flour – 0.700 kg; jam – 0.500 l; margarine – 0.250 kg; sugar – 2/3 tbsp; eggs – 3 pcs.; soda; salt.

A quick recipe for making shortbread pie with jam:

  1. Beat the egg whites with a blender with granulated sugar until well foamed.
  2. I melt the margarine.
  3. I beat the egg yolks and mix them with melted margarine, slaked soda, and add some salt.
  4. Mix both egg masses.
  5. I sift the flour and add it in small portions.
  6. I freeze one quarter of the dough. I divide the rest into two pieces.
  7. I place one piece of dough on the greased mold and stretch it with my hands to the size of the mold. I make small sides.
  8. I spread half a portion of jam.
  9. Roll out the other half of the dough to medium thickness. And I cover the filling on top. I create small sides.
  10. I distribute the remaining jam.
  11. Rub the dough from the freezer on a medium grater directly onto the layer with jam.
  12. In preheated to 180 gr. I place the shortbread pie with jam in the oven for forty minutes.

  • jam or jam - 150-200 g

Preparation:

Melt butter or margarine and cool. Pour sugar into a bowl, add melted butter, eggs, vanilla and mix everything well. Gradually add sifted flour mixed with baking powder and knead the dough (the dough should not be stiff). Divide the dough into 2 unequal parts (1/3 and 2/3).

Place a smaller portion of the dough in the freezer for ~1 hour. Spread most of the dough evenly on a baking sheet (the dough can be rolled out thinly or laid out in a thicker layer). Place a layer of jam on top of the dough and gently smooth it out with a spoon.

Remove a smaller portion of the dough from the freezer and grate it onto the jam on top of a grater. Place the pie in an oven preheated to 200 degrees and bake for 20-25 minutes.

2. Yeast pie with apples and jam

Dough:

  1. water-200 g and 2 tbsp milk powder or 200 g milk
  2. 1 egg
  3. 1 tsp dry yeast
  4. a pinch of soda
  5. sugar-2 tbsp. l
  6. vegetable oil - 1-2 tbsp
  7. flour-300-400 g (it all depends on the type of flour)
  8. Apples-500 gr
  9. sugar-100 g (for those with a sweet tooth, you can increase it)
  10. cinnamon-0.5 tsp - more if desired
  11. jam - 5 spoons
  12. butter - 2 tbsp
  13. vegetable oil - 1 tbsp

Preparation:

Dissolve milk powder and yeast in warm water, or yeast in milk. Beat sugar and egg and combine with milk mixture. Add vegetable oil, a pinch of soda and flour. Knead well - I use a mixer attachment to make hooks.

Leave to rise for about an hour. At this time, we peel the apples from the core; I did not peel them. Cut into pieces. Heat butter and vegetable oil in a frying pan - add apples, sugar and cinnamon. Let's stew our apples a little.

When the dough rises, divide it into 2 parts. We roll out a large one into a layer with sides, distribute our apples on it, coat the apples on top with jam - preferably fragrant and dark, for example strawberry.

From the second part of the dough we make decorations for the top of the pie - stripes, flowers, flagella... whatever your imagination suggests. Lubricate the dough with strong tea and sugar and place in an oven preheated to 180 degrees. Bake until golden brown - it took me about 30 minutes. Brush the finished pie with milk or sprinkle with water.

3. Grated pie with jam

Ingredients:

  • 3 tbsp flour
  • 250 g butter or margarine
  • 1 egg
  • 0.5 cups sugar
  • 1 tsp vanilla sugar

Filling:

  • you can use any jam, I took blackcurrant

Preparation:

Rub flour with butter to form a cereal mass. Separately, beat the egg with sugar and vanilla. Pour the egg and sugar into the flour-butter mixture, mix everything together. Divide the dough into 2 parts (I make them into sausages to make it easier to grate later) and wrap them in cling film and refrigerate for 1 hour.

Grease the mold with oil, sprinkle with flour or semolina, grate 1 part of the dough on a coarse grater and spread the jam on top and distribute evenly. Take part 2 and grate it on top of the jam. Sprinkle the top of the pie with a mixture of sugar and nuts (I made hazelnuts, cashews and walnuts).

