For the cream we take:
2-3 egg yolks
15 g cocoa powder
100 ml milk
1/2 tsp. tapioca starch or cornstarch
Sweetener to taste (5 drops vanilla stevia and 1 tbsp. Erythritol
250g soft tofu (or cream cheese)
1-3 tbsp. vanilla casein or oat or coconut flour (optional for the frosting you will use to decorate the cake, to thicken the cream and make it pliable)

Preparation:
Grind the bran in a coffee grinder to flour. Nuts (if not fried, dry them in the oven at 200 degrees for 10 minutes. Chop the nuts a little. Pour them into a bowl, add starch and bran, mix everything.

Prepare 1 cake. Take 4 whites, add cream of tartar on the tip of a knife, so the whites are fixed a little or citric acid. When the whites turn white, gradually add the sweetener. Beat until strong peaks form. Now carefully mix the whites with 12 nut mixtures.

We do the same with the rest of the proteins and prepare the second cake layer. It’s better when there are two forms, then the process will be faster, but if there are no two forms, prepare the cakes one at a time.

We bake each cake in the oven at 150 C for 20 minutes, then reduce the temperature to 120 C and bake for another 30 minutes, reduce to 90 C and bake for another half an hour.

While the cakes are preparing, prepare the cream:

Pour milk into a saucepan and bring to a boil, but do not boil
- Beat 2-3 yolks with a mixer.
Add starch and sweetener to the yolks
Gradually pour hot milk into the yolks, continuing to beat. You can use the remaining yolks in cooking

Place the cream on the stove and brew it until it thickens. Let the cream cool slightly in the freezer.

Add tofu (cheese) to the cooled cream and beat everything thoroughly with a blender.

Divide the cream into 2 parts, leave one part white, if the cream turns out a little runny, you can add a couple of tablespoons of casein or skim milk powder or oatmeal (coconut) flour to it, so it will become a little thicker.

Add cocoa powder to the rest of the cream.

Cool the cakes and remove them from the mold. You can prepare the cakes the day before and dry them well overnight.

Place one cake layer with the smooth side down, coat it with white cream, place the second cake layer on top with the smooth side up, coat the sides and top of the cake with chocolate cream, and smooth the top with a spatula.

We combine the remaining white and chocolate cream and decorate our cake with a culinary syringe. We adjust the thickness with casein (oatmeal or coconut flour) to make the cream more pliable for decoration.

Yogurt diet mousse cake

This cake is perfect for any occasion, as it is elegant, light and very tasty. For decoration you will need pieces of peach, kiwi or blueberries.

Compound:

  • 200 g low-fat cottage cheese;
  • 2 medium eggs;
  • 1 tbsp. l. sugar as desired;
  • 30 g gelatin;
  • 1 liter of low-fat fruit yogurt;
  • a pinch of vanillin.

Preparing the cake:

  1. Mix cottage cheese, egg and sugar and beat with a whisk until thick.
  2. Pour the resulting base into the mold and place in the oven for 30 minutes. Bake at 180 degrees.
  3. Prepare gelatin by pouring a glass of hot water over it. Let stand for 15 minutes, stirring occasionally.
  4. Pour the gelatin into an iron bowl and boil over low heat to dissolve. Cool.
  5. Mix yogurt, gelatin and vanillin.
  6. Add the resulting filling to the curd base and place the cake in the refrigerator for several hours to harden.
  7. Decorate the finished cake with pieces of fruit or berries.

How to cook without baking

This no-bake cake is very quick and easy to prepare. It is better to use soft cookies as a biscuit.

Ingredients:

  • 80 g flour;
  • 2 yolks;
  • 4 tsp. cocoa;
  • 40 ml low-fat milk;
  • 2 peaches;
  • 400 g cookies.

Preparation:

  1. Separate the yolks and whites.
  2. Combine the yolks with cocoa and mix well.
  3. Add flour and hot milk.
  4. Place the resulting mass on low heat and stir until thickened. Cool.
  5. Place cookies in a mold with sides and cover with cream. Place fruit pieces and add another layer of cookies. Repeat the required number of times.
  6. The top of the cake can be decorated with other fruits or nuts as desired.

Low carb raspberry cheesecake

To prepare this delicacy, you will need a minimum of ingredients.

For decoration, you can take not only raspberries, but also other berries and fruits, for example, lime - you get a very fresh solution.

Cheesecake ingredients:

  • 400 g low-fat cottage cheese;
  • 200 g curd cheese;
  • 1 glass of milk;
  • 40 g gelatin;

  • 300 ml low-fat milk;
  • sugar substitute to taste;
  • 10 drops of lemon juice.

For the glaze:

  • 20 g dark chocolate (85% cocoa);
  • 100 ml yogurt;
  • 150 ml low-fat milk;
  • 1 yolk;
  • 2 tsp. cocoa;
  • vanilla to taste.

