How to make cranberry drink. How I made cranberry juice

Cranberries are one of the healthiest berries growing in Russia. Its fame was so great that Russian merchants sold tons of it abroad; it was one of the main export goods along with black and red caviar. Everyone knows about its benefits and therefore actively uses it, for example, for preparing fruit drinks. But does everyone know how to make cranberry juice? Let's make a real drink, while preserving all the vitamins and microelements contained in this berry.

Classic cranberry juice

Take ripe cranberries, rinse them thoroughly under cold running water and let them drain. Now we place the berry in a deep container and crush it well with a wooden or ceramic pestle. Of course, you can grind the berries with a blender, but given the high acid content in it, it is better to avoid contact of the pulp with metal parts of the mechanism. Squeeze the resulting pulp through cheesecloth. Set aside the juice (we will need it at the final stage of preparing such a wonderful drink as cranberry juice), and fill the pulp with sugar and fill it with water. The proportions are as follows: for a glass of cranberry puree, take half a glass of sugar and a liter of water. Place our mixture on the stove and, stirring until the sugar dissolves, bring it to a boil and simmer for no more than two minutes. Let our mixture cool, filter it and mix with juice. Using the same method, you can prepare a fruit drink from frozen cranberries. The only difference in the recipe is that the berries must first be defrosted. By the way, freezing is perhaps the best way to store any berry. Its main disadvantage is that fruits and vegetables take up a lot of space in the freezer.

How to make cranberry juice with honey?

Based on the classic recipe, you can make an even healthier drink. To do this, you need to exclude sugar from the list of ingredients and add honey at the stage of mixing the juice with the pulp broth. If it has already become candied, put it in a lukewarm liquid, so it will dissolve faster and will not lose its beneficial properties. You need a little less honey than sugar, as the fruit drink can turn out cloying. And do not forget that such a drink is contraindicated for people with allergies to bee products.

How to prepare cranberry and lingonberry juice?

If you think about what berry can compete with cranberries in health benefits, then it is, of course, lingonberries. It is not so juicy, but not so sour, and the fruit drink made from a mixture of these fruits has a rich taste, aroma and perfectly quenches thirst. For a liter of water, take half a glass of lingonberries, cranberries and sugar, and a tablespoon of mint. Boil water, dissolve sugar in it and add mint. Let it brew for fifteen minutes. Meanwhile, chop the berries in an accessible way and add to the almost cooled infusion. Let it sit for half an hour and strain. Morse is ready!

Cranberry jelly

We take forty to sixty grams of gelatin per liter of liquid, then the jelly will be strong and will hold its shape perfectly. Culinary Etude 01/11/2018

Dear readers, you must agree that the best thing is when the drinks that appear on our table are not only tasty, but also healthy. And today we will talk about just one of these drinks - cranberry juice. Natalya Litvishko, author of the blog “About money and not only...” I give the floor to her about the benefits and how to prepare cranberry juice at home.

What is fruit drink

The fruit drink got its name from the Byzantine “mursa” - water with honey, a corruption of the Latin “mulsa”. Morse is prepared from berries such as cranberries, cherries, lingonberries, red currants, raspberries, blackberries, bird cherry, thorns, that is, either those that have a lot of seeds or are collected in large volumes.

To prepare fruit juice, berries are taken by volume or weight 2-3 times less than water, and boiled for 2-4 hours, depending on the volume. Then it is left to settle, drained, filtered, and the grounds are squeezed out. Sugar or honey, sometimes spices, are added to the resulting juice, heated again to a boil, after which the drink is ready.

What are the benefits of cranberry juice?

Cranberry is a unique berry; it contains many substances necessary for our body: organic acids, pectins, natural sugars - glucose, fructose, sucrose, vitamins, micro- and macroelements, tannins, etc. You can read more about the benefits of cranberries in the article

When cranberry juice is prepared correctly, almost all the beneficial substances are retained in the drink, so it is not surprising that it has so many beneficial properties.

Cranberry juice will help:

  • reduce the temperature and alleviate the patient’s condition during fever;
  • lower blood pressure;
  • improve sleep;
  • increase immunity;
  • cleanse the vessels;
  • cope with sore throat;
  • cope with poisoning;
  • reduce nausea;
  • remove excess water from the body.

Contraindications

Despite all the benefits that cranberry juice can bring to health, it is worth knowing about the restrictions on its use. One of the contraindications is individual intolerance to cranberries and products made from them. These also include diseases of the gastrointestinal tract. Moderate consumption of a vitamin drink in a reduced concentration of juice is possible only with the permission of a doctor.

Secrets of making delicious cranberry juice

Dishes for preparing cranberry juice

It is very important to choose the right container for preparing cranberry juice. The berry is rich in organic acids. Therefore, duralumin utensils are not suitable for preparing a drink - the acids will react with the metal.

It is also undesirable to use stainless steel utensils. Although this material is more resistant to acids due to alloying additives, it is still a metal. The best option is enamel, glass or ceramic dishes.

It is preferable to take wooden or ceramic crushers and pestles for squeezing juice from berries. You can puree the cranberries in a blender or food processor. But it is undesirable to use a meat grinder for these purposes - the knives in them are made of iron, the oxidation process will accelerate. Fruit juice after such processing of berries may have a metallic taste.

Precautionary measures

Cranberry is a juicy berry. To avoid damaging your clothes with juice that accidentally gets in while mashing the berries, use an apron. But it’s not even so scary that the juice gets on your clothes. Beware of accidentally getting the juice into your eyes - the acid can cause severe irritation to the mucous membrane of the eyes.

Squeeze the juice while wearing rubber or silicone kitchen gloves to protect your hands from acids and staining from the juice.

Do not strain freshly brewed fruit juice to avoid thermal burns.

