Brushwood recipe with condensed milk. Recipe for brushwood from condensed milk – Brushwood with milk – delicious crunches! Recipes and secrets for preparing thin and fluffy brushwood with milk – Women’s opinion

Over the years, cooks have come up with a variety of baked goods for tea. Among all this tasty variety, you can remember brushwood. There are various variations in the preparation of brushwood, and recipes have been created with different additives. Typically, brushwood is made in the form of curls, which are fried in oil.

Brushwood can be prepared using different products. So, if you cook brushwood with ordinary water, then the baking will be tighter. If the brushwood is made with sour cream or kefir, then it will be airy and tender. If you want a more crunchy and crumbly version, then cook brushwood with the addition of vodka. Lovers of crispy, but at the same time softer brushwood, should use the recipe for making brushwood with milk.

One of the most popular options for preparing brushwood is baking with condensed milk. This product will add sweetness, pleasant aroma and unique taste to baked goods.

Brushwood with condensed milk

Product composition:

  • three chicken eggs;
  • 430 g condensed milk;
  • a tablespoon of vodka;
  • half a liter of vegetable oil;
  • 400 g flour;
  • powdered sugar.

Preparation progress:

  1. First you need to beat the eggs until foam appears. Add condensed milk to it, pour a tablespoon of vodka. Vodka can be replaced with brandy in this recipe. Shake the mixture very well until it becomes completely homogeneous. Add wheat flour to the prepared mixture, which we first sift through a sieve. Then knead the dough with your hands.
  2. Place the finished dough on the table and roll it out as thinly as possible with a heavy rolling pin. The optimal thickness is the thickness of the dough equal to the thickness of the knife blade. It is from dough of this thickness that you can prepare the most delicious and crispy brushwood.
  3. Divide the dough into strips, then cut each one in the middle. One half of the strip of dough must be inserted into the hole so that the result is classic loops made of brushwood. At this time, boil the oil in a saucepan or very deep frying pan.
  4. Place the prepared brushwood in a pan and fry in it for literally one minute (even a little less). It is imperative to ensure that the brushwood does not burn and stick to the bottom of the container. The finished brushwood should be carefully placed on a paper towel, where excess vegetable oil will drain from the sweets.

To serve, place the brushwood in a beautiful dish and sprinkle powdered sugar on top.

As usual, you can cook in a frying pan, in the oven or in a slow cooker. Choose your option and make your loved ones happy!

3. Then take an assistant, this is of course a rolling pin, and use it to roll out the dough.

Important! Try to roll it out very thinly, about 0.2-03 mm, the thinner it is, the tastier and crunchier it will be.

4. How to make brushwood from dough and how to cut it? There are many ways to cut it, cut it into long strips, and make a cut in the center, a hole and wrap the ends into the center. This is how it is shown in this figure:

You can make it triangular in shape, and frame the edges beautifully with a special openwork roller.

If you have a lot of time, then you can create such beautiful openwork flowers or curls. In the picture you see how detailed all the actions are shown, I hope this drawing will help you surprise your guests when you create) :)

Brushwood, thin, crispy according to GOST, recipe

I think it’s hard to refuse such a delicacy, especially if it’s the GOST version that everyone loves so much. The most delicious and easiest way to prepare it, and of course, if you also make it funny, for example in the form of flowers, roses or chanterelle mushrooms, this will make it even more tempting to snatch it. 😆

Come up with your own original way of sculpting))) and share your idea in the comments.

Interesting! Did you know that brushwood is also called verguns or crunches. What do you call it?

We will need:

  • egg - 1 pc.
  • milk - 50 ml
  • sour cream - 1 tbsp
  • granulated sugar - 2 tbsp
  • vodka, cognac or brandy - 20 ml
  • flour - 200 g
  • powdered sugar

Cooking method:

1. Mix milk, egg, sour cream, cognac and sugar in a bowl. Then add flour and knead into an elastic dough.

Important! Instead of milk, you can add whey; brushwood with whey and vodka turns out quite tasty.

2. Cover the dough with a lid and rest for 30 minutes.

3. Form twigs of any shape, remember the thinner, the tastier and louder the crunch will be.

4. Fry in a frying pan with vegetable oil until brown on both sides. The pan should be very hot.

The most common version of crunches is ready! Drink tea and enjoy life!

Brushwood on kefir, lush

This version of this ordinary pastry always turns out soft and tender, as it uses kefir. But this is not the most important thing, it turns out very light and airy. Although it does not use yeast at all and is prepared without vodka.

We will need:

  • kefir - 1 tbsp.
  • sugar - 3 tbsp
  • flour - 2-3 tbsp.
  • egg - 1 pc.
  • soda - 1 tsp

Cooking method:

1. Start by extinguishing the soda first. This is done very simply. Quench it by adding kefir, since it is sour, soda will be quenched well without any problems and there will be no aftertaste. Then add sugar to kefir.

Important! Instead of kefir, you can take sour milk.

