You can top the Greek salad with soy sauce. Non-classical ingredients for dressing

A properly prepared Greek salad dressing will make it a culinary hit. There are many options for preparing it. The salad itself is endlessly popular among housewives; it is easy to prepare at home, healthy and can decorate anyone, even a holiday table.

Many people believe that the classic composition of a dressing must include a component such as olive oil.

The Greeks themselves prepare this salad only from fresh vegetables, and season it exclusively with olive oil.
They may add a little salt, basil or oregano for a spicy taste. At the very least, add a little pepper. They are categorically against any other oil that can be added to this salad, believing that only olive oil emphasizes the exquisite taste and freshness of vegetables.

Vinegar or lemon juice can add piquancy to the dressing. You can often find a recipe with soy sauce or pomegranate juice.

As already mentioned, the Greeks prefer a simple dressing for their salad. The classic version contains only olive oil and lemon juice in a 2:1 ratio. You are allowed to add a pinch of salt and pepper. You can add dried oregano. Alternatively, Greek salad dressing can include vinegar. You should choose a high quality product.

Instead of table vinegar, it is better to take natural apple, balsamic or wine vinegar. They have a pleasant delicate taste, interesting shades and are healthy. Therefore, if you want to use a richer dressing than with lemon juice, you should resort to using one of these vinegars. The ratio of vinegar and olive oil should be the same as with lemon juice - 1:2.

This recipe is well complemented by the following ingredients:

  • olive oil - 0.5 cups;
  • vinegar (apple or balsamic) - 0.25 cups;
  • cane sugar - 2 teaspoons;
  • garlic - 2 cloves;
  • salt, pepper - to taste.

Whisk vinegar and sugar, add crushed garlic, salt and pepper. Carefully pour in the olive oil in a stream and continue stirring until smooth. The Greek salad dressing is ready.

Making mustard sauce

This recipe involves the use of garlic. Opinions are often expressed that the classic set of components of a Greek salad excludes garlic. There are opponents and supporters of adding this spicy component. In order not to spoil the taste of the salad and dressing, you need to thoroughly pass the garlic through a press, mash it to a pulp and combine it with oil.

To make the dressing for Greek salad with mustard have the desired flavor, you should take the following components:

  • olive oil - 0.5 cups;
  • Dijon mustard - 0.5 teaspoon;
  • garlic - 2-3 cloves;
  • red wine vinegar - 0.25 cups;
  • dried oregano - 1 teaspoon;
  • salt, pepper - to taste.

Crush the garlic to a pulp, mix with dry oregano, add mustard and vinegar, salt and pepper. Without ceasing to stir, pour in the oil in a thin stream and stir until the mixture is smooth. Let the dressing sit for half an hour at room temperature.

If desired, you can add a tablespoon of fresh liquid honey to give the sauce a sweet taste. However, the latter option is not for everyone, since not everyone likes the sweet taste in vegetable salad. There are those who are against adding garlic to mustard sauce. Everything is individual.

Mayonnaise-based sauces

Russians are distinguished by their love for mayonnaise. Chefs will call it blasphemy to add mayonnaise to a Greek salad. But there will always be supporters of such a sauce. However, in this recipe it would be better to use fresh homemade mayonnaise rather than store-bought mayonnaise.

To soften the taste of a store-bought product, you should take products such as:

  • mayonnaise - 2 tablespoons;
  • wine vinegar (preferably red) - 1-2 teaspoons;
  • olive oil - 3-4 tablespoons;
  • lemon juice - 2-3 tablespoons;
  • liquid fresh honey - 1 tablespoon;
  • garlic - 1-2 cloves;
  • salt, pepper - to taste.

Crush the garlic, mix it until pureed, combine with mayonnaise, add liquid honey, bring to a homogeneous state, add salt and pepper as desired. Gently add olive oil and stir again. At the end, constantly stirring the mixture, pour in lemon juice.

Lastly, wine vinegar is added, which gives it a special piquant taste. Mix everything until it becomes very thick sour cream and cool in the refrigerator. If desired, the dressing can be improved with nutmeg and cardamom. They should be added along with salt and pepper; the recipe will only benefit from them.

Dressing option with soy sauce

Currently, there are many lovers of oriental cuisine who adore soy sauce. It is perfect as a dressing for Greek salad, adding a little salt and tartness to bland vegetables.

