Ingredients

For the pie base

  • wheat flour (highest grade) – 250-260 g;
  • butter (fat content 72.5%) – 130 g;
  • sour cream (fat content 20%) – 3 tbsp. l.;
  • salt – 0.5 tsp;
  • baking soda – 0.5 tsp.

For the onion and cheese filling

  • onions (medium size) – 2 pcs.;
  • processed cheese – 2 pcs. (200 g);
  • chicken eggs – 3 pcs.;
  • sunflower oil – 2 tbsp. l.

For decoration

  • dill – 30 g;
  • parsley – 30 g.

Cooking steps

Step #1. Start this cheese pie recipe by preparing the necessary ingredients. Place the processed cheeses in the refrigerator an hour before the start of the culinary process to make them easier to handle. But the butter, on the contrary, should be slightly softened. If you follow the recipe exactly, the onion pie with cheese will turn out tender and tasty.

At the first stage of preparation, you need to knead the base. To do this, take a large and deep bowl. Sift wheat flour into it through a sieve. Add softened butter to the flour and gently rub into crumbs with your hands. Add full-fat sour cream, salt and soda to the bowl.

Step #2. Mix all ingredients well. Using rhythmic hand movements, knead the dough, which will become the basis for the pie. Then roll it into a ball, wrap it in special cling film or a plastic bag and put it in the refrigerator for a while.

Step #3. Peel the onions, wash them thoroughly under running water and dry with a kitchen towel. Then cut each onion into half rings. Heat a frying pan over medium heat, pour sunflower oil into it. Then place the onion half rings in the frying pan and fry them until golden brown. When you achieve the desired result, remove the pan from the heat and set aside, because the onion should cool.

Step #4. Remove the processed cheese from the refrigerator. Grate them carefully using a grater with medium-sized holes. Onion pie will turn out delicious if you use full-fat cheese for cooking.

Step #5. Beat fresh chicken eggs into a deep bowl. Then beat them until foamy using a fork or a special whisk. The egg mass must be homogeneous. This will make the cheese pie filling very tender and airy.

Step #6. Place the grated processed cheese into a bowl with the egg mixture. Add the fried onion half rings there too. Mix everything well. As you can see, the filling recipe is quite simple, so you can handle it very quickly.

Step #7. It's time to take the dough out of the refrigerator. Using a rolling pin, roll out the base to the size of your baking pan. Just make sure that the dough doesn't turn out too thin. Grease the bottom and sides of the baking dish well with butter, and then lightly sprinkle them with flour. Place the dough into the mold and form high sides with your hands.

Step #8. Place the prepared onion and cheese filling into the base. If necessary, smooth it out with a tablespoon. Cover the filling with dough sides as shown in the photo below. Now the onion pie is ready to go into the oven.

Step #9. Preheat the oven to 180 degrees. Place the baking dish there. Cook the onion pie for 40-45 minutes. When the baked goods with melted cheese are well baked and browned, remove the pan from the oven. Do not immediately remove the onion cheese pie from the baking pan; let it cool. To be honest, this was my first time making a pie with onions and melted cheese. Fell in love with it from the first bite. I treated it to my colleagues - everyone began asking for the recipe for this tender and tasty pie.

To prepare a pie with onions and cream cheese, take the necessary ingredients. They should be at room temperature when you start cooking the pie.

Sift flour into a bowl, add butter and salt.

You need to grind the ingredients with your hands until you get crumbs (the crumbs are not small, but in small pieces).

Place the filling in the pan with the dough and level the top with a spoon.

Roll out the remaining dough, use a fork to make holes, and cover the pan with the dough and filling.

Gently press the dough against the edge of the pan to remove any excess dough (you can use this to make several shortbread cookies).

Bake the onion pie with melted cheese in an oven preheated to 170 degrees for about 25 minutes.

The dough for this pie is prepared from cold margarine (200 g), flour (400 g), salt (½ teaspoon), egg (1 pc.) and sour cream (1 tablespoon). While the filling is being prepared, it goes into the refrigerator.

For the filling, mushrooms (250 g) and onions (400 g) are fried in vegetable oil. When it cools down, add grated processed cheese (200 g) and 2 eggs. Pour flour into a large deep container. We take the butter or margarine out of the freezer and periodically roll it in flour and grate it on a coarse grater. Add salt, then rub the butter and flour with your hands into a homogeneous crumb.

Make a well in the flour, pour in sour cream and soda slaked with vinegar. Mix.

Using your hands, simply gather the dough into a ball, but do not knead. Wrap in cling film and refrigerate for at least 2 hours, preferably overnight.


Cut the onion into thin half rings and pour into a heated frying pan with vegetable oil. Simmer over low heat until soft.

Beat eggs with salt (0.25-0.5 tsp) with a fork.

Add chopped frozen, dry or fresh herbs.

When the onion becomes soft, salt it (0.5-1 tsp) and pepper. Cook for another 3-5 minutes.

Mix hot onion with cheese, grated on a coarse grater. Taste and adjust to taste if necessary.

Then combine the cooled cheese and onion mixture with the eggs. The onion filling for the pie is ready.

We take the dough out of the refrigerator, visually divide it into 3 parts and cut off one piece. Roll out a large lump (2/3 of the dough) on a floured surface into a thin layer (0.3 mm). Grease a mold with a diameter of 26.5 cm with oil, transfer the dough there and level it, forming sides.

Pour the filling into the mold.

Roll out the remaining dough and cover the filling.

We secure the edges and remove the protruding parts of the dough.


Place the onion pie in a hot oven. Bake at a temperature of 160-170 degrees for 25-30 minutes (check readiness with a toothpick - it should be dry). 4-5 minutes before readiness, brush the onion pie with cheese with beaten egg.

Remove the shortbread pie with onions from the oven and leave to cool.
