They say that in the New Year you should not eat chicken, much less a rooster, especially on New Year's holidays. Well, since we love to eat homemade chicken, especially cooked in the oven, we decided to gorge ourselves on chicken. And today we don’t even have a chicken, but a rooster. Recently, children have begun to like rooster meat. This is not the first time we have taken it, and it tastes different from chicken. It is not as tender, but in our opinion, it tastes better. The weight of such a handsome man increased by 3.5 kilograms. This is what we will cook in the oven. But I’ll call it chicken, it’s more familiar to me, and I hope you too. I won’t tell anyone a secret if I say that cooking begins with cutting the carcass. We divide it into pieces that are convenient for us and not very large. This is so that the poultry meat is evenly saturated with the marinade, and then baked.

We decided not to cook the whole bird, but only part of it. For example, we separated the breast, and it turned out to weigh 900 grams, without bones. We will make it from it. This way it turns out juicy, and we use it for salads.

And they separated the soup set, why bother gnawing on the bones. Removed excess fat and skin. In general, we have 1.5 kilograms of good and beautiful meat left. And this is quite enough for our family of four. Moreover, we will cook with potatoes.

To marinate chicken we will need:

  • Vegetable oil 30 grams
  • Mustard 1/2 teaspoon
  • Wine or liqueur 50 grams
  • Seasoning for chicken 1.5 teaspoons
  • Mix of peppers to taste and desire
  • Salt 1.5 teaspoons

But you don’t have to use everything; I’ll talk about that below.

The marinade can be made in two ways. The first is to mix everything separately in an empty bowl, and then add the chicken and mix well. This way you will be sure that the spices are applied evenly. Well, the second one is like in our photo. Add everything directly to the meat one by one.

We take salt at the rate of 1 teaspoon per kilogram of poultry, a proportion that has long been proven. We add vegetable oil to add juiciness to our pieces. But it is advisable to use oil without a strong odor. Regular refined will do.

I always add mustard to the bird. It adds piquancy and a pleasant taste. But don't add too much, it will be spicy. We use special spices for poultry. But this is optional. You can just add a little turmeric, ketchup or tomato sauce. The spices contain pepper, turmeric, and dry tomatoes. And as you know, tomatoes make meat softer due to the acid they contain.

And I also use it for marinade; we make it ourselves. Moreover, I started using the liqueur sediment, but I liked the taste so much that we added pure liqueur. Liqueur can be replaced with wine, or you can not add it at all.

Now mix everything well and leave to marinate. Ideally, leave it overnight, but this doesn’t often work out that way. After just a few hours you can put it in the oven. I didn't tell you about the pepper. In the photo we have a mill, and we add a little freshly ground pepper. Just don't overdo it. I usually taste it with my finger while stirring and adjust the spiciness and taste. In addition to pepper, we also have mustard in the marinade.

We always place chicken pieces on top of potatoes. This increases the size of the dish and reduces the cooking time for several dishes. Yes, and the potatoes are poured with the rendered fat from the chicken pieces.

We peel the potatoes, wash them and cut them into four parts. There is no need to cut it finely; it has time to bake well. Although it would be more accurate to say boil. Choose the quantity of potatoes yourself. Add a little salt and vegetable oil so that the potatoes do not burn immediately. Then the fat from the chicken will be rendered.

Our main principle is that the bird should lie on the potatoes, and not on a baking sheet. True, today we are making for the family, not for guests, and we can use a glass form with a lid. It’s just that the uniform will be small for a large number of guests.

Place our marinated chicken pieces on top of the potatoes. And pour the marinade that remains in the bowl on top of the chicken. You can even add 20 grams of water and rinse the bowl. That's what I usually do.

Now cover and place in the oven for one hour, preheated to at least 200 degrees.