It is better to choose a natural sauce obtained by fermentation; it is much tastier and healthier for the body. Gourmets will resist this kind of sauce, considering it a traditional element of Japanese cuisine that has no place in a Greek salad. Those who like experiments and unusual combinations can try this recipe.

Moreover, fusion style cuisine (a mixture of different techniques and cultures) is now in fashion. An excellent ratio of olive oil to soy sauce is 3:1. It is worth considering: soy sauce gives a brown tint to salad components, especially cheese such as feta cheese or feta cheese, which visually changes the salad.

For classic soy sauce dressing you will need:

  • olive oil - 4-6 tablespoons;
  • soy sauce - 2 tablespoons;
  • lemon juice - 2 tablespoons;
  • liquid honey - 1 tablespoon.

Combine honey and soy sauce, add lemon juice, mix thoroughly and carefully pour in olive oil. Stirring constantly, bring the sauce until completely dissolved.

Even the laziest housewife can prepare the sauce for Greek salad at home, as well as the salad itself. The recipe is very simple and does not include many ingredients. Here we use familiar products that can be found in every refrigerator. There are many salad dressings. They are all similar in composition, but individual components change their taste. You can try several options to choose the dressing to your liking.

The dressing for Greek salad should be minimalistic so that it does not overwhelm the taste of fresh vegetables.

Salad sauces are great for flavoring vegetables. Some sauces can be prepared in advance. In this case, guests who accidentally arrive will never take the hostess by surprise. Greek salad sauce is one of them! It can be prepared and used at the right time as a “magic wand”.

Initially, sauces were used to add saltiness to a main dish or side dish. So, in Japan, soy sauce still serves as such a sauce. In general, sauces are designed to improve the taste and improve the dish itself, highlighting certain ingredients in it.

Some sauces have become famous throughout the world thanks to their successful combinations. Among such sauces, it is worth highlighting mayonnaise and mustard from France, tzatziki sauce from Greece, ketchup from England and many others. Sauces are usually prepared using cream, broth, vegetable oil, and so on.

In a small container, mix freshly squeezed lemon juice, olive oil and mustard. Add a finely chopped clove of garlic or passed through a press. Mix everything thoroughly. It is best to dress the salad immediately before serving. If you have a mixer or blender, you can mix all the ingredients using it.

Regis Trigel, the chef of Brasserie Most, one of the most expensive restaurants in Moscow, said that the sauce is the key to the whole dish; if the sauce is successful, then the dish itself is successful. According to the chef, Greek salad dressing should always work! You need to prepare the dressing in advance for any dish, unless, of course, you intend to use ketchup or mayonnaise from the supermarket.

The sauce is the key to the whole dish; if the sauce is successful, then the dish itself is successful

Olive oil, the base of Greek salad dressing, is considered the second most important food in Mediterranean countries after meat, fish and bread. It serves as the basis for most sauces. In the ancient world, olive oil was used to flavor vegetables, fruits, bread, meat and even fish. It was mixed with all kinds of herbs, spices and ground nuts; all the secrets of the dressing recipe are hidden in them.

It is no coincidence that dressing plays such an important role in a Greek salad recipe. It is needed to absorb the aroma of added spices and transfer them evenly to the dish. If you add dry herbs, lemon juice, and vinegar separately to the salad, the pronounced taste of each component will overwhelm the taste of vegetables and especially feta.

Dressing for Greek salad must be infused, just like Mimosa salad, so it is important to be very careful when choosing products. It is impossible to allow taste improvers to get into it along with oregano, pesticides, etc., with freshly squeezed lemon juice. Only the highest quality ingredients should be used in sauces.

Products and composition of Greek salad dressing

  • olive oil – 8 tablespoons;
  • lemon (small) – 1 piece;
  • oregano – 1/3 teaspoon;
  • thyme – 1/3 teaspoon.

Olive oil for dressing

Good olive oil is only the first, cold pressed. This means that it is obtained directly from fresh olives, without heat treatment and without any dilution. The oil obtained in this way will be viscous, dense, slightly bitter and may be noticeably cloudy. But it is the most healthy, rich and tasty. Olive oil is included in many dishes, including meat dishes: chanakhi and chakhokhbili.

Transparent, liquid, pale yellow oil is most likely a whole set of things that are not worth eating

Ideally transparent, liquid, pale yellow and without sediment - this is most likely a whole set of things that are not worth eating. Firstly, olive oil is obtained from olives during the second and third pressing, but it is of much lower quality and is purified using chemicals. Secondly, even oil of acceptable quality is diluted with rapeseed and sometimes palm oil to reduce costs.

