How to make honey cake without eggs at home - step-by-step recipe with photos

  1. The classic honey cake is prepared using the custard method in a water bath. Therefore, prepare two pans of larger and smaller diameter. You need to pour water into a large one and bring it to boil.
  2. Place the butter, sugar and honey in a smaller saucepan and place the mixture in a boiling water bath.

  3. The butter, honey and sugar should melt and warm up well. Now you need to add soda and sour cream and heat the mixture for another 2 minutes, stirring.

  4. Add 1 cup of flour to the mixture and knead the batter to a uniform consistency without removing it from the water bath. Let it warm up for a few minutes.

  5. Remove the dough from the water bath and knead into a thick dough using the remaining 3 cups of flour. The dough should form well and stick to your hands.

  6. Divide the finished dough into 7-8 equal balls, place each in separate bags (wrap with cling film) and place in the refrigerator for 20-30 minutes.

  7. Meanwhile, preheat the oven to 190 degrees.
  8. Then take out one ball of dough and roll it out to a thickness of 3-4 mm directly on baking paper. If you want a round cake, use a plate of suitable diameter to cut out a circle along the outline. Remove excess dough before baking. Poke holes with a fork.

  9. Bake the pie crust on a baking sheet for about 5-7 minutes. The cake should become a beautiful golden color.

  10. Allow the cake to cool slightly and soak in the pre-prepared cream.

  11. Next bake the next cakes. After the cake is ready, you need to put it on the cake already soaked in cream and soak it in the same way. Sprinkle the last cake with cake crumbs or walnuts.

  12. If you wish, you can roast walnuts and chop them finely and sprinkle each cake with nuts - it will turn out even tastier.
  13. Let the finished honey cake soak for 4-6 hours. This is an amazingly delicious cake.

How to prepare sour cream for honey cake

  1. Sour cream is one of the simplest creams. You need to mix sour cream with sugar and vanilla. The cream is ready.
  2. Important! Do not beat sour cream with a blender/mixer. There is a danger that the whey will separate from the protein and the cream will separate.
  3. To make sour cream less calorie, replace half the sour cream with non-acidic. However, you need very thick yogurt, so 800 ml. Place homemade yogurt in several layers of gauze and hang it over the pan - excess liquid will drain and the yogurt will turn out thicker.

Your honey cake with sour cream is ready!

Enjoy!

I scoured the Internet and wanted to find a honey cake without eggs. I never found it. But I found a way out - I slightly altered the recipe for the “Miracle” honey cake. Everyone who tried it was delighted!:pooh_hone

For the dough: butter - 60g.
sugar - 1 tbsp.
liquid honey - 2 tbsp.
banana - 1.5 pcs.
soda - 2 tsp.
flour - 2.5 tbsp.

For cream: sugar - 1 tbsp.
half a banana
flour - 1 tbsp.
milk - 1 tbsp.
softened butter - 250g.
vanillin
sour cream at room temperature - 0.5 tbsp.

Glaze: sugar - 4 tbsp.
sour cream - 4 tbsp.
butter - 60g.

The actual preparation.
I made the dough first:
1. Place butter, sugar and honey in a large enamel or glass bowl and place in a water bath. When the sugar is completely melted and a homogeneous mass is obtained, remove from heat.
2.Make banana puree in a blender and add it to the hot mixture, stir until smooth.
3. Place the resulting mass in a water bath again and stir continuously for 4 minutes.
4. Without removing from heat, add 2 tsp. soda The mass will sharply begin to increase in volume. Stir continuously until the mass increases approximately 3 times.
5. Without removing from heat, add 2.5 tbsp. flour and quickly stir thoroughly.
6.Remove the dough from the steam.
7.Place 1 tablespoon of flour in an even layer on the table.
8.Pour the mixture from the bowl onto the flour and immediately mix thoroughly. It should not be very hard, and at the same time it should not be very viscous.
9.Dip it in flour, form the dough into a “sausage” and cut it into 7 equal parts.
10. Lightly roll each part in flour again, cover with a towel so that the dough does not cool. (warm dough rolls out better!!!)
11.Pour some flour onto the table and roll out thin cakes.
12. Preheat the oven to 200 degrees.
13.Bake individually on a floured baking sheet until golden brown.
14.Allow the cakes to cool.

While the cakes are baking, you can make the cream:
1.Mash the banana, add sugar and mix well..
2. Add 1 tbsp to the resulting thick mass. with a heap of flour and vanillin. Mix well again.
3.Add milk little by little, stirring thoroughly until smooth.
4.Place in a water bath and, stirring continuously, almost bring to a boil. At this point the mass will begin to thicken.
5.Remove from steam and cool to room temperature.
6.Add soft butter to the custard mixture and beat thoroughly with a mixer for about 10 minutes.
7.Then add sour cream at room temperature and mix everything with a spoon.

We coat the cakes with cream, not sparing, you get a lot of cream and fill it with slightly cooled glaze:
1.Mix sugar with sour cream, add butter and put on fire.
2. Stirring continuously, bring to a boil.

When the cake is ready, you need to give it time to soak. Five hours is enough.