2. Add one egg, mix. Add flour. Now the dough is ready.

3. The next step is to let it rest aside for 20-30 minutes.

Important! Don't forget to cover the dough with either a towel or cling film to prevent it from drying out.

4. Roll out the layers very thin, cut into diamonds, make a cut in the center of each, and then turn the creation out.

5. Fry in a hot frying pan with vegetable oil until a beautiful golden brown crust forms.

6. Serve with tea or compote. If you want the brushwood to be sweeter, sprinkle it with powdered sugar or jam.

Brushwood with cottage cheese

Curd brushwood, what could be tastier? Do you like cottage cheese?, then use it in these delicious baked goods.

We will need:

  • cottage cheese - 1 pack
  • egg - 2 pcs.
  • sugar - 5 tbsp
  • kefir - 4 tbsp
  • soda - 1 tsp
  • vegetable oil - 3 tbsp
  • flour

Cooking method:

1. Place kefir and soda in a clean bowl. Let the soda extinguish and snort. Then add sugar, vegetable oil, cottage cheese and break the eggs. Mix everything, add flour and form a ball like this.

2. Next, pinch off a little bit from the ball and roll it into a sausage, cut it into pieces, roll each part into a rectangle, and form crunches of any shape. Fry them in vegetable oil in a hot frying pan on both sides. Fried in oil, sprinkle with powdered sugar.

Have a wonderful tea party, dear guests and blog subscribers!

Lush brushwood on sour cream

We will need:

  • sour cream - 100 g
  • egg - 1 pc.
  • sugar - 50 g
  • vanillin to taste
  • flour - 250 g
  • vegetable oil for frying - 250 ml

Cooking method:

1. Take a bowl and break an egg, you can use only the yolk. Remember, if you use the yolk without the white, this type of cookie will turn out browner in color. Add sour cream and sugar. Mix well, sprinkle with vanilla if desired, add flour. Knead the dough until it has no lumps.

Important! It is best to sift the flour through a sieve in advance so that it is saturated with oxygen.

2. The consistency of the dough will be very tight.

3. Place it in the refrigerator to rest in a bowl with a lid for 30 minutes. Then roll out into a large cake, the thinner the better. How to make brushwood crispy? You need to roll it out very thin. Then cut into rectangular or diamond shapes. Make a cut in the center of each diamond with a knife.

4. Make such beautiful curls, drag one edge of the diamond into the center. Heat a frying pan or saucepan with vegetable oil, and then fry the brushwood until a beautiful, appetizing crust. Then remove excess fat using paper towels, i.e. after frying, place the goodies on them. Sprinkle with powdered sugar or pour over condensed milk. Please come to the table!

By the way, what do you think tastes better with sour cream or milk? I like it better with sour cream. 🙂

Crispy brushwood with vodka

A very tasty proven option, although oddly enough it is made with vodka, without milk, in literally 15-20 minutes and the delicacy is ready! Especially when guests are on the doorstep, is this situation familiar?

Interesting! I’ll tell you a secret: baked goods always taste better and turn out better if they are cooked at the right temperature.

We will need:

  • egg - 1 pc.
  • vodka – 15 ml
  • flour - 1 tbsp.
  • salt - a pinch
  • powdered sugar - 2 tbsp for sprinkling the crunches
  • vegetable oil - 150 ml for frying

Cooking method:

1. Beat the egg and salt with a fork or whisk, add vodka and flour. Make this dough.

2. Then divide it into 2 parts and roll it into large thin circles. Form crunches of any shape.

3. Fry as usual in a hot frying pan with vegetable oil, oh yes, don’t put too much in the frying pan, as they will increase in size well. They are made lush and airy.

After all the work, sprinkle powdered sugar on top. Or you can sprinkle it with cinnamon for a change. Yummy!!!

If you love all sorts of sweets and aromatic pastries, then you might be interested in this note:

Brushwood from batter on water with molds

I remember this type of brushwood from childhood, like from my grandmother. This is its super tasty USSR-Rovsky version, which our grandmothers loved to cook, and the most economical type. Although of course a lot of oil is used, I would not call it very economical 🙂, perhaps a low-budget option. These cookies are not for the lazy; you need to spend a lot of time.

And what a beauty it turns out to be simply lovely, the main thing in our time is to find such molds, but if they don’t exist, then you can buy them, as I did recently, or cook them without molds, but of course, using another recipe that is not a liquid dough as a basis.

We will need:

  • egg - 2 pcs.
  • water or milk - 1 tbsp.
  • sugar - 0.5 tbsp.
  • salt on the tip of a knife
  • vodka - 1 shot glass
  • flour - 1 tbsp.
  • frying oil

Cooking method:

1. Whisk the egg, sugar and salt until slightly foamy. Add milk and water to the eggs. Stir, then add vodka.

2. Why do you think vodka is needed here? In order for the crunches to take in less fat. Gradually add flour to the ingredients, mix well so that there are no obstacles, the dough should turn out liquid like sour cream.

