  • You can peel the potatoes in advance. Clean it, put it in a saucepan with cold water, to which add a little lemon juice. The water should cover the entire potato.
  • If you have to organize a festive dinner for unexpected guests, then semi-finished products from the nearest store will come to the rescue. Just make sure of their quality.
  • To make fish or meat bake faster, make several deep cuts in them with a knife. To ensure juicy meat or fish, place them in a preheated oven to cook. Then the dish will brown faster without losing its juiciness.
  • If you plan to serve sliced ​​cheeses or sausages at the holiday table, ask the store to cut them for you to save time at home. If there is no more than an hour and a half left before the feast, do not put the slices in the refrigerator, this way it is better to preserve its aroma.
  • Order and comfort in the house for a festive reception should be established in advance, so that when you come home and prepare the table in a hurry, you are not distracted by cleaning the apartment.
  • When you get home, first of all, put the drinks that need to be chilled in the refrigerator so that they are cool when your guests arrive. This is not necessary if you plan to make cocktails with ice.

  • hard cheese - 200 gr
  • crab sticks - 200 gr
  • 5 eggs
  • mayonnaise - 3 tbsp. spoons
  • flour - 5 tbsp. spoons
  • milk
  • vegetable oil

Preparation:

  1. Grate hard cheese and crab sticks. Add mayonnaise, 5 eggs, flour and a drop of milk. Stir.
  2. The baking sleeve must be cut so that it hangs over the edges, grease with a small amount of vegetable oil and place on a baking sheet.
  3. Pour the cheese mixture onto the sleeve and place in the oven for 10 minutes.
  4. Place the filling into the prepared mass (the most delicious fillings are cheese with garlic and minced meat with chopped herbs) and roll into a roll. When serving, cut into small slices.

Lavash snack

Ingredients:

  • Armenian lavash leaf;
  • 200 grams of crab meat;
  • 200 grams of fresh cucumbers;

  • Armenian lavash – 2 pieces;
  • Hard cheese – 200 grams;
  • Smoked sausages – 150 grams;
  • Chicken eggs – 3 pieces;
  • Garlic – 3 cloves;
  • Pickled cucumber – 3 pieces;
  • Green onion feathers - a bunch;
  • Butter fat – 1 tbsp. l;
  • Mayonnaise sauce.

Cooking method:

  1. Cut smoked sausages, pickles, cheese and boiled eggs into thin slices;
  2. Chop the greens and garlic with a knife. Add them to previously prepared products;
  3. Season everything with mayonnaise sauce;
  4. Spread sheets of pita bread on the table. Coat it with garlic mayonnaise sauce;
  5. Divide the filling into 2 parts and place each on a separate pita bread;
  6. Roll them into tight tubes;
  7. Grease each roll;
  8. Grate hard cheese on a coarse grater. Sprinkle it over the straws;
  9. Place the entire appetizer on a baking sheet and bake for 13 minutes.

Quick appetizer with eggplant

Ingredients:

  • 2 sheets of thin Armenian lavash
  • 1 boiled chicken breast without skin
  • 1 large onion
  • 1 large carrot
  • 2 cloves garlic
  • 1 large eggplant or 2 medium ones
  • half a bunch of dill
  • half a bunch of parsley
  • salt to taste
  • black pepper to taste
  • 500 ml vegetable oil for frying

Cooking method:

  1. Boil the chicken breast, cool, cut into small pieces. Peel the onions and carrots, grate the carrots on a coarse grater, cut the onion into cubes, finely chop the garlic clove.
  2. Heat vegetable oil in a frying pan and fry the onion in it, stirring occasionally, then add garlic and carrots, fry over low heat for 10 minutes, then add chopped meat, fry everything together for 5-6 minutes. Place in a cup, add finely chopped herbs and garlic.
  3. Wash the eggplant, dry it, cut off the tail and cut into small cubes (you don’t have to peel the skin, if you wish, I don’t peel it), fry the eggplant in a small amount of well-heated vegetable oil, stirring, until tender, that is, 6-7 minutes.
  4. Add the fried eggplant to the chicken and vegetables, add salt and pepper to the filling, and mix well.
  5. Cut the pita bread into squares (from one sheet you get about 6 identical squares), put chicken and eggplant filling on each square, roll it into a tube or wrap it in an “envelope” and fry on both sides in well-heated vegetable oil until a beautiful golden color.
  6. You will have to add oil as you fry, as the pita bread absorbs it well. Serve the appetizer hot or warm. Nourishing, tasty, simple and fast.