How to prepare berries for cranberry juice

Fresh berries should be rinsed with cool water in a colander, pouring the raw materials into it in small portions. Place the colander with the berries in a kitchen basin or deep cup of water. Change the water several times.

When washing the berries with running water, watch the pressure. Too much pressure can damage the shell of the berries, and then the juice will escape.

After washing, the berries are ready for further use.

If you have frozen the berries after this, then when you are ready to prepare fruit juice, all you have to do is take them out of the freezer and put them to use. If you use frozen cranberries from the store, you need to rinse them in a colander several times with cool water without defrosting. During the washing process, the berries will partially thaw.

Some recipes can use partially defrosted cranberries. For recipes that require juicing, the cranberries should be allowed to thaw at room temperature.

Dried cranberries should be washed, changing the water a couple of times. It can be used to prepare an infusion or decoction.

Cranberry juice recipes

There are several ways to prepare cranberry juice:

  1. Simple, no heat treatment.
  2. With juice extraction from boiled berries.
  3. With the addition of pre-prepared cranberry juice.
  4. Infusion.
  5. Decoction.

I will not give strict weight ratios of products. Quantity calculation: two glasses of cranberries per liter of water. It is with these proportions that the fruit drink has a rich taste and beautiful color. Sugar - according to your preference, from a quarter glass.

If the prepared drink turns out to be too sour, you can add boiled water to it or sweeten it with sugar syrup.

It is useful to always have ready-made sugar syrup in the refrigerator. If necessary, it is easier to sweeten a finished cold drink with syrup than with granulated sugar.

Two 200 ml glasses of frozen cranberries are approximately 300 g of berries. Measuring cup full to the brim - 200 g.

If you replace sugar with honey, remember that honey does not like high temperatures, its beneficial substances are destroyed and only sweetness remains.

Now, using specific recipes, we will look at how to prepare cranberry juice.

Do you remember how, as a child, you quickly made yourself a drink by stirring a couple of spoons of any jam in a glass of water? It was delicious? This is the simplest fruit drink recipe.

This preparation should be stored in the refrigerator.

This is a suitable option for fruit drink when there is no need to prepare it in large quantities. It is also good to use in hot weather. Sourish cranberry juice perfectly quenches thirst, refreshes and tones.

Cranberry juice from frozen berries - recipe with step-by-step photos

Pour the washed, not completely defrosted berries into a pan with cold water.

Bring to a boil, simmer for 10-15 minutes at minimum temperature.

The cooking time will depend on the type of cranberry. Cranberries grown on agricultural farms require more time to boil. It has a denser shell. Agrotechnical varieties are bred specifically taking into account transportation and long-term storage. Cranberries collected in the natural environment are smaller, the skin on the berries is thinner. Cooking time can be reduced.

Leave covered until almost completely cooled.

Strain the drink through a sieve lined with gauze or linen napkin. I use a linen napkin.

Squeeze the juice from the berries through two layers of gauze or a linen napkin. From cultivated varieties of berries, the pomace will have a consistency similar to puree.

To prevent juice stains from remaining on linen napkins, just rinse them well with cold water and boil them in a small amount of water with the addition of baking soda. Let cool in soda water. After this, simply rinse in cold water. No stains, no odors!

Return the remaining pulp to the sieve and pour over the cooled broth to make the most of the juice that did not pass through the napkin. From two glasses of cranberries there will be such a handful of cake left.

Add sugar syrup to the fruit drink to taste.

Cranberry juice with freshly squeezed cranberry juice

Place a pan of water on the stove. By the time the water boils, squeeze the juice from the berries. To do this, place the washed berries in a two-layer gauze bag or linen napkin, crush them, and squeeze the juice into a glass container.

Add berry pulp to boiling water. Boil for 5-7 minutes. Turn off the stove. Pour in cranberry juice. Add sugar.

You can also add juice to a cooled drink. Then the squeezed juice should be kept in the refrigerator until use, sweetened with sugar syrup. It is believed that this method of preparation preserves the most vitamins.

Cranberry juice without cooking (infusion)

Pour two cups of crushed berries into a half-liter thermos and pour boiling water over it. Let it brew for 6-8 hours. Strain the resulting infusion and squeeze out the juice.

Store the infusion in the refrigerator in a glass container for a week. Separately boil sugar syrup. Dilute the infusion with cold boiled water, add sugar syrup to taste.

Cranberry juice from dried/dried berries (decoction)

Now you can find dried cranberries on sale. The concentration of nutrients in the dried product is much higher, and the amount of organic acids is less.

For making fruit juice from dried cranberries, the decoction recipe is most suitable. Pour the prepared raw materials with cold water, bring to a boil, simmer over low heat for 15-20 minutes, turn off the stove, add sugar or sugar syrup to taste.

Delicious cranberry and blackcurrant juice

For this drink you need to take a glass of cranberries and black currants per one and a half liters of water. Squeeze juice from berries. Place the berry pulp into boiling water. Let it simmer for 5-7 minutes. Cool the resulting broth. Strain off the pulp. Add the squeezed juice and sugar syrup to the cooled broth to taste.

How to make sugar syrup

Notice that I always recommend adding sugar syrup. To prepare it, you will need a low saucepan with a thick bottom, a spoon, water, and sugar.

Take two parts sugar and one part water. You will get a thick sugar syrup. For one part sugar, one part water. Medium consistency syrup.

Measure out the water, pour into the saucepan, and bring to a boil. Add sugar little by little, stirring until the grains are completely dissolved. Bring to a boil, remove from heat. After cooling to room temperature, pour into a glass container. Store in the refrigerator.

I hope the recipes and those little secrets of making delicious cranberry juice that I shared with you will be useful to you. If you have questions, ask in the comments, I will be happy to answer. Good health to everyone!
