mixed in, place the dough on the table and continue kneading it with your hands.

4. Don’t be surprised that the dough turns out yellowish, that’s how it should be. When the dough is ready, put it in a plastic bag for 20 minutes to let it “rest.” After this you can roll it out.

Prepare soft dough with sour cream

And finally, another interesting recipe, which I can’t help but mention, since it’s one of my favorites. Sour cream is guaranteed to make the dough airy and tender.

Ingredients:

  • Flour - 2.5 cups
  • Sour cream - 1 glass
  • Egg - 1 pc.
  • Water - 0.5 cups
  • Vegetable oil - 2 tbsp.
  • Soda - (without a slide, do not extinguish) - 1 tsp.
  • Salt - 0.5 tsp.
  • Sugar - 1 tsp.

This recipe uses a 200 ml glass

Preparation:

1. In a deep bowl, mix sugar, salt, egg, sour cream and water at room temperature.

2. Mix flour with soda (mix well), sift and add to the bowl. Knead the dough first in a bowl and then on a floured table. If necessary, you can add flour to prevent the dough from being sticky, but no more than half a glass.

The dough should be soft and pliable. That is, there is no need to achieve elasticity and smoothness.

That's all, you can start frying the pies.

Tip: if you are making pies on a table sprinkled with flour, then before sending them to the frying pan, knock the flour off the pies by lightly tapping your palm so that it does not burn in ugly black spots

These are the recipes I have chosen for you today. Now you can make wonderful fluffy pies no matter what food is left in the refrigerator.

Thank you for your attention.