Snack quick sandwiches

Ingredients:

  • white bread - 5 pcs.
  • cod liver in oil - 1 jar
  • chicken eggs - 2 pcs.
  • onions - 1/4 pcs.
  • fresh cucumbers - 1 pc.
  • garlic - 2 teeth.
  • fresh parsley - puch.

Cooking method:

  1. Remove the cod liver from the jar and crush it thoroughly with a fork.
  2. Dry the slices of white bread on a wire rack, in a toaster or in a dry frying pan. The bread for sandwiches should be fairly brown, with a crispy crust on the outside and an elastic crumb on the inside.
  3. Boil the eggs hard, cool them in cold water and peel them. By the way, I would like to remind you that it is recommended to boil eggs for at least 10 minutes over moderate heat. The water needs to be salted. Using a knife, chop the white along with the yolk and add to the cod liver.
  4. Peel the fresh cucumber and cut into small cubes. Alternatively, you can grate it using a grater with medium-sized holes. Let's send it to the liver and eggs.
  5. Remove the peel from the onion. For this dish, a quarter of a chopped onion will be enough. Combine the onion with the rest of the ingredients.
  6. Generously rub slices of toasted bread on both sides with a clove of garlic. It will additionally add piquancy and a characteristic aroma to sandwiches.
  7. Mix all the ingredients into a homogeneous mass and spread it on the prepared bread. Decorate the finished sandwiches with cod liver with parsley and serve.

Easy snack deviled eggs

Ingredients:

  • 6 yolks,
  • mushrooms (I have champignons) - 150 gr.,
  • onions - 1 pc.,
  • carrots - 1 pc.,
  • 2 tbsp. l. mayonnaise,
  • sunflower oil for frying,
  • salt and pepper to taste.

Preparation:

  1. Let's decorate the eggs in the shape of mushrooms; this appetizer looks very beautiful on lettuce leaves. Eggs must first be boiled. We cut off the upper sharp part of the egg (white) with a knife, these will be the caps. They need to be painted brown. To do this, boil water, brew strong black and cook the caps in it for 5 minutes. The whites will not cook and will turn brown. Carefully remove the yolk from the eggs with a spoon and prepare the filling.
  2. Cut the mushrooms and onions into cubes, grate the carrots on a coarse grater. Fry all ingredients in sunflower oil. Add salt and pepper to taste. Mix with mayonnaise and stuff eggs. We turn the stuffed eggs over, place them on a plate with lettuce or dill leaves, and place the caps on top. The forest fairy tale is ready.

Tartlets with fish

Ingredients:

  • lightly salted or smoked red fish (salmon, trout, pink salmon or other) - 150-200 g
  • fresh cucumber - 1 long or a couple of medium ones
  • large chicken eggs of selected category - 3 pcs.
  • curd cheese (preferably without fillers) - 1 pc. or a little mayonnaise

Preparation:

  1. Any red fish will be suitable for filling these tartlets for the holiday. This applies to both the type and method of preparation. With smoked fish it will be more piquant, and with lightly salted fish it will be more tender. Remove bones and skin (if any). Cut into small cubes. Place the slices in a deep bowl in which it will be convenient to mix.
  2. If the cucumber peel is rough, it is better to cut it off. Remove the ends too and chop the cucumber, like the fish.-
  3. Hard-boil the eggs and cool completely. Peel and cut. In order for the yolk to turn out as desired, cook from the moment of boiling for at least 7, but no more than 10 minutes. Remove the finished eggs from the boiling water and place them on ice or in very cold water. When they have cooled, remove the shells. Cut into cubes and add to other filling ingredients for festive crispy tartlets.
  4. Add cream cheese. You don't have to buy ricotta or other expensive Italian product. I used Almette cheese with wild mushrooms, it turned out very tasty. But it’s still better to use cheese without additives if you’re not sure that the products will go well together. Instead of cheese, you can use mayonnaise, sour cream or thick natural yogurt.-
  5. Mix thoroughly. Taste and adjust with salt and pepper if necessary.
  6. Place the red fish filling in the tartlets and serve on the festive table immediately, before the delicate crispy dough gets soggy. You can paint it with “roses” of red fish and a leaf of greenery.