3. Let it rest aside for 20 minutes with the lid closed. Now take a special figurative stick with a shape and place it in a heated frying pan with vegetable oil. Keep in the oil for 1 minute, and then dip the stick in the dough so that the dough sticks halfway to the pan.

Important! The frying pan with oil should be hot, but the oil should not boil in it.

And now fry until cooked, that is, until it has a beautiful color. Don't worry, it will fall out of shape on its own.

Openwork, figured, lace cookies are ready! Oh, how great this looks. And with condensed milk or jam it will disappear in a matter of minutes.

Interesting! Have you ever heard about pink or salted brushwood? Today I found this little article in which I learned that if you make it without sugar, but only with salt, you can easily get homemade chips. Salt can be added to the oil for frying. To make these pastries pink, you need to add beet juice or raspberry juice to the dough.

Puff pastry brushwood in the oven

This option is the simplest, because the dough will be used store-bought, ready-made, so very little time will be spent preparing such a miracle. So, I suggest you look at this option:

Brushwood in a slow cooker

Of course, you can prepare this delicacy as a miracle assistant. To do this, take any version of the dough for brushwood and bake it, fry it in a multicooker bowl.

It's a pleasure to fry in it, because all the bowls are very deep. Pour in vegetable oil, heat the oil well on the “Frying” mode, and place the prepared crunches there. Easy and fast, and even without splashing at all.

Tatar brushwood

Well, in conclusion, I would like to show you a recipe for Tatar brushwood, or as they also call “Urama” or “Kosh tele” - oriental sweet roses. This version will not use powdered sugar, but instead will use a sweet coating of sugar.

We will need:

Dough:

  • egg - 6 pcs.
  • sugar - 2 tbsp
  • flour - enough to make an elastic dough, like dumplings
  • water or milk - 4 tbsp
  • soda - 0.5 tsp
  • vegetable oil

Sugar syrup:

  • sugar - 1 kg
  • water - 500-700 ml

Cooking method:

1. Mix all the ingredients for the dough and knead the dough. If desired, soda can be quenched in vinegar.

2. After kneading, let the dough rest for about thirty minutes, covering it with a towel.

You can take chopsticks to eat the roll.

4. Take a deep saucepan, add vegetable oil and heat it up high. Place these beautiful flowers in the deep fryer.

Important! When the syrup boils, do not forget to remove the foam.

Homemade sweet brushwood, just like when you were a child! Bon appetit!

You can use regular honey instead of sugar syrup. Just pour it over these baked goods.

P.S.By the way, you can cook Brushwood made from sour yeast dough. Here's a step-by-step video of this recipe:

That's all for me. Bye-bye everyone! See you tomorrow on this blog!

8 recipes for making crispy brushwood

Crispy sweet brushwood is a dessert from childhood. This dish turns out to be budget-friendly, but at the same time incredibly tasty. The best brushwood recipes are collected below.

Classic crispy brushwood

Ingredients: 760 g flour, 3 eggs, a full glass of filtered water, a pinch of table salt, powdered sugar, refined oil in large quantities for frying.

  1. Eggs are poured into a cup, table salt is added, and the ingredients are beaten until the salted grains are completely dissolved.
  2. Next, water is poured in and everything is mixed until smooth.
  3. The flour is first sifted a couple of times and poured into the resulting mixture.
  4. The finished dough is kept cool under a towel for 20-25 minutes.
  5. The mass is rolled out thinly, cut into rectangles, and a cut is made in the middle of each. Through this hole, one edge of the workpiece is turned outward.
  6. Pieces of dough are placed in hot oil and cooked until golden brown.
  7. The resulting treat is sprinkled with powder.

This recipe for crispy brushwood is one of the simplest and most common.

Sweet treat made with kefir

Ingredients: half a kilo of high-grade flour, 3 eggs, 120 ml of kefir, a pinch of salt, a large spoon of sour cream, powdered sugar, refined oil.

This is interesting: a recipe for brushwood with kefir

  1. Raw eggs with fine salt are actively stirred until the salted grains are completely dissolved.
  2. Only after this is not cold kefir poured into the mass. The products are mixed until smooth.
  3. Add sour cream to the other ingredients.
  4. Next, sifted high-grade flour is poured.
  5. After the next mixing, the dough is put in a cool place for 20 minutes.
  6. All that remains is to roll it out, cut it into rectangles, turn it out through the hole in the middle of the workpiece and cook in boiling oil until golden brown.

To prevent the kefir-based brushwood from turning out too greasy, the finished delicacy must be laid out on a paper napkin. While still hot, it is generously sprinkled with powder.

Dough made from milk

Ingredients: half a kilo of high-grade flour, 3 eggs, powdered sugar, half a teaspoon of salt, 3 large spoons of full-fat milk, butter.

