The most convenient time to collect these fruits for jam, compotes, liqueurs and other delicacies is September-October. Chokeberry preparations will help diversify the table and help the body maintain vitamin levels during the long winter months, as well as fight some ailments.

  2. In order to obtain dried chokeberry, the berries are separated from the stalks and laid out in one layer on paper, turning it periodically. This should be done in a well-ventilated area at a temperature not exceeding +50 degrees. That is, using ovens in this case is not profitable - the beneficial properties of the berries are lost.
  3. A convenient method for those who use freezers or have a large freezer in their refrigerator is quick freezing. Then the chokeberry will delight family members all year round! In this case, harvesting healthy berries for the winter will not require any costs. Just make sure that the berries, separated from the stalks and quickly frozen, are arranged in portions in the freezer. There is no need to defrost the entire volume of fruits once again in order to prepare, for example, compote or bake a pie.

How to make chokeberry jam?

The most common chokeberry preparations, the recipes for which are the most popular among housewives, are, of course, jam.

The preparatory stage before making jam is heat treatment of chokeberry berries.

Aronia berries differ from all others by being somewhat dry. Therefore, they should be “softened” before cooking jam. To do this, the fruits are immersed in boiling water for several minutes (from 3 to 5), and then in cold water. And only after this procedure they are thrown into a colander and transferred to a container for making jam.

By the way, the decoction obtained by boiling berries with boiling water should not be poured out - a certain amount of useful substances has passed into it. Therefore, it is best to cook “Assorted” jelly from it, adding syrups of other berries and fruits, sugar and starch.

Recipe for chokeberry jam without sugar

The benefits these berries bring to people suffering from diabetes have already been discussed above. Therefore, care should be taken to ensure that these patients are also provided with chokeberry jam recipe, but without sugar.

Making such a preparation is a little more difficult than with sugar, but it’s worth it, believe me! We only need a large saucepan with water in which the jars of berries will be placed. Place a rag on the bottom of the pan.

Bring the water in the pan to a boil, fill jars (it is best to use half-liter jars) with berries treated with boiling water to the brim and place them in the pan. Boiling water should reach the hangers of the jars, but not pour into them, so the fire should be kept low, just to maintain a boil.

When the water boils, the berries will “settle” a little, so you should add more berries to the free space. This process must be continued for 20-40 minutes. Then the jars are removed one by one from the boiling water and sealed tightly with metal lids.

Recipe for chokeberry jam with sugar

The most common option for preparing chokeberries is to jam the berries with sugar. To prepare, the housewife will need a container of the appropriate size, a stove and the necessary components included in the composition:

berries (1 kg), sugar (1.5 kg) and water (half a liter). The quantity can be reduced or increased while maintaining the specified proportions.

You should not use a slow cooker, as it is not cost-effective: the berries are too hard, so the process will simply drag on for a very long time.


From half a kilo of sugar and half a liter of water (you can use part of the water in which the berries were blanched) a syrup is prepared, which is poured over a kilogram of chokeberry fruits (the weight is determined before heat treatment with boiling water), which is poured over the prepared berries. After the mixture boils, it is kept on the fire for another 5 minutes, constantly stirring the jam. Then the container is removed, and the brewed berries are left to soak in syrup for 8-10 hours.

The last step is finishing the jam. The container is put back on the fire, a kilogram of sugar is added and cooked until tender, until the syrup, when dripped onto a surface, retains its shape and does not spill.

You can put the finished jam in jars with either metal or plastic lids. You can even cover with clean pieces of plastic film, wrapping them with twine moistened with water from below. After drying, the twine decreases in size, tightly tightens the piece covering the neck of the jar, thereby creating a tightness.

Recipe for chokeberry and apple jam

To prepare this wonderful jam, you need to replace half of the berries with apples, which before cooking are also blanched for 3 minutes in the boiling water left after scalding the chokeberry.

Sugar syrup is prepared from the water remaining after blanching by pouring sugar into it, after which the syrup is dissolved, remove from the heat. Then apples and berries are placed there and left for 3-4 hours. After boiling the mixture for 5 minutes, let the jam steep again for 3 hours. This procedure can be repeated several times until the chokeberry becomes juicy and soft. After this, the jam is laid out in jars and closed with either nylon or metal lids.

Recipe for chokeberry jam on cherry leaves

A wonderfully tasty jam is obtained if you first boil the cherry leaves for 5 minutes in water for blanching the berries.

  • The jam is prepared according to the recipe described above; to prepare a dessert from a kilogram of chokeberry, you need to take 100 grams of cherry tree leaves.

Recipe for chokeberry jam “Assorted”

Citrus fruits are often used to make chokeberry jam. This dessert is prepared according to the usual recipe, only before the last stage of cooking, citrus fruits twisted in a meat grinder along with the peel are placed in a container with the mass.

