Ingredients:

- any kefir – 200 ml (glass);
- premium flour (wheat) – 250 g;
- salt – a large pinch;
- sugar – 1 tsp. (without slide);
- odorless vegetable oil – 1 tbsp. l. in dough + for frying;
- baking powder or baking soda – 1/2 tsp;
- selected chicken eggs – 3 pcs. (boil) + 1 (into dough);
- green onions – 10-12 stalks.

1. Kefir should not be too cold so that gluten is quickly released from the flour when kneading the dough for pancakes. Therefore, either warm it up a little in the microwave, literally 30 seconds, or remove it from the refrigerator a few hours before cooking. Beat in the egg. It shouldn't be too cold either.




2. Add a little granulated sugar. It is definitely needed, even though we are not preparing sweet pancakes. It balances the taste of kefir.




3. Add a little salt.




4. Add soda. Thanks to soda, the pancake dough will be airy and porous, and the pancakes will turn out fluffy and soft. There is no need to extinguish the soda; kefir will handle this. Stir gently. The mass will begin to bubble. Wait until the reaction has almost died down.






5. Add sifted flour. You can do it in portions, you can do it all at once.




6. Stir gently until smooth. There should be no lumps. The consistency of the dough should be like thick sour cream.




7. Pour in refined vegetable oil. Stir again. Let the dough stand at room temperature for a while so that the ingredients “make friends” with each other.