  1. Immediately pour raw eggs into a bowl for kneading the dough, add table salt, and add milk. It is desirable that all components used are at the same temperature.
  2. The products are rubbed with a spoon until the salt is completely dissolved. The most convenient way to check this is by holding a drop of the mass between your fingers.
  3. The flour is pre-sifted a couple of times from a high distance. This will maximally enrich the product with oxygen. If you don’t have a sieve at hand, you can even use a regular colander with small holes for this purpose.
  4. The prepared flour is poured into the mass obtained in the second step. An elastic and slightly sticky dough is kneaded.
  5. A ball is formed from the base with your hands, which is placed in a cool place in cling film for about an hour.
  6. The fully prepared dough is cut into several parts. Each of them is rolled out very thinly. Experienced housewives note that the dough should be no thicker than tissue paper.
  7. The dough layers are cut into diamond shapes. A cut is made inside each, into which one edge of the workpiece is inserted and turned outward.
  8. The oil is heated well in a deep frying pan, and the future brushwood is immersed in it. The delicacy is fried until golden brown.

Recipe for cooking with sour cream

Ingredients: 3 tbsp. wheat flour, 2 large eggs, 4 tbsp. spoons of granulated sugar, 220 ml of medium fat sour cream, powdered sugar, 1.5 teaspoons of baking soda, butter. How to prepare brushwood based on sour cream is described below.

  1. Raw eggs are poured into a bowl and beaten with granulated sugar.
  2. Immediately add baking soda and sour cream to the mixture. These two products in combination will give the dough fluffiness.
  3. Flour should be added to the dough slowly in small portions. It is necessary to monitor the consistency of the mass, since different types of product differ greatly from each other. First of all, flour comes in different moisture contents, which must be taken into account.
  4. A non-sticky but soft dough is kneaded. It immediately rolls out a layer with a thickness of 3-4 mm.
  5. The dough is cut into rectangles with a size in the middle. One side of each workpiece is turned inside out through the resulting cutout.
  6. The finished “bows” are fried in well-heated oil on both sides.

While still warm, the delicacy is sprinkled with powdered sugar.

Lenten brushwood on water

Ingredients: 320 g high-grade flour, 2 tbsp. spoons of granulated sugar, a full glass of refined butter, half a glass of mineral water, a pinch of lemon zest, ¼ teaspoon of baking powder.

  1. Granulated sugar rubs well with cold butter.
  2. Fine flour along with baking powder is sifted into a separate bowl. Carbonated mineral water is poured into the resulting granular mass immediately after opening the water bottle.
  3. The mixtures from the first two steps are combined. Knead the dough well.
  4. The mass can be immediately rolled out on a surface without flour coating. It won't stick to the table anyway.
  5. The dough is cut into rectangles with holes in the middle, through which you need to turn out one edge of each piece.
  6. The treat is fried in a large amount of oil.

The resulting thin brushwood is generously sprinkled with powdered sugar.

With the addition of vodka

Ingredients: 2 large chicken eggs, a pinch of table salt, 40 ml of vodka without additives, half a kilo of flour, refined oil for frying, powdered sugar.

  1. First, eggs are broken into a cup. A small amount of salt is immediately added to them. Next, the ingredients are well beaten until they turn into a foamy mass.
  2. Vodka is poured onto the food. This alcoholic drink makes the dessert crispy and fragile.
  3. After mixing again, you can begin to gradually add flour. Not the entire amount of this product indicated in the recipe will be used. You need to add as much flour as the dough takes. As a result, it should turn out like dumplings. The rest of the flour will be needed for sprinkling.
  4. The mass is stored in a cool bag for about half an hour. Next, the base is divided into 4 servings.
  5. Each part is rolled out very thinly and cut into rectangular pieces with a hole in the middle. They turn out from one or two edges at once.

The brushwood is prepared in a large amount of oil. While still hot, it is sprinkled with powder.

Crispy brushwood "Rosochki"

Ingredients: 260 g high-grade flour, 180 ml filtered water, 45 ml vodka, 3 tbsp. spoons of granulated sugar, powder and butter.

  1. All dry ingredients, except powdered sugar, are combined in a deep container. The flour is pre-sifted a couple of times.
  2. Both water and an alcoholic drink are poured into the resulting mixture at once.
  3. A tight dough is kneaded. It needs to be rolled out into a thin layer, which is cut into long rectangular strips.
  4. Each piece of dough is rolled into a loose roll so that it looks like a rose.
  5. The resulting “flowers” are cooked in boiling oil until golden brown.

The “roses” are laid out on a paper towel to rid them of excess fat. While still hot, the dessert is generously sprinkled with powdered sugar.

How to make it with whey?

Ingredients: a full glass of whey, a large chicken egg, ½ teaspoon of baking soda, 420 g of high-grade flour, oil for frying and powdered sugar.