Julienne in tartlets in the oven

Ingredients:

  • tartlets - 15 pcs.
  • chicken fillet - 250 gr.
  • fresh mushrooms - 200 gr.
  • sour cream - 200 gr.
  • hard cheese - 150 gr.
  • flour - 1 tbsp. spoon
  • butter for frying
  • salt, pepper to taste

Cooking method:

  1. Cut the chicken fillet into thin strips. Finely chop the mushrooms too.
  2. Put some butter in a frying pan, melt it and heat it up. Place chicken in hot oil and quickly fry over medium heat.
  3. Then add the mushrooms, salt and pepper to taste and continue frying everything together until done.
  4. In another frying pan, fry the flour a little, then add sour cream, mix well and bring to a boil.
  5. Add the sour cream sauce to the chicken and mushrooms, stirring constantly, and bring to a boil. If the mass seems thick to you, as it was for me this time, you can add a little water, but I added a little kefir and a little sugar to remove the sourness. But the sauce should not be liquid either. The julienne for the tartlets is ready, you need to let it cool a little.

Quick and tasty snack

Ingredients:

  • butter - 200 grams,
  • 2 cups of flour,
  • 1 teaspoon sugar,
  • 6 eggs
  • red caviar 200 grams,
  • bunch of dill,
  • a tablespoon of sour cream,
  • tablespoon mustard
  • 50 grams of cheese.

Cooking method:

  1. In a cup, mix sugar and flour and add salt. In the center of the mixed products, make a small depression and break the eggs into it, mix it all again. Then add the softened butter and stir again, or rather, begin to knead the elastic dough.
  2. Once the dough is ready, roll it into cling film and leave it in the refrigerator for an hour. At this time, you can already prepare the irresistible molds and grease them with oil. Then divide the dough into small balls depending on the size of your molds and line them with dough. Bake the tartlets in an oven preheated to 200 degrees for 20 minutes.
  3. When everything is ready, take them out, let them cool a little and you can fill them with filling. Grate the cheese and mix it with boiled yolks, add mustard and sour cream. Mix all this thoroughly and transfer it to a pastry syringe. Squeeze the resulting mass into tartlets. Decorate everything with herbs and caviar. Everything is ready, you can serve it on the table.

Quick snacks on a skewer

Ingredients:

Preparation:

  1. Everything here is very simple and very fast: we cut the ingredients into layers and, alternating the filling, squeeze out the particles with a syringe. When it is full, insert a toothpick or decorative skewer into the middle.
  2. Canapés on skewers can be beautifully laid out on a dish, but with the help of toothpicks you can make interesting versions of canapés on skewers for children.
  3. Due to the fact that both edges of toothpicks are sharp, with one tip you can attach it, for example, to half a pear, make eyes from black peppercorns or cloves - you get a hedgehog. Place fruit canapés on its back, and alternately string dark and light seedless grapes onto the other end of the toothpick.
  4. Canapés are tiny multi-layered sandwiches placed on skewers or on a platter.

Ingredients:

  • 5 garlic cloves;
  • Chicken fillet – 3 pcs;
  • Coriander and a mixture of dried herbs - 1.5 large spoons each;
  • Paprika and freshly ground pepper mixture - 2 tablespoons each;
  • Salt – 5 large spoons.

