Raisins are very often used for baking. Its sweet and sour grape taste goes well with dough. This filling is very easy to prepare and does not leak out during cooking. We advise fans of homemade baked goods to bake raisin pies according to the recipe below.

Required Ingredients

To bake raisin pies you will need rich yeast dough. To prepare it you need the following products: – flour – 2.5 cups; – dry yeast – 1 teaspoon; – milk – 0.5 cups; – butter – 100 g; – eggs – 3 pcs.: 2 – in the dough, 1 to grease the pies; – sugar – a quarter glass; – salt – half a teaspoon; – a little vegetable oil to grease the baking sheet.

To prepare the filling you need to take 200 grams of raisins. It is better to take the raisin variety, it does not contain seeds.

Preparation

First of all, you need to prepare the dough for the pies:

  • Heat the milk a little so that it is not hot, dissolve the yeast in it with a small amount of sugar. Stir until the yeast is completely dissolved in the milk. You need to wait a little so that a “cap” forms on the mixture, then carefully pour it into the bowl where you will knead the dough;
  • Beat the eggs into the resulting mixture, add salt and the remaining sugar;
  • The butter must be melted in a water bath until liquid and poured into the rest of the products. It is important that the oil is not hot;
  • Mix the ingredients thoroughly and gradually add the sifted flour. It is important to add flour in small portions to see how thick the dough is. It should be soft, pliable, not stick to your hands and dishes; for this you need to knead it well. It is better to knead the dough on the table for at least 20 minutes. To check whether the dough is well kneaded, cut the lump with a knife, the edges of the cut should move apart easily, and the knife should remain clean;
  • The resulting dough can be sprinkled with flour on top or greased with a small amount of vegetable oil, wrapped in a towel, and put in a warm place for about an hour until it rises. This time will be enough for the dough to increase approximately two to three times. Yeast dough does not like drafts and temperature changes, so while it is rising, refrain from ventilating the room.

While the dough is rising, you need to prepare the filling. Rinse the raisins thoroughly, pour hot boiling water over them and keep in it for about 5 minutes. Afterwards, the raisins need to be dried; if the dried fruits are large, they need to be cut.

As soon as the dough has increased to the required size, place it on a floured table and knead it. Divide the dough into several pieces, each of which is rolled out with a rolling pin, but not too thin, otherwise holes will appear in your pies.

Place raisin filling in the middle of each rolled out piece. Gently pinch the dough. Place the formed pies on a baking sheet coated with vegetable oil. Let them rest for 20 minutes. They should increase slightly in volume.

Brush the pies with beaten egg and bake in an oven preheated to 200 degrees. Bake the raisin pies for about half an hour until a beautiful golden hue appears. It is not advisable to open the oven during baking; the dough may fall.

WALNUTS AND RAISINS FILLING

For 1 cup of peeled and ground walnuts - 0.5 cups of ground crackers, cookies or toasted flour, 0.5 cups of raisins, 100 g of sugar, 1/3 cup of water, a pinch of vanillin.
Wash the raisins and pour 2 tablespoons of boiling water over them.
Mix sugar with water and boil liquid syrup.
Combine nuts with breadcrumbs, raisins, vanillin, pour in syrup, stir.

FILLING WITH NUTS AND RAISINS

For 1 cup of ground walnuts - 0.5 cups of raisins, 2/3 cups of granulated sugar, 1 tablespoon of toasted flour, 0.5 teaspoon of cinnamon or cloves.
Rinse the raisins with hot water, pass through a meat grinder, combine with nuts, sugar, cloves or cinnamon, flour, add a few tablespoons of boiled water, mix everything.

RAISIN FILLING

For 250 g of raisins - 2/3 cup granulated sugar, 0.5 teaspoon of cinnamon or cloves.
Wash the raisins, add hot water, drain the water after 8-10 minutes, pass the raisins through a meat grinder, combine with sugar, cinnamon (cloves), and mix. If the filling turns out to be dry, add 1-2 tablespoons of boiled water.
Used for filling pies, vertuta (roll).

For the test:
- flour – 2.5 cups

- butter – 100 g

- salt – ½ teaspoon

- egg – 1 pc., for greasing pies

For filling:
- raisins (can be halved with dried apricots) – 200 g

Making pies with raisins

1. Prepare the dough for the pies. To do this, dissolve the yeast in slightly warmed milk and pour it into a deep bowl in which you will knead the dough.