Let's prepare it like this:

  1. Separate the whites and yolks. Beat the whites until foamy and combine with the beaten yolks.
  2. Add starch, milk, baking powder and sugar substitute. Mix.
  3. Bake the biscuit in an oven preheated to 190 degrees for about 10 minutes.
  4. Mix the products for the glaze: melt the chocolate in a water bath, add the remaining ingredients. Bring to a boil and cool.
  5. Beat the whites for the soufflé.
  6. Prepare gelatin by dissolving and heating it.
  7. Add gelatin, lemon juice, milk and sugar substitute to the whites.
  8. Pour the resulting mixture over the biscuit. It should lie in a deep form.
  9. Cover the cake with frosting and refrigerate for 2 to 4 hours until completely hardened.

With chocolate and strawberries

Dietary chocolate-strawberry cake has a great taste and bright appearance. It can decorate any table and lift the mood of you and your guests.

Ingredients:

  • 300 g low-fat cottage cheese;
  • 150 ml milk;
  • 10 g gelatin;
  • 30 g cocoa;
  • 30 g dark chocolate;

Preparation:

  1. Pour a glass of hot water over the gelatin and leave for 20 minutes. Then heat over low heat, adding milk.

  • Gelatin – 30 g;
  • Sugar – 4 tablespoons;
  • Cocoa powder – 4 tablespoons;
  • Milk – 1 glass;
  • Sour cream – 400 g;
  • Mascarpone – 250 g;
  • Low-fat cream – 150 g;
  • Sugar – 1 glass.

Soak 10 g of gelatin and let it brew. Mix 4 tablespoons of sugar and cocoa. As soon as the gelatin swells, add the dry mixture to it and heat it to dissolve the gelatin. Grease the mold with oil and fill with heated gelatin. Leave in the freezer for half an hour.
Pour the rest of the gelatin with milk and leave.
Beat sour cream, mascarpone, cream and sugar until smooth. Heat the gelatin, mix it with the milk mass and mix thoroughly. Let the resulting mixture cool and add it to the already frozen dark part. Leave to freeze overnight in the refrigerator. In the morning we enjoy bird's milk.

Recipe 3. Yogurt cake

For a yogurt cake we can’t do without:

  • Cream 35% - 200ml;
  • Yogurt – 500 ml;
  • Cookies – 100g;
  • Gelatin - 2 tablespoons.

Dilute gelatin according to instructions. Whip the cream, add yogurt and warmed gelatin. Pour the mixture into the mold and cover with cookie pieces. Leave in the freezer for 20 minutes. For the top layer you need to dilute 1 tsp. gelatin with berries and fruits to taste. Pour the already frozen mixture into the mold and put it in the freezer for another 5 minutes.

Recipe 4. Broken Glass Cake

To prepare the dessert you need the following ingredients:

  • Cottage cheese – 200 g;
  • Liquid yoghurt – 250 ml;
  • Gelatin – 25 g;
  • Multi-colored jelly – 3 packs;
  • Sugar – 2 tablespoons.

The first step is to prepare the jelly, following the instructions on the package.
Next, beat the cottage cheese and yogurt in a blender, dissolve the gelatin and add to the milk mass. Cover a mold or saucepan with cling film, pour colored jelly cubes into it and fill with thoroughly mixed ingredients. At the final stage, you need to leave the dessert in the refrigerator for a couple of hours.

Recipe 5. “Pancho”


Place 1 cake on the dish on which you plan to serve the dessert, break the remaining 2 into pieces of arbitrary shape and size into a separate container. Beat powdered sugar, sour cream and condensed milk until smooth. Separate 3 tablespoons of cream. Grind the nuts, but not to powder, cut the pineapple.

  • Cinnamon – 1 teaspoon;
  • Heavy cream – 250 g;
  • Liqueur – 200 ml;
  • Chocolate – 100 g;
  • Cocoa powder – 1 tablespoon.

Place the cookies in a bag and crush them using a rolling pin. Dissolve gelatin according to package instructions. Melt the butter and thoroughly grind the cookies in it until smooth. Line the dessert mold with baking paper and pour the mixture of cookies and butter evenly. Leave in the refrigerator for half an hour.
Mix cottage cheese, cream cheese, liqueur, honey and cinnamon with heated gelatin until smooth and place in the refrigerator.
Whip the cream thoroughly and mix with the slightly frozen curd mass. Next, you need to spread the cream evenly onto the cookie crust and let it harden in the refrigerator for several hours. Decorate the dessert with cocoa powder and chocolate.

Recipe 8. Curd cake

For a curd masterpiece you will need:

  • Mascarpone – 200 g;
  • Sweet curd mass – 200 g;
  • Milk – 250 ml;
  • Gelatin;
  • Cocoa powder;
  • Cherries;
  • Chocolate;
  • Shortbread.

Beat mascarpone and milk, gradually adding curd mass with cherries. Dilute gelatin in 50 g of milk and heat it on fire, then add it to the curd mass.
Place half of the mixture into a mold. Dip the cookies in sweet cocoa and place them on the thin edges in the cream. Then carefully add the rest of the cream and put it in the refrigerator. You can decorate the cake with grated chocolate and cherries.