Cooking instructions are as follows:

  1. Combine salt, all the spices and herbs, as well as garlic in a plate and mix until smooth. Thanks to paprika, our chicken will acquire an appetizing red hue;
  2. Cut each washed and dried fillet lengthwise into small pieces and roll each thoroughly on all sides in the previously prepared mixture;
  3. We put our preparations in a saucepan and put a load on top of them. The chicken should marinate and release its juices. This will take about 3-4 hours;
  4. After this time, place each slice on paper towels to remove excess moisture;
  5. Then we string the pieces onto a thread or wire (you can also use a skewer) and hang them in a dark, cool place (for example, under a table). Remember to ensure that no flies or other insects land on the meat;
  6. After three days, check the workpieces. They should become dry, but at the same time not completely hard;
  7. The meat can be served with a little lemon juice and garnished with herbs and Parmesan.

Potato tartlets

Unsweetened tartlets are great outdoor snacks. Be sure to include them in the menu when you are thinking about what to cook for a picnic.

Ingredients:

  • 7 potatoes
  • 600 g chicken fillet
  • 150 g mayonnaise
  • 2 cloves garlic
  • 150 g hard cheese
  • Greenery
  • Salt pepper
  • Sunflower oil

How to cook:

  1. Cut the chicken fillet into small cubes, add salt and simmer with mayonnaise for about 30 minutes. Add garlic to the finished filling.
  2. Grate the potatoes and add salt.
  3. Grease muffin tins with sunflower oil and place grated potatoes in the shape of baskets. Place the filling in the middle.
  4. Bake in the oven for 20-25 minutes at 240 degrees.
  5. Grate the cheese and mix with finely chopped herbs.
  6. Remove from the oven and sprinkle with cheese and herbs.

Snacks puff sandwiches

Ingredients:

  • pack of yeast-free puff pastry
  • 3 tomatoes
  • white of 1 egg
  • 5 pieces of cheese
  • 3 tbsp. l. olive oil
  • spices, dry garlic, pepper - to taste

Preparation:

  1. Roll out the dough on a floured surface into a rectangle no more than 1 centimeter thick. Cut into portioned rectangles.
    Cut the tomatoes into thin slices. Each piece of cheese is divided into several small parts.
  2. Place cheese on a rectangle of dough and tomatoes on top.
    Mix oil, spices, garlic, pepper and protein. Grease the surface of the resulting sandwich.
    Place the sandwiches on a baking sheet lined with parchment.
  3. Preheat the oven to 180 degrees and bake them for about 7 minutes until the tomatoes are golden brown and soft. Sprinkle with your favorite dry spices.

Crispy snack sandwich

Ingredients:

  • 4 slices of black bread with bran;
  • 4 slices of bacon;
  • Medium tomato;
  • Egg;
  • 4 lettuce leaves;
  • Butter – 15 gr.;
  • A little mayonnaise (homemade);
  • A pinch of freshly ground pepper.

Preparation:

  1. Boil the chicken egg so that the yolk remains slightly soft. The approximate cooking time is one minute longer than soft-boiled. Cut into rings.
  2. In a dry frying pan, without adding oil, dry the slices of bread on both sides and while they are hot, spread them with butter.
  3. Fry the bacon until golden and crispy.
  4. Cut the tomato into thin rings.
  5. Peel the egg and cut into rings.
  6. Place lettuce leaves, 2 pieces of fried bacon on greased bread, add eggs and tomatoes.
  7. Season with salt if necessary, and sprinkle with freshly ground black pepper for a spicy kick.
  8. Apply mayonnaise on top, cover with a lettuce leaf and the other half of fried bread.

Quick and tasty snack

Ingredients:

  • 4 slices of whole grain black bread;
  • 2 shallots;
  • 5 - 6 medium-sized champignons;
  • 50 gr. hard cheese;
  • 75 ml. white table wine;
  • A little vegetable oil;
  • Butter – teaspoon;
  • 2 sprigs of parsley;
  • Lettuce leaves – 4 pcs.;
  • A little salt and pepper.

