Khachapuri in Imeretian style with suluguni

A simple recipe for Imeretian khachapuri made from yeast dough. The filling is perfect - suluguni. This is the cheese most often used by Georgians.

Ingredients

250 g water;

7 g yeast;

450 g flour;

½ tsp. salt;

0.5 spoons of sugar;

3 tablespoons of oil.

For the filling, egg, 500 g suluguni, a spoonful of flour. You will also need 30 grams of butter for the finishing coat.

Preparation

1. Heat the recipe water, it should become pleasantly warm. Add yeast to the liquid, add sugar, stir. If you use fresh yeast, you will need 20 grams.

2. Now you can add salt, butter and knead it all with flour. The finished dough should be tender, smooth and soft, knead well. Transfer to a bowl and leave to rise for two hours. To prevent the crust from drying out, be sure to cover it with a towel.

3. Suluguni needs to be crushed, add an egg (raw) and a spoonful of flour to the cheese. Stir the filling thoroughly, you can immediately collect it into a ball.

4. As soon as the dough has risen, take it out onto the table. Roll out the flatbread.

5. Place a ball of prepared filling inside, gather all the edges of the cake together and pinch tightly.

6. Now turn the ball over, lightly sprinkle flour on top and roll out the flatbread. Professionals stretch with their hands, but it is difficult for an ordinary person to do this. Make the thickness a centimeter.

7. Transfer the cake to a baking sheet, making sure to make a round hole with your finger.

8. Turn on the oven at 220 degrees. Let it bake for 10-12 minutes.

9. Take it out and immediately grease it with butter. There is no need to melt, just move a piece over the surface.

Khachapuri Imeretian style with kefir

A variation of delicious khachapuri made from kefir dough. We use any type of cheese for the filling, but preferably not dry cheese. If you use hard cheese, you can add a couple of spoons of sour cream to the filling, it will turn out tastier.

Ingredients

200 g kefir;

3 cups flour;

2 tablespoons of oil;

Spoon of sugar;

0.5 spoon of soda;

Filling:

400 g cheese;

40 g butter for lubrication.

Preparation

1. Pour kefir into a bowl.

2. Pour in soda, stir and wait until the kefir stops foaming.

3. Next add all the ingredients for the dough. You can shake it with a whisk.

4. Add sifted flour and make dough. Although he does not need to lie down, it is better to leave him for a quarter of an hour. During this time, the dough will become softer, smoother and more pliable.

5. There is time to prepare the filling. Grate the cheese and mix it with the egg. There is no need to add anything else.

6. Take out the dough. We decide on the size of khachapuri. You can prepare one large or two small ones.

7. Roll out the flatbreads, lay out the filling, pinch and roll out again. More details about the formation process are written in the previous recipe.

8. Transfer to a baking sheet, make a hole and bake.

9. Lubricate with oil. If several khachapuri were baked, you can stack them on top of each other. In this case, they are cut into segments and all at once, like a cake.

Khachapuri in Imeretian style in a frying pan

You don't need an oven to prepare this dish. Such products are fried in a frying pan; several pieces are prepared at once, since the diameter of the vessel is limited. Many people like this option.

Ingredients

A glass of fermented baked milk or kefir;

¼ spoon of soda;

3 cups flour;

3 tablespoons of oil for dough + for frying;

Salt, sugar.

For the filling you will need 400 grams of suluguni and one egg.

Preparation

1. Kefir should not be cold. Pour it into a bowl, throw in soda. After a couple of minutes, add raw eggs, add salt, a little sugar and stir well. Add flour and let the dough rest for half an hour.

2. During this time, you need to grate the cheese and add an egg to it. If the mass turns out dry, then you can throw in another one.

3. Now we take out the dough, make a small sausage and divide it into four parts.

4. Roll out four flat cakes at once.

5. Divide the filling, make four balls and scatter over the flatbreads. Bring the edges together, turn over and roll out again. We make a size that will not exceed the diameter of the frying pan. No holes needed.

6. Fry on both sides in a hot frying pan with a thin layer of oil.

7. Place one at a time on top of each other and immediately place on the table while the dish is hot.

Imeretian-style khachapuri made from puff pastry

Lazy puff pastry is very popular. Indeed, it is difficult to find a simpler and more affordable product. Filled with any cheese you can find.

Ingredients

400 g (packing) dough;

350 g cheese;

50 g butter.

Preparation

1. Make the cheese filling right away; the dough should sit and thaw during this time. Simply grate the cheese and combine with one egg.

