A simple recipe for making dough from dry yeast

1. Pour the yeast into warm milk, at about 30 degrees, add 1 tablespoon of sugar and four heaped tablespoons of flour.

2. Mix, then cover with cling film or a towel and leave for 30 minutes to allow the yeast to activate and the dough to bubble.

3. Meanwhile, break the eggs into another container, add vanilla and sugar.

4. Then mix everything and add butter.

Melt the butter over low heat in advance and let cool.

5. Now add sour cream there.

Even those who have never dealt with baked goods will not have any difficulties with baking, because the entire cooking process will be described in as much detail as possible.

Now let’s start looking at the recipe for buns made from yeast dough with cinnamon, which we will use for cooking.

Ingredients:

Dough:

1. Wheat flour – 0.5 kg;

2. Milk – 0.2 l;

3. Granulated sugar – 0.07 kg;

4. Butter – 0.05 kg;

5. Egg - 2 pcs.;

6. Yeast - 10 g;

7. Salt – 1/3 tbsp. l.;

Filling:

1. Granulated sugar – 0.1 kg;

2. Cinnamon – 0.02 kg;

3. Vanillin – 1 tbsp. l.;

Cooking method:

1. Pour milk heated to 40 degrees into a deep bowl.

2. Add granulated sugar, yeast, salt.

3. Add a handful of flour, stir, the consistency of the dough should resemble pancake dough.

4. Place in a warm place for a quarter of an hour, and wait until the yeast enters the active phase, the dough increases in volume, and many small bubbles appear on the surface.

5. Add eggs and melted butter. Please note that the oil is not too hot; temperatures above 50 degrees have a detrimental effect on yeast fungi. If you add very hot ingredients you can spoil the whole dough and it will stop rising.

6. Be sure to sift the flour through a fine mesh sieve. Combine it with the rest of the ingredients.

7. Knead into a plastic dough.

8. Place the dough in a bowl, cover with a kitchen towel or cling film and keep warm for 40 - 50 minutes. Knead the risen dough and let it rise again.

9. Mix granulated sugar with cinnamon and sprinkle thickly onto the greased layer of dough.

10. Melt the butter and brush the rolled out dough. Try not to leave unsmeared gaps. It is very convenient to do this with a silicone brush, but if you don’t have one, you can get by with a regular brush with natural bristles.

11. Sprinkle a cutting board with flour and roll out the dough into a layer approximately 5 - 10 mm thick.

    This is perhaps the easiest way to make cinnamon rolls at home. For it you will need:

    • flour – 500 g;
    • milk – 250-300 ml;
    • butter – 85-100 g;
    • sugar – 120-150 g;
    • dry yeast – 1 package;
    • cinnamon - to taste.

    First you need to heat the milk, add 3-4 teaspoons of sugar and dry yeast. Stir the mixture and leave in a warm place for 15 minutes. When the yeast begins to actively foam, place it in a bowl for kneading dough, pour in the melted butter, break the egg and mix well. After this, you can pour flour into a bowl and knead the dough. The resulting product must be wrapped and placed in a warm place for 1.5-2 hours.

    When the dough has risen, knead it and divide it into 4 parts. Now you need to roll out the first bun, lightly grease it with melted butter and sprinkle generously with a mixture of sugar and cinnamon. Place the second rolled out bun on top and cover with the cinnamon-sugar filling again. Do the same with the remaining two koloboks.

    The resulting stack can be rolled into rolls and cut into several equal parts, or you can simply cut it into 8 triangles. Place the buns on a greased baking sheet and place in the oven for half an hour. The baking temperature should be approximately 180-185°C. The finished buns can be sprinkled with powdered sugar on top.

    But who said that you can only cook according to the classic recipe? Buns prepared according to the recipe below are no less tasty than classic ones. For them you will need to get out of the bins:

    • flour – 0.5 kg;
    • vegetable oil – 90 g;
    • dry yeast – 1 sachet;
    • eggs – 2 pcs.;
    • sugar – 150 g;
    • milk – 250 ml;
    • cinnamon – 1-2 tablespoons;
    • starch - 2 tablespoons;
    • butter – 130 g;
    • cream – 50 ml;
    • powdered sugar – 1 tablespoon;
    • vanilla liqueur or essence – 5 ml;
    • salt - to taste.