  1. Cold whey is poured into a deep, comfortable bowl. Baking soda is added to the liquid. The mixture is left for 3-4 minutes.
  2. A chicken egg is broken into a mass.
  3. Next, you can start adding sifted flour in small portions. After each addition, mix the ingredients with a wide spoon or spatula.
  4. The bowl should contain a thick dough that is soft and does not stick to your fingers. It is covered with a towel made of natural material and left for half an hour at room temperature.
  5. The dough for brushwood is rolled out into a thin layer on a table dusted with flour. The layer is cut into rectangles with holes in the middle. The workpieces are rotated to the center of the cut 1-3 times.
  6. Pieces of dough are fried in hot oil on both sides until golden brown.

The delicacy is laid out on parchment and generously sprinkled with powdered sugar.

P.S. By the way, you can cook Brushwood made from sour yeast dough. Here's a step-by-step video of this recipe:

That's all for me. Bye-bye everyone! See you tomorrow on this blog!

10 recipes with photos of the most delicious brushwood options

Fried crispy strips of dough sprinkled with powdered sugar – brushwood cookies, familiar to many, from childhood. The fashion for it subsided a little when inexpensive varieties of all kinds of sweets began to appear in abundance on store shelves.

However, now, in an era of concern for our health, when much attention is paid to what we eat, home-baked goods are returning to our tables.

This dish came to us from Greece and became popular everywhere towards the end of the 19th century. It is precisely because this delicacy is so thin and crunchy that it has earned its name - “brushwood”.

Crispy brushwood at home - step by step photo recipe

Brushwood is prepared from several types of dough. And every housewife has her own secret. But the main thing here remains the frying method and the method of serving the cookies.

Perhaps the most popular option is prepared with yolks. Some people recommend adding a spoonful of vodka or cognac to this dough.

Cooking time: 1 hour 0 minutes

Quantity: 6 servings

Ingredients

  • Yolks: 4 pcs.
  • Flour: 3 tbsp.
  • Soda:
  • Vinegar:

Cooking instructions

Sprinkle our baked goods with powdered sugar.

Classic thin brushwood

The brushwood according to the classic recipe turns out thin, crispy and amazingly tasty, while it is incredibly easy to prepare. Don’t be alarmed when you see vodka among the ingredients; alcohols completely evaporate at high temperatures, so even small children can consume cookies.

Alcohol will affect the structure of flour proteins, which is why, when frying, the surface of the “twigs” will bubble, and they themselves will become crispy rather than rubbery.

Required ingredients:

  • 2 eggs;
  • ½ tsp. table salt;
  • 0.23 kg flour;
  • 1 tbsp. vodka;
  • oil for frying.

Preparation procedure:

  1. For the dough, gradually mix all our ingredients. Beat the eggs with salt, then add vodka to them, gradually add flour. As a result, we get an elastic dough that slightly sticks to the palms.
  2. Wrap it in plastic and refrigerate for 40 minutes.
  3. For ease of rolling, we divide the dough into several parts, leave one of them, and return the rest to the bag. Otherwise it will dry out very quickly.
  4. Roll out the layer as thin as possible. The airiness of the future dish depends on how subtly you manage to complete this task.
  5. We cut the layer into strips, in the center of which we make a cut, and through it we turn out one of the edges of the workpiece. If you don’t want to mess around, then you can leave everything as is, the taste of the cookies will not change.
  6. After the pieces are cut, put the frying pan with oil on the fire. The twigs fry very quickly, so there is a risk that you simply won’t have time to put in and take out ready-made ones. We pour in such an amount of oil that our products drown in it. When the pieces fall into the boiling oil, they will begin to swell right before your eyes and take on all sorts of bizarre shapes.
  7. The finished brushwood should be placed on a paper napkin, towel or baking parchment, which will absorb excess fat.
  8. The dish is served generously sprinkled with powdered sugar.

Fluffy and soft with kefir - the perfect treat

The favorite cookie of Soviet children does not have to be exactly crispy; if you knead its dough with 300 ml of kefir and 3 cups of flour, we will get a whole mountain of fluffy and magically tasty pastries. You will also need:

  • 1 egg;
  • ¼ tsp salt;
  • vanilla packaging;
  • 3 tbsp. Sahara;
  • 3 tbsp. refined oil;
  • 1.5 tsp. soda

Cooking steps:

  1. We begin to beat the egg with salt and sugar.
  2. Pour cold kefir into a cup, add soda so that it begins to react.
  3. Pour kefir into the egg, add oil, stir again.
  4. Gradually add flour, stirring continuously. We get a soft, but slightly sticky dough to the palms. Cover it with plastic and let it brew for 30 minutes.
  5. Divide the dough into parts, roll out and cut into strips, cut each one with a cut in the center, and turn one of the edges through it.
  6. Fry in a large amount of oil, once ready, place on a napkin to remove excess fat.
  7. Sprinkle the still hot twigs with powder and hurry to put the kettle on the fire.

How to prepare the most delicious, thin and crispy brushwood with vodka?

Want the crispiest firewood? Then only 1 tbsp should be added to the dough. vodka. It will not give any taste or smell, but your favorite children's sweet will unforgettably crunch and melt in your mouth. In addition to alcohol, a glass of flour and powder for sprinkling, you will need:

  • 2 eggs;
  • 200-300 ml refined sunflower oil.

