Croissants with condensed milk made from puff pastry without yeast. Recipe: Croissants with boiled condensed milk - from puff pastry without yeast

Croissants are a classic French pastry that is very popular. Externally, the products are similar to bagels, only they are made from yeast puff pastry. There is a quick and simple recipe for making croissants with condensed milk.

Classic recipe

To prepare delicious and original pastries, you will need:

  • 600 g wheat flour;
  • 20 g fresh yeast;
  • 80 g granulated sugar;
  • 250 g cream-based butter;
  • 1/4 liter of milk;
  • 1 pinch of salt;
  • 100 grams of boiled condensed milk;
  • powdered sugar for sprinkling.

The cooking process takes a lot of time. However, the result is very tasty croissants with condensed milk.

How to knead the dough

To make croissants at home, you need to knead the dough correctly. To do this, you need to sift the flour through a fine strainer. It is recommended to warm the milk to room temperature. Yeast should be added to it so that the mass becomes homogeneous.

The sifted flour must be mixed with milk and yeast. You should also add salt and 50 g of melted butter from the cream. After this, you need to knead a homogeneous and elastic dough. The finished mass should be placed in a warm place. The dough should come up. If this did not happen, then the kneading technology was violated.

What's next?

Croissants with condensed milk are made from puff pastry. When the mass has arrived, you need to knead it and then roll it into a rectangular shape. After this, you need to place 100 grams of softened cream butter, cut into small pieces, in the center. The dough should be wrapped and carefully rolled out.

Place the remaining butter from the cream onto the resulting layer. After this, you should cover everything with the second part of the dough, roll it out again, fold it again and roll it out. The prepared mass should be placed in a cool place for 20 minutes.

After the specified time, the dough must be rolled out again and folded into 3 layers. Finally, the mass should be placed in the cold. The more such manipulations with the dough, the better it will turn out.

Forming baked goods

How to make croissants from puff pastry with condensed milk? The baking process is quite simple. The prepared dough must be removed from the refrigerator, divided into layers, and then one of them rolled out. Its thickness should be no more than 1 centimeter. The rolled out layer should be divided into neat triangles. Place a little boiled condensed milk on the wide part of the piece. Each layer must be carefully rolled up to form a bagel. This is how you need to wrap all the croissants. At home, you can prepare baked goods not only with condensed milk.

How to bake properly

Croissants with condensed milk, the recipe for which is described above, must be transferred to a baking sheet previously moistened with water. The workpieces should stand for a while to proof. This takes no more than 20 minutes. During this time, it is worth preheating the oven to 220˚C. Bake croissants with condensed milk until golden brown.

Finally, the baked goods should be lightly brushed with water and then sprinkled with powdered sugar. You can eat croissants with tea, coffee and other drinks, both hot and cold.

Subtleties of the process

Now you know the recipe for croissants with condensed milk. The dough can be prepared without much difficulty. To make the baked goods delicious, it is worth considering several subtleties of its preparation.

Croissant dough contains a lot of oil. You cannot use margarine to prepare it. You should use butter as fat. Moreover, its amount should be almost equal to the amount of flour.

The finished yeast dough must be cooled in the refrigerator. This is precisely why it differs from the usual one, which is used for making pies and buns.

The dough and butter must be chilled. Otherwise, the fat will combine with the rest of the ingredients. It is the butter that makes the dough flaky.

The room where the croissant dough is kneaded should be cool. High temperatures will cause the butter to melt. As a result, the fat will combine with other components of the dough, and it will no longer be flaky.

If you are not confident in your abilities, you can buy puff pastry in the store. However, remember, it must be yeasty. Condensed milk can also be purchased already boiled. This will save time and speed up the process of preparing croissants.

In conclusion

Croissants with condensed milk turn out tender and tasty. During the preparation process for them, you should not reduce the number of “rollings” of dough. Otherwise, the product will not be puffy enough. It is worth noting that croissants are prepared with both sweet and savory fillings. In any case, the components must be dry. If the filling is liquid, the dough will become heavy and wet during cooking. If condensed milk is wrapped in croissants, it must be boiled. If desired, you can make a more complex filling by adding dried fruits or nuts.

When you have neither the desire to bother with preparing dough nor the time, ready-made puff pastry comes to the rescue, which is inexpensive and sold in almost every grocery store. From such purchased dough you can make a lot of goodies: puff pastries, khachapuri, pies, cookies, all kinds of rolls and much more. We will bake airy croissants from ready-made puff pastry dough. How to bake croissants with condensed milk from puff pastry

Freshly baked croissants are so good to drink tea or coffee with, or even wash them down with milk! Viscous condensed milk suits them like nothing else.

As for the question of which dough to use - yeast or yeast-free, then, in principle, it’s up to you to decide. Yeast croissants will turn out fluffier and softer. Fresh ones are crispier.

If you still decide on yeast, then before placing the dough in the oven, it is better to let it sit for a while to proof, after the dough has been rolled out and molded. Just remember to cover the baked goods and protect them from drying out.

When baking croissants, you can brush them with a lightly beaten egg with milk for extra gloss. Products made from unleavened dough can be greased before placing in the oven, and those made from yeast dough 5 minutes before removing.

Instead of sprinkling with powdered sugar, finished products can be greased with melted butter with sugar dissolved in it. After this, the baked goods will become softer and more tender.

Only boiled condensed milk is suitable for filling. The usual one is liquid and will immediately flow out.

How to cook with photos step by step

Roll out the ready-to-cook dough. The thickness of the rolled out dough is approximately 3-4 mm. It is better to choose a rectangular or round shape to make it easier to cut later. It is better not to use a lot of flour so that the finished croissant sticks well.

Cut the rolled out dough into triangles.

Place one teaspoon of boiled condensed milk onto the triangle.

Wrap to form croissants. Place on a baking sheet that has been previously lined with parchment. To be more sure that the baked goods will not stick, you can additionally grease the parchment with butter or melted butter. It is better to place them at a sufficient distance from each other so that the baked goods have room to rise. Since we are using yeast dough, you can leave the finished croissants on a baking sheet in a warm place to rest for 20 minutes.

Carefully brush each croissant with egg. Place in the oven at 180 degrees for 25 minutes.

Leave the finished croissants on the baking sheet to cool slightly and transfer to a plate.
The best way to eat croissants is fresh for breakfast.

They also turn out very tasty

Croissants came to us from France and immediately gained popularity. They can be with different fillings, but most of all I like them with condensed milk. You can buy them ready-made or prepare them yourself. If you buy ready-made dough, it will take very little time to prepare, and the result will be delicious.

I used this dough and condensed milk.

Thaw the package of dough. Place the dough plate on the table, lightly dusting it with flour.

Roll out the dough a little. Cut it into four rectangles.

In total, one sheet of dough makes 8 triangles. Place about half a teaspoon of boiled condensed milk on the base of the triangle. I tighten each triangle a little, giving it an isosceles shape.

Roll the triangles, starting from the base and pressing the edges so that the condensed milk does not leak out.

Pull the long end of the triangle to the desired length to wrap the croissant several times.

Roll up all the croissants in this manner and place them on a baking sheet lined with parchment paper. Cut the second sheet of dough in exactly the same way. Makes 16 croissants in total.

Leave the baking sheet with croissants in a warm place for 20-30 minutes to rise. Once the time has passed, turn on the oven to preheat to 200 degrees, and in the meantime brush the croissants with beaten egg. I do this with a silicone brush.

All croissants are greased and it’s time to put the baking sheet in the oven for 20-25 minutes. After the time has passed, the croissants are ready.
