    3. Place the container on the fire and gradually bring its contents to a boil. In this case, the flame should not be very strong.
    4. Just before boiling, the liquid must be saturated with oxygen. This operation is called “self-removal.” To do this, the housewife must scoop up water with a ladle, raise it high above the pot, and then pour it back in a thin stream. The procedure should be repeated at least thirty times.
    5. Pour milk in a 3:1 ratio with water. The mixture should simmer.
    6. Add lamb fat.

    In 5 minutes the jomba will be completely ready. All that remains is to pour it into a bowl.

    "Khursits"

    How else can you make delicious Kalmyk tea? Preparing this national product is a long but interesting process. There are a huge number of different recipes, each of which is good in its own way. Take, for example, “Khursits”. This is thick Kalmyk tea with the addition of various spices and flour. To prepare it you need to take:

    3 tablespoons each of milk and pressed tea leaves, water, ½ teaspoon each of flour and melted butter, as well as nutmeg and bay leaf.

    Method of preparing tea:

    1. Pour the tea leaves into a saucepan, add water and slowly bring to a boil. After this, the liquid can be filtered.
    2. Add milk and heat the mixture again, without letting it boil.
    3. Separately, melt the butter in a frying pan and lightly fry the sifted flour in it.
    4. Transfer the mixture into a saucepan and stir well.
    5. Add selected spices to taste.

    The drink turns out thick, aromatic and very high in calories. It is not surprising that Kalmyks use this tea not to quench their thirst, but as a main product.

    Tea in Adyghe style

    Adygs prepare Kalmyk tea in their own way. Any resident of this republic knows how to brew such a drink step by step. You must first prepare the following ingredients:

    • 4 sprigs of horse sorrel;
    • water;
    • milk,;
    • salt;
    • 50-100 g butter;
    • ground black pepper.

    To prepare this drink, a similar technique is used:

    1. First, rinse the sorrel branches well, put them in a saucepan and add water.
    2. Place the container on the fire, bring its contents to a boil and cook for at least an hour. Gradually the liquid will acquire a rich dark color.
    3. Let the broth brew under the lid for 15 minutes.
    4. Strain the cooled liquid or simply remove all the twigs from it with a slotted spoon.
    5. Pour milk in a ratio of 1:3 to the brew and bring it to a boil.
    6. Season with salt and then add oil and pepper.

    The finished product should stand for a while before use. In the old days, such tea was prepared at night in order to eat it in the morning along with aromatic national pastries (shlyam, halyuzh or guubat).

    Kalmyk tea is a combination of black and green teas with steppe herbs, one of which is bergenia. Herbs are harvested before they begin to bloom to ensure the drink is hypoallergenic. The mixture of herbs is pressed into briquettes weighing 1.2-2 kg.

    Take 2 tbsp. l. crushed pressed tea, half a glass of water and the same amount of milk, 1 tsp. butter, salt. Pour the tea into boiling water and immediately add milk. Boil with constant stirring for 5 minutes, then add salt. Pour tea into a cup and add butter.

    2. Tatar tea.
    Take 30-35 g of pressed tea, 100 g of water and milk. Place pressed tea in boiling water and immediately drain the milk. Boil while stirring for about 5 minutes. Turn off the gas and add 10 g butter and salt to taste.

    3. "Jomba".
    Crush 200-300 g of tiled green tea and pour in 3 liters of water. Place on medium heat and bring to a boil. After boiling, reduce the heat and boil the tea for another 15-20 minutes. Remove floating tea particles from the surface. After this, pour in 2 liters of heated cream and boil for another 10 minutes. After this, add 50 g of butter, 2 tsp. salt, 5-6 peas of black pepper and leave to brew for 15 minutes. At the end of cooking, add bay leaf or nutmeg to taste.

    4. Kalmyk tea with milk.
    Grind 40 g of green brick tea, pour into a glass of boiling water and cook over low heat for 5 minutes. After this, add a glass of hot boiled water milk, ground cinnamon on the tip of a knife, a bud of cloves and salt to taste. Boil the tea for another 10 minutes, strain, add 25 g of melted butter and bring the drink to a boil one last time.

    5. Kalmyk tea “Khursitsya”.
    Take 3 tbsp. l. crushed slab tea and fill with cold water. Bring to a boil and add 2 tbsp. milk. Boil again, strain. Fry 0.5 tsp in lard. flour until brown and dilute it with water. Mix with tea, add nutmeg and bay leaf.

    6. Kalmyk tea with roasting.
    Crush 4 tbsp. l. with plain green tea on top and pour 1.5 liters of cold water. Bring to a boil over medium heat, reduce heat and simmer for another 15-20 minutes. After this, add 2 liters of milk and 2 tsp. salt. Fry 3 tbsp. l. wheat flour with 100 g butter until light yellow, but do not overfry. Add flour to the tea, and then 7-8 black peppercorns and 2 bay leaves.