  • For a kilogram of berries, it is recommended to take a couple of oranges and one lemon.

You can also add apple slices to the assortment. This is usually done after the first cooking of the jam.

  • For a kilogram of berries, it is enough to take half a kilo of apples. After laying them and adding the remaining sugar to the mass, the jam is infused for 3 hours, boiled for 10 minutes and infused again for the remaining 5 hours (when preparing regular jam, the infusion process is carried out once for 8 hours).

It’s very nice to take out a jar of compote in winter and treat yourself. There are several recipes for making this drink.

Chokeberry compote - first recipe

The simplest of them is a one-time pouring of hot syrup over the berries.

The chokeberry is thoroughly cleaned and washed before being placed in a container.

The berries are poured into sterile jars to one third of the volume.

To prepare such a winter preparation, you need to take sugar and water in a ratio of 1 to 2. This mixture is brought to a boil and boiled for five to ten minutes. Then, immediately after removing from the heat, pour the syrup into the chokeberry in a jar.

You should immediately close the containers with compote with metal lids. The jars, turned upside down, are wrapped warmly and left until they cool completely. Then you can go down to the cellar.

Chokeberry compote - second recipe

Sometimes housewives do this: berries poured into a jar are poured with boiling water, measuring its volume. Then the entire contents are poured into a saucepan, along with the berries, and boiled until the berries burst. At this time, pour the required amount of sugar into the contents of the pan and boil for ten minutes. I believe that in this case a lot of useful substances and vitamins are lost...

This mixture is then poured into jars, with boiled chokeberries placed in them, and the lids are rolled up.

Chokeberry compote - recipe with citrus fruits

An excellent drink is made from several components - assorted compote. Prepare it in the same way as described in the second recipe, only before pouring the hot mixture of berries and syrup into the jars, add slices of peeled orange and half a lemon.

I make this recipe a little differently:


  • I fill the already prepared jars one-third full with berries, then add orange and lemon slices.
  • I fill the jars with boiling water. I let it sit for 5 minutes, drain the water from the jars into a separate pan, pour in sugar (1.5-2 cups per jar), and bring to a boil. And again I fill the jars with it. I roll them up with metal lids.


I turn it upside down at night. In the morning or the next day I lower it into the cellar.

Chokeberry compote - recipe with sea buckthorn

For preparation, take berries and chokeberries in a 2:1 ratio. All berries are washed, peeled, and dried on a clean towel.

The jars are sterilized by steam.

The syrup is prepared at the rate of 130 grams of sugar per 3 liters of water. Berries are placed in jars (the proportions are indicated above) so that a third of the container is filled, and hot syrup is filled up to the neck (just above the shoulders).

Then the jars of compote are sterilized in boiling water. For 3-liter containers, this procedure will take half an hour, for 2-liter containers - 20 minutes, for liter containers, 10 minutes will be enough.

After the jar is taken out of the water, it should be “rolled up” with a metal lid, again sterilized in boiling water. The sealed jar should be placed upside down on the lid, wrapped and kept for a couple of days.

The interesting thing is that from this wonderful berry you can even make dishes and drinks that will decorate the festive table and can even become the highlight of the feast.

Chokeberry liqueur recipe

Making this wonderful and quite healthy alcoholic drink is quite simple.


  • It is enough to pour washed chokeberries into a three-liter jar up to the shoulders (this will be about one and a half kilograms of berries), add about half a kilogram of sugar and pour it all with vodka, without adding 2 centimeters to the edge of the neck. Usually 1-1.5 liters of alcohol is enough if a 3 liter can is chosen as the filling container.

Seal the liqueur with a triple layer of parchment paper or a plastic lid, then place it in the refrigerator or cellar for two months. After this period, the liqueur is poured into bottles, sealed tightly again and stored in a cool place until use.

Cake “Skorospelochka”

So that the berries from the liqueur do not go to waste, they can be used for the cake. This dessert is quite suitable as a breakfast sponge cake if it is not decorated with cream. If you bake several biscuits, make a cream layer and decorate it on top, then it can become a fairly simple and cheap, but amazingly tasty cake.

  • For a couple of glasses of flour you will need a glass of kefir or yogurt. Actually, fermented baked milk or other thick milk product would also be suitable. There you also need to pour a glass of sugar and a glass of chokeberry jam, add half a glass of berries from the liqueur and break a couple of eggs. Now, after mixing, you need to add half a teaspoon of tea soda, mix again and leave to rise for five minutes.

The dough is laid out in a form greased with any fat and baked for half an hour in the oven at +180 degrees.


