The benefits of carp dishes

Carp is a common river species. It is often found by fishing enthusiasts; it can be bought at any grocery store and even at the market. This product is rich in easily digestible proteins, as well as vitamins A, B (in particular, B1, B2, B4, B5, B6, B9 and B12), C, E, D and vitamins K and PP. Carp contains a lot of potassium, sulfur, magnesium and sodium. In terms of phosphorus content, this fish breed is considered a record holder. It contains almost the same amount of this component as sturgeon.

The calorie content of fish dishes from this river variety depends on the method of preparation:

How to choose carp

The taste and benefits of culinary delights largely depend on the freshness of the main product. Before you cook carp, you will need to choose a fresh, preferably not very small fish. It is best to buy in a specialized store or supermarket, but not in a spontaneous market or “from hand”.

Before you finally decide on a purchase, you need to carefully examine the fish, paying attention to the following aspects:

  • The gills should be pink. If they are brown and stick together, it means that the fish carcass was caught more than a day ago and it is not advisable to cook it.
  • Eyes should not be cloudy or swollen.
  • Fish scales are moist, covered with transparent mucus. If possible, choose whole, undamaged fish.
  • The carcass feels dense and elastic to the touch, not soft.
  • Fresh carp smells like river and “dampness”, without any putrefactive or other unpleasant impurities.

The larger the fish, the more meat it contains and the easier it will be to separate the pieces from the bones while eating.

How to cook carp in the oven and in a frying pan

Of all the methods of preparing fish delicacies, baking and frying are the most widespread. Moreover, it cannot be said that one or another option is better or that the finished dish is tastier. To understand which fish you like best, you will have to conduct a culinary experiment by preparing carp according to several recipes.

Baked carp

To prepare a juicy, satisfying and very healthy fish delicacy you will need:

  • 1 kilogram of raw fish (preferably chilled, not frozen)
  • 3 medium sized carrots
  • 6 medium onions
  • 120 grams sunflower oil
  • 0.5 teaspoon salt,
  • 1 pinch black pepper
  • 1 pinch allspice

You can also use a mixture of dried, spicy herbs or buy a special seasoning “For fish” in the store.

The fish are washed, their heads and fins are cut off, then cuts are made on the abdomen, through which the insides are removed. If desired, you can not cut off the heads, but simply make transverse cuts on them.

The scales are removed from the carcass. To do this, use a kitchen knife or a special scraper. Sometimes stores sell already cleaned fish. This is convenient for those who do not know how to clean it carefully.

Several shallow transverse cuts are made on both sides of the fish. Next, the carcasses are rubbed with salt and spices and placed in the refrigerator for 1 hour.

Meanwhile, the vegetables are peeled, washed, and then chopped. Grate the carrots on a coarse grater and cut the onion into thin half rings.

Vegetable oil is poured into the frying pan, it is placed on the fire and as soon as the fat is heated, chopped vegetables are poured into it. They are sauteed until golden brown (they will need to be stirred constantly).

Place a piece of foil on a baking sheet, spread half of the carrot-onion mixture on it in a thick layer, then take the fish carcasses out of the refrigerator and place them on top of the vegetables. Place the remains of sautéed carrots and onions on top of them. The foil is wrapped, then the sheet of food is placed in the oven. The carp is baked at a temperature of 180 degrees for about 1 hour, but the cooking time depends on the size of the fish.

This delicacy is served hot and can be sprinkled with fresh herbs. It goes well with a side dish of rice or potatoes.

Fried fish

There is nothing complicated about frying carp. You can cook any amount of fish, using salt and spices to taste. Fish carcasses, as for stewing, are decapitated, fins, scales and entrails are removed, then rubbed with salt and spices. You don’t have to wait until they are soaked, but start cooking right away.

The fish are cut into longitudinal pieces 3-4 centimeters thick, then rolled in flour (this is optional), and then placed in a frying pan with vegetable oil. The fish is fried over medium heat for 20 minutes on each side. The pan should be covered with a lid; it will need to be removed 10 minutes before the dish is ready to form an appetizing, crispy crust.

Carp in sour cream

Stewing fish in the most delicate sour cream sauce is no more difficult than simple frying. For gravy for 1 kilogram of fish, take 400 grams of sour cream, 100 grams of water and 2 cloves of garlic. The garlic is peeled and pressed through a press, then added to the sour cream. Water is poured in there and everything is stirred. You can also add a little salt (remember that the fish is already salted), chopped dill or other herbs.

Fish carcasses are processed as for frying, cut into pieces and fried in vegetable oil. 10 minutes before they are ready, they are poured with sour cream sauce, the frying pan or saucepan is covered with a lid and the food is simmered over low heat. After the end of the cooking time, it is advisable to let the dish sit for at least 20 minutes.
