Place the cake in the fridge for at least 3 hours. Then remove from the mold and transfer to a dish.

Whip cream with vanilla sugar. Coat the cake on top and sides with 3/4 of this mass.

Put the rest of the cream in a pastry syringe and make patterns on the cake. Arrange the candied fruit nicely.

Serve chocolate cake with bittersweet chocolate as quickly as possible so it doesn't get too wet.