  1. Beat in the eggs and beat them with a fork along with the salt. There will be no sugar in this recipe; for deep-fried dishes this is only a plus.
  2. Add strong alcohol and mix again.
  3. Add flour in parts. The resulting dough should be quite elastic.
  4. We divide the resulting egg dough into parts, we try to roll each of them into the thinnest layer possible, try to achieve a thickness of 1.5 mm. To prevent the area from sticking to the work surface, sprinkle it with flour.
  5. We cut the rolled out dough into rectangles, the long side of which should not be more than 10 cm, otherwise it will be inconvenient to fry.
  6. Pour a glass of oil into the frying container, wait until it boils, and then put the brushwood blanks into it.
  7. You can remove it from the oil in 25-35 seconds.
  8. Let the excess fat drain onto paper towels, then sprinkle them with powder without skimping.

Recipe with milk

  • 2 eggs;
  • 80 g sugar;
  • dusting powder.

Preparation procedure:

  1. Beat eggs with sugar until the latter dissolves. Add the rest of the ingredients, add the flour last, in parts, and beat.

  6. We take out the finished brushwood with a slotted spoon and transfer it to a colander or paper napkin.

  • 2 eggs;
  • 100 g sugar;
  • 1.5 tsp. soda;
  • refined oil for frying;

Cooking steps:

  1. Beat eggs with sugar, add sour cream and soda, mix thoroughly.
  2. We introduce flour in parts; its quantity may not coincide with that specified in the recipe, because in many respects everything depends on the quality and moisture content of the product.
  3. The finished dough, for all its softness and airiness, should not stick to your palms.
  4. Roll out a thin layer of 3-4 mm, cut it into arbitrary rectangles or rhombuses. In each we make a through cut in the center and thread one of the edges into it.
  5. Heat the oil in a deep-bottomed frying pan.
  6. Fry the brushwood on both sides and remove with a slotted spoon. Don't move too far from the pan; the cookies will fry in no time.
  7. Let the excess oil escape by placing the baked goods on a paper towel. After this, without skimping, sprinkle everything with powdered sugar.

On mineral water

You may already be familiar with this version of brushwood, but its second name is honey baklava. It is quick and easy to prepare, and the crispy result will captivate your household. To knead the dough you will need the standard three cups of flour and 200 ml of mineral water, as well as:

  • 10 g sugar;
  • 60 ml of vodka or other strong alcohol;
  • 1 tbsp. sour cream.

Cooking steps:

  1. In the center of the flour slide we make a depression, pour sour cream, alcohol, mineral water, sugar and salt into it. Mix everything with a spoon.
  2. Knead until elastic, after sprinkling the table with flour.
  3. Cover the dough with plastic or a towel, let it sit for a while, then knead again.
  4. For ease of rolling, we divide it into several parts. We roll out each of them as thinly as possible, it is desirable that the thickness of the layer be approximately 1 mm.
  5. We roll the rolled out layer into a loose roll so that it does not stick together too much; you can first sprinkle it with a little flour.
  6. Cut the roll into pieces 2 cm thick.
  7. Pour up to 0.5 liters of refined oil into a frying pan, fry the pieces on both sides, then let each of them drain on a paper napkin.
  8. You don’t need to sprinkle the brushwood with powder, but dip the slightly cooled ones into standard sugar syrup.

A very simple recipe - minimal effort and amazing results

Required ingredients:

  • 1 egg;
  • a pinch of table salt;
  • 120 g flour;
  • dusting powder.

Preparation procedure:

  1. Beat the egg with salt with a fork.
  2. Add flour little by little and mix until the dough no longer sticks to the walls.
  3. Continue kneading on a floured table.
  4. For convenience, divide the dough in half.
  5. Roll out each piece into the thinnest possible layer.
  6. We cut each of the layers into small rectangles, make through cuts in the center, and thread one of the edges through them.
  7. Heat the oil in a thick-walled frying pan, put our preparations in it, fry on both sides.
  8. Let the fat drain onto a paper towel and sprinkle with powder.

  1. Be very careful when choosing oil for frying. Try to do this with anhydrous fats: melted butter, pork, refined vegetable fats.
  2. If small, accidentally broken pieces are not removed from the oil during frying, the cookies may begin to taste bitter.
  3. Be sure to let the fat drain off.
  4. Before serving, sprinkle the twigs with powder or sprinkle with honey or condensed milk.

As a child, my grandmother often prepared very interesting sweets for us in a large cauldron. She caught them with a slotted spoon, and then she only had time to sprinkle a little powdered sugar before we happily reached for these “curls.”

They crunched in the mouth, as if someone had stood nearby and broken a whole bunch of fragile dry branches. Can you guess what we liked to eat? Of course, this is a gorgeous thin crispy brushwood!

Nowadays it can often be found in sweets or culinary stores. They will sell you a whole package of these delicious cookies, and they will weigh only 200-300 grams. It is so light and airy!