2. Roll up the dough layer a little so that it is folded in half to form a square.

3. Now take a pan lid or a flat plate, slightly smaller than a square, and cut the template. You will get two cakes, remove one to the side. The second one can be immediately transferred to a baking sheet.

4. Beat the egg, grease both flat cakes, the rest can be poured into the filling.

5. Spread the cheese mixture in an even layer.

6. Cover the khachapuri with the second flatbread, the greased side will go down. The egg will provide a tight grip.

7. Pinch the edges.

8. Place for baking, temperature 220.

Remove after 12-14 minutes, coat generously with butter. Simple, but very tasty.

Khachapuri Imeretian style with cottage cheese and cheese

To prepare this type of Imeretian khachapuri, you can actually use any dough. The filling is simply amazing and always turns out delicious. As an example, yeast dough with kefir.

Ingredients

200 ml kefir;

7 g yeast;

Salt, sugar;

30 m oil;

Filling:

200 g cottage cheese;

250 g of any cheese;

50 g oil for lubrication.

Preparation

1. Pour three tablespoons of water into the yeast, stir and let it swell. Transfer to kefir. Add half a spoonful of tea salt and two identical spoons of sugar, pour in the oil.

2. All that remains is to knead the dough with flour, make it soft, but not runny.

3. Leave until well risen.

4. The cottage cheese must be thoroughly ground. Add the egg with grated cheese to it, stir.

5. We make ordinary khachapuri for a large baking sheet or make two pieces a little smaller.

6. Place to bake, remove and coat thickly with butter.

Khachapuri Imeretian style with potatoes

A variant of a nourishing and more economical dish than in previous recipes. Potatoes need to be boiled. Yeast dough, like for pies, we take any or prepare according to the recipes above.

Ingredients

500 g dough;

2 boiled potatoes;

70 g butter;

150 g cheese;

Greens optional;

Preparation

1. Grate the peeled potatoes into a bowl. Immediately grate the cheese and 40 grams of butter. It will make the potatoes juicy. Add herbs, pepper and salt, add a raw egg.

2. Now stir the filling well and bring it to a homogeneous state.

3. Roll out the dough, make a large khachapuri, adding all the minced meat at once. We form according to the classical scheme, you can see in the first recipe.

4. Bake until golden brown.

5. Take it out and grease it with butter.

Khachapuri Imeretian style with meat filling

To prepare this dish, you can use any meat. The dough is prepared not just with yeast, but with butter. It turns out very tasty, ideal for meat filling.

Ingredients

400 g flour;

120 g milk;

100 g butter;

30 g vegetable oil:

10 g yeast;

Salt, sugar.

Filling:

300 g meat;

4 sprigs of parsley;

Salt pepper;

Oil for greasing and frying onions.

Preparation

1. Melt the butter immediately and let it cool.

2. Add yeast to warm milk, add a spoonful of sugar and stir. Leave for a couple of minutes.

3. Add eggs, beaten with half a teaspoon of salt, pour in butter, stir and gradually add flour. As soon as it becomes difficult for the spoon to turn, add vegetable oil and knead with your hands.

4. Let the dough rest for two hours.

5. This time is enough to prepare the minced meat. We twist the meat.

6. Peel the onion, cut into cubes, fry a little in a frying pan. Combine with minced meat and season with spices.

7. We form the khachapuri in the usual way, but only with meat filling. Place on a baking sheet.

8. Bake, cover with a good layer of butter.

It is not necessary to grease khachapuri with just butter; melted product will also do.

If the product is made from yeast dough, then you can make it even more fluffy. To do this, let the formed cake lie for a while on a baking sheet and rise, only then send it to the oven.

Any dough for khachapuri should be allowed to rest. As the flour swells, it becomes softer, more elastic, easier to work with and the cake is easier to roll out.

Ingredients:

  • Flour - 500 gr
  • chicken egg - 1 pc.
  • milk - 200 ml
  • instant yeast - 2.5 tsp
  • butter - 80 g
  • vegetable oil - 20 ml
  • sugar - 1 tsp
  • salt - to taste.

For filling:

  • Suluguni cheese – 450 gr
  • egg - 1 pc.
  • butter - 50 gr.

Cooking method:

First of all, sift the flour into a deep bowl, then add quick-acting yeast, salt and mix well.



Now add vegetable oil and knead the elastic dough. Then cover with a lid and put in a warm place for one hour.


For the filling, grate the cheese on a coarse grater, add the egg white, and set the yolk aside. And we begin to form balls weighing 150 grams.