Ingredients:
For the test:
Flour 600 gr.
Sugar 200 gr.
Sour cream 200 gr.
Honey 150 gr.
Drain. butter 200 gr.
Salt 0.5 tsp
Soda 2 tsp
Vanilla or vanilla sugar 20 gr.
For cream:
Cream at least 33% fat 600 ml.
Powdered sugar 300 gr.
Vanilla
Nuts for sprinkling - to taste

Measure out the exact amount of ingredients for the dough. Place the cream and whipping container in the refrigerator for at least 4 hours. It is important that they are cold. In a large saucepan, add sugar, honey, butter, salt, vanilla and melt, stirring constantly. It is important not to let it boil. Once the butter and sugar have dissolved, add sour cream. Mix well, once everything becomes a homogeneous mixture, add soda. When you see that the mass begins to foam, add flour, stirring constantly and turning off the heat, mix well, you will have a dough. Take cling film or a simple plastic bag and place the dough on the film. Knead the dough a little and without effort. Wrap the dough and let it cool for about 30 minutes. Sprinkle the surface of the table with flour and divide the dough into the number of pieces you need. Roll out the dough not too thin, so that when forming the cake you can easily give it the desired shape. If you need a rectangle or oval, roll it out into a rectangle; if you need a circle, then roll it out into a circle. Do not try to give the correct shape, since the dough is very soft, this will be very difficult to do. This can be done later by cutting with a knife. Bake for 3-5 minutes until golden brown. While the cakes are baking and cooling. Let's make cream. Remember that the cream and utensils, even the mixer whisk, must be cold. This is the key to a good cream. Whip the cream at high speed until it thickens. Add powdered sugar and vanilla. And beat the cream until thick. Be careful not to let the cream turn into butter. As soon as you see that the cream holds its shape, put the cream in the refrigerator while the cakes cool. Use a pan to trim the edges of the cakes. Make crumbs from the scraps, this can be done by hand or using a food processor. Assemble the cake, do not press the cakes too hard, since the cream is delicate and airy, we need to maintain lightness. Spread the cream evenly on all sides. Mix the ground nuts and crumbs and sprinkle over the cake. Remove any excess and wrap or cover the cake so that it does not absorb odors in the refrigerator. Let the cake soak for at least 12 hours, preferably a day. In this case, the more the better. The honey cake is ready. Bon appetit!

Vegetarian honey cake without eggs. Here is a recipe for making a classic dessert: honey cake without eggs with whipped cream.

Recipe: Vegetarian honey cake without eggs

Compound:

Dough:

Premium flour 600 gr
Butter 100 gr
Milk 180 ml
Honey 150 gr
Sugar 200 gr
Salt 3 g (1/2 teaspoon)
Soda 10 g (1/2 tablespoon)

Cream:

Whipping cream (30% fat) 600 ml
Powdered sugar 150 gr
Vanillin 3 g (2 packs)

Step 1 Preparing the dough liquid

In a deep bowl, mix sugar, butter, milk, salt and honey.

Place the cup in a steam bath. Honey and butter will become softer, sugar will dissolve and you will get a homogeneous liquid with a temperature of about 50 degrees

IMPORTANT!!! For this recipe you need to use buckwheat honey or other honey with a strong taste and smell. The more flavor the honey has, the tastier your vegetarian eggless honey cake will be.

Step 2 Preparing the dough for the honey cake

Sift flour mixed with soda into a deep bowl.

Add the liquid that we prepared in a water bath to the flour.

Stir well. You should have a dough that sticks to your hands.

Cover with a plate or cling film and set aside for 20-30 minutes

Step 3 Preparing the cake layers

After 20-30 minutes the dough will become a little thicker and will slightly stick to your hands.

Take a piece of dough, knead it 2-3 times and roll out a 0.4 cm thick cake on parchment paper. If the dough sticks, sprinkle the paper and rolling pin with flour.

Attach a measuring pan to the cake (I used the bottom of the pan, you can use the lid). The size of the form depends on your desire. The smaller the mold, the more cake layers you will get and the higher the cake will be.

Using a knife, trim any dough that extends beyond the edges.

Step 4 Baking the cakes

Place the cakes in the oven preheated to 175 degrees for 5-7 minutes. Do not overcook the cakes in the oven.

The cake should be soft, the edges slightly hard.

Remove the cakes and place them on an open surface to cool. At the end of baking you will have a piece of dough left over.

Make a shapeless crust out of the dough and bake too. Next we use this cake as a decoration.

When the cakes have cooled, cut off the edges of the cakes no more than 0.3 cm (the hardest part). This must be done, then our cakes will be better soaked and will not be hard.

Step 5 Preparing the cream

While the cakes are cooling, mix cold cream, powdered sugar and vanilla in a deep bowl.

Beat with a mixer until stiff peaks form and the cream becomes matte.

Step 6 Assembling the honey cake

Place one cake layer on a plate or board.

Place the cream 0.5-0.7 cm thick. Place the next cake layer and cover with cream.

Repeat until all the cakes are gone.

Spread the cream over the surface and sides

Step 7 Decorating the honey cake

Place the cake trimmings and the last small cake on a baking sheet and place in the oven for 20 minutes at 120 degrees.

During this time, all the trimmings will dry. Remove them from the oven.

Let cool for 10 minutes and puree in a blender.

Sprinkle the resulting crumbs over the top and around the edges of the cake. Cover the cake with a large cup and put it in a cool place for at least 3-5 hours.

ATTENTION!!! It is important to cover the cake with a cup for 3-5 hours. During this time, the cake will be saturated with moisture from the cream and become softer.

After 3-5 hours, take out our vegetarian eggless honey cake, cut into pieces and serve.

Bon appetit!