2. Beat eggs at room temperature into the yeast mixture, add sugar and salt.

3. Melt the butter in a water bath or in some other way and also add to the bowl. Attention! The oil should not be hot.

4. Stir everything in a bowl and start adding sifted flour in portions, continuing to knead until a soft, plastic dough is obtained. Do not overdo it with flour; hard dough does not work well and loses its fluffiness in baking.

5. Form the kneaded dough into a ball, place in a bowl, cover with a towel and place in a warm place to rise for about 1 hour.

6. During this time you will have time to prepare the filling. Wash the raisins, dry and finely chop.

7. Divide the total mass of the filling into ten approximately equal parts.

8. When the dough has increased 2-3 times, knead it on a table sprinkled with flour, knead well and also divide into 10 parts.

9. Form each piece of dough into a ball and roll it into a flat cake with a rolling pin.

10. Place the prepared filling in the middle of each flatbread, make longitudinal cuts about 2-3 cm from two opposite sides with a knife and insert one edge of the flatbread into the cut of the second edge, forming open pies.

Required ingredients:

  • a quarter glass of water;
  • a third of a glass of sour cream;
  • 1 pack dry yeast;
  • half a glass of sugar;
  • egg;
  • 0.5 tsp. salt;
  • half a stick of butter;
  • 0.5 kg flour;
  • half a cup of brown sugar;
  • 100 g raisins.

Cooking steps:

  1. Yeast is diluted in water and placed in a warm place for 10-15 minutes.
  2. Melted butter is mixed with sour cream, egg, sugar and salt.
  3. Diluted yeast and flour are added to the prepared mixture.
  4. The dough is kneaded for 10 minutes.
  5. The container in which the dough will be placed is greased. The dough is laid out and covered with film. It should remain in this state for about an hour.
  6. A couple of tablespoons of butter are mixed with sugar and cinnamon. Raisins are added, which must first be washed and dried.
  7. The dough is divided into two equal parts that need to be rolled out.
  8. Each part is filled with filling.
  9. The rolls are wrapped and cut to form.
  10. Each pie is placed on a baking sheet and left alone for at least half an hour.
  11. All that remains is to place them in the oven, where they will stay for about half an hour.

To avoid problems with baking and to prevent the buns from burning, you can place a container of water in the oven. Thanks to the evaporation of moisture, the bottom will not turn out black and hard. The flour should be sifted before kneading the dough. Moreover, once will not be enough; for complete enrichment with oxygen, the procedure must be repeated.

Pies stuffed with raisins

Delicious, soft pies with raisins will not leave anyone indifferent! They are easy and quick to prepare, even an inexperienced housewife can do it. Affordable, simple ingredients, a simple recipe for yeast dough - all this allows you to prepare a delicious treat without even leaving home.

Ingredients:

  • raisins – 300 g;
  • flour – 1.2-1.5 kg;
  • water – 400 ml;
  • granulated sugar – 100 g;
  • yeast – 30 g;
  • egg – 1 pc.;
  • vegetable oil – 100 ml;
  • yolk for greasing pies.

Cooking method:

  1. To make any pies, you must first knead the dough. In this case, you need to dilute the yeast in 1 glass of warm water and add a tablespoon of sugar. This activates their action.
  2. As soon as foam appears on the surface, this is a signal to continue kneading. Add the remaining water, sugar, egg and flour. Knead the dough.
  3. At the final stage, you need to add vegetable oil to the dough and knead well again.
  4. Place the dough in a warm place (on the stove, near the radiator, etc.) to prove. This will take 1-1.5 hours.
  5. In the meantime, wash the raisins, pour boiling water over them and let them brew and steam for 15-20 minutes. Once the berries have softened, drain the water and place them on a towel.
  6. The dough has risen and you can form the pies. Pinch off a lump of the desired size from a large piece of dough (it all depends on your imagination) and flatten it in your palm.
  7. Place raisins in the center of the cake and carefully pinch the edges. Place the pies seam side down on a lightly greased and floured baking sheet.
  8. Form pies from the entire volume of dough and place on the deco. It’s still too early to bake them - they should rest for 20-30 minutes.
  9. After this time, brush each pie with well-beaten yolk. If you bake pies during Lent, you can replace the yolk with strong brewed tea.
  10. Bake the products in a well-heated oven for 7-10 minutes.

Sweet cheesecakes with raisins and cottage cheese

You will need:

  • 0.5 kg flour;
  • A glass of milk;
  • 70-80 g margarine;
  • egg;
  • 1 tsp. dry yeast;
  • 1 pack vanillin;
  • 0.5 tsp. salt;
  • 0.5 kg. cottage cheese;
  • half a glass of raisins;
  • half a glass of sugar;
  • 1 pack vanilla sugar.

