The composition of the products is traditional for any type of pancakes. For thin sour cream-based pancakes you will need the following products:

  • 80 milliliters of carbonated mineral water without flavoring;
  • 3 medium eggs;
  • vanilla extract – a couple of drops (or 1 packet of dry vanilla);
  • 15 percent sour cream - 200 milliliters;
  • 1 tablespoon melted butter or margarine;
  • 5 heaped tablespoons of white flour;
  • 5 tablespoons of refined oil;

We will not use baking powder or soda. They add fluffiness to the dough and make it difficult to achieve crispy edges. It is due to the absence of baking powder that small holes form on the surface of the pancakes.

Cooking method

Depending on how thin you want your pancakes, you should choose the fat content of sour cream. The more liquid and less fatty it is, the thinner the pancakes will be. It is optimal to use sour cream with a fat content of 10–15%, and take higher-calorie sour cream in smaller quantities and dilute it with more water.

Let's start cooking:

  1. Prepare a large, voluminous bowl in which it will be convenient to stir a large amount of dough.
  2. Break all the eggs into this container at once, add sour cream and mix well. At the end of kneading, salt the dough.
  3. Now sift the premium flour and gradually add it to the sour cream base. Mix everything thoroughly with a whisk or beat with a mixer. At this stage you will have a fairly thick dough.
  4. To make it thinner, dilute the mixture with sparkling water and add a knob of very soft or melted butter. Stir again until smooth, cover and let sit for about an hour.
  5. After this, heat a pancake or simply non-stick frying pan, grease with fat without a distinct taste, for example, vegetable oil or margarine.
  6. Pour a very small amount of liquid pancake batter into a well-heated frying pan and immediately distribute it so that the pancake is as thin as possible. If there are holes left, they do not need to be closed. Flip the pancake as soon as the edge begins to brown. On the second side, the product is fried for no more than 30 seconds.

    3. Beat all the ingredients again, then add two glasses of water to them.

    1. 10 g dry yeast and one tbsp. Dissolve a spoonful of flour in a glass of water. We get the so-called dough - “preparatory” dough. We send the dough to a warm place to ferment.
    2. While the dough is fermenting, knead two cups of flour with two cups of low-fat sour cream. It is better to choose sour cream with a fat content of 20%. This will be the base of the pancake batter.
    3. Beat 3-4 eggs (preferably whites) with half a teaspoon of salt and add to the dough base.
    4. Add a glass of kefir, sugar and dough. Stir thoroughly until a homogeneous mass without lumps is obtained.
    5. When the dough is ready, leave it for an hour. The dough will rise and increase in volume. After this, fry the pancakes for one and a half minutes on one side.

    Cooking with sour cream

    It doesn’t matter if the sour cream has stagnated in the refrigerator and has become a little acidic. It can be used for baking, for example, for thin, aromatic pancakes.

    In this case, we will need the following ingredients:

    • egg;
    • a glass of sour cream;
    • half a glass of flour;
    • a third of a teaspoon of salt;
    • two tbsp. spoons of sugar;
    • 50 ml water;
    • Art. spoon of vegetable oil.

    Mix all ingredients except flour, save it for last. Heat the resulting homogeneous mixture a little in the oven so that it ferments and the dough rises. Only after this, pour the flour into the dish, after sifting it twice.

    Leave the dough undisturbed for at least twenty minutes to allow it to rise further. After this time, bake pancakes in vegetable oil until golden brown.

    The pancakes may taste a little sour, but this will only add originality to the boring dish.

    It doesn’t matter if you want to make pancakes but don’t have eggs at home. But it is worth considering that the dough prepared without eggs is very loose. Therefore, you need to be especially careful when you turn the pancake over - it can easily tear. But if you follow all the instructions in the article, the lack of eggs will not affect the taste in any way.

    Ingredients:

    • two glasses of flour;
    • 100 ml low-fat sour cream (preferably 15%);
    • two tbsp. spoons of potato starch;
    • half a liter of water;
    • two tbsp. spoons of sugar;
    • half a teaspoon of soda;
    • a third of a teaspoon of salt without a pea;
    • two tbsp. spoons of vegetable oil.
    1. Mix potato starch and flour and pass them through a sieve.
    2. Combine all remaining ingredients, mix thoroughly
    3. Leave the dough to sit for half an hour.
    4. You can start frying.

    For this we need:

    • three eggs;
    • a glass of flour (150 g);
    • a third of a teaspoon of salt;
    • 200 g low-fat sour cream;
    • 100 ml of water (preferably mineral water, from which the gases have not yet been exhaled. This will give the dough airiness);
    • a tablespoon of vegetable oil.

    The order in which the ingredients are added to the mixture is not important. The main thing is that the mass is homogeneous. Once the pancake batter is ready, leave it in the kitchen for 20 minutes. Don't forget to cover it with a plate or film, otherwise it will dry out.

    To add a rich flavor to the dish, you can add ground cinnamon to the dough or add flavorings. This will give the dessert originality, a light spicy note and sophistication.