We'll definitely cover it. If it is a baking sheet, then with foil, and if it is a mold, then with a lid. For these purposes, you can even use cauldrons with lids, or ducklings. So, when melted, the fat flows down, and the potatoes are boiled in water with fat. Not only does the fat drain from the pieces, but also all the spices. As a result, the potatoes turn out very tasty.

Using this recipe, you can cook not only a whole chicken, but also wings and thighs. But then the cooking time in the oven is reduced. Please note that poultry takes a little longer to cook. Maybe even more than an hour. This already depends on the age of the chicken and on the food that this bird ate.

Preparation:

  1. To cook chicken in the oven, you need to gut it, remove any feathers that might remain, and remove excess pieces of fat. Wash thoroughly with cool water and let dry.
  2. After this, turn on the oven to preheat at 180 degrees.

  1. If the meat is frozen, then, of course, it needs to be thawed, and then rinsed with water and dried. You can cook either whole or divided into parts.
  2. Rub the meat well with salt. If you decide to cook it whole, then do not forget to add spices inside.
  3. Make small cuts across the entire surface of the chicken and place small pieces of garlic in them.
  4. Spread it with sour cream or mayonnaise and pepper.

How to cook chicken in a can of water?

Another interesting recipe for those who like to bake whole chicken.

Ingredients:

  • chicken or whole chicken;
  • jar – 700 grams;
  • mayonnaise or sour cream;
  • pepper, salt, other spices to your taste;
  • garlic, bay leaf, peppercorns.

Cooking process:

  1. Rinse the meat under water and wait until it dries. This can also be done using napkins or paper towels.
  2. Prepare the garlic: you can chop it finely or use a garlic press.
  3. Rub the carcass thoroughly with salt, pepper, and seasonings. Then sour cream and garlic.
  4. Take a jar and fill it with water to a third of its volume. Place a few bay leaves and peppercorns into the water.
  5. Place the chicken on top of the jar and tie the wings and legs with thread.

Ingredients:

  • chicken, fillet is best;
  • half a liter of beer;
  • bulb;
  • salt, pepper, bay leaf.

Cooking process:

  1. The selected parts of the chicken must be cut into pieces and then mixed well with salt, pepper and spices that you decide to use. Also add a few bay leaves here.

  • kilogram of potatoes;
  • several cloves of garlic;
  • two spoons of mayonnaise.

Cooking process:

  1. Rinse and dry the meat. Make small cuts on the surface and place garlic cloves in them.
  2. Coat the carcass with salt, pepper, and mayonnaise. Sprinkle with herbs and other seasonings.
  3. Place the meat in a baking dish. It should be large enough to accommodate the potatoes.

Products for cooking:

  • whole chicken weighing about 1.5 kg;
  • bell pepper – several pieces;
  • four potatoes;
  • a few spoons of mayonnaise;
  • eggplant;
  • two medium onions;
  • five tomatoes;
  • chicken seasonings, salt, pepper;
  • a few tablespoons of vegetable oil.

Cooking process:

  1. Prepare chicken and vegetables. To do this, the meat must be washed and dried, and the vegetables must be cut into small pieces.
  2. Everything needs to be salted, peppered, herbs and seasonings added to your taste. Coat the chicken with mayonnaise, and pour a little vegetable oil into the vegetables.

If you want to get an unusual taste, then it’s time to prepare a chicken marinade.

There are five options for the most successful marinade:

  1. Honey. To prepare it you will need soy sauce and honey, which needs to be melted. All this is mixed, then vegetable oil, ground pepper are added and you can add a little coriander. It is the last component that will give a special charm to the meat.
  2. Spicy option. For those who want something hot, this recipe will be perfect for you. Lemon juice is mixed with sugar, oil is added, preferably olive oil, everything is salted and mixed. Then finely chop the garlic, chop the ginger root and add it to the mass. If desired, you can add a little lime juice and don't forget to pepper. The taste will be very piquant.
  3. Wine. If you like wine and spicy taste, then take apple cider vinegar, mix it with mustard, preferably a hotter one, and dilute it all in wine. It is better to use dry white wine - this is the most suitable option. Salt and pepper are also added here.
  4. Another option is with lemon. Very easy to prepare: mix squeezed lemon juice with olive oil and season with spices. It is recommended to add rosemary for a special taste.
  5. An unusual option using kefir. It is better to take it with the minimum percentage of fat. Garlic, lemon juice and Tabasco hot sauce are added to kefir. Then some pepper, thyme and finely chopped onion. And only at the very end is salt added to the resulting marinade.