Why don't you make this delicacy yourself? A minimum of products and time, and the joy of your household will be much greater than from a store-bought dessert.

Real classic brushwood looks as if it consists of a thin airy crispy crust. It’s as if you’re holding large chips in your hands, only made from sweet, unleavened dough, which swells with delicate bubbles in hot oil. By the way, the latter appear thanks to the vodka added to the composition, which you won’t even taste.

The cookies don’t have time to soak up the oil because they fry in literally a matter of seconds. People ignorant of the culinary process may think that you prepared this delicacy in the oven.

By itself, this pechevo may not seem too sweet. Therefore, it is additionally sprinkled with powdered sugar.

We will need:

  • Flour – 250 gr.
  • Egg – 2 pcs.
  • Sugar – 2 tbsp. l.
  • Vodka – 1 tbsp. l.
  • Salt – 1 pinch.
  • Powdered sugar - to taste for sprinkling.
  • Sunflower oil – ½-1 cup for frying.

Preparation:

1. Sift the flour so that it is more saturated with oxygen. Pour 200 g into a cup. and mix it with granulated sugar. Season with a small pinch of salt.

Grandma always said that you need to add a little salt to sweet pastries. This way the taste of all other components is better revealed.

2. Break the eggs into the flour mixture and pour in a spoonful of vodka. Start kneading the dough. First you can do this with a spoon, and then with your hand.

3. Remaining 50 gr. Pour flour onto a work surface and transfer the thick dough into it. Knead it well so that it becomes an elastic and at the same time very tight ball.

Then cover with a bowl and let stand for about 20 minutes. After this time, the dough will become smoother, more homogeneous and a little softer and more pliable.

4. Using a rolling pin, turn the bun into a translucent rectangular layer. It should be so thin that the surface on which it is rolled out can be seen through. In fact, the thickness should be literally 1-2 mm.

Cut equal strips with a knife or a curly cutter. In each of them, cut holes 2-5 cm long in the middle.

5. Carefully lift one end of the workpiece and turn it through the cut several times so that the sides of the strip turn into twisted flagella. Repeat this with all the rolled out dough ribbons.

6. Pour oil into a deep frying pan and heat it. With quick movements, transfer 2-5 rolled products into a frying pan and fry on both sides for 5-10 seconds until golden brown.

The brushwood cooks very quickly, so it is better not to leave the stove so that it does not turn into coal.

7. Catch the finished crispy curls with a slotted spoon or tongs and place them on a paper towel if you are afraid that they are still a little saturated with oil.

Carefully transfer to a large plate and sprinkle powdered sugar on top to your liking.

Video on how to prepare thin crispy roses

Today we will look at different options for preparing your favorite delicacy. Each new recipe will include a new dough recipe.

This method also differs in that it produces a completely different form. This kind of brushwood is baked somewhat less frequently than its standard versions. Because these rose-shaped items seem to take more time. But in reality this is not entirely true. It will take almost the same amount of time.

But how beautiful they turn out!

Here in the dough we use only flour and eggs, and literally a spoonful of cold water (there is a recipe where water is not even added). But my grandmother always said that at least a teaspoon should be added to any baked goods. The dough with its addition becomes more “fluffy”, that is, tender.

Please note that the dough recipe does not use sugar at all. Therefore, you need to generously sprinkle the roses themselves with powdered sugar. They can also be served with condensed milk, and they are very tasty with honey. You tear off the petals, dip them in a rosette of honey, and wash them down with aromatic, delicious tea.

Imagine how delicious it is!

Friends, be sure to prepare. The recipe is not only delicious, but also very beautiful!

Crispy tasty brushwood cooked with milk

With milk, not only pancakes turn out thin and tasty, but also brushwood. Although it only requires 3 tablespoons, it still adds a more delicate taste to a delicious sweet snack, and thanks to it the dough can be rolled out very thin.

An aromatic note of vanilla, added during kneading with flour, will fill the whole house with a pleasant aroma that will make you want to immediately taste the baked goods.

We will need:

  • Flour – 1.5 cups.
  • Egg – 2 pcs.
  • Milk – 3 tbsp. spoons.
  • Salt - 0.5 teaspoon
  • Powdered sugar - 2-3 tbsp. spoons.
  • Vanillin, salt - 1 pinch each.

Preparation:

1. In one bowl, beat warm eggs with milk at room temperature with a whisk until smooth.

2. Sift flour into another bowl. Mix it with a pinch of salt and sugar.

Don’t forget to add aromatic vanilla to this dry mass. Then pour in the egg-milk mixture and make a fairly soft and elastic dough.

3. Make 2-4 koloboks out of it and roll each of them to a thickness of one and a half millimeters.

4. Cut each rolled layer into five-centimeter squares and make a two-centimeter cut in the center of each of them. Pass one of the ends through the slot to make something like a bow.

5. Heat fresh sunflower oil in a cauldron. There should be enough of it so that the workpieces, lowered in one layer, float on the surface as if in deep fat, and do not fry, as if like potatoes in a frying pan.

