  2. Mix everything.

  3. Remove the butter from the refrigerator in advance so that the product comes to room temperature. Divide the softened butter into pieces and add to the dry mixture. Use a spoon or your hands to bring the mixture into fine crumbs. Break the eggs into the resulting crumbs.

  4. First, use a spoon, and then simply knead the dough into a homogeneous dough with your hands.

  5. Cover the dough with cling film or simply close the cup with a lid and refrigerate for 10-15 minutes.

  6. You must immediately turn on the oven so that the temperature in it warms up to 200 degrees.
    Remove the dough from the refrigerator. Using your hands, pinch off small pieces of dough and form into balls. It is important to ensure that all the balls are the same size, otherwise the cookies will bake unevenly. Carefully roll each ball in powdered sugar poured into a cup.

  7. And place on a parchment-lined baking sheet. Leave a small distance between the balls.

  8. Place the tray with the balls into the hot oven. Cookies bake very quickly - 10 minutes is enough, maximum 15, depending on the oven. It is absolutely forbidden to leave cookies in the oven! Otherwise, the cookies will turn out burnt and just stone.

  • 300 ml fat kefir;
  • 0.5-0.6 kg flour;
  • 2 tsp. dry yeast (or 50 grams raw);
  • 1.5 tbsp. l. Sahara;
  • 1.5 tsp. salt;
  • 100 ml. milk;
  • 2 eggs;
  • 3 tbsp. l. vegetable oil.

The preparation process will take a few minutes, but the result will definitely exceed expectations. To make yeast dough, you must first slightly warm the milk. Then add sugar to it and mix thoroughly until completely dissolved. After which you can add yeast by mixing it with milk. Then cover the container with the resulting mixture with a clean towel and place it in a warm place for 10-15 minutes. This will be the base (dough).

At the same time, you need to mix kefir with vegetable oil. Be sure to make sure it is not cold. Beat the eggs into the resulting mixture, add salt and mix everything well. Then pour the dough into the egg-milk mixture and, having mixed the ingredients, begin to add flour. After kneading is completed, the mass must be lowered back into the container and covered with a towel.

Just like the dough, the finished yeast dough should be kept in a warm place for about 15 minutes, but more is possible.

After this time, the finished mass can be taken out and prepared to form pies.

How to bake pies?

3. Place the pies made from this kefir dough on a roasting pan covered with parchment paper and be sure to brush the tops with beaten egg.

4. Cook at 200 degrees until deep brown.

Unleavened quick kefir dough for pies fried in a frying pan

Ingredients:

Approximately 1 kg of flour (how much dough will take);

A liter of medium-fat kefir;

Two tsp. soda (full without a slide).

Cooking method:

1. At least an hour before cooking, remove the container with kefir from the refrigerator and leave to warm up. You can heat the product in the microwave; in this case, make sure that it does not overheat, otherwise it will curdle.

2. Pour warm kefir into a bowl, stir baking soda in it well and leave the mixture to stand for three minutes.

3. Add salt; if the filling for the pies is sweet, add a little sugar, about half a tablespoon. Add a third of the flour and mix well. Continue until the flour is evenly distributed throughout the kefir and there are no lumps left in the still liquid dough.

4. Then, without stopping stirring and adding the remaining flour in small portions, knead a slightly sticky dough.

Ingredients:

Two glasses of high-gluten wheat flour;

Fresh eggs – 2 pcs.;

Vinegar and soda for extinguishing;

200 ml high-calorie kefir.

Cooking method:

1. Melt the margarine in a small saucepan over low heat. Cool it slightly and mix with warm kefir.

2. Pour baking soda into a large spoon and add table vinegar to it. Stir the mixture well with the point of a knife and wait until it stops bubbling. Then pour the slaked soda into a bowl with the rest of the ingredients and stir thoroughly with a spoon.

1. Mix the egg well with soda and salt. Do not beat, just shake lightly with a fork.

Two spoons of 20% sour cream;

30 ml refined oil;

Cheese quick dough for unsweetened bulk pie

Ingredients:

250 gr. sifted quality flour;

100 gr. cheese;

Three tablespoons of low-fat mayonnaise;

50 gr. 15% sour cream;

Four eggs;

Juice from 1/8 lemon.

Cooking method:

1. Break the eggs into a wide bowl and lightly whisk them, but do not beat them. Rub the cheese into the eggs on a coarse grater, mix and add the sifted flour.

2. Add mayonnaise mixed with sour cream and stir well.

3. Take the required (about 0.5 tsp) amount of soda into a tablespoon and quench it with lemon juice. When the mixture stops sizzling and forms a foamy head, pour it into the dough and stir into it.

4. Unsweetened pies are baked from cheese batter using kefir. Half is poured into the mold, then I spread the savory filling, which is also filled with dough, but with a smaller part of it.

Quick kefir dough - tricks and useful tips

If you are afraid that kefir may curdle when heated, heat it in water. To do this, place the container with the fermented milk product in a bowl of warm water for a while and periodically replace the cooled water with warm water.

Baked goods turn out fluffier and softer from slightly aged or slightly expired kefir.

The lower the fat content of the fermented milk product, the more airy the dough.

Before mixing, keep all products at the same temperature.
