  • Fresh cucumber – 2 pcs.;

  1. Choose lean beef for the recipe. A lean shoulder or neck will do. Want to replace beef with veal? Do so. The recipe will not change at all. Boil the meat until soft. Don't add a lot of water, because you don't need a rich broth here. Pour boiling water over the cut beef pieces in the pan. Add a teaspoon of apple cider vinegar. Cook at moderate boil for half an hour. During this time, also boil the eggs.
  2. Cool the boiled meat, cut into fine cubes. Place in a saucepan.


A variety of cold soups are one of the oldest traditions of Russian cuisine and a great option for lunch in the height of summer. Mineral water okroshka (recipe with mayonnaise) will delight your family and help you quickly restore strength, thanks to the vitamins and nutrients it contains. Cooking okroshka in mineral water with mayonnaise

Before moving on to preparing okroshka, it should be noted that beef can be successfully replaced by any other type of lean boiled meat, ham, and even boiled sausage.

  1. It is better to boil the meat in advance. Let it cool and then cut it into small cubes.
  2. Wash the potatoes thoroughly and boil them in salted water. Let cool (you can pour the boiled tubers with cold water), peel and cut into small cubes.
  3. Cool hard-boiled eggs in cold water and peel them. Separate the whites and chop finely. Mash the yolks with a fork - they will become the basis of the dressing for our okroshka.
  4. Wash the cucumbers thoroughly and, if necessary, peel them. You can cut them into cubes, or grate one of them on a coarse grater.
  5. Chop the washed green onions and other greens, then lightly grind them with salt and lemon juice.
  6. Add egg yolks, mustard, half of the mayonnaise and spices to the grated greens - this will be the dressing for our wonderful okroshka.
  7. Mix the dressing with chopped vegetables, egg whites and meat (or sausage), and let the ingredients soak.

8. Mix the remaining mayonnaise with chilled mineral water and season the prepared ingredients with this. That's all - our refreshing, light, but satisfying okroshka is ready, you can call everyone to the table. Serve it with rye bread, crackers, toast or small pies.

Of course, this is just one of the options for such okroshka. Recipes for preparing it in mineral water with mayonnaise (or without) are becoming more and more popular. This is not surprising, because at the height of summer you won’t find a better cooling budget dish.

Mineral water okroshka with quail eggs

Let's allow ourselves to move a little away from the established stereotype. If we are using an unusual base, then why not experiment with the ingredients? Let's start with the fact that in this version of okroshka we will abandon the usual radishes. But we will replace it with a not quite familiar product.

Ingredients

  • Chilled mineral water - 1 l;
  • Meat - 350 g;
  • Corn - 1 cob;
  • Quail eggs - 10 pcs.;
  • Potatoes - 3 tubers;
  • Green onions - 1 bunch;
  • Dill, parsley - half a bunch;
  • Salt, pepper mixture - to taste;
  • Mayonnaise - 150 g.


How to make okroshka with corn and quail eggs using mineral water

  1. Boil lean meat (beef, chicken or turkey - whatever you like) until fully cooked. Cool and cut into small cubes.
  2. At the same time, let's cook the potatoes, corn and eggs. All these steps can be performed in the evening: completely cooled products are much easier to cut into neat pieces.
  3. Peel the finished potatoes and cut them into cubes.
  4. Peel and cut the eggs (or grate them).
  5. Using a sharp knife, cut off the grains from the boiled, cooled cob.
  6. Wash the cucumbers thoroughly, peel and finely chop.
  7. Wash the green onions and aromatic herbs, chop them finely, add salt and lightly grind until the juice appears.
  8. Mix all the ingredients and give them just a little time to soak in the aromas of spices and herbs.
  9. In the meantime, mix mineral water with mayonnaise, and then season the okroshka with the resulting mixture - our masterpiece is ready!

Secrets of making okroshka with mineral water

  • Despite the fairly accurate recipe, it should be remembered that the size of eggs, potatoes or cucumbers may vary. But this is not a problem, since you can adjust the thickness of your okroshka with more or less water.

Note that the choice of water is a matter of personal preference. Water can be regular or sparkling, you can try both options - and choose the best one for yourself.

  • In addition, if the okroshka seems too bland to you, then add the juice of half a lemon or a couple of tablespoons of apple cider vinegar.
  • Also use spices and seasonings that you like.
  • Avoid fatty meats or sausages.
  • All ingredients that must be cooked can be prepared in advance, this will speed up the cooking process.

  • All fresh vegetables must be perfect. However, if cucumbers or radishes seem a little lethargic to you, do not rush to refuse to use them, just hold them a little in cold water so that they “perk up”.
