This soup can be prepared not only from turkey, but also from chicken or rooster. First, a particularly flavorful broth is prepared on the frame of the bird, and then surprisingly juicy meatballs are made from a small amount of meat and smoked bacon. I confess to you, these meatballs immediately fell into the category of favorites, as did the method of preparing meat broth with the previous roasting of the bird. Now this is the only way I prepare broths. The meatballs themselves are so tasty that it’s hard to resist eating them all right after boiling. Turkey soup with juicy meatballs is nutritious and easy at the same time.

The broth for this soup was prepared using my favorite method, pre-roasting the meat. In fact, vegetables can also be baked and very often I do this. But here the frame was already large, and there was enough fried flavor for the entire soup without baking the vegetables. And the soup itself is nothing more than a broth made from freshly cooked carrots (since the one that was cooked in the broth gave it all the flavor), meatballs and parsley. Simple, but incredibly tasty!

The secret to the juiciness of these meatballs is the sufficient amount of onion in the minced meat and the presence of bacon. Its moderate fat content makes the meatballs both juicy and very tender. And in order for them to keep their shape well during cooking, you need to beat everything, including the meat, well in a blender. Then they will be very elastic, since meat gluten will be developed, namely the protein myosin (beating and salt in the minced meat contribute to this) and the meatballs will be easy to form with wet hands and they will keep their shape perfectly. And after cooking, they will be juicy, elastic balls. But you don’t need to beat it for too long, because if you overdo it, the meatballs will be too elastic and even hard. That is, moderation is needed in everything.



6-8 servings:

For the broth

  • 1 turkey frame, cut into several pieces (or 1 kg chicken wings or 1 chicken frame and 4 wings)
  • 2 carrots, peeled, coarsely chopped
  • 2 onions, peeled, cut in half
  • 1/4 medium head of celery, peeled
  • 1 green half of a leek, washed well
  • 3 allspice peas
  • 1 tsp black peppercorns
  • 1 PC. carnations
  • 2 tsp salt
  • 3 liters of water

For the meatballs:

  • 300 grams turkey meat (I have scraps of breasts, frame and some thigh meat with skins), grind in a meat grinder
  • 200 grams not too fatty smoked bacon, grind in a meat grinder
  • 2 onions, peeled, coarsely chopped
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp. ground black pepper
  • 1/4 tsp. ground nutmeg

For the soup:

  • 1 carrots, peeled, cut into half circles
  • 1/2 bunch of parsley, coarsely chopped

1) Preheat the oven to 180 C. Place the bird frame in a heat-resistant dish and place in the preheated oven to brown. Remove from oven.


2) Place the browned frame, all the vegetables for the broth, salt, spices and most of the water into a large saucepan. Drain the fat remaining in the heat-resistant dish, pour the remaining water into the dish and place on medium heat, heat, scraping the bottom well to separate the aromatic particles that stick. Pour the water into the pan with the remaining broth ingredients.

3) Place the pan over medium heat, bring everything together to a boil, reduce the heat to low and cook for 1.5 - 2 hours. Until the remaining meat on the frame begins to lag behind the bones. Remove from heat.

4) Strain the broth through a fine sieve into a clean saucepan, add the carrots and put on medium heat, cook until the soup gurgles just a little, until the carrots are ready. At this stage, add salt to the soup if necessary.


5) Meanwhile, prepare the meatballs. Place the onion in a blender bowl. Grind well.

Soups are very healthy and should be included in your diet every day. But it's so tedious to cook rich meat broth, then clarify it and strain it! Ingredients:

  • two tomatoes;
  • two bell peppers;
  • a glass of cream;
  • half a glass of water;
  • 50 grams of butter;
  • seasonings and salt;
  • fresh herbs;
  • crackers.

Preparation:

  1. Peppers need to be cleaned of their entrails.

How to make meatball soup:
