This dessert is prepared in Germany and Austria. Many Russian housewives also know him. The love for this cupcake is understandable. It's delicious, effective and easy to prepare. The set of products is standard. There are secrets that make this classic cupcake work every time.

Mix soft butter (250 g) with sugar (200 g). Add vanillin (1 tsp) and a little rum (2 tsp). Adding rum is not necessary, but is highly recommended as it will add the desired texture and aroma.

Separate the whites (5 pcs.) from the yolks and beat. Stir the yolks into the butter mixture.

Mix flour (350 g), salt (1 pinch) and baking powder (2 tsp) and sift. Mix with the dough, in small portions. Carefully add the protein foam.

To make the chocolate layer airy, 1 tbsp. Dissolve a spoonful of cocoa in warm milk with the addition of 1 tbsp. l. Sahara.

Cocoa powder has the ability to absorb moisture. If you add it dry, the chocolate layer will be drier and denser than the light one.

Prepare a baking dish. To do this, you need to use a brush with vegetable oil to walk along the bottom and sides of the mold or cover the mold with baking paper. Transfer some of the dough into the mold. Mix the remaining dough with diluted cocoa and place on top of the light dough.

To form a beautiful marble pattern, use a fork or wooden stick to lift the bottom layer up with short movements.

Preheat the oven to 180 degrees. Bake for about an hour. Check doneness with a toothpick or wooden stick. When the cake is ready, the stick is dry.

To remove from the mold without damaging it, you need to let the cake cool a little.

The fragrant, delicate cupcake is combined with fresh berries and creamy ice cream.

The best way to serve this dessert is to cut it into pieces so that the marble pattern on the cut is visible.

Recipe with poppy seed filling

Based on the classic recipe, different variations are possible. It turns out very tasty with poppy seeds. The poppy seed filling is perfectly complemented by chocolate and lemon.

The dough base is the same as in the classic recipe, but with additions. Beat regular butter (125 g) with sugar (150 g) and vanilla.

Add sour cream (125 g), 3 yolks and cognac (2 tsp).

Sift plain flour (250 g) with baking powder (1 tsp) thoroughly several times and mix into the dough. Carefully fold in the egg whites, beaten with sugar (100 g), last.

The dough is ready.

The main feature of the recipe is the fillings:

  1. Brew poppy seeds (30 g) with boiling water, squeeze.
  2. Dissolve cocoa (1 tbsp) in warmed milk (1/2 cup), add grated chocolate or chocolate drops.
  3. Wash light raisins (1/4 cup) and steam with boiling water.
  4. Zest of one lemon.
    Mix each of the three parts of the dough with different fillings. Add the zest and raisins together in one part.

Prepare the baking dish. Lay out the dough in layers:

  1. with raisins and zest,
  2. chocolate,
  3. with poppy seeds

Bake at 180 degrees. Check readiness after 50 minutes using a toothpick.

You need to be very careful when removing the cake from the pan. It turns out to be the most tender. The aroma and taste are amazing!

Baking with a layer of cocoa and oranges

Citrus fruits wonderfully highlight and complement the taste of chocolate. This marble cake turns out faster in the oven than the classic one. And the whole cooking process is much shorter. And the result is excellent. This cupcake is best suited for breakfast: aromatic, quick, tasty.

For the dough: beat four eggs, add soft peasant butter (200 g) with sugar (200 g). Sift flour (200 g) with baking powder (2 tsp) and mix into the dough in small portions.

For the filling: remove the zest from the orange using a grater and squeeze out the juice. Dilute cocoa or carob (3 tbsp) in warmed milk.

Mix both parts of the dough with different fillings. You will need about 4 tablespoons of juice.

Place the dough in small portions into the greased pan, alternating between orange and chocolate.

Bake in the same conditions for about 40 minutes.

Kefir based

This type of cake always turns out well and helps out when you need to quickly make something tasty. The proportion and composition of the dough differ markedly from the classic recipe.

The basis of the dough is kefir (one glass). You will also need: a pack of high-quality margarine (200 g), plain flour (1.5 cups), sugar (one cup) and three eggs.

Mix all ingredients in a blender, adding in the following order: kefir, margarine, sugar, eggs, flour and baking powder.

Instead of baking powder, you can add soda; it will be quenched by kefir in the dough.

Pour some of the dough into the mold. Add 2 tbsp to the remaining dough. l. cocoa and stir thoroughly. Since the dough with kefir is thinner, cocoa powder does not need to be dissolved in milk.

Add to pan and use a fork to marble.

Bake at 180 degrees for about an hour.

With condensed milk

Another version of marble “yummy” for condensed milk lovers. This option is lower in calories, since the amount of butter is one third less than other recipes.

The taste is delicate, with the aroma of baked milk.

For the dough you will need sour cream and condensed milk in equal proportions, 1 cup each. Three eggs and half a glass of sugar.

150 g peasant butter and 2 tbsp. flour, chocolate with a high percentage of cocoa (150 g) and cocoa itself (1 tsp).

Beat eggs with sugar, gradually pour in condensed milk and sour cream. Mix thoroughly. Melt the butter slightly and add to the dough. Mix flour and baking powder in small portions. Stir part of the dough with melted chocolate and cocoa.

Bake at 170 degrees for about 50 minutes.

Neapolitan marble cake

The most unusual marble cupcake with a pink layer and rum. A good combination of ingredients, correct proportions and the Italian cake turns out no worse than in its homeland.

Beat butter (400 g) with sugar (400 g) and a pinch of salt, add a little rum (1 tbsp).

Beat eight eggs into the dough, one at a time.

Mix flour (400 g) with baking powder (4 teaspoons), sift and add to the dough in portions.

Add pink food coloring to one part of the dough. Mix the other with cocoa dissolved in milk (1 tablespoon). Leave the third without additives.

Place a layer of pink dough into the mold, followed by chocolate and cover with classic light dough.

Marble cake is not only very tasty, but also quite unusual in appearance. You can prepare it at home to please guests at a holiday or your family during the weekend.

Before you start cooking, you should make sure that you have all the necessary ingredients in the kitchen. These include:

  • 150 g butter (pre-softened);
  • 130 g granulated sugar;
  • 120 g sifted flour;
  • 4 s. l. cocoa;
  • 3 eggs (medium size);
  • 1 tsp. baking powder.

Mix granulated sugar and butter cut into pieces in a deep container. They need to be beaten well (preferably with a mixer) so that the consistency becomes homogeneous and the color of the oil changes to white.

At the next stage, fresh eggs at room temperature are beaten. And still carefully continues to beat with a mixer.

Pour flour with baking powder into a separate bowl and mix with the remaining ingredients in three additions. All this is necessary so that lumps do not form and the dough turns out soft and tender. Don’t forget to whisk the ingredients well all this time.

Approximately ¼ of the entire mass is transferred to another deep bowl. The most convenient way to do this is with a spoon or silicone spatula. Cocoa is added to a smaller part of the dough. Some chefs also recommend sifting it through a small sieve, but this is not at all necessary. Everything gets mixed up again.

The cocoa mass is again transferred to a large bowl and mixed with it with “lazy” movements. That is, 3-4 turns of the spoon will be enough. It is advisable for the dough to stand quietly for 5-10 minutes, and during this time you need to prepare a baking dish. It is greased with butter and covered with baking paper on top.

The marbled dough is laid out as evenly as possible in the mold. If necessary, it can be “compacted” with a wooden spatula. The mold is placed in an oven preheated to 180 degrees for 25-35 minutes.

After baking, the marble cake, so to speak, will burst in the middle - this is completely normal, so don’t worry about the little things. Such pastries can be served warm or cold along with tea or other hot drinks.

The next version of marble cake can also be prepared very quickly, and then enjoy its incomparable taste and smell.

Ingredients:

  • 250 g soft butter;
  • 220 g sifted flour (wheat);
  • 150 g granulated sugar;
  • 100 ml milk;
  • 60 g dark chocolate;
  • 10 g vanilla;
  • 3 eggs;
  • 2 tsp. cocoa powder;
  • 1 tsp. baking powder.

Main stages of preparation:

  1. Granulated sugar is poured into a deep container, and then 200 g of butter. Beat everything well with a mixer until the color of the mass becomes completely white. At the very end, vanillin is added to it and everything is carefully mixed.
  2. Add eggs one at a time and beat everything well until smooth. After this, sifted flour, baking powder and milk at room temperature are added. Everything is thoroughly kneaded one last time until a homogeneous mass is obtained.
  3. The vanilla dough is divided into two equal parts. Cocoa powder is poured into one of them. You can add more of it than indicated in the recipe if you want to highlight the chocolate flavor. But in this case it is necessary to slightly reduce the amount of flour.
  4. While the dough is resting, prepare the baking dish. A metal or glass container must first be greased with a piece of butter and then lightly sprinkled with flour.
  5. The oven heats up to 170 degrees. Alternately spoon first the vanilla and then the chocolate dough into the mold.
  6. The marble cake recipe is almost complete. All that remains is to place the pan in the oven for 40-50 minutes and periodically check its readiness with a wooden stick.
  7. Once the baked goods are ready, it's time to start adding chocolate glaze. To do this, 50 g of butter is mixed with 60 g of chocolate and heated in a water bath or in a microwave oven.
  8. When the cake is removed from the mold and has almost cooled down, it must be poured with still warm and thick glaze.

Small marble cupcakes are also prepared using this recipe. It is enough to use silicone molds, which do not even need to be lubricated with oil. All you have to do is rinse them under running water, clean them of moisture, and they are ready to eat.

One of the few interpretations of marble cake, which is excellent in refined oil. And here's what you need to prepare it:

  • 170 g sifted flour;
  • 150 g granulated sugar;
  • 125 ml odorless vegetable oil;
  • 30 g cocoa powder or dry Nesquik;
  • 4 chicken eggs;
  • 1 tsp. baking powder;
  • a pinch of vanillin.

Main stages of preparation:

  1. In a large deep bowl, beat eggs with butter and vanilla until they increase in volume (about 3 times) and until they become white.
  2. Add sifted flour with baking powder and mix everything thoroughly from top to bottom. Afterwards, vegetable oil is poured in and a homogeneous and fairly thick mass is mixed.
  3. The baking dish is greased with butter. Carefully pour 2/3 of the total dough into it.
  4. To the rest, add cocoa and mix everything well. All that remains is to pour the chocolate mixture over the white one.
  5. Smudges are made with a wooden stick or skewer. You can do without this, but then the marble cake won’t turn out as beautiful.
  6. The oven heats up to 180 degrees. The form is placed there for 30-50 minutes.

After the specified time has passed, the baked goods are cooled, sprinkled with powdered sugar if desired and served with tea.

And another marble cake recipe that amazes with its originality. It is really very tasty, although it consists of the simplest and most uncomplicated products. Namely:

  • 150 g butter (soft);
  • 100 g chocolate (milk);
  • 2 chicken eggs;
  • 2 tsp. cocoa powder;
  • 1 and ¾ cups sifted flour;
  • 1 cup granulated sugar;
  • 1 cup banana puree;
  • ½ cup sour cream;
  • ¾ tsp. baking soda;
  • ½ tsp. table salt;
  • 1 tsp. vanilla extract.

Main stages of preparation:

  1. The oven is preheated to 180 degrees. And the baking dish is greased with a piece of butter and set aside for a while.
  2. Combine sifted flour, salt and soda in a deep container. In another bowl, beat granulated sugar and butter until fluffy.
  3. Chicken eggs are added to the oil mixture one by one and beaten. It's best if they are fresh and homemade.
  4. After this, flour is added in small portions, and at the very end, banana puree, liquid sour cream and vanilla extract are added.
  5. The dough is set aside for a while to “breathe.” It's time to melt the milk chocolate in a water bath (stirring constantly) or in the microwave. Cocoa powder is added to the resulting mass.
  6. A cup of dough is added to the melted chocolate and everything is kneaded well again until smooth.
  7. The light dough is first placed in the prepared pan, followed by the chocolate dough. In this case, it is not at all necessary to level and thoroughly compact each layer.
  8. Use a knife to mix everything at the very end. You should get interesting and beautiful patterns. About the same as in the photo below or even better.
  9. The marble cake takes about 1 hour and 10 minutes to bake. But it’s better to check it periodically with a toothpick or match. After all, the speed of cooking depends on the power of the oven.
  10. After the time has passed, the baked goods are carefully removed from the mold. It needs to be given time to cool, at least to room temperature. After this, you can serve it or give it to a friend as an edible gift.