Grease the risen dough again with a small amount of vegetable oil and divide it into three equal parts.

From the resulting koloboks we form flat cakes and place a cheese ball in the middle.


And carefully we begin to form the edges into a bag so that we get a uniform circle.


Then we roll it out with a rolling pin into a flat cake with a diameter of 30 cm and place it in a baking dish.


Make a hole in the middle of the dish with your finger, brush with egg yolk using a pastry brush and place in an oven preheated to 250 degrees for 10 minutes.


Grease the finished khachapuri while still hot with a small piece of butter.

Puff pastry khachapuri - step-by-step recipe


Ingredients:

  • Puff pastry - 2 sheets
  • suluguni cheese, Adyghe cheese or feta cheese - 400 gr
  • chicken eggs - 2 pcs.

Cooking method:

Grate the cheese on a coarse grater, place it in a deep bowl, beat in one egg and mix it all thoroughly.



Now we fasten the opposite corners so that the filling is inside, and the square itself takes the shape of an envelope.

Be sure to fasten all the corners before baking; this action is necessary so that the filling does not leak out during baking.

Using a fork, pierce the dough in the middle and place it on a baking sheet.


In the same order, assemble the rest of the khachapuri, then put them in the mold and brush the top with beaten egg using a brush.

Place them in an oven preheated to 200 degrees for about 20 minutes until they are browned.

Ingredients:

  • Kefir – 250 gr
  • sour cream - 250 gr
  • suluguni cheese, feta cheese or Adyghe cheese - 300 gr
  • egg - 2 pcs
  • soda - 1 tsp
  • flour - 1 cup
  • butter and vegetable oil
  • salt - to taste.

Cooking method:

In a deep bowl, combine kefir, sour cream, one egg, salt, soda and add sifted flour. Mix the whole mass thoroughly, the dough should be quite thick.


Then lightly sprinkle it with flour, cover with a towel and leave at room temperature for about half an hour.


Meanwhile, we grate the cheese on a coarse grater, beat in one egg and mix well.


Now generously sprinkle the work surface with flour, use a tablespoon to place the dough on it and form it into a circle. Then we put the cheese filling in the middle and connect the ends in the middle.


We place our preparation on a baking sheet and carefully distribute it, pressing it a little so that it turns out to be a flat cake.

  8. After the last rolling, cut the dough into squares with a side of about 12 cm, put the cheese filling in the middle of each, and pinch it into a triangle.
  9. Place the khachapuri with cheese on a baking sheet coated with vegetable oil.
  10. Beat the remaining egg. Dipping a pastry brush into it, grease each envelope.
  11. Turn on the oven to 180 degrees, place the dish there and bake for about half an hour.

Lazy in the frying pan

Baking got its name because it is prepared as quickly as possible with a minimum of effort. Cooking method:

  • soda - a pinch;
  • suluguni – 390 g;
  • salt – 15 grams;
  • butter - 240 g;
  • sour cream – 65-70 ml;
  • feta cheese – 445 g;
  • flour – 385-420 g (as much as the dough will take).

Cooking method:

  1. Melt the butter in a steam bath.
  2. Pour matsoni into a large bowl, mix with soda and salt.
  3. Add oil, leaving a little for the filling (about a fifth).
  4. Start kneading the dough, gradually adding flour until it becomes very soft.
  5. Grate the suluguni and cheese coarsely. Mix them with sour cream and remaining butter.
  6. Roll out the dough into a circle. Place the filling in the center. Carefully gather the edges with a bag and pinch.
  7. Turn the workpiece over and roll it into a flat cake. The thickness should not exceed one and a half centimeters. Poke a small hole in the center.
  8. Place baking paper on a baking sheet and a flatbread on top.
  9. Preheat the oven to 230 degrees. Bake khachapuri with cheese in it for 7-10 minutes. Serve hot.

On kefir in a frying pan

A product such as matsoni is difficult to find, so it is often replaced with kefir: this component will not spoil the taste of the dish at all.   • suluguni – 70 g;
  • salt - a pinch;
  • feta cheese – 80 g.

Cooking method:

  1. Beat one egg. Add kefir, a little soda, sugar, and salt to it. Mix well.
  2. Start adding a little flour at a time. Stir the dough constantly. When it almost stops sticking and becomes a soft lump, cover with a cloth and set aside for half an hour.
  3. Meanwhile, make the filling. Grate the cheese and suluguni. Add one egg, chopped herbs, and pepper to them.

