Leafing through cookbooks with a variety of appetizers for a festive or everyday table, housewives often opt for cabbage pies. It is not always clear from the photo what kind of base was used for baking, but the result depends on it. There are several base options for cabbage pies.:

  1. Yeast. Preparing the base with yeast takes more time than without yeast, but the baked goods turn out airy, porous, and tender. The ability of the dough to absorb excess oil in which the cabbage filling was fried provides additional fluffiness to the baked goods.
  2. Sandy. A pie made from this type of base turns out dense, satisfying, and covered with a crispy crust. If you add more flour than necessary during kneading, the baked goods will be dry and hard. It is advisable to ensure that the mass remains soft and rolls out well.
  3. Layered. Pies made from such a base (it doesn’t matter whether it was mixed with butter or margarine) come out high in calories, although very tasty and fluffy. The dough is capricious; if you do not follow the cooking technology, it may separate in the oven and the cake will not bake evenly.

A few tricks can help make this simple cabbage pie dough even more delicious. It is prepared in the classic way: kneading is done with butter, after which it is cooled for several minutes. An excess of flour does not benefit the sand base; it becomes tasteless and dry., therefore, when kneading, you can add a spoonful of sunflower oil, water or sour cream. Some housewives use baking powder as a base, but this is not necessary. It is better to roll out the baking mass not too thin, placing it between sheets of parchment paper.

Ingredients:

  • premium wheat flour – 270 g;
  • sweet cream butter – 200 g;
  • eggs – 2 pcs.;
  • salt - to taste;
  • vegetable oil – 1 tbsp. l.

Cooking method:

  1. Grind the pre-cooled butter (you can remove it from the freezer after keeping it there for half an hour) with a knife until crumbly, the more homogeneous the better.
  2. Separately mix one whole egg, the yolk of the second egg, and salt.
  3. Mix the butter with the sifted flour in a wide bowl, make a hole inside the mixture, pour in the eggs and salt. Start kneading the mixture with a spoon, starting to do this along the edge of the hole in a circular motion.
  4. Continue kneading the mixture with your hands until smooth. If it seems a little dry, add a tablespoon of vegetable oil and knead. Form a ball of dough and place it in the refrigerator for 10 minutes.
  5. Bake for 25 minutes, preheating the oven to 200°C.

The secret to making a successful puff base is ice water, which helps achieve the desired consistency. When kneading slowly, the composition heats up from contact with your hands, losing its elasticity, so kneading should be done very quickly, preferably in a blender bowl. Ingredients:

  • premium wheat flour – 4 cups;
  • water – 250 ml;
  • sweet cream butter – 300 g;
  • salt – ½ tsp;
  • lemon juice – 1 tsp.

  1. After keeping the butter in the freezer, chop it with a knife, add to the pre-sifted flour, and mix.
  2. Add salt and lemon juice to maximally cooled (almost ice-cold) water.
  3. Gradually pour lemon water into the oil mixture and mix the mixture with a spoon (you can use a blender).
  4. Place the finished mixture in the refrigerator for 30 minutes.
  5. Baking is prepared for half an hour in an oven preheated to 200°C.