As you can see, cooking at home is not at all difficult and even interesting. You can always learn something new, try unusual combinations and improve skills that will definitely come in handy.


Recipe No. 1. Classic cupcake with cocoa layer

Prepare classic cake dough.

First you need to beat the butter (200 g) with sugar until almost white. Don't forget, the butter should be slightly melted so that it whips well. But at the same time, I would not recommend preheating the oil. Otherwise, delamination may occur already at the initial stage. Add vanilla sugar or vanillin to the whipped sweet butter - use the product you are used to.

Now you need to beat the eggs into the dough one at a time, beating the mixture thoroughly each time.

The time has come for torment. The flour must be sifted for baking, then the dough will be porous and rise well. After all, when we sift flour, we not only get rid of random debris, but also saturate it with oxygen.

So, add the sifted flour, baking powder and milk (don’t forget, the milk must be at room temperature, so, like butter, it must be taken out of the refrigerator in advance). Knead the dough well until smooth. Ready!


It's time to move on to the magic: we will turn an ordinary vanilla cupcake into a marble one. To do this, you need to make another type of dough - chocolate. But don't worry, you don't have to start all over again. Divide the vanilla dough into equal parts. Set one aside temporarily; we won’t need it for now.

But to the second part of the dough you need to add cocoa powder. If you like a pronounced chocolate flavor in the dough, then add a little more cocoa. Just in this case, do not forget that when increasing the amount of one dry ingredient, you need to reduce the amount of another dry ingredient by exactly the same amount. What do I mean by this? If you decide to add not two teaspoons of cocoa, but all four, then you need to put 2 teaspoons less flour in the dough than originally planned. Then the balance of products will be perfectly maintained.

So, mix the dough with cocoa powder well. We get the second type of dough - chocolate.


It is very convenient to use special muffin tins for baking cupcakes. But if you have not yet acquired similar forms, then bake a marble cake in absolutely any form, you are unlikely to have any unpleasant surprises. If you are using silicone molds, then just rinse them with cold water and you can immediately fill them with dough.

I have a glass mold, like a metal one, it needs to be prepared for baking. I’m used to doing it the old fashioned way: I grease it with a piece of butter, then sprinkle it with flour. To ensure that there is no excess flour left on the pan, feel free to turn the pan over and shake it lightly: all the excess will immediately fall off, and only the necessary minimum will remain. Don't forget that it's time to turn on the oven.


Now put the dough into the mold. There are a great many ways to arrange dough for a marble cake: you can put it randomly, you can clearly layer the dark and light layers, you can use a cornet and give the future cake any design. I usually follow the simplest path: I alternately spoon out the vanilla and then the chocolate mixture with a spoon, placing them on top of each other, and the spots of dough themselves spread into weird shapes.

In order for the dough to be evenly distributed in the pan, you need to lightly tap the pan with the dough on the table several times, in this case you will avoid voids and unevenness during baking.


It is better to bake a marble cake at a temperature of 170-180 degrees for about 45-50 minutes. But in any case, you need to focus on your oven, and check the readiness with a wooden stick (as soon as the stick is completely dry, you can turn off the oven - the cake is ready).


While the marble cupcake is baking, prepare the chocolate frosting (you can, of course, do without the frosting, but ask your child if the cupcake needs frosting, I think you know the answer).

You need to time the preparation of the glaze so that it is not yet frozen when the cake has almost cooled down.

We will make the glaze in the most basic way: melt butter (50 g) and dark chocolate (60 g). It's insanely rare that I make a water bath or put a bowl on the stove. I usually use a microwave oven for these purposes. Adjust the microwave power, reduce it by about half from the maximum mark. Mix chocolate bars and pieces of butter into a glass bowl. Melt for a few minutes, stirring occasionally until smooth. The glaze is ready, let it cool.