Fry until the brushwood turns golden on both sides.

6. Remove the finished batch using a slotted spoon and place on an iron sieve to remove excess oil (usually there is none, but a lot depends on the quality of the sunflower).

7. Transfer to a beautiful plate and sprinkle with sweet powder.

Serve and eat with pleasure!

A simple recipe for making a lush delicacy using kefir

If you add kefir to the dough, you won’t get super-thin baked goods. However, you will be provided with delicious lush twisted sticks, which look very similar to thin sweet elongated baursaks!

The brushwood on this fermented milk product turns out to be very tender and porous on the inside, and the outside is covered with a golden brown crust, which will have a pleasant crunch when fresh.

Such a beautiful and tasty deep-fried delicacy is usually served during tea drinking, always sprinkled with sweet sprinkles.

We will need:

  • Flour - 3 cups.
  • Kefir – 1.5 cups.
  • Egg – 1 pc.
  • Sugar – 3 tbsp. l.
  • Soda, salt - ½ tsp each.
  • Sunflower oil – 2 tbsp. l. + for frying.

Preparation:

1. Pour kefir into a deep cup and stir soda in it. Wait until the bubbling reaction begins (usually 5 minutes after combining the ingredients).

Then add a fresh egg, sugar and salt and a couple of tablespoons of butter. Beat the kefir mixture until smooth. Add the sifted flour in parts and mix until it is convenient to do it with a spoon or whisk.

2. Transfer the contents of the bowl to the work surface of the table and knead with your hands into a fairly pliable dough. Roll it into a bun and cover with a waffle towel so that it does not have time to dry out during the 20 minutes of proofing.

3. Cut off a third of the dough and roll it out into an even layer. Do the same with the remaining two parts of the test.

4. Cut into rectangles and make a slot in each of them. You can continue to fry them as they are, but the ends of these strips rolled through a hole 1-3 times will look much more interesting.

5. Brown the products in hot oil on both sides. During the time it is deep-fried, the dough will increase in volume and become nice and golden brown.

6. Place on paper napkins for a few minutes, and then put them in a deep bowl or tray. Sprinkle powdered sugar on top through a strainer.

Brushwood is very tasty both hot and cold. You can even dip it in honey, jam or condensed milk. Wash it down with milk, jelly or any favorite hot drink.

Brushwood with sour cream - step by step recipe

Pechevo is made even more fluffy with sour cream. These crispy donuts! Both adults and children will be crazy about them. And the subtle aroma of vanilla will drive any gourmet crazy.

In this recipe, the baking topping can be kept minimal, because the dough will be sweet on its own.

We will need:

  • Sour cream 20% – 200 gr.
  • Flour – 250 gr.
  • Powdered sugar – 100 gr.
  • Sunflower oil – 1 cup.
  • Vodka – 20 gr.
  • Vanilla sugar – 20 gr.
  • Egg – 2 pcs.
  • Sugar – 2-3 tbsp. l.

Preparation:

1. Remove all ingredients from the refrigerator in advance and warm to room temperature. Break the eggs into a deep bowl and beat them with sugar. Then add rich sour cream and whisk thoroughly again.

2. Pour vodka into the egg-sour cream mixture. It will evaporate during frying, but will add airiness to the dough.

3. Mix vanilla sugar with flour and sift them into the liquid mixture. Start kneading first with a spoon and then with your hands.

4. Knead the dough well so that it becomes elastic and does not stick to your hands.

You may need to lightly dust the surface of the table with flour, but do not overwhelm the dough with it - it may become tough and then the brushwood may turn out just as tough.

5. After 15 minutes of proofing, roll out the finished dough into a rectangle half a centimeter thick. Cut it into equal strips and make slits in them.

6. Form twigs from each ribbon of dough. It is enough to twist them through the slot only 1-2 times.

7. All that remains is to deep fry the beautifully rolled dough. Since the brushwood is quite thick and the dough was prepared with rich sour cream, it should be simmered for about a minute, not forgetting to turn it over during this time so that both sides are browned and fried.

8. The finished crumpets should lie on a paper mat for a couple of minutes to remove excess oil. And then they can be sprinkled with white or colored powder and served.

It is also very tasty to serve them with condensed milk or honey.

It would seem that what’s wrong with this... Thin dough fried until crispy, but it brings so much joy and pleasure to children. And the parents, like seeds, will gnaw on the tender strips. Particularly delicious with sweet milk tea.

Even if you don’t have powdered sugar in your house, brushwood will still come in handy for treating unexpected guests. It takes just a few minutes to prepare it, and the conversation at the table accompanied by a light “crackle” can last for the whole evening.

And although vodka is used in most recipes, this treat can still be eaten even by those who are driving. Ethyl alcohol will evaporate during frying and will not have the slightest effect on the body. Even a breathalyzer will not determine that the composition contained a small amount of alcohol.

Bon appetit and crispy pleasure with homemade brushwood!