This dish is easy to make because you don’t need to knead the dough or wait for it to rise. You can even prepare a cheese pie from lavash for a holiday table. You will get a very original snack.

Ingredients:

  • Armenian lavash – 3 sheets;
  • sour cream – 260 ml;
  • eggs – 2 pcs.;
  • Adyghe cheese – 80 g;
  • cottage cheese – 75 g;
  • hard cheese – 75 g;
  • butter - a small piece.

Cooking method:

  1. Grate all the cheeses, mix them with cottage cheese, add one egg.
  2. Grease a baking sheet with butter (butter). Place one sheet of pita bread on top. Spread with sour cream. Spread half the filling.

  3. Divide the dough into two halves, roll out round layers. Place the first sheet on a baking sheet. Place the filling on top. Cover the pie with the second sheet of dough and pinch the edges. Bake for 45 minutes at 185 degrees.

  1. Dissolve the yeast in warm salted water. Add oil, flour and make a dough. To make it fit, put it in a warm place. There should be twice or three times more dough.

  3. Divide the dough into 4 equal pieces. Roll out each of them, and then roll them into tubes on both sides at the same time (like a scroll). Pinch the ends of each and carefully push the middle apart.
  4. Fill the empty spaces of the resulting boats with filling.
  5. Place them on a baking sheet lined with pastry paper.
  6. Bake at 200 degrees for a quarter of an hour.
  7. Get out the boats. Gently crack a raw egg into the middle of each. Bake until the white loses its transparency. If you don't like runny yolk, you can cook until it hardens.

Traditionally, young Imeretian (“imeruli”) cheese is used in the khachapuri filling, apart from which nothing else can be added. But if you do not live in Georgia, then finding it will be problematic. Therefore, I offer several options for replacing it.

Cheese filling options: It’s best to take equal amounts of Adyghe cheese (brynza, good homemade cottage cheese) and suluguni (mozzarella), if there is no suluguni or mozzarella, then you can have Adyghe cheese + feta cheese or only Adyghe cheese. And also add a little butter, sour cream and, if necessary, salt.

Usually, yeast-free dough for khachapuri is mixed with matsoni (there is such a fermented milk product), instead in this recipe I will use equal parts kefir and sour cream.

Khachapuri dough:

  • 250 ml matsoni (or 125 ml kefir + 125 ml sour cream)
  • 300 g flour (or as needed)
  • 1/2 teaspoon salt
  • 1 tbsp. spoon of sugar
  • 1/2 teaspoon soda
  • 100 g butter (less possible)

Cheese filling:

  • 350 g of Imeretian cheese or half Adyghe cheese (brynza, cottage cheese) and suluguni (mozzarella)
  • 2 tbsp. spoons of sour cream
  • salt (if needed)
  • 25 g (1-2 tbsp) butter

  1. Prepare your food. Leave the butter for the filling in a warm place until it softens. If the cheese is too salty, soak it in water for several hours.

  2. Melt the butter for the dough. Mix kefir with sour cream (or take matsoni) and add salt, sugar and soda. Stir and pour in the melted butter. Stir until smooth, the mixture will foam a little.

  3. Now gradually add flour while kneading the dough. It should turn out soft and fluffy. Due to the oil, it will hardly stick to your hands.

  4. Grate the cheese or chop it in another way. Add softened butter, sour cream and salt (if the cheese is not salty enough). Mix well, mashing with a fork. The filling for khachapuri is ready!

    Adviсe: You can take more cheese than indicated in the recipe (the more, the tastier the khachapuri will be), but less is not worth it. If you use fatty cheese, you don't need to add butter. The amount of sour cream can also be adjusted - the filling should not be too dry or wet.

  5. Divide the dough into 4 parts. Take one piece and form into a flat cake on a floured board. Since the dough is soft, this can be easily done by hand.
  6. Place 1/4 of the filling in the center of the cake.

  7. Now gather the edges at the top to make a pouch, pinch and tear off the excess dough.

  8. Using your hands or using a rolling pin, make a cake 1-1.5 cm thick (you shouldn’t make it thicker, but you don’t need to make it as thin as na), sprinkling it with flour.

  9. Place the khachapuri in a preheated dry frying pan (like these flatbreads, they are also mostly baked without oil). Cover with a lid and bake for a few minutes over medium heat.

  10. Turn it over to the other side and hold it a little longer, but without the lid. Ready khachapuri should be covered with light brown spots on both sides.

  11. Remove the khachapuri from the pan and immediately brush with butter. Prepare the rest of the tortillas in the same way. (Cover them to keep them warm.)