    Heat the milk a little, add vegetable oil and mix thoroughly. Beat one of the eggs along with two tablespoons of sugar and a pinch of salt. Pour flour and yeast into a bowl, pour in milk and egg mixture. Knead the dough. Flour can be added until the dough stops sticking to your hands. The finished product must be left warm for an hour to rise. To make the dough rise faster, you can cover the bowl with a towel soaked in hot water and wrung out and place it in the oven, preheated to 45-50°C for half an hour.

    For the filling, you need to grind approximately 75 g of softened butter with 50 g of flour, 100 g of sugar, starch and cinnamon. Roll out the risen dough into a rectangular shape and grease with vegetable oil. Distribute the prepared filling over the entire surface, roll the layer into a roll and cut into pieces 5-6 cm wide. Place the buns on a baking sheet and forget about them for 20 minutes. Then brush them with egg on top and put them in the oven for half an hour. The optimal temperature is 180-200°C.

    For the glaze, melt 25-30 g of butter, add vanilla liqueur and powdered sugar, pour in the cream and beat the mixture thoroughly. The resulting mixture should be greased on the still hot buns.

    Cinnamon Rolls

    Wonderful cinnamon rolls are made not only from yeast dough, but also from puff pastry. It doesn't take that long to tinker with them. The only caveat is that it is better to prepare the dough for such baking the day before. By the way, it can be made several times at once, since puff pastry is perfectly stored in the refrigerator. So, for such baking you need to take:

    • flour – 300 g (2 cups);
    • butter or creamy margarine – 300 g (250 g for dough and 50 g for filling);
    • water – 130 ml;
    • ground cinnamon – 1-2 bags;
    • sugar – 100 g;
    • milk – 50 ml.

    Cut the butter for the dough into small pieces with a knife and mix with flour. Then, on a flat surface, chop the resulting mixture into crumbs with a knife. After this, make a depression in the middle of the butter-flour mixture, pour water into it and knead the dough. You shouldn’t knead for too long; it’s enough to get a more or less homogeneous mass. Wrap the resulting dough in a bag or film and put it in the refrigerator for several hours, or better yet, overnight.

    Then everything is similar to the previous options. First you need to prepare the filling, i.e. Grind butter with sugar. Remove the dough from the refrigerator and roll it into a rectangular layer. Sprinkle it with cinnamon and brush with a mixture of butter and sugar. Roll the workpiece into a roll and cut into equal parts. Bake for about half an hour at 180°C.

    Apple and cinnamon buns

    This sweet delicacy is best prepared not just from puff pastry, but from puff-yeast dough. It can also be purchased ready-made, or you can knead it with your own hands. Moreover, the principle of the process is almost identical to the preparation of a regular puff pastry product. To serve delicious apple and cinnamon buns you need to prepare:

    • flour – 450-500 g (3 cups);
    • yeast – 1 sachet;
    • water – 85 ml;
    • milk – 135 ml;
    • butter – 200 g;
    • sugar – 3 teaspoons;
    • egg – 1 pc.;
    • salt – 1 teaspoon;
    • apples – 2-3 pcs.;
    • sugar, vanilla, cinnamon - for filling.

    Dilute the tremors and 1 spoon of sugar in warm water and leave to “come to life” for 15-20 minutes, then mix thoroughly. Sift the flour and mix with two tablespoons of sugar and salt. Finely chop the butter or grate it on a shredder and mix with flour. Chop the resulting mixture again with a knife or rub it with your hands to form crumbs. Form a slide from the resulting mass and make a depression in the middle.

    Beat the egg into the revived yeast and carefully pour in the warm milk. Stir the mixture, pour into the well of the flour slide and knead the dough. Wrap the resulting product in film or a bag and put it in the refrigerator for a couple of hours.