Step by step guide:

  1. Lightly heated milk is mixed with half the flour, sugar and yeast.
  2. The dough is placed in heat for about a quarter of an hour.
  3. After time, an egg, melted margarine, the remaining flour, vanillin and salt are added to it.
  4. The dough is kneaded. In the end result, it should not stick to your hands.
  5. The dough is placed in a warm place for half an hour and then kneaded. This procedure is repeated again.
  6. Using a blender, sugar and cottage cheese are ground, flour, raisins and vanilla sugar are added. All ingredients are mixed.
  7. The table is sprinkled with flour and the dough is laid out on it, which must be divided into balls.
  8. The balls are pressed down a little. A recess is made in the center into which the filling is placed.
  9. All cheesecakes are laid out on a baking sheet covered with a thin layer of fat and greased with yolk.
  10. The baking sheet is placed in the oven for half an hour.

When preparing these cheesecakes, you can hide the filling inside. To do this, the dough is rolled out, all the filling is laid out, and the edges are wrapped. Then all that remains is to cut the dough. By adding baked milk to the dough instead of regular milk, you can give the buns an unusually delicate taste. In order for the finished baked goods to shine and look appetizing, the buns are brushed with beaten egg. This is the best ingredient for lubrication: neither sugar syrup nor vegetable oil will give such an effect.

Roses with raisins and poppy seeds

You will need:

  • 70-80 g yeast;
  • one and a half glasses of sugar;
  • a glass of milk;
  • 2 eggs;
  • 700 g flour;
  • 150 g raisins;
  • 70 g poppy seeds;
  • 200 g butter.

Cooking steps:

  1. Yeast is mixed 5 tbsp. l. Sahara. The best way to do this is to use a fork.
  2. Milk, eggs and flour are added.
  3. The dough is kneaded.
  4. The finished dough is divided into 4 parts and rolled out.
  5. Grease with a mixture of melted butter and a glass of sugar.

Lenten puff pastries

To make these buns you don't need any milk or eggs. Thanks to a special technology, they will be very reminiscent of puff pastries.

You will need:

  • an incomplete glass of water;
  • 1 tsp. yeast (dry);
  • a quarter glass of sugar;
  • 3-4 tbsp. l. any vegetable oil;
  • 0.5 tsp. salt;
  • 1 pack vanilla sugar;
  • half a glass of raisins;
  • about three glasses of flour.

Cooking steps:

  1. The raisins must be poured with well-heated water and steamed for five minutes.
  2. After time, the water is drained, and the raisins are dried and sprinkled with flour.
  3. In a prepared container, mix a glass of flour with yeast, sugar, and add salt and vanilla sugar.
  4. Water is added. Everything is mixed and left alone for a short time until bubbles appear.
  5. Add butter, remaining flour and raisins.
  6. The prepared dough is placed in a warm place, where it should remain for at least an hour.
  7. Flour is sprinkled on the table, the dough is laid out and rolled out.
  8. The layer is smeared with fat, one part of it is tucked towards the center and the other is slightly overlapping. This manipulation is repeated again.
  9. At the next stage, the dough is cut into neat, miniature pieces and twisted into a bow.
  10. All that remains is to place them on a pre-greased pan and bake for about half an hour.

The buns will look more appetizing if they are sprinkled with powdered sugar. If you don’t have much time for cooking, it’s better to use regular yeast instead of dry yeast. This dough will become ready for cooking much faster.

French buns: quick recipe

Necessary:

  • 0.5 kg. puff pastry;
  • a glass of raisins;
  • half a glass of cognac;
  • 3 glasses of milk;
  • half a glass of sugar;
  • a pinch of vanilla sugar;
  • 3 eggs;
  • 4 tsp. flour.

Cooking steps:

  1. The dough needs to be defrosted.
  2. The raisins are washed and soaked in cognac for 12 hours.
  3. The milk is heated and vanilla sugar is added.
  4. The eggs are beaten with sugar and flour is added to them.
  5. Milk heated to 90 degrees is slowly added to the resulting mixture.
  6. The mixture is whipped and placed on the fire, where it should boil for no more than 10 minutes.
  7. The table is sprinkled with flour and the dough is rolled out on it.
  8. The finished layer must be greased with cooled cream using a spoon. The dough is sprinkled with raisins on top of the cream.
  9. The dough is rolled into a roll. Then it is cut into rings, the thickness of which should not exceed 2 cm.
  10. The resulting products are laid out on a greased baking sheet and greased with yolk.
  11. The buns should sit for about half an hour.
  12. You need to bake for about half an hour.