How to cook homemade chicken in the oven

Once again, the juiciness and softness of homemade chicken baked in the oven will largely depend on your correct choice when purchasing. Be careful!

I bake the chicken in an electric oven, without a fan (convection) or grill.

How long to bake homemade chicken in the oven directly depends on its weight and size. A large chicken can be baked whole in a deep pan, but then it will have to be turned over during the baking process, approximately halfway through the process. Sometimes housewives, when baking chicken or goose in the oven, put a tray with water downwards, I don’t do this.

In order for my large chicken to bake faster (with such impressive dimensions), I cut it along the keel (breast) and spread it out, as for tobacco chicken.

I rub the chicken with salt, spices, herbs, and grated garlic on the inside and outside. I place apple slices on a baking sheet and place the chicken skin side up on them, as in the photo:

The spread out chicken didn’t fit into the deep baking sheet, I took an ordinary baking sheet and after I laid the “game” carcass on the apples, I added water (2 cups) to the bottom.

Actually, all the “labor-intensive” preparation is completed, then the oven will do its job, it should already be preheated to 180 degrees.

We put the homemade chicken with apples in the oven; the cooking time took me a little over an hour and a half (more precisely, 1 hour 45 minutes). In order for the baked chicken to have a beautiful crispy crust, during the cooking process it must be periodically watered with the released fatty juice.

  • The bird must be no more than a year old. Older chickens have tough meat, regardless of breed. There is no need to clarify “how old the bird was” from the seller. Just weigh the carcass and refuse to purchase if it weighs more than 1.5 kg.
  • Do not buy birds with bluish skin. It distinguishes a breed of laying hens that is not intended for cooking.
  • If you end up with a laying hen or an old bird, you should first boil it for 2 hours and only then bake it. Then the dish will turn out juicy.
  • The right solution for how to bake chicken in the oven so that it is juicy is to use a cooking sleeve. In it, the meat is cooked, as in a pressure cooker, boiling in its own juice. The intensity of cooking in the sleeve is higher than in a glass form under a lid. You can also bake in foil, but make sure that there are no holes in it. Otherwise, the juice will leak out and the bird will remain dry.


Before baking the carcass, make cuts in the breast and place pieces of butter in them. Thanks to it, lean breast will become more juicy. Either insert the wings into the “pockets” on the breast, or wrap them in foil, shiny side out. During the baking process, these thin parts tend to burn while the thighs and breasts cook.

Add the juice from the chicken stewed in the sleeve and boil again. Separately, boil 200 ml of water, add 2 tablespoons of sugar and lemon juice into it, stir until dissolved. Add 250 grams of gooseberries or other sour berries, boil, and grind through a sieve. Add the mixture to a mixture of white wine and meat juice, stir, serve with chicken.

With rice for the whole family

This recipe for juicy chicken in the oven is suitable even for old birds with tough meat. The dish turns out to be satisfying, with a crumbly side dish, and is also suitable for a children's table.

  • rice - 100 g;

Rub the resulting mixture onto homemade chicken on all sides and leave at room temperature for 30-40 minutes.

Preheat the oven to 180 degrees. Tie the chicken legs with thread, giving the carcass a more beautiful look. Place homemade chicken on a baking sheet lined with parchment or greased with vegetable oil and place in the oven. Mine baked for a little over 1.5 hours. In order for the chicken to turn out with a crispy, golden crust, during the cooking process it must be periodically watered with the released juice.