    Boil a glass of water, add 80-100 g of sugar and vanilla. Bring to a boil again. Cut the apples into thin slices and dip into syrup. You don’t need to cook for long – about 1-2 minutes. Then remove the apple slices from the syrup with a slotted spoon and place in a colander to drain off excess liquid.

    Remove the dough from the refrigerator and roll it into a thin layer. Cut it into strips 3 cm wide. Place apple slices on each, sprinkle with cinnamon and roll into a roll. Place the resulting buns on a baking sheet and let stand for 15-20 minutes, then bake in the oven at 180°C for half an hour. The finished buns can be sprinkled with powdered sugar if desired.

    In general, Cinnabon is not so much a cinnamon bun as a chain of bakeries. This brand appeared relatively recently - in 1985, in Seattle. And they serve not only buns and coffee. It’s just that the authors strictly preserve their signature recipe, and especially the method of preparing the famous cream sauce. However, 90 percent of the secret has already been solved. So now every housewife can cook a la Cinnabons in her own kitchen.

    It’s worth warning right away: this dish is very high in calories, so young ladies who are watching their figure should better exclude this delicacy from their diet. The rest need to prepare the following products:

    • flour – 750-800 g;
    • milk – 250 ml;
    • eggs – 3 pcs.;
    • butter – 210 g;
    • sugar – 100 g for dough and 200 g for filling;
    • yeast – 1 sachet;
    • vegetable oil – 2 tablespoons;
    • vanillin – 1 sachet;
    • cinnamon – 4-5 tablespoons;
    • curd cheese – 100-150 g (Philadelphia or Almette is best);
    • powdered sugar – 150 g;
    • salt – 1 pinch.

    Heat the milk slightly (38-40°C), dissolve yeast and a tablespoon of sugar in it. Let the mixture sit for 10 minutes for the yeast to come to life. Beat eggs with half a glass of sugar and pour into milk, add a third of softened butter, salt, vanillin and vegetable oil. Mix everything well. Add flour and knead the dough, which then needs to be wrapped and left for an hour in a warm place.

    The dough should be rolled out into a thin square layer, greased with the second third of softened butter and sprinkled generously with a mixture of sugar and cinnamon. Roll the layer into a tight roll and cut into pieces about 4 cm wide.

    Place the resulting buns on a baking sheet lined with foil and let them stand for 15 minutes, then put them in an oven preheated to 180-200°C and bake until they acquire a light golden hue (about 30-40 minutes). The times are, of course, relative. It is advisable to monitor the baking to prevent the flour products from drying out.

    Now it's time to start making the pastry sauce. To do this, you just need to mix the cheese, powdered sugar and the remaining third of the butter. Cover the still warm buns with the finished mixture and... you can serve them to the table.

    Little tricks

    There are no super secrets in making cinnamon rolls. But you can still give some recommendations, for example:

    • For cinnamon rolls, you need to use only wheat flour and always the highest grade. Before use, the product must be sifted through a sieve. And it’s better a couple of times. This will saturate the flour with oxygen, and the baked goods will be more airy;
    • You can use absolutely any yeast for the dough, i.e. both dry and pressed, whichever is more convenient for you. However, in any case, before preparing the dough, they must be activated in warm water (38-42°C) with sugar. This process is short in time and takes approximately 15-20 minutes. But in this case the dough will definitely rise;
    • Cinnamon roll dough must contain fat. The options can be very different: butter or vegetable oil, margarine and even sour cream. When using butter or margarine, they must first be softened, or better yet, melted and cooled to room temperature. The exception is puff pastry. There’s no point in melting the butter here;
    • if you are afraid that your own dough will not work out or you simply don’t have time to prepare it, then you can buy a store-bought version of this product. However, it is necessary to ensure that the dough is fresh and contains only natural and high-quality products;
    • cinnamon can be put not only in the filling. To make the buns even more flavorful, you can add a little spice directly to the dough. But the amount of cinnamon can be very different. It all depends on the preferences of the hostess and her family members.
