How to make Hedgehog cake at home

We start working on our future masterpieces by baking biscuits. Separately designed detailed step-by-step photo recipes can be found using the links in the list of ingredients. Let me note right away that both biscuits will require 11 eggs. We will use 7 of them completely, but there will still be 4 proteins left. If you, like me, don’t like unused leftovers after making a cake, you can use 2 eggs and 4 whites for a chocolate sponge cake. The result will be excellent, and in addition you will save two whole eggs.

To bake a chocolate sponge cake, use a mold with a diameter of 24 cm. Cool the workpiece and cut it into two layers.

We bake the butter sponge cake in a rectangular shape. I have a little less than the standard 30x40cm. Cut out a circle with a diameter of 24 cm from the layer. The remainder will be used to prepare hedgehogs.

I additionally decided to soak the chocolate sponge cake. I prepared the simplest impregnation. I poured sugar and coffee into a glass, added boiling water, stirred and cooled. I always add cognac to the cooled liquid. Using a teaspoon or brush, evenly saturate the layers of chocolate biscuit from the cut side.

Place a tablespoon of cream on a dish and place the first layer of chocolate on top of it, cut side up. Spread half the cream over it.

Then, add the butter sponge cake, the remaining cream and the second chocolate layer, cut side down. Place the assembled cake in the refrigerator.

For the second cream, combine chilled cream with powdered sugar and a small amount of green food coloring. Beat everything until stable and dense. I strongly advise you NOT to use dyes for Easter eggs. It is strictly forbidden to eat them. If you want to make beautiful children's cakes, get safe dyes: dry powder or gel.

All that remains is to let the hedgehogs out for a walk and create comfortable conditions for them: plant flowers and grass in a fairy-tale meadow.

To do this, I used “star” type attachments, and “planted” the grass using the attachment of the same name, already known to you from making hedgehogs. We decorate the centers of the flowers with confectionery pearls. Don't forget to pay attention to the sides of the cake. Along the top and bottom, masking the unevenness, we plant borders using a “leaf” attachment or any other attachment of your choice. To complete the picture, we plant pink flowers between the borders.