Bake at 180 degrees for 25-30 minutes. Cool and cut into pieces.

4. Pie with jam and coconut

Ingredients:

  • 200 g margarine or butter
  • 3 cups flour
  • 1 cup of sugar
  • 2 eggs
  • a pinch of salt
  • 0.5 tsp soda.slaked vinegar

Filling:

  • starch-2-3 tbsp.
  • jam

For sprinkling:

  • coconut flakes

Preparation:

Beat eggs with sugar and salt. Melt margarine (butter), mix with flour, add eggs, slaked soda. The dough should be soft and should stick to your hands! I didn’t chill the dough, but in principle, it’s shortbread, you can wrap it in film and put it in the refrigerator for 20-30 minutes.

The dough rolls out very well! Grease a mold (I used a springform pan, L = 28 cm) with butter; you can sprinkle with semolina, breadcrumbs, and crushed cookies. The pie can also be baked on a baking sheet lined with baking paper or greased with butter.

Distribute the dough into the mold, sprinkle a little starch on top (about 1-1.5 tablespoons), lay out the jam, and also sprinkle it with starch on top. Bake in a preheated oven at 180 degrees until done. It took me 35 minutes. Sprinkle the finished pie with coconut flakes.

5. Walnut pie with pear jam

Ingredients:

  • Flour – 470g
  • Yeast (dry) – 11g
  • Water – 330 ml
  • Salt – ½ tsp.
  • Honey (liquid) – 5 tbsp. l. + 1 tbsp. l. honey for greasing the cake
  • Lime – 1 pc.
  • Lemon zest – 3 tbsp. l.
  • Starch – 2 tsp.
  • Olive oil – 5 tbsp. l.
  • Pear jam – 300g
  • Walnuts (chopped) – 150g
  • Almonds and cashews (chopped) – 20g each

Preparation:

For the test:

Dissolve 1 tbsp in warm water. l. sugar, ½ tsp. salt and 1 tbsp. l. flour, add yeast, stir and leave for 15 minutes. Sift the flour, add sugar, lemon zest, add water with yeast and olive oil, knead the dough, knead for 10 minutes.

Roll the dough into a ball, place in a clean bowl greased with vegetable oil, cover the dough with a napkin and leave in a warm place for an hour, then knead the risen dough and let rise for another 30 minutes.

Wash the lime, dry it, grate the zest on a fine grater, cut the lime in half and squeeze the juice out of the halves (if the seeds get into the juice, remove them). Fry chopped almonds and cashews in a well-heated frying pan without oil for 5 minutes.

Mix lime juice and zest with jam and starch, add roasted almonds and cashew nuts, stir until smooth.

Grease a baking sheet with vegetable oil, knead the risen dough, roll it out into a rectangle on the baking sheet (if desired, leave a little dough for decorating the pie), make sides, cover the dough with a napkin and leave for 10 minutes.

Roll the rest of the dough into “sausages”, roll them into thin strips, and use a knife to make small diagonal cuts on both sides of the dough. Spread the dough evenly with jam and nuts, juice and lime zest, sprinkle the top thickly with chopped walnuts and decorate with strips of dough.

Gently brush the sides and ribbons of dough with melted honey and bake the pie in an oven preheated to 180 degrees for ~ 30-35 minutes. Cover the finished pie with a napkin or towel, let stand for 15 minutes, then you can cut it.

6. Pie with jam

Ingredients:

  • 120 g vegetable margarine
  • 2 tbsp. l. Sahara
  • add vanilla to taste.
  • For the filling you can use apple, strawberry, cherry jam
  • You can decorate the cake with coconut flakes, powdered sugar, grated chocolate, etc.

Preparation:

First of all, carefully sift the flour through a sieve. Add margarine, already grated on a coarse grater, half a teaspoon of soda slaked with vinegar and vanilla. Mix all ingredients until fine crumbs are obtained.

Place 1/2 of the dough into the baking pan and try to smooth it over the entire surface of the pan. Next add a layer of jam. And on it the second half of the test. Level it again and sprinkle the surface with sugar.

Place the pie in an oven preheated to 200 degrees for 30-35 minutes. Remove the fragrant pie from the oven, decorate and serve.
