Lastly, sift the flour into the dough and knead the soft dough.


The dough kneads perfectly, and after about 5 minutes it completely stops sticking to your hands. Having kneaded to this state, cover the bowl with the dough and put it away to rise. If, nevertheless, your dough is capricious and even after kneading it sticks strongly to your hands, add another handful of flour. It is important here not to overfill it with flour, otherwise the pies will lose their softness, so if the dough sticks, but just a little, you don’t need to add anything else! During the time allotted for rising, the flour will disperse and the dough will become soft and elastic. It’s ideal if your dough has time to rise twice (I have time to rise while I’m filling it): after the first rise, knead it, after the second, knead it and send it to form pies.


While the dough is rising, make the filling. Wash the eggs and put them in cold water, boil until tender (hard-boiled).


Wash the green onions as well, then shake well to remove water. We tear off all the darkened parts from the feathers and finely chop.


Dip the boiled eggs into cold water, peel and chop finely in the same way. Mix with onions, add salt - and the filling is ready.


Knead the risen dough and divide it into several small koloboks. The larger the pies you want, the larger the koloboks should be. I got 12 of them. Knead each bun again, flatten it a little, then roll it into a flat cake up to 0.5 cm thick. Place onion and egg filling on each flat cake. I like a lot of filling, so I put 2 tbsp. l., directly pressing it into the dough to make it easier to seal the edges.


Forming pies.

Line a baking tray with baking paper; if it is not oiled, grease it with oil and place the pies seam side down. We give them 5-10 minutes. stand and grow one more time, after which we grease it with protein and send it to a preheated oven. Baking temperature – 200 degrees, time – about 20 minutes.