Preparation:

  1. Melt the butter with the addition of olive oil in a saucepan.
  2. Cut the onion into thin half rings and simmer over low heat.
  3. Cut the mushrooms into thin rings. Add to the onion, season with salt and spices.
  4. Grate hard cheese on a coarse grater.
  5. Add table wine to the mushrooms and simmer for 5-7 minutes until tender.
  6. Chop the parsley and add to the saucepan.
  7. A minute before the end of cooking, add cheese to the mushrooms and stir the mixture well until it melts. When the cheese cools, it will “glue” the mushroom mass, and it will not crumble when eating the sandwich.
  8. Fry the pieces of bread in a frying pan with a small amount, spread with butter or delicate mustard and cover with lettuce leaves.
  9. Spread the mushroom filling and cover the sandwich with a second piece of bread. Press the slices well together and put them in a special sandwich bag.

Quick crab appetizer

Ingredients:

  • Crab sticks - 250 g
  • Processed cheese - 100 g
  • Egg - 1 pc.
  • Dill (small bunch) - 5 g
  • Garlic (to taste) - 2 cloves
  • Mayonnaise - 20 g

Cooking method:

  1. Remove the processed cheese from the package and grate it on a coarse grater. When buying cheese, choose dense varieties so that you can easily grate it. If you choose a softer type of processed cheese, then remember it with a fork.
  2. Wash the dill and finely chop it with a sharp knife. According to taste and preference, you can replace dill with cilantro or basil, then the appetizer will still have a fragrant aroma
  3. Boil the egg until stiff, then place it in cold water for 10-15 minutes to make it easier to peel the shell. Then grate it on a coarse grater as well.
  4. Peel the garlic, wash under running water and squeeze using a press. Adjust the amount of garlic yourself. If you like dishes heavily seasoned with garlic, then you don’t have to regret it. If, on the contrary, you avoid this herb, then add one clove so that it gives the snack a light taste and aroma.
  5. Place all the ingredients for the filling in one plate and pour in the mayonnaise. Using a fork, mix the filling well.
  6. Remove the crab sticks from the packaging and defrost well. Then press down first one side, then the other, with your fingers to see their layered structure. Find the last fold on the outside of the stick, from which you begin to carefully unfold it so as not to tear it anywhere.
  7. Apply the filling to the stick in an even thin layer. Fold the crab stick in the opposite direction. Before serving, cut the stick into small pieces, which are beautifully placed on a plate and decorated with greens.

Chips snack simple recipe

Ingredients:

  • Chips of the correct shape - 16 pcs.
  • Chicken fillet - 200 g
  • Eggs - 2 pcs.
  • Carrots - 1 pc.
  • Fresh dill - 2 sprigs
  • Mayonnaise - 3 tbsp. l.
  • Garlic - 1 clove
  • Universal seasoning - 1 tsp.
  • Mustard - 0.5 tsp.
  • Salt - 2 pinches
  • Allspice - 3 peas
  • Olives - 5 pcs.
  • Lettuce leaves - 1 bunch
  • Fresh dill - 1 sprig

Cooking method:

  1. I cut the breast and separated the meat from the bone. I took half of the fillet (200 g) and put it in boiling water. Read more:
  2. Reduced the heat to low and simmered with allspice peas for about 25 minutes.
  3. Cool the boiled chicken fillet and disassemble it into fibers.
  4. I put the prepared meat into a blender and chopped it.
  5. I added boiled carrots to the chicken.
  6. I also put the boiled eggs in the blender.
  7. I washed the dill, dried it, and cut it randomly. Added it to the blender.
  8. Next, I put the garlic, cut into several pieces, into the blender.
  9. Now it’s time for the dressing and spices. Added mayonnaise
  10. Its quantity can be increased by 1.5-2 times if desired.
  11. Added salt and universal seasoning
  12. If you use hot seasoning, its amount should be significantly reduced. My spice blend has a fairly mild flavor.
  13. Mixed all ingredients in a blender
  14. You can choose any consistency. I didn’t try to achieve a completely pasty mass.
  15. I put the filling on the chips - the snack on chips with chicken is ready
  16. If possible, you can fold the chips in two pieces and only then apply the chicken mixture
  17. Decorated with olive rings and dill, and complemented with lettuce leaves
  18. Serve immediately before the chips become soggy and lose their crispiness.