Chokeberry wine

Wonderful chokeberry wine is not only beautiful, tasty, but also healthy. It is only important to remember that abuse of even the most useful product can lead to negative results. But 200 grams per day of this divine drink - a real storehouse of vitamins and minerals - will help normalize blood pressure, have a beneficial effect on vision, improve sleep and intestinal function.

This is how wine is made:

  • Pour 2 kg of chokeberry minced in a meat grinder into a 10-liter bottle and add 1.5 kg of sugar. If you want the wine to be richer and tastier, add 5-6 kg of berries. You can add a handful of raisins and a handful of gray rice for more active formation of wine yeast. Then they put a medical glove with a pierced middle finger over the neck and place it in a warm place. The bottle does not need to be opened again, but you should not forget to shake it thoroughly every day.

First option: After 3 days, add a glass of sugar and 2 liters of cooled boiled water to the container. Put the glove back on and continue to shake the contents of the bottle daily.

Second option: It is possible in 10 days. Yeast is just beginning to form from the berries. Raisins and rice speed up this process, but if they are not added, then after 2 days no yeast will form. Unlike the first option, the wine will be ready not in 33 days, but in 40.

Another 10 days pass, and the home winemaker repeats the procedure again - adding a glass of sugar and 2 liters of water to the container.

After another 10 days, the procedure is repeated again. And now 10 days have passed again, and a total of 33 days have passed since the wine was touched. It's time to drain the wine! But if by this time the glove “sends” greetings to you, sticks out to the top, inflated with gases, then you should wait a little - a day or two.

The drained wine is left to settle. After a couple of days, it is carefully poured into another bottle, trying not to stir up the sediment from the bottom. This procedure also needs to be done three times, every 2-3 days, until the wine becomes clean and transparent. Then it is considered ready to eat. You can store wine in a cool place with the lid closed. If this is a jar, then a plastic lid will be quite suitable.

You can replace some of the berries with others or even use fruits, such as apples, pears, grapes, currants or cherries. The ingredients can be either frozen or dried. The taste of assorted wine will be more interesting and subtle.

Chokeberry juice

You can simply and quickly prepare chokeberry juice, which can be stored for quite a long time. Watch the video with this recipe:

Chokeberry - recipes for blood pressure

  1. It should be recalled here that this berry itself is already cure for because it normalizes it. Therefore, the easiest way is to eat 100 grams of fresh fruits daily (frozen berries can be used for this purpose) three times a day if there are no problems with varicose veins, thrombophlebitis and peptic ulcers.

  3. Also useful chokeberry infusion. To prepare it, 3 tablespoons of dry berries are enough, which are steamed in a thermos with two glasses of boiling water. Drink the infusion in the same way as the decoction, 3 times a day, half a glass.
  4. 50 grams of crushed berries are mixed with a tablespoon of honey and taken daily for 10 to 40 days.
  5. Freshly squeezed chokeberry juice, consumed 3 times a day half an hour before meals, has a remarkable effect on normalizing blood pressure. They drink a quarter glass - this is often enough for the disease to recede.
  6. You can improve the taste of the “medicine” from chokeberry juice and enhance its effect with honey. In this case, add a teaspoon of honey to two-thirds of a glass of fresh juice. The resulting mixture is divided into three daily doses and taken 30 minutes before meals. After two weeks of use, you need to take a two-month break, after which it is recommended to repeat the course of treatment.

  3. When you cook the mixture for the third time, add lemon to it. Pre-scald it, peel it, cut it arbitrarily and be sure to remove the seeds - because of them the jam will be bitter.
  4. Cover the pan with the prepared jam with a cotton cloth and cover it with another container of the same diameter. This way you will create an air cushion that will significantly soften the rowan fruits.
  5. Leave this structure overnight, and in the morning, spread the infused jam into sterilized jars and close the lids. Store the preparation in a cool place (unless, of course, you eat all the jam in a week!).

Quick jam - five minutes

Preparing this jam will take you the least amount of time.

Preparing five-minute jam will not take you much time

Ingredients:

  • 2 kg of chokeberry berries;
  • 1 kg sugar.

For this jam, it is easier to use not the exact amount of products in grams, but the proportions: for 2 parts of fruit, 1 part of granulated sugar.

  1. Blanch the washed berries in boiling water for 5 minutes, then grind in a meat grinder or blender. Mix thoroughly with sugar and place on low heat. Heat until the sugar is completely dissolved.
  2. Turn up the heat a little more, wait until it boils and cook for 5 minutes.
  3. Distribute the jam into clean, sterilized jars. Place them in a large saucepan, pour water up to the shoulders of the jars. After the water boils, sterilize the jam for 20 minutes, then roll up the lids.

If you want, add a little citric acid or baked mashed apples to the five-minute jam.

After the jam has cooled at room temperature, put it in the basement for storage. A refrigerator will also work - the main thing is that it is dark, dry and cool.