One of the sure signs of good oil is natural sediment and thickness. And be sure to look at the packaging, it should not let in any light. Because under the influence of daylight, the taste of the oil changes dramatically for the worse.

A sign of good oil is natural sediment and thickness

Lemon juice in Greek salad dressing is necessary not so much for the sake of slight sourness, but so that the taste buds of the human tongue perceive other tastes more clearly. You can choose a ripe and juicy lemon if you look closely at its shape. The riper the lemon, the more round it is. The almond shape indicates that the fruit was picked before it was ripe.

In the dressing recipe, lemon juice can be replaced with lime juice. The taste and aroma will be more exotic, but less intense. Ripe limes are uniform in color, round or oval in shape, and always have yellowish-green flesh. If it is pale green, then most likely the lime is unripe and extremely sour.

Ripe limes and lemons are uniform in color and round or oval in shape.

Lemon and lime are sometimes replaced with wine or balsamic vinegars. In this case, you will need literally a few drops to add a gentle sourness and not overpower the aroma of other spices.

Oregano (oregano)

The herb with the foreign name oregano is Oregano, which is widespread in our country. Our ancestors brewed tea from it, made medicinal infusions, used it to add fragrance to clothes and, of course, added it as a seasoning to various dishes. In Russia, oregano is used for bread dough, Easter cakes, pates, sausages, meat, mushrooms, etc.

The herb with the foreign name oregano is Oregano

In European countries, oregano is known as oregano and is used to make omelettes, sauces and salad dressings. Previously, only dry oregano mixture was available on store shelves. Nowadays you can buy a bunch of fresh herbs in any large supermarket.

To prepare a dressing for Greek salad, you can take a ready-made dry mixture, but there will be no guarantee that it contains oregano and that there is no sodium gluconate or other substances actively used in store-bought seasonings. Therefore, it is best to use dried herbs or fresh ones.

Thyme (thyme)

Thyme has been known in Russia for a very long time and is considered a healing herb. In ancient chronicles, she is called divine for her ability to cure seriously ill people. Today, thyme is familiar to restaurant visitors under its second name - thyme. It has gained particular popularity as an additive to black tea. Tea with thyme can be found on the menu of almost any Moscow restaurant.

Non-classical ingredients for dressing

Every chef has his own secrets for preparing Greek salad dressing. Knowing the basic composition, you can always improve it by adding unusual ingredients. For example, pine nuts, almonds and pumpkin seeds will add a special taste to a Greek salad. They are crushed with a knife like garlic and added to the dressing.

Pine nuts, almonds and pumpkin seeds will add a special taste to the Greek salad.

One of the winners of international culinary competitions has revealed the secret that he adds a few roasted sesame seeds and a spoonful of honey to the dressing, which gives the Greek salad a Moroccan touch.

Sometimes hot red pepper, mustard or garlic are added to the dressing. No matter how unusual such a combination may seem, the spicy dressing does not spoil the Greek salad at all, but rather adds zest.

How to Make Greek Salad Dressing

  1. Prepare the container. It is best to mix the dressing not in a bowl, but in a small glass jar, for example, mustard or horseradish. It must be clean and dry.
  2. Pour in the oil. Carefully pour olive oil into the prepared jar.
  3. Add herbs. If we take fresh oregano and thyme, we will need 3 sprigs of each. Remove the stem and finely chop the softer green leaves. If the herbs are dry, then carefully examine the contents of the package. There should be no transparent salt crystals, white flakes of sodium gluconate and other mineral inclusions.
  4. Squeeze lemon juice. Set the lemon in half and squeeze the juice from each half into a container. We try to prevent the pulp from getting in so that the dressing does not become overly sour. Lemon can be replaced with a few drops of wine or balsamic vinegar.
  5. Add other ingredients. Close and shake well. Close the jar tightly with a lid and shake for a long time so that everything is well mixed.
  6. Let's brew. Without opening the jar, let it stand for 20-30 minutes.

The Greek salad dressing is ready. If desired, you can always add various non-standard ingredients to it, which will diversify your favorite recipe. You can store the prepared dressing in the refrigerator for up to 2 weeks, and use it not only in salads. This is especially convenient if Greek salad is one of your New Year's salads.