Ingredients:

  • 250 g chokeberry;
  • 250 g red rowan;
  • 500 g plums;
  • 400 g sugar (of which 300 g for syrup, 100 g for sprinkling);
  • 300 ml water;
  • 1 g cloves.

Cooking process:

  1. Wash the rowan berries and separate them into small clusters (several berries per branch). Place in the freezer for 30 minutes so that the bitterness leaves the rowan and only the tartness remains.
  2. Divide the plums into halves and remove the pits. It is better to take fruits of the “Hungarian” variety, not overripe and hard.

  6. Remove the fruits from the pan with a slotted spoon and place them in a sieve. Wait for the syrup to drain.

The most useful preparation for the winter of chokeberry is drying. Dried berries retain their beneficial properties.

You can store the berries for 2 years, packed in a cardboard box or glass jar, covered with parchment paper. Store in a dry and dark place. Dried chokeberry berries are used to prepare vitamin teas, compotes, jelly, bake pies and make medicinal infusions.

The easiest way is to scatter the berries on a baking sheet in one layer and dry them in a well-ventilated area, stirring as you go. When the berries stop shrinking and become wrinkled, they can be stored.

If you cannot dry the berries in the air, dry them in the oven, placing them for a while at a temperature of no more than 60 degrees. The berries should not lose their color and smell.


Dry the berries in the oven, spread them on a baking sheet, stir, the temperature is first 40 degrees, and when they begin to wilt, increase the oven temperature to 60 degrees.

I really like drying chokeberry berries in brushes. We cut off the bunches of berries with scissors and hang them on a thread stretched in the attic, balcony or veranda. In winter, I removed the brush and ate it. Vitamins are always at hand.

Chokeberry pureed with sugar

The healthy product, without being subjected to heat treatment, preserves vitamins and beneficial compounds. It is recommended to use during cold epidemics and the onset of vitamin deficiency.

For 1 kg of berries we take 800 grams of sugar. Grind the berries through a meat grinder twice. You can grind it with a blender.

Add sugar and stir thoroughly, let stand and stir again. Try it, if the sugar has dissolved, place it in sterile jars and cover with plastic lids. Store in a cool, dark place.

Aronia jam with apples

I made jam for the first time this year, and it turned out delicious. I advise you to cook according to my recipe.

  • 3 kg of rowan berries,
  • 4.5 kg sugar,
  • 1 kg ,
  • 0.4 g walnuts (can be replaced with cinnamon, half a teaspoon),
  • 3 glasses of water,
  • 2 large lemons.


Pour boiling water over the berries, leave for 12 hours, and drain the infusion. Prepare syrup from 3 glasses of infusion and sugar. Add berries, peeled and seeded apples, lightly chopped nuts to the syrup, cook for 5 minutes from the moment of boiling.

Let cool until warm and cook for 10 minutes from the moment it boils. Add the chopped lemons and cook for another 15 minutes. Don't forget to remove the foam.

Remove the jam from the heat, let it cool slightly and pour into sterile jars, close with simple lids and put away for storage.

You can take a small amount, I just have a large harvest of berries, so I make a lot of jam.

Chokeberry raisins

  • 1.5 kg of berries,
  • 1 kg sugar,
  • 2 tbsp water,
  • 1 teaspoon of citric acid.

We make syrup from water and sugar. Dispense the berries and citric acid into boiling syrup and cook for 20 minutes. Cool and place the berries in a colander, let the syrup drain and place the berries on a baking sheet to dry on parchment paper. Stir occasionally while drying. Dry for 3-4 days. Store in a paper bag or glass jar under a gauze tie.

It will be very tasty if you sprinkle the berries with powdered sugar before putting them to dry.

The syrup left over from cooking the berries is poured into a sterile container and stored for making drinks and jelly.

You will get a very tasty drink - liqueur, if you mix syrup with good vodka 1:1. I tried it, it’s a wonderful, beautiful and tasty drink.

Universal berry for compote

Chokeberry berries give a very beautiful color to compote and can be combined with any fruits and berries. One handful per three-liter jar is enough to paint a pleasant, rich color.

For 1 three-liter jar of compote we take 0.5 kg of sugar. Pour chokeberry berries into the jar, filling it 1/3 full, add apples or any other fruit (you can use just one handful for taste).

Cook the syrup, add 0.5 sugar to 2.1 liters of water, carefully pour the boiling syrup into the contents of the jar and immediately twist it, put it under a fur coat until it cools.


Compotes are stored for a very long time, several years.

Compote is very easy to prepare with it!

Still, no matter how you preserve it, frozen berries are the healthiest berries. It retains up to 75% of all beneficial properties and compounds.

Simply freeze (spread out on a baking sheet), place in a bag and seal tightly, it's ready to freeze.
